Excessive production of reactive oxygen species (ROS) often results in irreversible cell damage and leads to a number of disorders such as hypertension, heart disease, diabetes, inflammation, premature aging and cancer. Considering the importance of diet in prevention of diseases associated with oxidative stress, this study was conducted to evaluate antioxidant activity of the methanol extract of wild lignicolus mushroom Fomitopsis pinicola as natural source of functional food ingredients. Nowadays functional food products based on the lignicolous mushroom species are increasingly available on the market. Their powders and extracts are consumed as dietary supplements in the form of capsules or tablets and as additives in the formulation of healthier food products.

The health promoting effects of hot water extracts obtained from fruiting bodies of the commercially cultivated mushroom Agaricus bisporus (AbHW) and the wild-growing mushroom Ganoderma resinaceum (GrHW) originating from northern Serbia are presented in this research. These abilities were compared in vitro by the prevention of lipid peroxidation (LPx) in a linoleic acid model system, inhibition of the angiotension converting I enzyme (ACE) that could help in the maintenance of a normal blood pressure level and strengthening the ability of the central cholinergic neuron by inhibiting the activity of acetylcholinesterase (AChE). Cytotoxic activities were observed towards selected human malignant (HeLa and K562) cell lines and normal- -human peripheral blood mononuclear cells (PBMC). GrHW contains higher phenolics (5.9 g (100 g)-1), inhibition of LPx (EC50 = 1.07 mg mL-1), ACE (IC50 = 0.54 mg mL-1) and AChE (IC50 = 0.37 mg mL-1), and exhibited a significant selectivity in the antitumour action against HeLa (IC50 = 0.14 mg mL-1) and K562 (IC50 = 0.11 mg mL-1) cells. AbHW contained higher total protein (6.4 g (100 g)-1), carbohydrate (75.4 g (100 g)-1) and β-glucan (55.1 g (100 g)-1) contents and induced significant proliferation of healthy PBMC from 152–116 % in the concentration range of 0.047–0.187 mg mL-1. The difference in the biological activity of the extracts provides guidance on their use as functional food. У овоме раду поређен је здраствени ефекaт врелих водених екстраката добијених из плодоносних тела комерцијално узгајане јестиве гљиве Agaricus bisporus (AbHW) и самоникле врсте гљиве Ganoderma resinaceum (GrHW) из региона северне Србије. Здраствени ефекат је поређен in vitro превенцијом липидне пероксидације (LPx) у модел систему линолеинске киселине, инхибицијом ангиотензин конвертујућег ензима (ACE) који има улогу у одржавању нормалног нивоа крвног притиска и јачањем способности централних холинергичких неурона инхибицијом активности ацетилхолинестеразе (AChE). Цитотоксична активност је праћена на хуманим ћелијама тумора грлића материц (HeLa) и ћелијама хроничне мијелоидне леукемије (K562), као и на здравим мононуклеарним ћелијама периферног крвотока (PBMC). GrHW је показао већи садржај фенолних компоненти (5,9 g (100 g)-1), већу способност инхибиције LPx (EC50 = 1,07 mg mL-1), ACE (IC50 = 0,54 mg mL-1) и AChE (IC50 = 0,37 mg mL-1); показао је већу селективност у антитуморском дејству према HeLa (IC50 = 0,14 mg mL-1) и K562 (IC50 = 0,11 mg mL-1) ћелијама. AbHW је показао већи укупни садржај протеина (6,4 g (100 g)-1), угљених хидрата (75,4 g (100 g)-1) и β-глукана (55,1 g (100 g)-1) и значајно je стимулисао пролиферацију PBMC ћелија од 152–116 % у распону концентрација од 0,046–0,187 mg mL-1. Разлика у биолошкој активности екстраката даје смернице у њиховој примени као функционалнe хранe.

