Simple Summary: Analyses in this paper are concerned with one of the biggest avian raptors distributed widely across Eurasian territory. The White-Tailed Sea Eagle is considered one of the most important protected species of wetlands including plains and seashores. Monitoring heavy metal toxicity in raptors may contribute to the prevention of intoxication in other species, including humans. Researching their biology and different environmental connections may help protect the whole habitat. In the paper, the results of the analysis of the mineral composition of long bones collected from seven White-Tailed Sea Eagles are presented. Specimens came from the territories of Western Poland. It is the first paper describing the bone composition of this species. Mineral bone composition (dry matter, bones ash, P, Ca, Zn, Mn, Mg, and Cu) and Pb levels of tibiotarsi of seven White-Tailed Sea Eagles were assessed. Lead intoxication in different bird species including waterfowl and raptors is being studied worldwide. The bones were analyzed for Pb by mass spectrometry with excitation in inductively coupled plasma (ICP-MS Elan DRC II) and for bone composition by Atomic Emission Spectrometer (Agilent 4100 Microwave Plasma). Pb levels ranging from 3.54 µg/g to 74.6 µg/g DM suggest that some of the investigated birds might have been intoxicated by Pb. Results of this analysis were divided into two groups of bones, with bone Pb levels higher and lower than Pb toxicity levels, and mineral bone compositions of both groups were compared. The present study shows the differentiation of bone mineral composition among seven examined White-Tailed Sea Eagles, considered a specific species in raptors. Pb intoxication may not have a major influence on mineral bone composition in raptors. Simple Summary: The aim of this paper was to present the current situation of native sheep breeding in Poland, in terms of the significance and the effects of genetic resources protection programmes. The sheep farming tradition in Poland is deeply rooted in culture, particularly in the mountain and foothill regions. Sheep are permanently linked to many areas of country, not only playing an indispensable part in shaping the landscape, but also providing unique products. The most effective method of conserving native breeds is their sustainable management. It is important to maintain and develop the promotion and certification of high-quality products from native breeds and to control the endangered status of local breeds, which must be monitored and updated on an ongoing basis. The sheep population of native breeds, despite their unique features and the ability to adapt to harsh environmental conditions, has significantly decreased in recent years. Due to the low profitability of breeding, many local breeds of sheep in Poland were exposed to the risk of extinction. Many years of crisis in sheep farming have exacerbated this situation. The aim of this paper was to present the current situation of native sheep breeding in Poland, in terms of significance and effects of genetic resources protection programmes. The conservation of genetic resources of sheep aims to maintain and increase the population size while striving to maintain the greatest possible genetic variability. There are 17 native breeds included in the Polish sheep genetic resources conservation programme. A positive element of the implementation of the conservation of genetic resources programme for sheep is the accompanying measures which are based on the use of the non-productive role of the species. Extensive sheep grazing, as a form of nature conservation, serves to preserve valuable natural landscapes and the culture of local communities associated with sheep farming. Production and promotion of quality products, especially using niche markets and short production chains, are essential to ensure the economic viability of farms. These activities must be accompanied by raising public awareness of indigenous breeds and their alternative use in environmental activities, as well as their role in preserving the cultural heritage of local communities, for example through mountain grazing and the production of traditional products. There were assessed changes in bird habitat assemblages (ground/herb dwellers, bush foragers, ecotone birds, and tree foragers) associated with a gradient of invasion on sites (far from the invasion, uninvaded although susceptible to invaders, and invaded) set in European agricultural lands. The results indicated the impact of invasion on two habitat assemblages of birds (i.e., ground/herb species loss and creating the distinctive bush species composition) and a decrease in the abundance and species diversity of birds from the whole community in the invaded areas. Describing the spatial distribution of communities is crucial to understanding how environmental disturbance can affect biodiversity. Agricultural lands are susceptible to disturbances of anthropogenic origin and have been identified as ecosystems of conservation concern. Such lands are vulnerable to invasions by anthropogenically introduced non-native plants disturbing habitats. This research focused on the invasion-induced taxonomic filtering of birds with shared habitat requirements. The birds were surveyed along a gradient of invasion-altered areas (far from the invasion, uninvaded although susceptible to invaders, and invaded) to identify changes in bird assemblages (ground/herb dwellers, bush foragers, ecotone birds, and tree foragers) caused by this disturbance. Data were collected from 112 sites sampled in southeastern Poland. There were significantly fewer bird species from each assemblage on invaded sites than on uninvaded sites, although exposed to invasion, despite the decrease in the abundance of only ground/herb dwellers. Beta diversity analysis showed that sites with invasion contained bird communities significantly different from those at other sites. Invasion-induced changes resulted in a significant reduction in the diversity of ground/herb dwellers in comparison with uninvaded sites and created a distinctive bush bird assemblage. This was most likely due to the transformation of the grassland layer and the thickening of the shrub layer by plant invaders, which resemble shrubs in morphology. The results indicated the filtering effect of invasion on bird species composition at the level of two habitat assemblages despite the decreases in bird abundance and species diversity of the whole community. Simple Summary: The black stork is a large woodland bird. There has been a steady decline in its numbers in Europe in recent years. The safe development and independence of young individuals in the post-breeding period are crucial for the conservation of this species' population. This research uses GPS loggers to track young storks' use of space from the time of their first flight attempts until they finally leave the nest. During this period, the birds spend most of their time in an area less than 200 m away from the nest. They often rest outside the nest, with three-quarters of their resting places being within 500 m of the nest. Ensuring that the birds have peace and quiet during the nesting season in a zone 500 m from the nest is a good conservation strategy for this rare species. The black stork is a protected species in Poland, and its numbers have declined significantly in recent years. The protection of nesting sites during the period of growth and independence of young birds is crucial for the population. In 2022–2023, 34 young storks were equipped with GPS-GSM backpack loggers. On average, birds had left the nest by the 87th day of life. In the period between the first flight attempt and the final abandonment of the nest, the birds spent 82% of their time in a zone up to 200 m from the nest. During the period of independence, resting areas played an important spatial role, 75% of which were located within 500 m of the nest. As the young birds grew older, their area of activity gradually increased. Differences in nesting phenology were observed depending on the geographical location of the nest. A shorter migration route from the wintering grounds allowed for earlier breeding. As a result, the young birds begin to fledge earlier. The data collected confirm the validity of designating protective zones with 500 m radii around nests and the need to maintain them from the beginning of the breeding season in March until the end of August. The research material was collected from 20 archaeological sites, mainly early medieval settlements, such as strongholds, settlements, towns and horse graves. In the material examined, 186 cases of lesions were found. Of these, 26.9% were lesions of the spine, 39.8% lesions of the limb skeleton and 31.7% lesions of the head including dental pathologies. The work is the first comprehensive analysis of equine pathological changes from the Polish territory. Most of the lesions in the limbs involved their distal segments. The vast majority of pathological cases can be linked to animal use. It was found that horses in which pathological lesions were observed were used under cover. In one case, the observed cranial trauma was the cause of death associated with injury to the nasal auricles and large vessels and consequent blood loss and possible shock. Simple Summary: A primary cause of heavy metal pollution in the environment is human economic activity associated with increased industrialisation and urbanisation, agricultural development, transport, and energy production. The present study determines the degree of contamination by cadmium (Cd), a heavy metal, based on its concentrations in the organs of animals living in regions of Poland. Our findings indicate that Cd is present in the highest concentrations in the southern regions of Poland, where the mining, energy, metallurgical, and steel industries are located. Surprisingly, high Cd concentrations were also found in the northeastern region, which is generally considered to be unpolluted. The aim of this study was to determine the concentration of cadmium (Cd) in the organs of game animals from areas with different degrees of industrialisation and to assess its intake following the consumption of the livers of these animals. The material for this study consisted of liver and kidney samples taken from roe deer (Capreolus capreolus), red deer (Cervus elaphus), and wild boar (Sus scrofa) from five regions differing in land use and industrialisation. Compared to the kidneys, the liver was an indicator of the current state of the environment and Cd intake, while the kidney was used to assess the long-term accumulation of Cd in the body. The cadmium concentration in the samples was determined by inductively coupled plasma atomic emission spectrometry. The cadmium concentrations of the organs were found to vary according to geographical location, with the highest levels being observed in Southern Poland, i.e., areas characterised by the highest degree of industrialisation and the presence of heavy industry. However, high Cd concentrations were also reported in the northeastern region. Examples of excessive cadmium levels in the kidneys were noted in all tested regions. Cd intake by humans was evaluated by calculating the estimated daily cadmium intake, and this was compared with the tolerable weekly intake (TWI). Simple Summary: Mites are one of the most diverse groups of invertebrates that inhabit a wide range of environments. The acarofauna, and in particular Oribatida, inhabiting the nests of the White Stork and the Black Stork has not been thoroughly explored so far. The material collected from White and Black Stork nests in Poland was analyzed. This study presents original data on species