Botrytis cinerea poses a recurring threat to viticulture, causing significant yield losses each year. The study explored the biocontrol capabilities of commercially used winemaking yeasts as a strategy to manage B. cinerea in grape berries. The winemaking yeast strains— Saccharomyces cerevisiae ES181, Saccharomyces pastorianus KBG6, S. cerevisiae BCS103, Lachancea thermotolerans Omega, and Torulaspora delbrueckii TD291-reduced B. cinerea growth and conidiation in vitro. Furthermore, they demonstrated a decreased disease severity and number of conidia in grape berries. Among these strains, S. cerevisiae BCS103 was the most effective, inducing the expression of the defense-related gene PR4 in berries. Its diffusible compounds and volatile organic compounds also reduced the expression of BcLTF2 , a positive regulator of B. cinerea conidiogenesis. The examined winemaking yeast strains, especially S. cerevisiae BCS103, demonstrated effective inhibition of B. cinerea in vitro and in grape berries, influencing key defense genes and reducing BcLTF2 expression, offering potential solutions for disease management in viticulture. The study underscores the promise of commercially available winemaking yeast strains as eco-friendly tools against B. cinerea in viticulture. In today's era, humanity has been overwhelmed by technological revolutions that have changed and will continue to change how business operations are performed, directly or indirectly. At the same time, the processes within the supply chain are quite complex, and as technology and processes evolve, they become more and more challenging. Traceability has become a critical issue in the food industry to ensure safety, quality, and compliance with regulations. The adoption of blockchain technology in the food supply chain has gained significant attention as a potential solution to improve traceability. This paper presents the development of a distributed application for table olives' traceability on the Ethereum network. The paper also presents a methodological framework, which can help anyone aiming to implement an Ethereum decentralized application and demonstrates the practical use of the developed application by a Greek table olives producer. The application significantly improved the producer's product traceability by providing a secure, transparent, and efficient solution for tracking and tracing the products in the supply chain. The app reduced the time, increased the accuracy and reliability of data, improved supply chain efficiency, and helped the producer comply with international regulations and standards. The aim of the present study was to attempt the recreation of a highly appreciated food commodity of antiquity, called avyrtake, using information derived from ancient texts. The available information included the raw materials, the texture and the taste of the raw materials. On the contrary, the relative proportion of the raw materials as well as the production procedure had to be inferred on the basis of their modern-day use. For that purpose, and based on the above, a mixture of shredded cabbage and leek, salt, pomegranate seeds, raisins, and shredded garlic, as well as ground green cardamon and mustard seeds were pressed into a fermentation jar in order to form a brine and left at 18 °C for fermentation to take place. The latter was driven by lactic acid bacteria, mostly by Lactiplantibacillus plantarum. The final product had a sour character, which matched the organoleptic description available from the ancient texts, and it received high ranks. [ABSTRACT FROM AUTHOR]