BACKGROUND: The aim of this study was to develop a total quality index and examine the effects of modified atmosphere packaging (MAP) on the quality of Agaricus bisporus mushrooms stored for 22 days at 4 ∘C. Mushrooms were packaged under three MAPs: high nitrogen packaging (HNP), low carbon dioxide packaging (LCP) and low oxygen packaging (LOP). Passive MAP with air inside initially was used as the atmosphere treatment (AIR). RESULTS: This research revealed two phases in quality deterioration of A. bisporus mushrooms. During the first week, most of the quality parameters were not statistically different. Thereafter, odor intensities were stronger for all four types of packaging. Color difference and browning index values showed significantly lower color changes for AIR and LOP compared with HNP and LCP mushrooms. CONCLUSION: The best total quality index was calculated for LOP, followed by LCP and AIR. The findings of this study are useful with respect to examining two-component MAPs, separating the limiting factors (O2 and CO2) and evaluating quality deterioration effects and the total quality index of A. bisporus mushrooms. © 2016 Society of Chemical Industry

The study of the wine quality of Merlot variety standard and clones 022, 025 and 029, obtained in the third phase of clonal selection of Merlot variety was done in the period 2009-2012. The following components were measured: pH value of wines, total acidity, aldehydes, esters, total polyphenols and ashes. The largest content of esters and aldehydes was found in the wine of clone 025 and was significantly different compared to the wines of standard and other clones. The content of polyphenols, total acidity and pH values between the wines of standard and clones were not significantly different. Ash content in the tested wines ranged from 2.623 g/l to 2.748 g/l, indicating their authenticity. The studied wines are of good quality. U periodu 2009.-2012. godine izvršeno je ispitivanje kvaliteta vina standarda sorte Merlot i klonova 022, 025 i 029, dobijenih klonskom selekcijom trećeg vegetativnog potomstva sorte Merlot. Određeni su pH vrednost vina, ukupne kiseline, aldehidi, estri, ukupni polifenoli i pepeo. Sadržaj estara i aldehida je najveći u vinu klona 025 i statistički se značajno razlikuje u poređenju sa vinom standarda i ostalih klonova. Sadržaj polifenola, ukupnih kiselina i pH vrednosti između vina standarda i klonova se statistički značajno ne razlikuju. Sadržaj pepela u ispitivanim vinima je od 2.623 g/l do 2.748 g/l, što ukazuje na njihovu autentičnost. Ispitivana vina su dobrog kvaliteta.

Fruiting bodies of some wild and cultivatable mushrooms contain medicinal compounds which are being used in traditional medicines and cosmetics. Champignon mushroom (Agaricus bisporus) is the most widely cultivated species of edible mushroom worldwide. This paper focuses on antioxidant and antimicrobial importance of A bisporus. Water-soluble polysaccharide-enriched fraction was isolated from the dry carpophores of Agaricus bisporus. Antioxidant activities were investigated using in vitro assay systems: 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging and chelating ability on ferrous ions. Antimicrobial activity was tested against Gram positive and Gram negative bacteria in vitro by disk diffusion method in order to determine the zones of inhibition. At concentrations of 0.1-10 mg/ml, the scavenging abilities of A bisporus ranged between 12.3-75.5 %. The radical scavenging ability of the positive controls-tocopherol and ascorbic acid, at the concentrations of 0.1-20 mg/ml, were between 79.9-80.8 and 80.6-91.1 %, respectively. Polysaccharide extract from A bisporus showed steadily increasing chelating ability as concentrations increased to 88.2 % at 20 mg/ml. The chelating ability of the citric acid was between 7.2-10.7 %, at the concentrations of 0.1-20 mg/ml. The study of antimicrobial potential of polysaccharide extract showed more potent activity against Gram-positive Enterococcus faecalis ATCC 49532 (26.7 ± 0.2 mm), Bacillus cereus 10876 (27.5 ± 0.4 mm), Geobacillus stearothermophylus ATCC 7953 (22.8 ± 0.3 mm) than Gram-negative bacteria Pseudomonas aeruginosa ATCC 35032 (10.4 ± 0.6 mm), Proteus hauseri ATCC 13315 (12.1 ± 0.1 mm) Escherichia coli (0157:H7) 35150 (12.7 ± 0.4 mm) with exception of Klebsiella pneumoniae ATCC 27736 (22.3 ± 0.2 mm).