diversity, abundance, density, and the age structure of Oribatida mites inhabiting the nests of two stork species that breed in Poland. Of the mites, the most numerous group was Mesostigmata. The average number of Oribatida (80.2 individuals in 500 cm3) was several times higher in the Black Stork nests than in the White Stork nests. Also, the species diversity of oribatid mites was greater in the Black Stork nests (47 species). The species diversity of oribatid mites was also greater in the Black Stork nests. In addition, we noted the potential importance of White and Black Stork nests for mite dispersion and the evolution of interspecies interactions. The White Stork (Ciconia ciconia) and the Black Stork (Ciconia nigra) are well-known model organisms for the study of bird migration, as well as the selectivity of nesting sites and the choice of living environment. The former breeds mainly in open areas, while the latter inhabits forest areas. The acarofauna, and in particular Oribatida, inhabiting the nests of these species, has not been thoroughly explored so far. Therefore, we analyzed the material collected from 70 White Stork nests and 34 Black Stork nests in Poland, between Poznań and Rawicz, and in Kampinos National Park. Our research has increased the faunal and ecological knowledge of the mite fauna inhabiting the nests of large migratory bird species. Oribatida constituted 5–12% of the total mites identified in the nests of White and Black Storks. Their average number was several times higher in the Black Stork nests (80.2 individuals in 500 cm3). Also, the species diversity of moss mites was greater in the Black Stork nests (47 species). In total, the nests of the two stork species were inhabited by 62 moss mite species, with only 22 recorded in both the White and the Black Storks' nests. The most numerous species included Ramusella clavipectinata, R. fasciata, Oppiella subpectinata, Acrogalumna longipluma, and Scheloribates laevigatus. In addition, we found that juvenile oribatid mites accounted for 0.6% of all the mites in the White Stork nests, with tritonymphs having the largest share, while juveniles in the Black Stork nests comprised 1.4%, of which larvae and protonymphs had the largest share. Our research shows that the nests of large migratory birds provide living space for many mite species. Simple Summary: The objective of our study was to evaluate the predictive ability of a multi-trait genomic prediction model to estimate heritability and genetic correlations of traits such as 305-day milk yield, milk fat percentage, milk protein percentage, milk lactose percentage, and milk dry matter percentage in the Polish Holstein population. Results showed that strong accuracies for the predictions were achieved. The genetic relations with milk yield were negative, as expected, because increasing milk yield decreases the milk components percentage. In conclusion, multi-trait genomic prediction can be more beneficial than single-trait genomic prediction. The objective of our study was to evaluate the predictive ability of a multi-trait genomic prediction model that accounts for interactions between marker effects to estimate heritability and genetic correlations of traits including 305-day milk yield, milk fat percentage, milk protein percentage, milk lactose percentage, and milk dry matter percentage in the Polish Holstein Friesian cow population. For this aim, 14,742 SNP genotype records for 586 Polish Holstein Friesian dairy cows from Poland were used. Single-Trait-ssGBLUP (ST) and Multi-Trait-ssGBLUP (MT) methods were used for estimation. We examined 305-day milk yield (MY, kg), milk fat percentage (MF, %), milk protein percentage (MP, %), milk lactose percentage (ML, %), and milk dry matter percentage (MDM, %). The results showed that the highest marker effect rank correlation was found between milk fat percentage and milk dry matter. The weakest marker effect rank correlation was found between ML and all other traits. Obtained accuracies of this study were between 0.770 and 0.882, and 0.773 and 0.876 for MT and ST, respectively, which were acceptable values. All estimated bias values were positive, which is proof of underestimation. The highest heritability value was obtained for MP (0.3029) and the lowest heritability value was calculated for ML (0.2171). Estimated heritability values were low for milk yield and milk composition as expected. The strongest genetic correlation was estimated between MDM and MF (0.4990) and the weakest genetic correlation was estimated between MY and ML (0.001). The genetic relations with milk yield were negative and can be ignored as they were not significant. Simple Summary: One of the few cattle breeds in the world undergoing restoration is the Polish White-Backed breed. The objective of this study was to use autosomal microsatellite markers to investigate genetic diversity in cows of this breed, taking into account their origin, and to evaluate their reproductive parameters. The findings of this work not only confirm the value of protecting local cattle breeds around the world, but may also be of importance in developing selection indices for highly productive breeds, in which reproductive functioning should be one of the most important factors considered. Local breeds are the main reservoir of biodiversity of farm animals. According to FAO, they account for 87% of all described breeds in the world. To ensure that they are adequately protected, they should be continually monitored for genetic variation. Another crucial factor is reproduction, which is the most important guarantee of population growth. In the present study, genetic variation in 372 Polish White-Backed cows was determined using DNA microsatellite sequences, taking into account their parentage. Reproductive parameters were analysed as well, based on data from 3658 lactations of 1128 Polish White-Backed cows. The results indicate that despite the small initial population and the implementation of a moderate selection of animals, the existing population of Polish White-Backed cattle has a high level of genetic variation, reflected in the degree of heterozygosity (0.761). Regarding reproductive traits, despite their late age at first calving, Polish White-Backed cows were shown to be distinguished by very good fertility parameters in comparison to other breeds raised in Poland. Simple Summary: The aim of this study was to determine and compare the nutritional value of meat from the four most popular cattle breeds in Poland. A study comparing the nutritional value and quality of beef from the Polish Holstein-Friesian (PHF) dairy breed with that from the Limousine (LM), Hereford (HH) and Charolaise (CH) beef breeds found that beef from beef breeds had higher levels of total antioxidant status (TAS) and degree of antioxidant potential (DAP) than PHF beef. The LM breed had the highest concentration of DAP, anserine, taurine, and creatine, while CH had the highest levels of TAS, carnosine, and coenzyme Q10. In addition, LM, CH, and HH had significantly higher levels of C18:2 cis-9, trans-11. The breed significantly influences the antioxidant potential of beef. The beef industry in Poland heavily relies on the Polish Holstein-Friesian (PHF) breed, known for its primary use in dairy production, but which also contributes significantly to the beef supply. In contrast, the Limousine (LM), Hereford (HH), and Charolaise (CH) breeds have gained popularity due to their ideal specialized characteristics for beef production. As PHF continues to dominate the beef market, a thorough comparison of its beef quality and nutritional attributes with the three most popular beef breeds in Poland is essential. This study aims to address this knowledge gap by conducting a rigorous comparison. The experiment was carried out on the beef from 67 bulls kept in a free-stall system with standardized feeding. The highest total antioxidant status (TAS) was found in CH and was 147.5% higher than that in PHF. Also, compared with PHF, a large difference of 70% was observed in LM, while in HH it was only 6.25%. For degree of antioxidant potential (DAP), the highest concentration was found in LM, while CH had a slightly lower score than LM. PHF had the lowest scores for each of the analyzed parameters of protein fraction. For anserine, taurine, creatinine, and creatine content, the highest results were found for LM. For carnosine and coenzyme Q10, the highest values were found for CH. Overall, these results highlight the impact of maturity and breed on carcass composition and quality. Late-maturing breeds, such as LM and CH, tend to exhibit leaner carcasses with superior fatty acid profiles and antioxidant properties. This knowledge is valuable for producers, enabling them to make informed decisions regarding breed selection and production strategies to meet specific market demands for beef with the desired composition and quality. Simple Summary: This paper describes a new species, Demodex crocidurae, inhabiting the hairy skin of Crocidura suaveolens. It also redescribes the most morphologically similar form: Demodex talpae from Talpa europaea, a species known from Hirst's 1921 description. Following a differential diagnosis, it was concluded that these are separate species with different features important in the taxonomy of Demodecidae, inhabiting analogous microhabitats in different species of hosts. Only six parasitic species of Demodecidae mite have thus far been described from the Soricomorpha, these being associated with the common shrew Sorex araneus Linnaeus, 1758, and the Mediterranean water shrew Neomys anomalus Cabrera, 1907 (two species from each host), and with the lesser white-toothed shrew Crocidura suaveolens (Pallas, 1811) and the European mole Talpa europaea Linnaeus, 1758 (one from each host species). Presently, Demodex crocidurae, a new species, has been described from the territory of Poland for C. suaveolens; in order to confirm its validity, it was necessary to redescribe D. talpae Hirst, 1921, from T. europaea, a demodecid species first described by Hirst in 1921 from England and then noted only in Poland. Both species colonized the hairy skin of the body in their hosts, where no disease symptoms of infestation were observed. However, D. crocidurae showed higher infection parameters (prevalence 100%, mean intensity 11.7, intensity range 3–26 individuals) than those of D. talpae (30.0%, 4.7, 2.0–8.0), possibly due to different host biology. Simple Summary: As a result of the increasing intensification and globalization of poultry production, the number of poultry breeds/varieties is consistently declining. The elimination of populations well adapted to local conditions risks losing desirable traits such as high survival rates, resistance to diseases and adverse environmental conditions, and high reproductive capacities. Production based on local breeds can be useful for use in agriculturally poor regions, contributing to the effective management of these areas and to the production of eggs and meat with a unique nutrition and taste. An analysis of the performance and egg quality of three hen strains included in a conservation program in Poland was carried out. It was shown that the random mating system used in the reproduction of flocks effectively protects populations from an increase in the degree of inbreeding. Hens kept in small, closed populations, in which selection aimed at improving performance traits was not carried out, retained their genetic distinctness, manifesting, among other things, in significant differences in performance traits and egg quality. The aim of the study was to evaluate the effect of genotype on the productivity and egg quality of three hen strains included