Plant-based meat alternatives (PBMAs) have been included in Filipino’s diet since their availability in the Philippines, making it important to evaluate their nutritional profile to assist consumers in purchase and consumption decisions. This study identified various PBMAs in Metro Manila, Bulacan, and Pampanga. Information based on the labels of PBMAs and animal-based meats (ABM) was collected and evaluated. PBMAs (n = 37) included chicken products (n = 4), ground meat (n = 5), patties and sausages (n = 19), jerkies (n = 4), and others [i.e. tocino (Philippine sweet bacon), luncheon meat, and belly rolls]. PBMAs generally have lower energy, total and saturated fat, and higher price/g protein, dietary fiber, sodium, and calcium content compared to ABM. Proteins, carbohydrates, and other micronutrients (i.e. iron, potassium, and vitamin B complex) vary depending on the meat category and ingredient used. Health and environmental issues regarding dairy consumption have been highlighted in recent years leading to tremendous consumer demand for plant-based substitutes. In this review, we focused on quality and health dimensions of pulse-based dairy alternatives (PuBDA) using chickpeas, lupins and mung beans. Appraisal of existing documents show that there is limited information on PuBDA with the said pulses compared to similar materials such as soy and pea. Most of the studies focused on milk or fermented milks, either in full or partial substitution of the dairy ingredients with the pulses. Issues on stability, sensory properties, shelf life and nutritional quality were underlined by existing literature. Although it was emphasized in some reports the health potential through the bioactive components, there is scarce data on clinical studies showing actual health benefits of the featured PuBDA in this paper. There is also a scant number of these PuBDA that are currently available in the market and in general, these products have inferior nutritional quality compared to the animal-based counterparts. Technological innovations involving physical, biological and chemical techniques can potentially address the quality problems in the use of chickpeas, lupins, and mung beans as raw materials in dairy alternatives. The pandemic caused by the severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) generated a joint global effort to develop vaccines and other treatments that could mitigate the negative effects and the rapid spread of the virus. Single-domain antibodies derived from various sources, including cartilaginous fish, camelids, and humans, have gained attention as promising therapeutic tools against coronavirus disease 2019. Shark-derived variable new antigen receptors (VNARs) have emerged as the smallest naturally occurring antigen-binding molecules. Here, we compile and review recent published studies on VNARs with the capacity to recognize and/or neutralize SARS-CoV-2. We found a close balance between the use of natural immune libraries and synthetic VNAR libraries for the screening against SARS-CoV-2, with phage display being the preferred display technology for the selection of VNARs against this virus. In addition, we discuss potential modifications and engineering strategies employed to improve the neutralization potential of VNARs, such as exploring fusion with the Fc domain of human Immunoglobulin G (IgG) to increase avidity and therapeutic potential. Research into various proteins capable of blocking metabolic pathways has improved the detection and treatment of multiple pathologies associated with the malfunction and overexpression of different metabolites. However, antigen-binding proteins have limitations. To overcome the disadvantages of the available antigen-binding proteins, the present investigation aims to provide chimeric antigen-binding peptides by binding a complementarity-determining region 3 (CDR3) of variable domains of new antigen receptors (VNARs) with a conotoxin. Six non-natural antibodies (NoNaBodies) were obtained from the complexes of conotoxin cal14.1a with six CDR3s from the VNARs of Heterodontus francisci and two NoNaBodies from the VNARs of other shark species. The peptides cal_P98Y vs. vascular endothelial growth factor 165 (VEGF165), cal_T10 vs. transforming growth factor beta (TGF-β), and cal_CV043 vs. carcinoembryonic antigen (CEA) showed in-silico and in vitro recognition capacity. Severe Acute Respiratory Syndrome Coronavirus 2 is the causal pathogen of coronavirus disease 2019 (COVID-19). The emergence of new variants with different mutational patterns has limited the therapeutic options available and complicated the development of effective neutralizing antibodies targeting the spike (S) protein. Variable New Antigen Receptors (VNARs) constitute a neutralizing antibody technology that has been introduced into the list of possible therapeutic options