Polisaharidi gljiva, biljaka i mikroorganizama privlače veliku pažnju zbog svojihinteresantnih bioloških svojstava kao što su: antitumorno, antivirusno, antioksidativno,antikomplementarno, antikoagulaciono, hipolipidemijsko dejstvo, kao iimunomodulatorska i imunostimulativna aktivnost, što ih sve čini pogodnim za primenuu mnogim oblastima, među kojima su i prehrambena industrija, kozmetika,biomedicina, poljoprivreda, zaštita životne sredine i otpadnih voda.Oksidativna oštećenja prirodnih i industrijski pripremljenih namirnica predstavljajuveliki ekonomski problem u prehrambenoj industriji, jer direktno utiču na karakteristikekvaliteta kao što su ukus, boja, tekstura i nutritivne vrednosti. Pored toga, može doći donastanka potencijalno toksičnih proizvoda. Reaktivne vrste kiseonika učestvuju upatofiziologiji različitih kliničkih poremećaja, kao što su: ishemija, reperfuzionepovrede, infarkt miokarda, reumatoidni artritis, neurodegenerativni poremećaji,ateroskleroza, hipertenzija, hemoragički šok i dijabetes.Mikrobiološko kvarenje hrane i trovanje hranom su jedan od najvažnijih problema sakojima se suočava prehrambena industrija. Alimentarne intoksikacije su danas globalniproblem. Porast rezistentnosti patogena na poznate lekove stvara potrebu za razvojemnovih antimikrobnih agenasa.U ovom radu su proučavana antioksidativna i antimikrobna svojstva polisaharidnihekstrakata odabranih vrsta gljiva iz klase Basidiomycetes: Agaricus bisporus, Agaricusbrasiliensis, Ganoderma applanatum, Ganoderma lucidum, Lentinula edodes, Phellinuslinteus i Trametes versicolor.Na osnovu dobijenih rezultata može se zaključiti da polisaharidni ekstrakti, dobijeninakon ekstrakcije vrelom vodom, alkoholne precipitacije i dijalize, predstavljajusmešu/komplekse polisaharida, proteina i fenola... Ganoderma lucidum (Leyss.:Fr.) Karst is one of the most often used mushrooms in traditional medicine of Far Eastern people. Because of its bitter taste and wooden build it is not suitable for nutrition, but the bioactive substances, polysaccharides and β-glucans extracted from this mushroom possess very important medicinal characteristics. Ganoderma lucidum spores possess bioactive substances and may be used also for treatment of different disorders in organism. The aim of this experiment was to investigate the effects of different concentrations of isolated Ganoderma lucidum GL-K spore extract and extract obtained from the spores of the same mushroom which cell walls were broken, on the growth of B human lymphocyte - JY cell line. Obtained extracts were added to the cells in concentrations 1 μg/ml, 100 ng/ml, 10 ng/ml, 1 ng/ml and 100 pg/ml. JY cells were exposed to the action of bioactive compounds, polysaccharides and β-glucans, during the incubation period of 72 h, on 37oC, in the atmosphere with 5 % CO2 and their number were counted. Among all tested concentrations of extract the most important influence showed concentration of 1 μg/ml which reduced the number of JY cells for 38.29 % when cells were incubated with spore GL-K extract, while the number of JY cells has gone down for 36.10% when cells were incubated with extract of spores which cell walls were broken. . Ganoderma lucidum (Leyss.:Fr.) Karst je jedna od najčešće korišćenih gljiva u tradicionalnoj medicini naroda dalekog istoka. Zbog gorkog ukusa i drvenaste građe nije pogodna za ishranu, ali bioaktivne komponente polisaharidi i β-glukani koje sadrži pokazuju vrlo važne medicinske kararkteristike. Spore ove gljive takođe sadrže bioaktivne komponente i mogu se koristiti za tretiranje različitih poremećaja u organizmu. Cilj ovog rada bio je ispitivanje uticaja različitih koncentracija ekstrakta izolovanog iz spora gljive Ganoderma lucidum-K (GL-K), kao i ekstrakta dobijenog iz spora iste gljive čiji je ćelijski zid razoren, na rast B humanih limfocita, tj., ćelijsku liniju JY. Dobijeni ekstrakti dodati su ćelijama u koncentracijama 1 μg/ml, 100 ng/ml, 10 ng/ml, 1 ng/ml i 100 pg/ml. JY ćelije izložene su dejstvu bioaktivnih komponenata, polisaharida i β-glukana, u vremenu od 72 h, na 37oC u atmosferi sa 5% CO2, a zatim su izbrojane. Od svih testiranih koncentracija ekstrakata najznačajniji uticaj je pokazala koncentracija 1 μg/ml koja je dovela do smanjenja broja JY ćelija za 38.29 % kada su one inkubirane u prisustvu ekstrakta spora gljive GL-K, dok je broj JY ćelija opao za 36.10 % inkubiranjem sa ekstraktom spora čiji je ćelijski zid razbijen. .