in the genetic resource protection program in Poland. The study encompassed populations of laying hens, i.e., Rhode Island Red/RIR (R-11 and K-22) and Rhode Island White (A-33). The analysis over five generations included the basic production traits, i.e., the weight of the birds at 20 weeks (g), egg weights at 33 and 53 weeks, sexual maturity, the number of eggs laid up to 56 weeks of age, and hatchability parameters. In addition, the effective population size (Ne) and flock homozygosity coefficient (Fx) were calculated for each breed. Population health during the rearing and production periods was also recorded. The study also determined egg content and shell quality traits in relation to the age of the hens. The birds were kept on litter at a stocking rate of 5 hens/m2 and fed ad libitum with a standard feed mixture for hens. Based on the results, it was concluded that the evaluated hen populations (R-11, K-22, and A-33) are valuable strains, representing a reservoir of unique phenotypic and egg quality traits. It was shown that the random mating system used in the reproduction of flocks effectively protects the populations from an increase in the degree of inbreeding. An influence of hens' origin (genotype) and age on the performance results, as well as egg quality traits, was found. Over five generations, the evaluated hen strains were characterized by high survival rates (above 98%). The study also found a large variation between the R-11 and K-22 strains and the A-33 strain in terms of the evaluated performance traits, especially in the body and egg weights, sexual maturity age, and laying performance of hens. The earliest to start laying were hens from the K-22 strains, which also showed significantly (p ≤ 0.05) higher laying performances compared to R-11 hens. The results also indicate that the quality of eggs from hens of the compared strains varied. This was particularly true for such traits as shell color; egg, shell, and yolk weight; and shell quality. It was also shown that many egg and shell quality traits change with the age of the hens. Simple Summary: The European flounder (Platichthys flesus), which is closely related to the recently discovered Baltic flounder (Platichthys solemdali), is currently the third most commercially fished species in the Baltic Sea. The aim of this study was to obtain information on the current patterns of genetic diversity and the population structure of the European flounder and to verify whether the Baltic flounder is present in the southern Baltic Sea. Moreover, we aimed to verify whether the observed decline in the body condition indices of the species in the Baltic Sea might be associated with adaptive changes in its gene pool due to increased fishing pressure. The examined European flounder specimens displayed a high level of genetic diversity and represented a single genetic cluster. The applied molecular markers did not detect the presence of the Baltic flounder among the fish sampled from the studied area. Correlation analysis between genetic and morphological characteristics did not detect any signs of directional selection or density-dependent adaptive changes in the gene pool of the examined fish. According to the available data from the Polish Fisheries Monitoring Center and fishermen's observations, the body condition indices of the species in the Baltic Sea have declined in recent years. The aim of the present study was to obtain information on the current patterns of genetic variability and the population structure of the European flounder and to verify whether the Baltic flounder is present in the southern Baltic Sea. Moreover, we aimed to verify whether the observed decline in the body condition indices of the species in the Baltic Sea might be associated with adaptive alterations in its gene pool due to increased fishing pressure. For this purpose, 190 fish were collected from four locations along the central coastline of Poland, i.e., Mechelinki, Władysławowo, the Vistula Lagoon in 2018, and the Słupsk Bank in 2020. The fish were morphologically analyzed and then genetically screened by the application of nineteen microsatellite DNA and two diagnostic SNP markers. The examined European flounder specimens displayed a high level of genetic diversity (PIC = 0.832–0.903, I = 2.579–2.768). A lack of significant genetic differentiation (Fst = 0.004, p > 0.05) was observed in all the examined fish, indicating that the European flounder in the sampled area constitutes a single genetic cluster. A significant deficiency in heterozygotes (Fis = 0.093, p < 0.05) and overall deviations from Hardy–Weinberg expectations (H-WE) were only detected in fish sampled from the Słupsk Bank. The estimated effective population size (Ne) among the sampled fish groups varied from 712 (Słupsk Bank) to 10,115 (Władysławowo and Mechelinki). However, the recorded values of the Garza–Williamson indicator (M = 0.574–0.600) and the lack of significant (p > 0.05) differences in Heq > He under the SMM model did not support the species' population size changes in the past. The applied SNP markers did not detect the presence of the Baltic flounder among the fish sampled from the studied area. The analysis of an association between biological traits and patterns of genetic diversity did not detect any signs of directional selection or density-dependent adaptive changes in the gene pool of the examined fish that might be caused by increased fishing pressure. Simple Summary: Between 1996–2012, two outbreaks of animal tuberculosis were noted in the free-living European bison population in the Bieszczady Mountains, Poland. As the European bison is an endangered species and is particularly susceptible to tuberculosis, not to mention a national icon, the decision was made to test all deceased bison for TB in Poland. The screened bison were obtained by elimination due to poor health or natural death. A total of 159 animals have been examined over the last 10 years. Mycobacterium bovis and Mycobacterium avium spp. hominisuis were identified in two different herds. The isolation of M. bovis from European bison is the first case described in Poland. Previously, the only causative agent of tuberculosis identified in European bison in Poland, both in the wild and in captive herds, was Mycobacterium caprae. In the period 1996–2012, two outbreaks of animal tuberculosis were noted in the population of free-living European bison (Bison bonasus caucasicus) in the Bieszczady Mountains, Southern Poland. As the European bison is an endangered species and particularly susceptible to tuberculosis, not to mention a national icon, the decision was made to test all deceased bison for TB in Poland. The screened bison were obtained by elimination due to poor health or natural death. A total of 159 European bison have been examined over the last 10 years. The individuals came from four regions of Poland (Białowieża Forest, Bieszczady Mountains, Borecka Forest, Knyszyńska Forest), not only from the area where tuberculosis is still endemic. Mycobacterium bovis and Mycobacterium avium spp. hominisuis were identified in two different herds. The isolation of M. bovis from European bison was the first case described in Poland. So far, the only causative agent of tuberculosis identified in European bison in Poland, both in the wild and in captive herds, was Mycobacterium caprae. Simple Summary: Goat's milk has beneficial effects on health condition maintenance, physiological function, and nutrition of both children and elderly people, and according to some authors, can be consumed without inducing adverse symptoms by people suffering from cow milk allergy. The content of bioactive ingredients (fatty acids, vitamins, micro, and macroelements) in goat's milk and its products varies greatly and depends on many factors, for example, breed, animal husbandry conditions, lactation phase, and feeding. The nutritional importance of goat's milk increases in response to the growing interest of consumers. In Poland, the commercial offer of goat's milk products increases constantly. Local breeders and sellers appear on the market, offering their products, often of organic origin. Despite the growing popularity of goat products, the knowledge of their composition, including their health-promoting ingredients, is still incomplete. Therefore, the present study aimed to determine the contents of selected compounds, such as fatty acids, with particular emphasis on the content of cis9trans11 C18:2 (CLA) acid, minerals, and folates, in organic and commercial goat's milk and fermented goat's milk drinks available on the Polish market. The present study aimed to determine the content of health-promoting compounds, and fatty acids, with particular emphasis on the content of cis9trans11 C18:2 (CLA) acid, selected minerals, folates in organic and commercial goat's milk and fermented goat's milk drinks. The analyzed milk and yoghurts had various contents of particular groups of fatty acids, CLA, minerals, and folates. Raw organic goat's milk had a significantly (p < 0.05) higher content of CLA (3.26 mg/g fat) compared to commercial milk (2.88 mg/g fat and 2.54 mg/g fat). Among the analyzed fermented goat's milk drinks, the highest CLA content (4.39 mg/g fat) was determined in commercial natural yoghurts, while the lowest one was in organic natural yoghurts (3.28 mg/g fat). The highest levels of calcium (1322.9–2324.4 µg/g), phosphorus (8148.1–11,309.9 µg/g), and copper (0.072–0.104 µg/g) were found in all commercial products and those of manganese (0.067–0.209 µg/g) in organic products. The contents of the other assayed elements (magnesium, sodium, potassium, iron, and zinc) did not depend on the production method, but only on the product type, i.e., the degree of goat's milk processing. The highest folate content in the analyzed milks was found in the organic sample (3.16 µg/100 g). Simple Summary: This study aimed to estimate body weight from various biometric measurements and features such as genotype (share of Suffolk and Polish Merino genotypes), birth weight (BiW), sex, birth type and body weight at 12 months of age (LBW) and some body measurements such as withers height (WH), sacrum height (SH), chest depth (CD), chest width (CW), chest circumference (CC), shoulder width (SW) and rump width (RW). Simple Summary: This study assesses the state of mercury pollution in the ecosystems of two studied lakes and indicates which species of fish are safe for consumption by determining mercury levels in selected elements of the lake environment. It also examines the impact of selected biotic (length and weight of fish) and abiotic (Hg content, pH, O2 in water and sediment, water transparency) factors on the ability of fauna and flora to bioaccumulate mercury. Based on the maximum residue levels (MRLs), the muscles of pike, bream and roach from both lakes were found to be safe for consumption. No significant health risk was identified based on estimated daily intake (EDI), target hazard quotient (THQ) and tolerable weekly intake (TWI) values. Mercury, which tends to bioaccumulate and biomagnify in aquatic food webs, poses a potential health risk to wildlife and to consumers of predatory fish in particular. Its concentration in biota can be high even at low environmental concentrations. Therefore, the aim of this study was to determine mercury in both abiotic (water and sediment) and biotic elements (common reed (Phragmites australis) and fish: pike (Esox lucius), bream (Abramis brama) and roach (Rutilus rutilus)) in the context of assessing the pollution of two lakes in Poland and the safety of fish consumers. The possibility of Hg biomagnification in fish was also considered. Mercury was determined by means of cold