against SARS-CoV-2. The unique qualities of VNARs, such as high affinities for target molecules, capacity for paratope reformatting, and relatively high stability, make them attractive molecules to counteract the emerging SARS-CoV-2 variants. In this study, we characterized a VNAR antibody (SP240) that was isolated from a synthetic phage library of VNAR domains. In the phage display, a plasma with high antibody titers against SARS-CoV-2 was used to selectively displace the VNAR antibodies bound to the antigen SARS-CoV-2 receptor binding domain (RBD). In silico data suggested that the SP240 binding epitopes are located within the ACE2 binding interface. The neutralizing ability of SP240 was tested against live Delta and Omicron SARS-CoV-2 variants and was found to clear the infection of both variants in the lung cell line A549-ACE2-TMPRSS2. Beta-agonists (β-agonists) are feed additives used in animal production (20--40 d before slaughter) to simultaneously reduce fat gain and increase the muscle mass of animals, but the residues may remain in the tissues of animals if the withdrawal period is not observed. This is a concern due to the potential adverse health effects to humans symptomized by increased heart rate, palpitations, vasodilation, and reflex tachycardia. This study described the potential risks associated with the consumption of pork with β-agonists to the Filipino pork-consuming population through the risk profiling process. Specifically, it consolidated the available information and determined the data gaps relevant to the risk profiling process, including available risk management options for β-agonist residues in pork. The study identified and characterized β-agonist as the hazard and pork as the concerned commodity. The risk was estimated through the evaluation of β-agonist residue concentrations in pork kidneys and pork meat from the National Veterinary Drug Residue Monitoring Program of the Philippine National Meat Inspection Service and the pork consumption data of the adult Filipino consuming population from the Department of Science and Technology--Food and Nutrition Research Institute in consideration of identified uncertainties, variabilities, and assumptions. The mean and maximum dietary exposures of the adult Filipino consuming population, with an assumed average body weight of Asian adults, to β-agonists in pork meat (0.0111 and 0.1478 μg/kg bw) and pork kidney (0.0166 and 0.4847 μg/ kg bw) were estimated to exceed 100% of the acceptable daily intake of clenbuterol (0--0.004 μg/kg bw). These results indicate that there is an appreciable risk to the health of the Filipino population when it comes to the consumption of pork contaminated with β-agonists. [ABSTRACT FROM AUTHOR]

Aflatoxin (AFL) is a naturally occurring mycotoxin produced by Aspergillus spp. and is commonly associated with peanuts (Arachis hypogaea L.), a major field legume in the Philippines. The major types of AFL are B1, B2, G1, and G2 -- comprising the total aflatoxin (AFT). AFL exposure has been shown to cause both chronic and acute toxicity, with the liver as the main target organ. It is considered genotoxic and carcinogenic. The objective of this study is to establish the profile of the potential risks associated with the consumption of peanuts contaminated with aflatoxin to the Filipino consuming population. The study included [1] determination of data gaps in the risk profiling of AFL in the consumption of peanuts by the Filipino peanut-consuming population; [2] hazard identification and characterization; [3] estimation of dietary exposure (DE) and riskbased on uncertainties, variabilities, and assumptions; and [4] consolidation of available control measures and possible mitigation protocols for AFL in peanut. AFL was detected in 92% of all the peanut samples (n = 50) analyzed, with overall mean levels of 802.83 µg/kg AFT, 683.53 µg/kg AFB1, and 119.30 µg/kg AFB2 exceeding the maximum level (ML) of 15 µg/kg set by the Codex Alimentarius Commission for AFT. Considering the assumptions made and data gathered in this study, the estimated daily intakes (EDIs) of the Filipino adult (20-59 yr old) consuming population to AFT and to AFB1 in peanut -- at 97.5th percentile consumption -- were 1.22-6,527.18 ng/kg body weight (bw)/d and 1.22-5,574.90 ng/kg bw/d, respectively, which exceeded the recommended provisional maximum tolerable daily intake (PMTDI) of 1 ng/kg bw/d. The margins of exposure (MOE) were also generally estimated to be below 10,000, which indicates that it is a potential health concern and that it supports the need for further risk management actions. Health benefits arising from polyphenols found in plants have driven a steady increase in the manufacture of polyphenol-rich, plant-based food products. In line with quality assurance and compliance to local and international regulations, the polyphenol