Based on previous investigations it appeared that mushrooms Agricus blazei Murrill were highly valuable food, interesting from gastronomic aspect because of pleasant sweet taste. They have also medical properties due to numerous positive effects on human health. The aim of this experiment was to investigate the effects of different concentrations of Agaricus blazei K and Agaricus blazei B extracts on the growth of Jurkat cells of human T lymphocytes. Control samples did not contain mushroom extracts. To all experimental samples extracts were added in the following concentrations: 1μg/ml, 100ng/ml, 10ng/ml, 1ng/ml and 100pg/ml. Bioactive compounds, polysaccharides, β-glucans were obtained by hot water extraction and alcohol precipitation from dry mushroom carpophores and purified by dialysis. Jurkat cells were exposed to action of mushroom extracts during the incubation period for 72 hours, on 37ºC, in the atmosphere with 5% CO2. Their number was counted; among all tested concentrations of extracts the most significant influence was observed in concentration of 1μg/ml Agricus blazei K, which reduced number of human T lymphocyte Jurkat cells for 39.2%. The extract obtained from Agricus blazei B reduced the number of human T lymphocyte Jurkat cells for 36.2%. . Na osnovu dosadašnjih istraživanja pokazalo se da su gljive Agaricus blazei Murrill, pored toga što su visoko vredne nutritivne namirnice, zanimljive i sa gastronomskog aspekta zbog prijatnog slatkastog ukusa, predstavljaju i vrlo važne medicinske gljive zbog mnogih pozitivnih efekata koje imaju po ljudsko zdravlje. Cilj ovog rada bio je ispitivanje dejstva različitih koncentracija ekstrakata gljiva Agaricus blazei K i Agaricus blazei B na rast Jurkat ćelija, koje predstavljaju ćelijsku liniju humanih T limfocita. Kontrolnim uzorcima nisu dodati ekstrakti gljiva, a ostalim uzorcima ekstrakti su dodati u koncentracijama 1 μg/ml, 100 ng/ml, 10 ng/ml, 1 ng/ml i 100pg/ml. Jurkat ćelije bile su izložene dejstvu bioaktivnih komponenata, polisaharida, β-glukana, koji su dobijeni vrelom vodenom ekstrakcijom i alkoholnom precipitacijom iz suvih karpofora gljiva i prečišćeni dijalizom. Posle 72 časa inkubiranja na 37ºC u atmosferi sa 5% CO2 utvrđen je njihov broj pri različitim koncentracijama ekstrakata gljiva. Od svih primenjenih koncentracija ekstrakata, najveći uticaj pokazala je koncentracija 1 μg/ml, koja je u slučaju ekstrakta gljive Agaricus blazei K dovela do smanjenja broja besmrtnih T limfocita, Jurkat ćelija, za 39.2%, a u slučaju ekstrakta gljive Agaricus blazei B, za 36.2%. .

Immunomodulatory activities of higher mushroom glucans depend on such chemical properties as their molecular weight, branching patterns, water solubility and tertiary structure. The aim of the study was to examine how glucans size and conformation affect their in vitro immunomodulatory properties. Measurements of the immunomodulatory capacity of Agaricus blazei and Phellinus linteus native glucans showed that A. blazei glucans expressed an immunostimulating effect on activated peripheral blood mononuclear cells (PBMCs) and the synthesis of interferon-gamma (IFN-γ). P. linteus glucans showed a characteristic immunosuppressive effect. The results obtained after the stimulation of cells with 1M H2SO4 and 1M NaOH treated glucans confirmed that the immunomodulatory activity of glucans was due to the size and conformation. Glucans of a lower molecular weight obtained after acid hydrolysis appeared to be effective immunostimulators of PBMCs. Obtained results indicated that the primary structure of glucans was of more importance then the tertiary structure of the triple helix for their immunostimulating activity. The study confirmed that the size and conformation of native P. linteus glucans were of a primary importance for their immunosupressive effect. Imunomodulatorska aktivnost glukana viših gljiva u funkciji je od njihovih hemijskih karakteristika, kao što su molekulska masa, stepen grananja, rastvorljivost u vodi i tercijarna struktura. Cilj ovog rada bio je da se ispita uticaj veličine i konformacije miko glukana na njihova imunomodularska svojstva, in vitro. Merenjem imunomodulatorskog kapaciteta Agaricus blazei i Phellinus linteus nativnih glukana pokazano je da A. blazei glukani imaju izraženo imunostimulativno dejstvo na aktivirane mononuklearne ćelije krvi iz perifernog krvotoka (PBMC-Peripheral Blood Mononuclear Cell) i stimulaciju sinteze interferona-gama (IFN-γ). P. linteus glukani su ispoljili izraženo imunosupresivno dejstvo. Stimulacijom ćelija glukanima koji su prethodno hidrolizovani 1M H2SO4 i 1M NaOH zaključeno je da su veličina i konformacija molekula bitne hemijske karakteristike od kojih zavisi njihova imunomodulatorska aktivnost. Glukani manjih molekulskih masa, nastali nakon kisele hidrolize, pokazali su se kao efikasni imunostimulatori PBMC ćelija. Ukazano je da je za imunostimulativnu aktivnost ovih molekula bitna primarna struktura, a ne konformacija trostrukog heliksa nativnih molekula. Ispitivanjem imunosupresivnog efekta P. linteus glukana na sintezu IFN-γ pokazano je da su za ovaj efekat bitna veličina molekula kao i konformacija nativnih molekula.