vapor atomic absorption spectrometry (CVAAS). The concentrations of Hg in water and bottom sediments of Lake Ińsko were lower than in Lake Wisola. In the bottom sediments of both lakes, a positive correlation was found between the Hg content and organic matter. The concentration of mercury in the organs of common reed did not exceed 0.017 mg/kg dry weight (dw), and its distribution can be presented as follows: root > leaves > stems > rhizomes. In fish organs from both lakes, the average mercury content did not exceed 0.086 mg/kg of wet weight (ww) and in most cases it was the highest in pike. Higher values were only observed in the muscles and skin of roach. This indicates a lack of biomagnification in the relationships between planktivorous-predatory and benthivores-predatory fish. Based on the maximum levels of mercury in fish and the calculated parameters, i.e., estimated daily intake (EDI), target hazard quotient (THQ) and tolerable weekly intake (TWI), the muscles of the examined fish were found to be safe for consumption. Simple Summary: The European beaver is the biggest rodent in Eurasia and its diet is closely related to the season of the year. The gastrointestinal tract adapts its structure and physiology to ensure resistance to mechanical factors and proper digestion. Among mammals, the esophagus structure is highly variable. We aimed to perform morphological analysis of the esophagus in the European beaver, with a special attention to differences in the thickness of the epithelium in organs collected in spring, summer, and winter. Our results reveal that the mucosa is lined with stratified squamous keratinized epithelium with a structure similar to that of the skin epidermis. The process of epithelial keratinization occurs in both adult and fetal animals, suggesting that it is genetically programmed. The keratinized layer is much thicker in esophagi collected in winter than in spring and summer, while the living cell layer thickness remains unchanged regardless of the season. Moreover, immunohistochemical staining shows increased proliferation of epithelial cells in winter compared to that in spring and summer. Ultrastructural studies reveal the presence of multiple lamellar and non-lamellar bodies in granular cells, whose morphology and location gradually change while reaching the upper epithelial layers. The morphology of the esophagus in the European beaver displays features adapted to seasonal changes in diet. Future studies could employ biochemical characterization of keratinization process in the epithelium and composition of keratinized layer. The European beaver is a herbivorous rodent whose diet changes seasonally, and in winter consists of large quantities of woody plants. It is distinguished among other mammals by a unique organization of the stomach that comprises the cardiogastric gland and by the unusual process of mucus formation in the gastric mucosa. The aim of study was to (i) characterize the structure of the beaver esophagus with particular attention to the mucosal epithelium; (ii) compare the histological structure of the esophagi collected in spring, summer, and winter; (iii) provide preliminary data on the structure of the esophagus in beaver fetuses. The study was conducted on esophagi of 18 adult beavers captured in Poland in April, August, and December, and on 3 fetal organs. The results obtained in adults show that the mucosa is lined with thick stratified squamous keratinized epithelium with a structure similar to that of the skin epidermis. Ultrastructural studies reveal the presence of multiple lamellar and non-lamellar bodies in granular cells, whose morphology and location gradually change while reaching the upper epithelial layers. The muscularis mucosa comprises a layer of longitudinally oriented bundles of smooth muscle cells. Both mucosa and submucosa do not comprise any glands. The thick muscularis externa consists mainly of internal circular and external longitudinal layers of striated muscle fibers. The keratinized layer of mucosa epithelium was 2-3-fold thicker in esophagi collected in winter than in those collected in spring and summer, while the epithelial cell layer thickness remained unchanged regardless of the season. Immunolabeling for proliferating cell nuclear antigen shows a higher index of epithelium proliferation in esophagi collected in winter than in spring and summer. No seasonal differences were noted in other layers of the esophagus. Migratory birds can transfer parasites between ecosystems, thus increasing the size of their populations. The biodiversity of bird parasites and the predominance of specific parasite species can be influenced, as in the case of non-parasitic animals, by global changes in the environment, including climate change and anthropogenic transformation of ecosystems. The aim of the present research was to describe and compare helminth communities of Eurasian blue tit Cyanistes caeruleus and the Great tit Parus major, at the component community and infracommunity level, on the southern coast of the Baltic Sea during autumn migration to their wintering grounds. The main findings of the research were the presence of several parasite species that had not previously been recorded in these tits in Poland, the dominance of the digenetic fluke, and the high prevalence of the filarial nematodes. The research problem undertaken in this study is to determine the scale of infection of Eurasian blue tit Cyanistes caeruleus and Great tit Parus major and the biological diversity of their internal parasites, helminths. The aim of the study is to gain new knowledge about the structure of the helminth communities of the Eurasian blue tit and Great tit on the southern coast of the Baltic Sea during autumn migration to their wintering grounds. Helminths of tits were collected in 2008–2012 on the southern coast of the Baltic Sea in Poland. PAST v. 2.11 software was used for the calculations. Barcoding DNA was used to identify trematodes initially classified based on morphological characters to the genera Leucochloridium and Urogonimus. Cestodes Anonchotaenia globata were recorded for the first time in Poland. The Eurasian blue tit is a new host in Poland for three species of helminths: cestode Monosertum parinum and filarial nematodes, Cardiofilaria pavlovskyi, and Diplotriaena henryi. The Great tit is a new host in Poland for trematode Urogonimus macrostomus, cestode A. globata and M. parinum, and filarial nematode Diplotriaena obtusa. The nematode C. pavlovskyi was the species most frequently recorded in both host species. A high degree of similarity was found between the component communities and infracommunities of helminths in Eurasian blue tit and Great tit. Simple Summary: This paper aims to identify animal-based measures of geese welfare for birds raised in commercial meat production systems, and to assess the reliability of these measures. As with other livestock production systems, it is important that geese producers can demonstrate compliance with accepted welfare standards. Presently, there are no welfare measures that have been developed specifically for the geese meat industry. The results showed that plumage dirtiness, twisted wings, and broken/twisted wings are valid and reliable measures of goose welfare and can thus be included in on-farm welfare assessment protocols. Future studies should examine the reliability of other animal-based measures. Currently, no specific animal-based measures (ABMs) protocols are available for geese in commercial meat production systems. Following a critical review of the literature and consultation of experts, seven ABMs, potentially valid and feasible for the on-farm welfare assessment of geese, were identified and then tested in 12 farms in Poland to assess their inter-observer reliability. Two observers conducted the assessment, which was divided into two phases. First, a handling test assessed the human–animal relationship (HAR), and a 100% inter-observer reliability was achieved by the observers when evaluating the attitudes of stockpeople and the reactions of geese to humans. Next, an animal inspection was conducted, and the observers simultaneously and independently visually evaluated 100 randomly selected geese per farm and assessed whether the selected ABMs could be identified. In terms of inter-observer reliability, high correlation coefficients were found for plumage dirtiness (ρ = 0.745; p < 0.01), twisted wings (ρ = 0.890; p < 0.001), and broken/twisted wings (ρ = 0.858; p < 0.001). The results showed that plumage dirtiness, twisted wings, and broken/twisted wings are valid and reliable measures. Simple Summary: According to the available literature, high prolificacy in sheep breeds could be caused by differences in many genes (polygenic trait) or as in some sheep breeds to a difference in one gene such as BMP-15. This paper describes the use of the High-Resolution Melting method in quick identification of the known mutation in the BMP-15 gene, which affects high prolificacy in the Olkuska breed of sheep. Olkuska is a highly prolific sheep breed in Poland. Thanks to earlier identification of the genetic basis of its prolificacy, a mutation in the BMP-15 gene, we can use molecular biology tools to identify this causative mutation affecting prolificacy. In our research, we used the High-Resolution Melting (HRM) and Sanger sequencing methods to identify the genotypes of the studied animals. The result obtained by the HRM method is identical to those obtained by the sequencing method, which confirms the effectiveness of the HRM method and the possibility of quick and cheap identification of individuals with a FecXO mutation. Simple Summary: The authors aimed to investigate the possible impact of hormone levels during the reproductive cycle of gilts on the slaughter characteristics and meat quality. The levels of progesterone (P4) and LH were determined in the blood samples of the processed female pigs. Moreover, during the research, the biochemical and haematological properties of the blood were investigated. Additionally, the fat and meat content and other properties were determined. It was observed that some of the analysed properties of meat and blood varied as a result of increased levels of LH. The aim of the conducted research was to determine the impact of factors such as sex hormone levels, which vary during gilts' reproductive cycle, on the quality of the obtained meat and slaughter characteristics of the processed gilts. The research material included a population of 60 gilts slaughtered in one of the slaughterhouses located in south-eastern Poland. After the slaughtering operations were completed, the carcasses were weighed at the classification stand. The results of the statistical evaluation of the haematological and biochemical blood parameters of the examined gilts showed that, in the tested blood samples, the concentration of progesterone had a statistically significant impact only on the level of total protein, which was higher in the blood samples of gilts with a low concentration of progesterone. It was found that carcasses of gilts with higher levels of the LH hormone were characterized by a lower meat content index by nearly 3%. It was shown that the concentration of LH affected the post-slaughter temperature of the sirloin and ham muscles. The interpretation of the obtained data was difficult since there seems to be a gap in the literature concerning the dependencies of sex hormone levels in gilts and meat quality. Simple Summary: Traditional and regional cheeses are becoming more and more popular among consumers. Usually, they are produced in small dairy plants which are characterized by a unique microbiota of the processing area. The