content of these products needs to be ascertained by manufacturers. The measurement of the total polyphenol content (TPC) in such products, therefore, should be part of the quality assurance of food manufacturers. This study involved the development of a cheap, user-friendly, and robust paper-based device (PBD) that can be potentially used by small-to-medium enterprises (SMEs) in determining the TPC of tea-based beverages - specifically, sweet potato leaf extract-based (SPLE) tea beverage products. The PBD relies on colorimetric detection of TPC based on the iron tartrate (IT) spectrophotometric. Validation studies of the PBD yielded good accuracy and precision, with limits of detection (LOD) and quantification (LOQ) of 20.03 and 66.77 ppm gallic acid equivalents (GAE), respectively. The device also has good linearity and sensitivity. Likewise, the quantification of polyphenols using the PBD was not adversely affected by the presence of sugars and ascorbic acid. Methylmercury (MeHg) is one of the most toxic forms of mercury (Hg) produced via methylation of its inorganic form from natural and anthropogenic sources. Fish that feed on phytoplankton, such as sardines, serve as the entry points of MeHg in the aquatic food web. Dietary exposure (DE) to MeHg leads to varying health risks such as ataxia, neurodevelopmental delays, and blindness in newborns and infants. The study aimed to develop a risk profile on the potential risk associated with the consumption of Philippine dried tamban (Sardinella lemuru) through 1) conceptualization of the risk profile, 2) review of related literature, 3) formulation of assumptions (i.e. identification of variabilities and establishment of uncertainties or data gaps), 4) exposure pathway assessment, and 5) risk characterization. The risk of MeHg was estimated using the total mercury (THg) concentrations in dried tamban samples collected from the major fishing grounds of sardines in the Philippines, consumption data of the adult Filipino consuming population, and the assumed average body weights of Asian adults. The estimated DEs ranged from 0.000043-0.008724 µg/kg bw (bodyweight)/wk, which is equivalent to about 0.003-0.545% of the provisional tolerable weekly intake (PTWI) of 1.6 µg/kg bw for MeHg established by the Joint FAO/WHO Expert Committee on Food Additives (JECFA) in 2007. Our findings imply that dried tamban does not pose a major health risk to the adult Filipino consuming population. The Fusarium fungus is known to produce fumonisin, a naturally occurring mycotoxin associated with chronic adverse health effects in animal liver and kidney, which is commonly found in corn (Zea mays L.), one of the major agricultural crops and staple foods in the Philippines. The objective of this study was to develop a profile of the potential risks associated with the consumption of corn contaminated with fumonisins B1 (FB1) and B2 (FB2). This study involved the determination of data gaps in the risk profiling process; identification, and characterization of fumonisin; estimation of the dietary exposure (DE) and risk based on identified uncertainties, variabilities, and assumptions; and determination of available risk management options for fumonisin in corn. Fumonisin levels of corn samples (n = 77) were all below the 4000 µg/kg maximum level (ML) set in the 2019 edition of the Codex General Standard for Contaminants and Toxins in Foods (Codex GSCTFF) for raw corn grains. At the 97.5th percentile consumption of corn [yellow, white, green (or sweet) corn; edible portions (corn kernels)], the calculated DE estimates of the Filipino adult (20-59 yr old) exceeded the provisional maximum tolerable daily intake (PMTDI) of 2 µg/kg bw (body weight)/d by 420.17% (maximum FB1), 194.30% (maximum FB2), and 189.81% (overall FB1 mean). Considering the assumptions made and the gathered data in this study, the estimated DE to fumonisin in corn showed an appreciable risk to health. The current ML of fumonisin in corn and corn products adopted from Codex GSCTFF may be in need to be revisited to ensure the protection of the adult Filipino consuming population. Soy sauce is one of the commonly consumed food items in the Philippines because of its vast applications as a regular sauce and a condiment in various food dishes. One method used to produce soy sauce is chemical hydrolysis that involves acid hydrolysis of vegetable protein under high temperatures, which may generate a chemical by-product called 3-monochloropropane-1,2-diol (3-MCPD). Exposure to 3-MCPD may potentially cause adverse health effects to humans such as kidney, liver, and reproductive organ failure, as well as infertility and carcinogenicity. Thus, this study aimed to establish a profile on the potential risk associated with the consumption of soy sauce with 3-MCPD in the Philippines. This study included risk profile