Savremeno tržište i potrošači sve više prepoznaju sektor funkcionalne hrane. Hrana je više nego ikad energija, medicina, filozofija, trend ali i nauka. Tako više nije dovoljno tvrditi da je neka namirnica blagotvorna po zdravlje čoveka. Potrebno je identifikovati aktivne komponente, utvrditi koje biološke osobine ispoljavaju, a potom i na koji način ih je moguće izolovati, te postupak učiniti komercijalnim. Medicinske gljive predstavljaju upravo takvu namirnicu, jer sadrže brojna aktivna jedinjenja poput polisaharida, fenolnih jedinjenja, proteina, triterpena. Polisaharidi gljiva najkompleksniji su molekuli u prirodi i kao takvi modulatori imunog odgovora. Biološki odgovori polisaharida su raznovrsni što je posledica različite građe, molekulske mase, konformacije i rastvorljivosti ovih molekula. Iako mehanizmi delovanja nisu potpuno razjašnjeni uočeno je da biološki efekat polisaharida gljiva može biti umanjen zbog relativno male rastvorljivosti u vodi. Takođe, postupak ekstrakcije može se negativno odraziti na biološka svojstva ekstrakta. Cilj ove teze bilо je dobijanje polisaharidnih ekstrakata odabranih gljiva te njihova strukturna modifikacija primenom specifičnih enzima koji vrše hidrolizu α-D-glikozidnih veza. Zatim, hemijska karakterizacija ekstrakata, a potom ispitivanje bioloških osobina (antimikrobnih, antioksidativnih, citotoksičnosti i sposobnosti inhibicije angiotenzin I-konvertujućeg enzima (ACE)). Konačno, ekstrakti su upoređeni na osnovu rezultata primenjenih metoda, te su njihove hemijske osobine dovedene u vezu sa biološkim svojstvima. To je trebalo da omogući selekciju optimalnih uslova za dobijanje biološki aktivnih polisaharida gljiva, i tako obezbedi standardizacija postupka za njihovo najbolje iskorišćenje. Ekstrakcija polisaharida odabranih gljiva, Fomes fomentarius, Auricularia auricula-judae i Sparassis crispa, izvršena je postupcima vrele vodene i alkalne ekstrakcije, a sirovi vodeni ekstrakt je i naknadno prečišćen dijalizom. Sirovi polisaharidni ekstrakti modifikovani su sukcesivnim dodavanjem izoamilaze, β-amilaze, α-amilaze i pronaze. Hemijska karakterizacija ekstrakata sprovedena je primenom Megazyme glukanskog kita, spektrofotometrijskim određivanjem sadržaja ukupnih ugljenih hidrata, proteina i fenolnih jedinjenja... ector of functional food is more and more appreciated by modern market and consumers. Food is energy, medicine, philosophy, trend and science, now more than ever. Claiming that some type of food has beneficial effect on human health without proving it is past. Active components have to be identified, as well as their biological properties. Furthermore, those components have to be extracted, and the extraction procedure has to be economically justified. Medicinal mushrooms fulfill all listed characteristics, since they contain active compounds like polysaccharides, proteins, triterpene, and phenolic compounds. Polysaccharides isolated from mushrooms are marked as the most complex molecules in nature, which makes them excellent immune response modulators. Biological effects of mushrooms polysaccharides are various due to the differences in their structure, molecular mass, conformation, and water solubility. Although the mechanisms of their action are not completely clear, it was noticed that the ability to dissolve in water strongly affects mushroom’s polysaccharides biological activity. Extraction procedure can have negative impact on biological effect of these molecules, too. The aim of this thesis was to obtain polysaccharide extracts of selected mushroom species, and to modify their structure with enzymes which hydrolyze α-D-glucoside bondages. Then, to characterize extracts, and to examine their biological activity (antimicrobial, antioxidative, cytotoxic and the ability to inhibit angiotensin I-converting enzyme (ACE)). Finally, the extracts were compared, and based on the results of applied methods their chemical characteristics were connected with biological activities. This approach should