unique microbiota determines both the microbial quality and safety of the final products. Another issue related to the microbiological safety of food products is the presence of antibiotic resistance (AR) in microbiota, which is a potential health issue for humans. The AR was mainly investigated in pathogenic bacteria as a direct risk for effective antimicrobial therapy. However, the AR phenomenon is also present in desired food bacteria participating in the production of dairy products. These bacteria can be a reservoir of antibiotic resistance genes (ARG) in the environment, therefore monitoring AR in LABs seems to be an urgent need for ensuring the safety of food. In this work, we investigated the microbial diversity of ripened and unripened cheeses produced from cow, ewe, and goat milk in Poland, and identified LAB typical for cheeses and microbiota characteristic of the investigated types of cheese. Moreover, we assessed the phenotypic AR and the presence of ARG in lactic acid bacteria. (1) Unique sensory values of traditional and regional dairy products made them more and more popular among consumers. Lactic acid bacteria naturally occurring in these products can express antibiotic resistance and be a reservoir of antibiotic resistance genes (ARG) in the environment. The aim of the study was to characterize the microbial diversity of twenty regional cheeses produced from non-pasteurized cow, goat and ewe milk, and investigate the phenotypic and genotypic antibiotic resistance (AR) of lactic acid bacteria isolated from these products. (2) Conventional microbiological methods were applied for the enumeration of lactic acid bacteria (lactobacilli and lactococci) and their isolation, and for the enumeration of Enterococcus, Staphylococcus, Enterobacteriaceae and spores. The disc diffusion method was applied for phenotypic AR. The PCR-based methods were used for strain identification, microbiological diversity of cheeses (PCR-DGGE), and for AR gene detection. (3) Among 79 LAB isolates the most frequent species were L. plantarum (n = 18), Leuc. lactis (n = 17), Lc. lactis (n = 11), Leuc. mesenteroides (n = 9) and L. pentosus (n = 8). Additionally, by using the PCR-DGGE method, DNA of L. casei was found in nine products. Lactobacilli (5.63–8.46 log cfu/g) and lactococci (6.15–8.41 log cfu/g) predominated over Enterococcus (max. 4.89 log cfu/g), Staphylococcus (max. 4.18 log cfu/g), and Enterobacteriaceae (mostly up to 4.88 log cfu/g). Analysis of phenotypic resistance to tetracycline (30 µg), erythromycin (15 µg), and chloramphenicol (30 µg) showed that 29% of LAB isolates were resistant to one antibiotic, 8%—to two, and 12%—to all tested antibiotics. Antibiotic resistance genes (AGR) for tetracycline (tet(M), tet(L), tet(W)), erythromycin (erm(B)) and chloramphenicol (cat-TC) were detected in 30 (38%), 29 (36.7%) and 33 (43.4%) LAB isolates, respectively. Among 31 LAB isolates phenotypically susceptible to all tested antibiotics, only 5 (16%) had no ARGs. Simple Summary: Maintaining a genetic diversity in populations of endangered species is an important part of conservation biology and its programs focused on maintaining biodiversity. Gene banks are used to safeguard the genetic variability of populations. The management of genetic resources deposited in gene banks requires knowledge of the genetic profiles of the gamete donors and bioinformatics tools to process this information. In this work, we show how to use Genassemblage 2.2 software in managing the genetic variation deposited in a bank of cryopreserved semen. Our results showed that if we combine genetic profiles of gamete donors and bioinformatic techniques, we can identify a small group of semen samples that are enough to transfer all alleles detected across an entire set of samples. Consequently, we recommend the Genassemblage 2.2 software as a convenient tool in the management of genetic variation deposited in gamete banks. The management of genetic resources deposited in gene banks requires knowledge of the genetic profiles of the gamete donors and bioinformatics tools to process this information. In this work, we show how to use Genassemblage 2.2 software in managing the genetic variation deposited in a bank of cryopreserved semen. Our demonstration was based on the leuciscid fish species, lake minnow Eupallasella percnurus, which is designated as endangered in Poland. The semen samples (n = 192) were taken from four Polish lake minnow populations and frozen in the gene bank. Fin clips were taken and DNA extracted. Across 13 investigated microsatellite loci, 21–53 alleles were identified in each population and 66 in the entire group of samples. The module "Management of genetic variation in gamete bank" of Genassemblage 2.2 software was used to find the set of samples that will preserve 100% of the detected allelic diversity in the next generation. Our results showed that a small group of 4–19 semen samples was enough to transfer all alleles detected across this set of samples. We, therefore, recommend Genassemblage 2.2 as a convenient tool for the detection of genetic differences between donors, the construction of optimal sets of samples for conservation of genetic variation, and for managing genetic variation deposited in gamete banks. Consequently, it can be used in breeding human-dependent populations and to optimize the use of genetic diversity in samples in the gamete banks. Simple Summary: The increasing incidence of multidrug-resistant microbes is a major problem in human and veterinary medicine. In our study we assessed the prevalence and antibiotic resistance of Klebsiella spp. strains isolated from turkey broilers and breeders. The obtained results show that isolates have become more susceptible to most of the popular antimicrobials. One of the important problems in poultry production is bacterial infections and increasing resistance to antibiotics. The increasing incidence of multidrug-resistant bacteria is a major challenge for physicians and veterinarians and considerably limits treatment options. This study was undertaken in order to assess the prevalence and antibiotic resistance of Klebsiella spp. strains isolated from turkeys sampled from 2019 to 2022 in Poland. The material for study consisted of clinical samples taken during routine monitoring and microbiological identification testing at commercial poultry farms. From all 507 isolates of Klebsiella, 95% were identified by MALDI-TOF (Matrix-Assisted Laser Desorption - Ionisation-Time of Flight) as Klebsiella pneumonia, 2% were Klebsiella oxytoca, 2% Klebsiella variicola, or unidentified (1%). All isolated Klebsiella strains were tested for antimicrobial susceptibility by disk diffusion. The results of our study indicated that colistin, neomycin, florfenicol and amoxicillin/clavulanic acid were the most effective against the Klebsiella spp. isolated from turkeys. Simple Summary: The growing demand for functional foods has increased consumer interest in lamb and hogget. These types of meat deliver considerable health benefits; they are easily digestible, nutritious, and have desirable sensory attributes. In Poland, lamb meat is expensive due to high production costs and a high supply of lambs of wool breeds that are not suitable for fattening due to a slow growth rate. In view of the ongoing search for effective methods of producing high-quality lamb, the aim of this study was to compare the effect of diets containing high-moisture corn and triticale, as cheap grain feed, on nutrient digestibility and utilization, fattening performance, and the content of fatty acids in meat, and to investigate the rationale behind increasing the inclusion rate of cereal grain in finishing diets for lambs of a dual-purpose breed. The aim of this study was to evaluate the effect of diets with different inclusion levels of high-moisture corn (HMC) and triticale grain (TG) on nutrient digestibility and utilization, the growth performance of lambs, and the fatty acid profile of the leg muscle. The experiment was performed on 24 young rams, divided into four groups based on grain type and inclusion rate (50% or 75% DM). The higher inclusion rate of cereal grain and a lower concentration of crude fiber (CF) in the feed ration decreased CF digestibility by 26% and 35% in diets containing HMC and TG, respectively. Diets containing HMC increased crude fat digestibility relative to animals receiving TG. Final body weight and average daily gain were highest in lambs fed a diet containing 50% HMC. Grain type had no effect on nitrogen (N) retention or the proportions of SFA and UFA in lamb meat. Diets containing HMC decreased total cholesterol levels in the leg muscle. HMC can be a valuable component of diets for growing lambs when included at up to 50% of the ration. As predispositions for individual dental diseases differ among horse populations and age groups, this study aims to characterize the prevalence and frequency distribution of selected malocclusions and dental diseases among horses housed in the Mazovia region of Poland, using the prevalence and frequency distribution of selected malocclusions and dental diseases. Routine veterinary dental examinations were carried out on 206 horses, and the presenting signs of specific malocclusions and dental diseases were recorded for the incisor, canine, wolf, premolar, and molar teeth. Ninety-five percent of examined horses presented with a dental disorder in at least one tooth, with malocclusions more prevalent than dental disease in the incisors, premolars, and molars alike. Curvatures and calculus were the most commonly reported pathologies in incisor teeth, whereas sharp enamel points and caries predominated in cheek teeth. Dental disorders, a term encompassing both malocclusion and dental disease, constitute a serious health problem in horses worldwide. As horse populations differ among countries and regions, a geographically specific characterization of the occurrence of various dental disorders may be helpful for local equine practitioners. This study investigated the prevalence and frequency distribution of selected malocclusions and dental diseases in horses housed in the Mazovia region of Poland, with attention paid to variations among age, gender, and breed categories. Routine dental examinations were conducted on 206 privately owned horses (n = 206). Disorders were recorded using a dental chart and classified as either malocclusions or dental diseases. Out of all examined horses, 95% demonstrated at least one dental disorder, with a roughly equal distribution of these disorders among incisor teeth (31%) and cheek teeth (31% each for premolars and molars). More specifically, there were disorders noted in 14 incisors, 3 canines, 2 wolf teeth, and 15 cheek teeth. Across all age, gender, and breed groups, malocclusions of incisor, premolar, and molar teeth occurred with a higher prevalence than did dental diseases. Simple Summary: As a product originating from the most natural living conditions with free foraging, red deer (Cervus elaphus) meat is becoming increasingly popular among consumers. A greater supply of this type of meat can be ensured by dynamically developing red deer farming on permanent grasslands. The study presents a comparison of the properties of lipids and the content of cadmium and lead in the LL and SM muscles of red deer kept in forest, organic farm, and conventional farm feeding grounds. The greater species and phytoncide diversity in the organic feeding ground enriched the quantitative profile and significantly increased the content of beneficial polyunsaturated fatty acids (FAs) (CLA—conjugated linoleic acid, ALA—alpha-linolenic acid, AA—arachidonic acid, and EPA—eicosapentaenoic acid) and the sum