In this book, for the first time, scientists from various disciplines and all partners in the fishery chain address the important issues of quality labelling, monitoring and traceability of fish. The complexity of the European fishery sector, the attitudes towards quality labelling GMP and the needs for quality information are presented. The progress of implementing traceability (schemes) from catch to consumer is covered. Fishermen give their view on GMP on board of their vessels. New tools for measuring the quality of the catch and the experience with quality grading of the landed fish by QIM are described. Attention is paid to recent developments of E-commerce of fish via the auctions. The possibilities of combining various instrumental methods for measuring fish quality are highlighted. A range of contributions on labelling systems, industrial standards, awards and certification procedures for the quality of fish are included. An overview on consumer research on fish in Europe is presented. In addition papers are covering consumer's responses to fresh fish, the evaluation of a promotion campaign for seafood consumption and consumer's opinions towards farmed fish, health and food safety. The implications of quality labels for the consumers and the influence on their buying decision process are addressed. Two papers discussing labelling, price and packaging as value indicators and the product differentiation for shellfish complete the book.

In 2001, we gathered a group of researchers in Nice, France to focus discussion on performance measurement and management control. Following the success of that conference, we held subsequent conferences in 2003, 2005, 2007, and 2009. Though the conference has been generally focused on performance measurement and management control and has included presentations on many facets of the topic, each year we have also focused on a particular theme of current interest. This year's theme was directed at innovative concepts and practices. This includes creative approaches to solving management challenges of performance and management control and improving organizational performance. It also includes the innovative use of empirical, analytical, experimental, and case based research. The contents of this book represent a collection of leading research in management control and performance measurement and provide a significant contribution to the growing literature in the area.

'Multinational enterprises often seem to be on a'roller coaster'when managing their operations in transition economies, especially because of the volatile business and political environment. By combining agency and stewardship theory, this book describes the subtle equilibrium between formal control and day-to-day coordination in the Headquarters-Subsidiary (HQ-S) governance relationship. Using the Polish situation as an example, it places HQ-S governance in the context of a transitional economy while taking the cultural differences between the headquarters and subsidiary country into account. This explorative empirical study shows that the use of strategic and operational control mechanisms work as a transparent ‘platform'on which coordination and attuning mechanisms can be build to deal with the day-to-day management challenges in a transition economy. Creating flexibility and learning capabilities at the subsidiary level, rather than maintaining a subsidiary in a state of dependence can clearly contribute to the success of international operations. However, it also reveals that there is no simple and uniform recipe for managing subsidiaries. The road from governance to performance is not a one-way street and alternative routes are available to accelerate performance. 'This book develops an integrated research framework in which social science and natural science merge in the analysis of the relationships and transactions within the mango supply chain from Costa Rica. More specifically, behaviour economics, and institutional economics is combined with quality management and product development techniques. This book is also important because it uses an innovative gaming simulation for research and not only for training. The game develops a standard supply chain for a perishable product, which is used for simulating the bargaining power and revenue distribution of the agents in the chain and the governance structure preferred for doing business. This game simulation is played by the real producers in the field. Other important topics covered are quality management and quality variability. Studying quality management (intrinsic and extrinsic attributes) in relation to the farm household characteristics, production system and agreements, enables us to define some economic incentives to improve the quality of the produce. Studying the variability of the produce helps us understand and describe how the different management practices throughout the chain affects the quality of the produce. This relates to the market outlet choice the producers make and the strategic behaviour they have. 'During the last decade, sector wide crises in agriculture have rapidly followed each other, resulting in serious consumer concerns about the quality and safety of agri-food products. To prevent new crises, governments have developed quality regulations and retailers have introduced quality management standards. However, concerns have been raised about the administrative burdens placed on firms, because they must comply with many private and public quality regulations. Therefore, both government and firms strive for more integration and self regulation of quality management systems. By combining managerial and economic theory, this study builds a framework to demonstrate the impact of integrated quality management on self regulation and performance. Using empirical evidence from the poultry meat, the fruit and vegetable and the flower and potted plant chains, this study shows that integrated quality management systems positively affect performance and self regulation. However, it is necessary to find committed partners that share the firm's quality objectives. In most cases, too strict enforcement of quality requirements is destructive, initiates conflict and does not lead to higher performance. Furthermore, governmental agencies should focus on innovative approaches to assure quality. Not legislation, but factors such as media attention and corporate social responsibility enlarge the integration of quality management systems. This book is recommended for a broad audience of professionals, practitioners and policy makers who concern themselves with the design, management and assessment of quality management and self regulation in agri-food supply chains.'
