Abstract

Seven pigments including four new anthocyanins, caffeylmalonylcyanin, malonyl-cis-shisonin, caffeylcyanin and cis-shisonin, were isolated from Perilla leaves. The complete structures of these new anthocyanins were elucidated to be cyanidin 3-(6-O-trans-caffeylglucoside)-5-(6-O-malonylglucoside), 3-(6-O-cis-p-coumarylglucoside)-5-(6-O-malonylglucoside), 3-(6-O-trans-caffeylglucoside)-5-glucoside and 3-(6-O-cis-p-coumarylglucoside)-5-glucoside, respectively. The cis–trans isomerization and stability of these pigments are also described.