conceptualization, literature review, and identification of uncertainties and variabilities to formulate assumptions, which were then used in the dietary exposure (DE) assessment and estimation of risk of the adult Filipino consuming population to 3-MCPD in soy sauce. Analysis showed that the soy sauce samples (n = 19) collected from identified supermarkets and wet markets in the Philippines contained 3-MCPD levels below the maximum level (ML) of 0.4 mg/kg set by the 2019 edition of the Codex General Standards for Contaminants and Toxins in Food and Feed. With these generated data on the hazard levels, the high consumer (97.5th) percentile soy sauce consumption data from the Philippine Department of Science and Technology–Food and Nutrition Research Institute (DOST-FNRI), and the assumed body weight of an adult Asian, the DE of the adult Filipino consuming population to 3-MCPD in soy sauce was estimated to be 0.0327–0.1636 µg/kg body weight (bw)/d, which was lower than 4 µg/kg bw – the latest provisional maximum tolerable daily intake (PMTDI) set by the Joint FAO/WHO Expert Committee on Food Additives (JECFA) in 2016. Background: Solanum incanum is a close wild relative of S. melongena with high contents of bioactive phenolics and drought tolerance. S. aethiopicum is a cultivated African eggplant cross-compatible with S. melongena. Despite their great interest in S. melongena breeding programs, the genomic resources for these species are scarce. Results: RNA-Seq was performed with NGS from pooled RNA of young leaf, floral bud and young fruit tissues, generating more than one hundred millions raw reads per species. The transcriptomes were assembled in 83,905 unigenes for S. incanum and in 87,084 unigenes for S. aethiopicum with an average length of 696 and 722 bp, respectively. The unigenes were structurally and functionally annotated based on comparison with public databases by using bioinformatic tools. The single nucleotide variant calling analysis (SNPs and INDELs) was performed by mapping our S. incanum and S. aethiopicum reads, as well as reads from S. melongena and S. torvum available on NCBI database (National Center for Biotechnology Information), against the eggplant genome. Both intraspecific and interspecific polymorphisms were identified and subsets of molecular markers were created for all species combinations. 36 SNVs were selected for validation in the S. incanum and S. aethiopicum accessions and 96% were correctly amplified confirming the polymorphisms. In addition, 976 and 1,278 SSRs were identified in S. incanum and S. aethiopicum transcriptomes respectively, and a set of them were validated. Conclusions: This work provides a broad insight into gene sequences and allelic variation in S. incanum and S. aethiopicum. This work is a first step toward better understanding of target genes involved in metabolic pathways relevant for eggplant breeding. The molecular markers detected in this study could be used across all the eggplant genepool, which is of interest for breeding programs as well as to perform marker-trait association and QTL analysis studies. A case of esophago-pericardial fistula presenting as cardiac tamponade in a 2 years old girl with corrosive esophageal stenosis under esophageal dilatation treatment is reported. The patient survived the episode and six months later an esophageal substitution was successfully performed. Virgin coconut oil (VCO) is a vegetable oil that is extracted from fresh coconut meat and is processed using only physical and other natural means. VCO was compared to refined, bleached, and deodorized coconut oil (RCO) using standard quality parameters, 31 P nuclear magnetic resonance (NMR) spectroscopy, and headspace solid-phase micro - extraction/gas chromatography mass spectrometry (SPME/GCMS). VCO tends to have higher free fatty acids (FFAs), moisture, and volatile matter and lower peroxide value than RCO. However, the range of values overlap and no single standard parameter alone can be 31 used to differentiate VCO from RCO. Using 31P NMR, VCO and RCO can be distinguished in terms of the total amount of diglycerides: VCO showed an average content (w/w %) of 1.55, whereas RCO gave an average of 4.10. There was no overlap in the values found for individual VCO and RCO samples. There are four common methods of producing VCO: expeller (EXP), centrifuge (CEN), and fermentation with and without heat. VCO products prepared using these four methods could not be differentiated using standard quality parameters. Sensory analysis showed that VCO produced by fermentation (with and without heat) could be distinguished from those produced using the EXP and CEN methods; this sensory differentiation correlated with the higher levels of acetic acid and octanoic acid in the VCO produced by fermentation. Studies on physicochemical deterioration of VCO showed that VCO