A pH-sensitive dye-based freshness indicator has been developed to monitor the quality status of pork neck through distinct color transitions, addressing a crucial need for improved food safety and real-time monitoring within the food industry. This system aims to boost consumer confidence and improve shelf-life estimates by offering transparent and immediate quality indicators. Aerobically packaged pork neck samples underwent accelerated testing at 25 ◦C for 36 h, followed by refrigeration experiments at typical distribution temperatures of 4 and 8 ◦C over 10 days. Measured pork neck quality parameters included total bacterial count (TBC), total volatile basic nitrogen (TVBN), and pH levels. Visual observation and colorimetric analysis were used to assess the chromatic variations of the freshness indicator, which showed a significant shift from orange to green in response to the presence of TVB-N in the headspace of the pork packaging. The chromatic parameters of the freshness indicator exhibited a significant correlation with the pork quality values throughout the storage periods. Background: The advances in products based on nanotechnology have directed extensive research on low-cost, biologically compatible, and easily degradable materials. Main body: Sericin (SER) is a protein mainly composed of glycine, serine, aspartic acid, and threonine amino acids removed from the silkworm cocoon (particularly Bombyx mori and other species). SER is a biocompatible material with economic viability, which can be easily functionalized due to its potential crosslink reactions. Also, SER has inherent biological properties, which makes possible its use as a component of pharmaceutical formulations with several biomedical applications, such as anti-tumor, antimicrobials, antioxidants and as scaffolds for tissue repair as well as participating in molecular mechanisms attributed to the regulation of transcription factors, reduction of inflammatory signaling molecules, stimulation of apoptosis, migration, and proliferation of mesenchymal cells. Conclusion: In this review, the recent innovations on SER-based nano-medicines (nanoparticles, micelles, films, hydrogels, and their hybrid systems) and their contributions for non-conventional therapies are discussed considering different molecular mechanisms for promoting their therapeutic applications. A new series of 7-trifluoromethyl-2-pyridylquinazolin-4(3H)-one-based acyl thiourea derivatives has been generated and tested for their cytotoxicity towards human ovarian cancer (SK-OV-3), cervical cancer (HeLa), renal cancer (Caki-2) cell lines, as well as noncancerous a human umbilical vein endothelial cell (HUVEC) line. The new thiourea derivatives were found to be promisingly cytotoxic towards the cancerous cell lines. Changing the substituent at the thiourea linkage led to variations in the cytotoxic potential of the resultant derivatives towards specific cell lines. Molecules with fluorine functionality and multiple pyridyl moieties showed encouraging anticancer effects and could be used as a platform for the design of further chemotherapeutic agents. A number of wild crops remain unexplored in this world and among them some have excellent medicinal and nutritional properties. India is a harbor of biodiversity in general and phytodiversity in particular. The plant diversity is distributed from the Western Ghats to Eastern Ghats, along with the North-Eastern region and from the Greater Himalayas to the plain of Ganga. Among these distributed floral regions of the country, the Eastern Ghats are important due to their rich floral diversity. The forests of Odisha form a major part of Eastern Ghats in general and the Similipal Biosphere Reserve (SBR) in particular. The SBR is inhabited by many local communities. The food and medicinal habits of these communities are not fully explored even today. They are dependent on the forests of SBR for their food and medicine. Among their collections from forests, root and tuberous plants play a significant role. The local communities of SBR use about 89 types of tuberous plants for various purposes. Dioscorea is one such tuber, having maximum use among the local of SBR. However, less documentation and no specific reports are available on the food and medicinal values of the species available in this part of the World. Dioscorea species, popularly known as Yam worldwide and as Ban Aalu in Odisha, India, is a prime staplemedicinal-food substitute for themajority of rural and local people of the state of India. Of the 13 Dioscorea species available in SBR, 10 species are known to be bitter in taste and unpalatable when taken raw. Since less documentation is available on the Dioscorea species of SBR and their traditional uses, the present study was focused on the ethnobotany, nutritional and pharmacological values of these species along its nutraceutical importance. Endophytes are an endosymbiotic group of microorganisms that colonize in plants and microbes that can be readily isolated from any microbial or plant growth medium. They act as reservoirs of novel bioactive secondary metabolites, such as alkaloids, phenolic acids, quinones, steroids, saponins, tannins, and terpenoids that serve as a potential candidate for antimicrobial, anti-insect, anticancer and many more properties. While plant sources are being extensively explored for new chemical entities for therapeutic purposes, endophytic microbes also constitute an important source for drug discovery. Different types of fermented foods such as chongkukjang, doenjang, ganjang, gochujang, and kimchi are plentifully available and widely consumed in north eastern Asian countries including Korea. Among them, kimchi is one of the most popular Korean traditional food. It is prepared by fermenting the baechu cabbage together with other vegetables and lactic acid bacteria (LAB) with functional potential. Many types of ingredients are added to kimchi to enhance its taste, flavor, nutritional value, texture etc. A number of bacteria are involved in the fermentation of kimchi, but LAB are the dominant species in the fermentation process. The addition of other sub ingredients and formation of different by-products during fermentation eventually leads to eradication of putrefactive and pathogenic bacteria, and also increase the functionalities, nutritional and nutraceutical potential of kimchi. Kimchi possesses anti-inflammatory, antibacterial, antioxidant, anticancer, antiobesity, probiotic properties, cholesterol reduction, and antiaging properties. In the present review an attempt has been made to review the different types of fermented foods found in the Korean peninsula with detailed scientific research regarding preparation, processing, structure of the microecosystem, and health benefits of kimchi.
