This proceedings is a collection of 46 selected papers that were presented at the 12th International Wheat Genetics Symposium (IWGS). Since the launch of the wheat genome sequencing project in 2005, the arrival of draft genome sequences has marked a new era in wheat genetics and genomics, catalyzing rapid advancement in the field. This book provides a comprehensive review of the forefront of wheat research, across various important topics such as germplasm and genetic diversity, cytogenetics and allopolyploid evolution, genome sequencing, structural and functional genomics, gene function and molecular biology, biotic stress, abiotic stress, grain quality, and classical and molecular breeding. Following an introduction, 9 parts of the book are dedicated to each of these topics. A final, 11th part entitled “Toward Sustainable Wheat Production” contains 7 excellent papers that were presented in the 12th IWGS Special Session supported by the OECD. This proceedings volume contains a selection of invited and contributed papers of the 9th International Workshop on Sulfur Metabolism in Plants, which was hosted by Heinz Rennenberg, Albert-Ludwigs-University Freiburg and was held at Schloss Reinach, Freiburg-Munzigen, Germany from April 14-17, 2014. The extracellular matrix (ECM) is an acellular three-dimensional network composed of proteins, glycoproteins, proteoglycans and exopolysaccharides. It primarily serves as a structural component in the tissues and organs of plants and animals, or forms biofilms in which bacterial cells are embedded. ECMs are highly dynamic structures that undergo continuous remodeling, and disruptions are frequently the result of pathological processes associated with severe diseases such as arteriosclerosis, neurodegenerative illness or cancer. In turn, bacterial biofilms are a source of concern for human health, as they are associated with resistance to antibiotics. Although exopolysaccharides are crucial for ECM formation and function, they have received considerably little attention to date.The respective chapters of this book comprehensively address such issues, and provide reviews on the structural, biochemical, molecular and biophysical properties of exopolysaccharides. These components are abundantly produced by virtually all taxa including bacteria, algae, plants, fungi, invertebrates and vertebrates. This book provides an overview of antioxidants and antioxidant enzymes and their role in the mechanisms of signaling and cellular tolerance under stress in plant systems. Major reactive oxygen species (ROS)-scavenging/modulating enzymes include the superoxide dismutase (SOD) that dismutates O2 into H2O2, which is followed by the coordinated action of a set of enzymes including catalase (CAT), ascorbate peroxidase (APX), glutathione peroxidase (GPX) and peroxiredoxins (Prx) that remove H2O2. In addition to the ROS scavenging enzymes, a number of other enzymes are found in various subcellular compartments, which are involved in maintaining such redox homeostasis either by directly scavenging particular ROS and ROS-byproducts or by replenishing antioxidants. In that respect, these enzymes can be also considered antioxidants. Such enzymes include monodehydroascorbate reductase (MDAR), dehydroascorbate reductase (DHAR), glutathione reductase (GR), alternative oxidases (AOXs), peroxidases (PODs) and glutathione S-transferases (GSTs). Some non-enzymatic antioxidants, such as ascorbic acid (vitamin C), carotenes (provitamin A), tocopherols (vitamin E), and glutathione (GSH), work in concert with antioxidant enzymes to sustain an intracellular steady-state level of ROS that promotes plant growth, development, cell cycles and hormone signaling, and reinforces the responses to abiotic and biotic environmental stressors. Offering a unique compilation of information on antioxidants and antioxidant enzymes, this is a valuable resource for advanced students and researchers working on plant biochemistry, physiology, biotechnology, and signaling in cell organelles, and those specializing in plant enzyme technology.

This book is first of its kind exclusively dedicated to plant polyphenol oxidases (PPOs), highlighting their importance in the food processing industry. By reviewing the scientific developments of the past several decades, it offers a comprehensive overview of various aspects of plant PPOs, including chemistry, structure, functions, regulation, genetics/genomics and molecular aspects. PPOs are copper-containing proteins found in several plant species that catalyze the hydroxylation of o-monophenols to o-diphenols and oxidation of the o-dihydroxyphenols to o-quinones. Further, the quonines undergo self-polymerization or react with amines/thiol groups to produce brown/dark coloration of products. All the PPOs contain two Cu-binding sites (CuA and CuB) as their central domain, these interact with phenolic substrates and molecular oxygen. Several of the plant PPOs contain an N-terminal transit peptide (~80-100 amino acids) necessary for plastid import. The PPOs occur in latent form that are activated by various treatments including acid and base shock, exposure to detergents or proteolytic degradation. The pH optimum of PPOs varies widely depending upon different plant species but is usually ~4.0 – 8.0. Similarly, the optimum temperature also varies as per the source and substrate involved ranging from 30 to 45 °C.Multiple PPO isoforms have been reported in several plant species, and the chromosomal location of PPOs has also been studied in some species. The physiological role (s) of PPOs is not entirely understood, but they could be involved in defense-related functions in plants. From an applied perspective, PPOs are implicated in enzymatic browning/darkening of cereal products, vegetables and fruits. Interestingly, browning is preferred in some instances like the processing of black tea, cocoa, and coffee as it enhances their quality by forming flavorful products. There have been initiatives to specifically breed and develop cultivars with reasonably low PPO levels in the mature grain or fruit. Further, several types of inhibitors that reduce the PPO activity have also been identified. Despite their commercial/economic importance and the availability of literature on different aspects of PPOs in different plant species, this is the first book to provide basic information regarding PPOs. It is a valuable resource for researchers involved in quality-related research specifically in crops, vegetables and fruits. Further, as PPOs are also implicated in defense- or stress-related functions, the book is also useful to breeders, pathologists, molecular biologists, physiologists and entomologists.

This book is the result of collaboration between botanists and food chemists, with the purpose of improving the knowledge of the main wild species of traditional use as foods in the Mediterranean area, focus on ethnobotanical aspects, natural production, uses and nutritional aspects. One of the novelties of the book would be the publication of complete food composition tables of more than 40 species, which are not usually included in nutrient databases of foods. This book provides detailed and comprehensive information on oxidative damage caused by stresses in plants with especial reference to the metabolism of reactive oxygen species (ROS).In plants, as in all aerobic organisms, ROS are common by-products formed by the inevitable leakage of electrons onto O2 from the electron transport activities located in chloroplasts, mitochondria, peroxisomes and in plasma membranes or as a consequence of various metabolic pathways confined in different cellular loci. Environmental stresses such as heat, cold, drought, salinity, heavy-metal toxicity, ozone and ultraviolet radiation as well as pathogens/contagion attack lead to enhanced generation of ROS in plants due to disruption of cellular homeostasis. ROS play a dual role in plants; at low concentrations they act as signaling molecules that facilitate several responses in plant cells, including those promoted by biotic and abiotic agents. In divergence, at high levels they cause damage to cellular constituents triggering oxidative stress. In either case, small antioxidant molecules and enzymes modulate the action of these ambivalent species.