is stable to chemical and photochemical oxidation and hydrolysis. VCO is most susceptible to microbial attack, which leads to the formation of various organic acids, in particular, lactic acid. Sensory evaluation is a scientific method that deals with precision, accuracy and sensitivity. Its basic principles are in large part anchored on the natural sciences, such as biology, chemistry, mathematics and physics. However, sensory evaluation goes beyond such platforms and has its own social, economic and cultural facets. Sensory evaluation has been extensively used in the study of consumer items such as food and clothing, and lately on behavioral and physiological reactions. It has been an integral part of the food science curriculum in various universities. However, the other disciplines of home economics, such as clothing technology, family life and child development, home economics education, hotel, restaurant and institution management, interior design and community nutrition, which deal with the needs of families and consumers, have not fully maximized the use of sensory evaluation. The multidisciplinary nature of home economics will push sensory evaluation to a more diverse level of relevance and purpose. This paper presented the social, economic and cultural dimensions of sensory evaluation along with its possible applications in the various disciplines of home economics in the Philippines. PRACTICAL APPLICATIONS The paper provided a wholistic view of sensory evaluation not merely as a scientific method but its important social, cultural and economic dimensions. This document can serve as a guide for students, teachers and professionals in the conduct of sensory assessments. Likewise, this will help home economists not only in the Philippines but also in other countries to maximize the use of sensory evaluation in improving the quality of life of families and consumers. The study determined the 6-n-propylthiouracil (PROP) status of Filipino adults and how it relates to their body mass indices (BMI) and food preferences. Self-reported food preference checklists were administered to 100 male and female adults aged 18–60, classified according to BMI. Increasing concentrations of PROP and NaCl solutions were rated in labeled magnitude scale to establish the PROP taster status of the selected respondents. The Filipino adult respondents were composed of 12% nontasters, 45% medium tasters and 43% supertasters. No association (P > 0.05) between BMI and PROP taster status was found. Sweet-tasting foods were the most preferred and bitter-tasting foods were the least preferred within each taster status. Furthermore, medium tasters and supertasters had the highest acceptance for meats, fish and poultry, and least acceptance for beverages, which were mostly bitter. Decreased preferences for fats and oils, sugars and confectionery, and beverages were correlated (P < 0.05) with responsiveness to PROP. PRACTICAL APPLICATIONS The research provides a general baseline data of the PROP taster status of Filipino adults. The findings from this study can be used as a reference and can be compared to similar studies conducted in other countries. Likewise, the information from the study can add to the scarce data for taste genetics specifically for the Asian population. The relationship of PROP taster status with body mass index and food preferences can be a guide in the design of products and dietary plans. Likewise, the study would be a means to understand why people vary in liking for particular food items and how these can be reflected in their food consumption and nutritional status. We report the development of 158 primer pairs flanking SSR motifs in genomic (gSSR) and EST (EST-SSR) melon sequences, all yielding polymorphic bands in melon germplasm, except one that was polymorphic only in Cucurbita species. A similar polymorphism level was found among EST-SSRs and gSSRs, between dimeric and trimeric EST-SSRs, and between EST-SSRs placed in the open reading frame or any of the 5′- or 3′-untranslated regions. Correlation between SSR length and polymorphism was only found for dinucleotide EST-SSRs located within the untranslated regions, but not for trinucleotide EST-SSRs. Transferability of EST-SSRs to Cucurbita species was assayed and 12.7% of the primer pairs amplified at least in one species, although only 5.4% were polymorphic. A set of 14 double haploid lines from the cross between the cultivar “Piel de Sapo” and the accession PI161375 were selected for the bin mapping approach in melon. One hundred and twenty-one SSR markers were newly mapped. The position of 46 SSR loci was also verified by genotyping the complete population. A final bin-map was constructed including 80 RFLPs, 212 SSRs, 3 SNPs and the Nsv locus, distributed in 122 bins with an average bin length of 10.2 cM and a maximum bin length of 33 cM.