of polyunsaturated fatty acids (PUFAs), n-6 PUFA, and n-3 PUFA, in comparison with conventional farm and forest feeding grounds. It also contributed to a significantly lower n-6/n-3 ratio in both muscles. The study provides valuable data on the nutritional value and ecological safety of venison, which should be regarded as a health-enhancing food product. Furthermore, the present results can help breeders to make decisions about the locations of farms and the choice of red deer nutrition strategies. The aim of the study was to compare the properties of lipids and the content of cadmium and lead in the meat of red deer (Cervus elaphus) kept in a forest feeding ground (FFG) and on organic and conventional farms in Poland. Longissimus lumborum (LL) and Musculus semimembranosus (SM) muscles were collected for the study from 36 red deer carcasses in an equal sex and age ratio (3 and 4 years old). From April to October, the animals consumed only the vegetation growing in the feeding grounds. The floristic and phytoncide composition, as well as the fodder value, of the feeding grounds were assessed. Additionally, the intramuscular fat and cholesterol content, the profile, sum, and ratios of fatty acids (FAs), lipid nutraceutical parameters, and cadmium and lead content were determined in LL and SM. The plant composition comprised 116 species in the organic feeding ground (OFG) and 78 species in the conventional feeding ground (CFG). The LL and SM muscles of the red deer from the organic and forest feeding grounds exhibited significantly lower amounts of fat and cholesterol than those from the conventional system. The differences in the fatty acid composition between the three groups were quite small. Differences in intramuscular fat content contributed to a higher percentage of PUFAs in the FFG and OFG, in comparison to the CFG. Simple Summary: The military and prestigious importance of the horse as a cavalry mount (hussars and lancers) in post-medieval Poland has been well recorded in the pages of chronicles and historical records. However, information about the horse from Poland's earliest Slavic history (10th–13th century) is very modest and can be found in few written sources. Therefore, to change this state of knowledge, data from archaeozoological and archaeological research were used to complement the information from chronicles. This was undertaken as part of a project focusing on the early medieval period. This article presents issues related to the role of the horse in religious rituals. This is discussed through a presentation of older and current views resulting from new research. The article presents and discusses textual and archaeological data supported by archaeozoological sources. The horse is known to be a military, elite and magical animal but also as the source of meat for food and bones for the manufacture of items. Although there is no doubt of treatment of the horse as a magical animal among the Slavs in Poland, it is clear that this animal was not buried in cemeteries in separate graves or with riders, as seen amongst contemporary neighbouring tribes. Knowledge about horses from early medieval (10th–13th c.) Poland has been largely based on historical and archaeological data. Archaeozoological information has only been used to a limited extent. Therefore, this article aims to present the current state of knowledge on this subject, drawing on archaeozoological data from studies of horse bones. Apart from confirming earlier reflections regarding the sacred significance of the horse, additional information was obtained about specific individuals who were the subject of magical treatments. It turned out that sites with horse skeletons and skulls are few compared to the familiar presence of horse remains among kitchen waste. This contrasts with the neighbouring regions, where horses were buried more frequently among the Germans, Scandinavians and Prussians. Some new data have been obtained thanks to taphonomic analyses, which demonstrated that horse skulls of apotropaic status were not only exposed to public viewing but were also deposited under stronghold ramparts. Horses suffering from infectious diseases could also be buried under such ramparts. Considerations in the article lead to conclusions that horses were used in religious rituals as sacrificial animals, apotropaic deposits, as fortune-telling animals and cosmological figures. Simple Summary: Infections caused by avian pathogenic Escherichia coli (APEC) represent a serious threat for poultry production and economic losses. These bacteria have a number of mechanisms that enable them to colonize various ecosystems. We analyzed E. coli from chicken and turkey broilers, laying hens, and broiler parents. In this work, we characterized virulence factors in APEC isolated from poultry in Poland. We also attempted to show a correlation between lesion severity, the presence of virulence genes, and the E. coli serogroup. The most prevalent serotype among E. coli isolates from all types of chickens was serotype O78, in contrast to isolates from turkeys, in which the prevalence of four serotypes, O1, O2, O18, and O78, was similar. Once the serotype was distinguished, it was possible to assign certain virulence characteristics to the isolate and to associate it with the symptoms present, as well as to track the frequency of occurrence. All of the eight virulence genes analyzed were most common in cases with severe, generalized disease processes. The results also confirmed that there is a great variety of APEC strains in the poultry population. Escherichia coli infections are a major problem in modern poultry production. Avian pathogenic E. coli (APEC) strains have several mechanisms that enable them to colonize various ecosystems. In this study, 290 E. coli isolates were recovered from clinical cases of colibacillosis in chicken and turkey broilers and from laying and breeding hens. The samples were taken from organs with pathological changes suggesting colibacillosis. The lesions were assigned to three groups depending on their advancement, of which the largest (60% of the isolates) was group 3, with the most extensive changes. The most common serotype was shown to be O78 (14%). The most frequently detected gene among those tested was iss, while papC was the least prevalent. An analysis of the number of genes present per isolate revealed that the presence of four genes was the most common (22%), while only 1% of the strains tested had all eight genes. The most frequently detected genes for each serotype were iss and iucD for O78; irp2 and cvi/cva for O1; irp2, iucD, and iss for O2, and iss and iucD for O8, for which the least frequent was papC. Our aim was to determine a metrical threshold between pellet groups of roe deer (native species) and fallow deer (alien species) to be applied during fieldwork. We measured the number of feces in the group, the length and width of five randomly selected feces from each pellet group and the length/width ratio. Roe deer pellets were shorter, narrower and less elongated than those of fallow deer; yet, length was found to be the best discriminant. The most accurate threshold was 1.2 cm. The mean number of pellets in a group was lower for roe deer than for fallow deer. A value of 50–52 pellets best differentiated between the two species. We therefore concluded that, on the basis of morphometric measurement, it is possible to distinguish roe and fallow deer feces. Simple Summary: Scientific research is an integral part of species protection. Thanks to the use of camera monitoring during a conservation project targeting a threatened Polish population of Osprey, we discovered that the influence of natural causes of brood losses is stronger than in previous years. This would be a kind of catastrophe for the species in the whole country. We conclude that only active protection and stopping the anthropogenic causes of Osprey mortality (e.g., poaching) could stop the decline in the population and give Poland a chance to not to be red spot on the European green map of Osprey. Poland is the only European country where the Osprey population is declining due to the mortality of adult birds from poaching, which impacts not only single breeding attempts but also the Lifetime Reproductive Success (LRS) of specimens. However, what if there came an extra mortality factor in the moment of the lowest numbers of Osprey, already vulnerable in the country? In the years 2018–2020, we installed 22 trail cameras and five digital cameras (live online video feeds) on the nests. The total failure level observed in cameras (18.5%) was high. We observed, using these cameras, the extra mortality of chicks (10.7% of potentially fledged chicks) and even adult birds by unexpected predation by Northern Goshawk and White-tailed Eagle. This phenomenon is also common in the national population, as we found a total of ten cases of total losses by predators (eight or nine of them were birds of prey), including nests not covered by camera monitoring. The extra adult-predation by Goshawks means an extra drop in LRS. Those adult and chick predations are an example of exceptional catastrophic phenomena, which have been described as the direct cause of the extinction of animal populations throughout history. Simple Summary: Bovine mastitis continues to be a leading cause of heavy economic losses in the dairy industry worldwide. Among a broad spectrum of infectious agents implicated in this pathology are unicellular, achlorophyllous microalgae of the genus Prototheca. The prevalence of mastitis due to Prototheca algae is currently increasing. The aim of this work was to explore a possible association of the kynurenine pathway of tryptophan metabolism with Prototheca mastitis. The authors were eager to know whether metabolites of tryptophan degradation can be used as markers of the protothecal bovine mastitis. Both tryptophan and its metabolite kynurenine occurred at a significantly lower level in the milk of cows with mastitis compared to healthy animals. Whereas the activity of indoleamine 2,3-dioxygenase, a key enzyme of tryptophan catabolism, was significantly higher in milk of mastitic cows compared to control animals. It was thus concluded that low values of tryptophan and kynurenine concentrations or elevated indoleamine 2,3-dioxygenase activity in milk samples can be used as markers of mastitis due to Prototheca spp. The aim of this work was to investigate serum and milk levels of tryptophan (TRP), kynurenine (KYN), and kynurenic acid (KYNA), as well as the activity of indoleamine 2,3-dioxygenase (IDO) in cows with mastitis due to Prototheca algae. The study was prompted by previous research showing a link between the KYN pathway of TRP metabolism and bovine mastitis of bacterial etiology. The study was carried out over a 2-year period (2018–2019) and included quarter milk and serum samples collected from six dairy herds in Poland. The samples were obtained from healthy cows and cows with Prototheca mastitis of either clinical and subclinical manifestation, as determined upon direct measurement of the somatic cell count or indirectly by performing a California Mastitis Test on suspected quarters. Both TRP and KYN concentrations were significantly lower in milk of mastitic cows compared to healthy animals (0.8 vs. 8.72 µM, p = 0.001; 0.07 vs. 0.32 µM, p = 0.001, respectively). The difference in TRP and KYN concentrations in the sera of the two animal groups was much less pronounced (25.55 vs. 27.57 µM, 3.03 vs. 3.56 nM, respectively). The concentration of KYNA was almost at the same level in milk (1.73 vs. 1.70 nM) and in serum (80.47 vs. 75.48 nM) of both mastitic and healthy cows. The data showed that the level of TRP and its