enable the selection of optimal conditions for the production of biologicaly active mushroom polysaccharides. Overall, results should provide the standardized procedure for the most efficient utilization of mushroom extracts. Peĉurke su bogat izvor gotovo svih esencijalnih aminokiselina i vitamina, mineralnih materija, ugljenih hidrata, proteina; imaju nizak sadrņaj masti, ali vrlo visok udeo nezasićenih masnih kiselina. Gljive roda Pleurotus, imaju vrlo visoku nutritivnu vrednost, a spadaju u grupu industrijskih gljiva, lako se gaje te se na njima uspeńno moņe pratiti mogućnost akumulacije i transformacije selena. Gljive imaјu razliĉit kapacitet usvaјanja selena, ńto zavisi od vrste gljive, hranljive podloge na koјoj јe gljiva odgaјana, kao i od oblika i koncentraciјe u kom јe selen dodat u podlogu. Oĉekuje se da će gljiva usvojiti uspeńno selen iz supstrata u vidu organskih i neorganskih jedinjenja u koncentraciji koja moņe da zadovolji dnevne potrebe ĉoveka. Kako gljive sadrņe bioaktivne komponente, dodatno selenom obogaćene peĉurke moguće јe koristiti u sveņem i suńenom stanju ili kao potencijalni dijetetski suplement. Praćen je rast micelijuma razliĉitih industrijskih gljiva na sladnom agaru sa selenom dodatim u obliku neorganskih i organskih jedinjenja. Selenski kvasac i kompleks cink (selenosemikarbazon) su stimulisali rast micelije gljive bukovaĉe, dok je natrijum selenit delovao inhibitorno. Rast micelijuma gljive Ganoderma lucidum stimulisan je selenskim kvascem. Kada je u pitanju gljiva Lentinus edodes, najbolji izvor selena bio je natrijum selenit, a organska jedinjenja selena su delovala inhibitorno. Ispitivana je mogućnost akumulacije i transformacije selena iz selenita (100 mg Se/kg supstrata), selenskog kvasca (100 mg Se/kg supstrata) i kompleksnog jedninjenja (50 mg Se/kg supstrata) u plodonosno telo model gljive Pleurotus ostreatus P70. Kod ostalih ispitivanih sojeva (Pleurotus ostreatus P80, Pleurotus salmoneostramineus i Pleurotus cornucopiae), praćena je mogućnost usvajanja selena samo iz selenskog kvasca kao najpogodnijeg izvora selena. Selen iz selenita efektno je akumuliran u plodonosno telo soja P. ostreatus P70, kao i selen iz organskog kompleksnog jedinjenja... Fungi of the genus Pleurotus, have high nutritional value, they are member of industrial fungi, easy to grow and the possibility of accumulation and transformation of selenium in fruit body is easy to be monitored. Mushrooms have a different absorption capacity of selenium, which is dependent on the type of substrate for mushroom growing, on the strain of fungi as well as the form and concentration of the selenium which is added to the substrate. It is expected that selenium is going to be accumulated by fungi easy from the substrate in the form of organic or inorganic compounds in a concentration that can satisfy the daily needs of the man. As enriched fungi contain bioactive compounds with selenium, they can be used as a potential pharmaceutical supplement or as fresh or dry fruit body. Mycelium growth of various industrial fungi on malt agar with selenium in the form of inorganic and organic compounds was monitored. Selenium yeast and complex zinc (selenosemicarbazone) stimulated the growth of Oyster mushroom mycelium, and sodium selenite seemed to be toxic. Mycelium growth of the fungus G. lucidum was stimulated by selenized yeast. When it comes to mushroom L. edodes, the best source of selenium was sodium selenite, and organic selenium compounds had inhibitory action. The possibility of transformation and accumulation of selenium from sodium selenite (Se 100 mg/kg of substrate), selenium yeast (100 mg Se/kg of substrate) and complex selenosemicarbazone (50 mg Se / kg substrate) in fruit body of model mushroom P. ostreatus P70 was examined. For other tested strains (P. ostreatus P80, P. salmoneostramineus and P. cornucopiae), only the possibility of accumulation of selenium from selenized yeast as the most appropriate source of selenium was examined.