metabolites in serum was conspicuously higher compared to milk in all cows under the study. The activity of IDO was significantly higher in milk of cows with Prototheca mastitis compared to healthy animals (71.4 vs. 40.86, p < 0.05), while in serum it was pretty much the same (135.94 vs. 124.98, p > 0.05). The IDO activity differed significantly between serum and milk both for mastitic (135.94 vs. 71.4, p < 0.05) and healthy cows (124.98 vs. 40.86, p < 0.001). Simple Summary: The use of an EM®Bokashi probiotic preparation containing specific Lactobacillus and yeasts strains as a feed additive resulted in the improved slaughter value, content of macroelements (Mg, Ca, Na) and chromatic color traits (b*, C*) of meat, but diminished the technological quality (pH, drip loss, TY, shear force) of pork. It additionally resulted in a significant increase in lactic acid bacteria (LAB) and yeast counts and a decrease in the population numbers of Clostridium and Enterobacteriaceae in gut microbiota. The aim of this study was to determine the effect of probiotics on gut microbiota, on carcass and meat quality and on mineral contents in the longissimus lumborum (LL) muscle in pigs. The research was carried out with 120 hybrid pigs deriving from Naïma sows and P-76 boars. Pigs from the experimental group received the EM®Bokashi probiotic (Greendland Technologia EM®, Janowiec n/Wisłą, Poland) in their feed (containing Saccharomyces cerevisiae, Lactobacillus casei and Lactobacillus plantarum). The study showed that EM®Bokashi probiotic supplementation resulted in a significantly higher count of lactic acid bacteria (LAB) and yeasts in the feed, a lower number of Clostridium in the mucosa and colorectal digesta as well as a lower Enterobacteriaceae count in the colorectal digesta. The research showed that carcasses of the pigs who received the EM®Bokashi probiotic had a higher lean percentage and lower fat content than the carcasses of the control fatteners. Diet supplementation with the EM®Bokashi probiotic resulted in a lower pH and technological yield (TY) and a higher drip loss and shear force at a lower protein content in LL muscle. Simple Summary: Methane is one of the main contributors to climate change. A potential to reduce emissions by genetic selection exists; however, the genetic architecture of methane production remains largely unknown. We aimed to estimate its heritability and to perform genome-wide association studies for the identification of candidate genes associated with daily methane production and concentration. Methane was measured in the air exhaled by dairy cows during milking in an automated milking system and was analyzed using genomic information that was available for some of the cows. We showed that methane production and concentration are partly controlled by genes; however, no major genes were found. The estimated heritabilities indicate that selection for lower methane emission could be successful. The genetic architecture of methane (CH4) production remains largely unknown. We aimed to estimate its heritability and to perform genome-wide association studies (GWAS) for the identification of candidate genes associated with two phenotypes: CH4 in parts per million/day (CH4 ppm/d) and CH4 in grams/day (CH4 g/d). We studied 483 Polish Holstein-Friesian cows kept on two commercial farms in Poland. Measurements of CH4 and carbon dioxide (CO2) concentrations exhaled by cows during milking were obtained using gas analyzers installed in the automated milking system on the farms. Genomic analyses were performed using a single-step BLUP approach. The percentage of genetic variance explained by SNPs was calculated for each SNP separately and then for the windows of neighbouring SNPs. The heritability of CH4 ppm/d ranged from 0 to 0.14, with an average of 0.085. The heritability of CH4 g/d ranged from 0.13 to 0.26, with an average of 0.22. The GWAS detected potential candidate SNPs on BTA 14 which explained ~0.9% of genetic variance for CH4 ppm/d and ~1% of genetic variance for CH4 g/d. All identified SNPs were located in the TRPS1 gene. We showed that methane traits are partially controlled by genes; however, the detected SNPs explained only a small part of genetic variation—implying that both CH4 ppm/d and CH4 g/d are highly polygenic traits. Simple Summary: Haematological examination can be used to address the health state of birds. The present study aimed to investigate how hatching order, brood size, and nest initiation date influence the haemoglobin level, red blood cell count, white blood cell count, and glucose level in the blood of raptor nestlings in which brood reduction occurs during nestling rearing. Blood samples were collected to assess the health status of wild marsh harrier nestlings in the agricultural landscape of eastern Poland. Statistical analyses revealed that hatching order, but not brood size or nest initiation date, had an impact on the haematological data of nestlings. Hatching order affected these data in that haemoglobin levels and red blood cell counts gradually decreased, whereas glucose levels and white blood cell counts increased, from the first- to the last-hatched nestlings. The poor condition of the youngest nestlings reflected in these indices may increase the likelihood of their perishing, and consequently, of brood reduction. Marsh harrier (Circus aeruginosus) is a species with obligatory cainism, in which hatching asynchrony creates a pronounced size hierarchy in nestlings. The size-related competitive advantage of older nestlings means that they tend to dominate the younger ones, and brood reduction occurs in most nests. The aim of the study was to reference values and carry out a haematological examination in order to evaluate the physiological status and health of nestlings with respect to hatching order, brood size, and nest initiation date. To do so, we examined 19 nests with a total of 58 nestlings from a free-living population of this species located in fishpond complexes in the agricultural landscape of eastern Poland. Repeated blood samples (118 in all) were collected from nestlings. The following parameters were measured using fresh full blood: red blood cell count (RBC), haemoglobin level (Hb), white blood cell count (WBC), and plasma glucose level (Glu). The data were analysed using generalized linear mixed models and linear mixed models ((G)LMM). The study revealed that hatching order, but not brood size or nest initiation date, affected the physical condition of marsh harrier nestlings. Hb levels and RBC counts gradually decreased, whereas Glu levels and WBC counts increased from the first- to the last-hatched nestlings. This result points to the generally poorer condition of the youngest nestlings compared with their older siblings. Simple Summary: The aim of the following research was an analysis of the occurrence of common equine viral infections in a Hucul herd, based on serological studies. This study provides epidemiological data concerning animals representing a semi-isolated herd, devoid of any specific prophylaxis. The obtained results provide a source of information on a primitive breed of horses, as well as giving an insight into viruses (among them, arboviruses) circulating within a local ecosystem. Huculs (Equus caballus) are an old breed of primitive mountain horses, originating from the Carpathian Mountains. To the best of our knowledge, data concerning the epidemiology of viral infections observed within this breed are sparse. The objective of this study was to estimate the serological status of a semi-isolated, unvaccinated Hucul herd, with respect to both common equine viral infections and horse-infecting arboviruses, the presence of which was previously reported in Poland. Twenty horses of the Hucul breed, living in a remote area in Poland, were studied in 2018 from March to May. Using nasal secretion swabs as a specimen source, isolation attempts were negative regarding ERAV, EHV-1, EAV, and EIV. According to the virus neutralisation method, in the sera obtained from the animals, antibodies against the following viruses were detected: EHV-1 in 12 horses (60%; with titres from 1:8 to 1:64), EIV A/H7N7 in 13 (65%; titres from 1:20 to 1:80), EIV A /H3N8 in 12 (60%; titres from 1:20 to 1:80), USUV in 5 (25%; titres from 1:10 to 1:80), and ERAV in 1 (5%; titre 1:32). Antibodies against EAV, EIAV, and WNV were not present in the tested sera. The detected presence of specific antibodies associated with five out of the eight equine viruses investigated indicates that the Hucul herd, due to its partial separation and lack of specific prophylaxis, could serve as a sentinel animal group for the detection of equine viruses/arboviruses present within the local ecosystem. Simple Summary: The aim of this study was to estimate the Magpie population and to give a detailed characterization of nest site selection in a medium size city in Poland (Gorzów Wlkp.) in the XXI century. We also focused on the analysis of nest site selection along an urban gradient. The average density of Magpies was 5.5 pairs/km2 (min = 0, max = 22 nests/square). The Magpie density in those study squares situated completely within the city boundaries of Gorzów Wlkp. was 6.9 p/km2, in the non-urbanized habitat type—3.7 p/km2, and in the urbanized habitat type—13.5 p/km2. The increasing proportion of the number of nests along the urbanization gradient shows that in Gorzów Wlkp., the Magpie population has undergone the synurbanization process and is currently in the "spread" phase. The study shows that Magpies can adapt to changing urbanization factors, and changes in the choice of conifers help the species to adapt to highly anthropogenic habitats. The Magpie Pica pica occurs all over open agricultural areas in Poland, especially near human settlements (particularly in western Poland). The aim of this study was to estimate the size of the local Magpie population and characterize, in detail, nest site selection in a medium size city Górzów Wlkp. in the XXI century. For this study, the whole city was divided into a total of 114 squares of 1 × 1 km. Data were collected in spring 2014. A total of 474 Magpie pairs were recorded. The average density was 5.5 pairs/km2 (min = 0, max = 22 nests/square), in the non-urbanized habitat type—3.7 p/km2, and in the urbanized habitat type—13.5 p/km2. Magpie nests were found most often on Spruces Picea sp. and Poplars Populus sp. The mean height of the nest site was 11.5 m, while the mean height of trees used for nesting was 13.4 m. The type of tree arrangement most frequently used for nesting was tree rows (26.3%), followed by single trees (24.6%) and clusters of 4–10 trees (20.1%). The results for the Magpie's environmental preferences do not differ from the general patterns described earlier. We investigated how traditional care of dogs affected rural birds and other animal populations. Simple Summary: Lipoptenafortisetosa is an invasive, hematophagous insect, which lives on cervids and continues to spread across Europe. The species originated from the Far East and eastern Siberia. Besides wild animals, these ectoparasites can attack humans, companion animals, and livestock. These insects may also play a role in transmitting infectious diseases. The objective of this study was to confirm the presence of L.fortisetosa in north-eastern Poland and to characterize the examined population with the use of molecular methods. Deer keds were collected from six natural forests in the region of Warmia and Mazury. DNA of L.fortisetosa was extracted and subjected to molecular studies. Two species of deer keds (Lipoptenacervi and L.fortisetosa) were obtained in each location during field research. There were no differences in the sex distribution of these two ectoparasite species. During the research, more L.cervi than L.fortisetosa specimens were obtained. The studied insects were very closely related to specimens from Lithuania, the Czech Republic, and Japan. Our study indicates various ectoparasite lineages, and such research contributes to the improvement of basic knowledge on the distribution, genetic structure, and variability of the invasive ked fly L. fortisetosa. Recent years have witnessed an increase in the population of Lipoptenafortisetosa in Central Europe. The genetic profile of this ectoparasite has not been studied in Poland to date. The aim of the present study was to confirm the presence of L.fortisetosa in north-eastern Poland and to characterize the examined population with the use of molecular methods. Deer keds were collected between June and July 2019 in six natural, mixed forests. A fragment of the rRNA 16S gene was used as a marker to identify L.fortisetosa by polymerase chain reaction (PCR). DNA samples were sequenced in the last step. Six new locations of L. fortisetosa were confirmed. No significant differences were observed in the sex ratios of L. cervi and L. fortisetosa (L. cervi p-value = 0.74; L. fortisetosa p-value = 0.65). Significant differences were noted between the total size of L. cervi and L. fortisetosa populations (p-value < 0.001). The similarity to GenBank sequences ranged from 95.56% to 100%. The obtained nucleotide sequences were very closely related to L. fortisetosa sequences from Lithuania, the Czech Republic, and Japan. Molecular analyses revealed considerable genetic diversity, which could indicate that various ectoparasite lineages have spread throughout Europe. [ABSTRACT FROM AUTHOR]

Simple Summary: Toxoplasma gondii is a significant pathogen affecting humans and animals. Rodents are known to be reservoir hosts of T. gondii and therefore play a significant role in the dissemination of this parasite. We conducted seromonitoring for T. gondii in four sylvatic rodent species in Poland. We report an overall seroprevalence of 5.5% (3.6% for Myodes glareolus and 20% for other vole species). Seroprevalence in bank voles varied significantly between host age and sex. Our results, therefore, make a significant contribution to the understanding of the role of wild rodent populations in the maintenance and dissemination of T. gondii and identify key factors that affect the magnitude of seroprevalence in specific host populations. Toxoplasma gondii is an intracellular Apicomplexan parasite with a broad range of intermediate hosts, including humans and rodents. Rodents are considered to be reservoirs of infection for their predators, including cats, felids, pigs, and wild boars. We conducted a multi-site, long-term study on T. gondii in northeastern Poland. The study aimed to monitor the seroprevalence of T. gondii in the four abundant vole species found in the region (Myodes glareolus, Microtus arvalis, Microtus agrestis, and Alexandromys oeconomus) and to assess the influence of both extrinsic (year of study and study site) and intrinsic (host sex and host age) factors on seroprevalence. A bespoke enzyme-linked immunosorbent assay was used to detect antibodies against T. gondii. We examined 577 rodent individuals and detected T. gondii antibodies in the sera of all four rodent species with an overall seroprevalence of 5.5% [4.2–7.3] (3.6% [2.6–4.9] for M. glareolus and 20% [12–30.9] for M. arvalis, M. agrestis, and A. oeconomus). Seroprevalence in bank voles varied significantly between host age and sex. Seroprevalence increased with host age and was higher in females than males. These results contribute to our understanding of the distribution and abundance of T. gondii in voles in Poland and confirm that T. gondii also circulates in M. glareolus and M. arvalis, M. agrestis and A. oeconomus. Simple Summary: For the last decade, capons have become very popular because of the specific quality traits of their meat. In case of laying hens caponization may be a solution to the problem of redundant roosters. The Greenleg partridge breed, covered by a program for livestock genetic resources conservation in Poland, consisted of attraction, as the oldest Polish hens breed, as well as the source of poultry products (eggs and meat) in a small farm. The cockerels are often intended for caponization, due to Polish tradition and consumer preferences. However, this procedure influences not only their productivity or meat quality, but also physiological aspect of birds. We were interested not only in capons compared to roosters, but also in relation between sexes in case of productive traits as well as their selected physiological traits. The sex effect was found in all experimental aspects. Cocks had the highest carcass yield, however, the biggest breast muscles proportion were stated in capons carcasses. The highest proportion of abdominal fat pad was found in females but the lack of sex hormones in capons also contributed to a higher fat accumulation. The serum profile showed that the sexual maturity of hens increased lipids content (cholesterol, trigliceroles) caused by laying production. The aim of the study was to assess the influence of sex, including caponization, on selected physiological and productive traits of Greenleg partridge (GP) birds. The study material consisted of 120 GP chicks (40 females and 80 males), divided into 3 equal groups (4 replication in each) and kept in litter system and fed ad libitum. A total of 40 cocks have been surgically castrated. The body weight (BW) of birds were measured biweekly. At the age of 24 weeks 8 birds/group were slaughtered, their carcasses were subjected to simplified dissection. Blood samples were collected and among others biochemical profile of serum was established. The lowest BW, regardless of age, had hens. From 18th week capons had the highest BW and finally it was similar to cocks. Cocks demonstrated, significantly, the highest carcass yield, however, the biggest proportion of breast muscles were stated in capons carcasses. Simple Summary: Predators may present various feeding strategies, i.e., being either food specialists or opportunists. At the same time, their diets change to reflect the prey availability and to avoid competition for food resources. We performed this research in a highly transformed field and forest mosaic and in an area with a high abundance of avian predators (owls and birds of prey, ~133 breeding pairs in total). We calculated the food niche overlap statistics to show the competition for food resources between coexisting species. We assessed the diet composition on the basis of pellet analyses and the identification of prey remains collected from under nests during the breeding season. The food niches overlapped moderately with only one exception, i.e., the highest niche overlap was recorded for the common buzzard and common kestrel, two species preying in open spaces on field rodents but switching to soricomorphs when the former were scarce. On the contrary, the most separate food niche was that of the white-tailed eagle, which was the only species regularly preying on fish. Our results showed that the food niches of species coexisting in the same area were considerably separate, which is due to the fact that they prey on various prey species or search for them in different habitats. Simple Summary: Decades of selective breeding carried out on fur farms have changed the morphology, behavior and other features of the American mink, thereby differentiating farm and feral animals. The uniqueness of this situation is not only that we can observe how selective breeding phenotypically and genetically changes successive generations, but also that it enables a comparison of farm minks with their feral counterparts. Such a comparison may thus provide valuable information regarding differences in natural selection and selective breeding. In our study, we found significant morphological differences between farm and feral minks as well as changes in body shape: trapezoidal in feral minks and rectangular in farm minks. Such a clear differentiation between the two populations over a period of several decades highlights the intensity of selective breeding in shaping the morphology of these animals and gives an indication of the speed of phenotypic changes and the species' plasticity. This also suggests that the selective forces (selective breeding vs. natural selection) acting upon body dimensions of minks vary between feral and farm populations. In this study, we performed a comparative analysis of the morphological traits between feral (n = 43) and farm (n = 200) individuals of the American mink in Poland to address the question of how multigenerational intensive selective breeding has morphologically differentiated these two populations. Nine body measurements and two proportion coefficients were obtained using adult individuals. The significance of differences between population means was assessed using the Wilcoxon test for independent samples, while the Kruskal–Wallis test was used to compare sex-population groups. Spearman's correlation coefficients between measurements were estimated for each population. We also performed Principal Component Analysis (PCA) to identify the variables that were most closely correlated with variation in the trait measurements and to investigate the morphological differences between farm and feral minks. We found that the farm minks exhibited significantly higher mean values for eight out of eleven studied traits. Moreover, significant changes in forelimb length, with no concomitant changes in hindlimb length, were accompanied by differences in body shape: trapezoidal in feral minks and rectangular in farm minks. The PCA suggested an almost complete separation of the two populations and indicated that sexes were quite separate; farm males in particular constitute a wholly discrete cluster. Such a clear differentiation between the two populations and sexes over a period of several decades highlights the intensity of selective breeding in shaping the morphology of these animals. Simple Summary: Wroclaw, the capital of Silesia located in south-western Poland, was one of the most important settlement agglomerations in the Western Slavic region in the period from the mid of the 10th to the 12th/13th century. The center of Wroclaw was a multi-part fortified settlement located on the Ostrów Tumski Island, the seat of the ducal and church authorities in the Middle Ages. Apart from spectacular finds of architectural monuments and elite products from various spheres of material culture, thousands of seemingly less interesting artefacts were found in Ostrów Tumski, among them a series of over 100,000 animal remains. A detailed and multifaceted analysis of the archaeozoological materials from Wroclaw clearly shows various interactions between the inhabitants of the stronghold and the animals living among them or nearby. One of the most important species in everyday life of the settlement was the horse. This animal is primarily associated with horseback riding and knighthood, possibly also with draught purposes. However, were these really the only functions of the horse and other equids? The aim of this article is to show the varied role of the horse, inter alia, its usage as a raw material source for the production of items made of bone, hair and leather, and sometimes even for food. The following article concerns the functional use of horse bones in the early Middle Ages (mainly in the period from the mid of the 10th to the 12th/13th century). The authors try to explain how such remains were used and how common it was. It is also discussed whether the special role of the horse in medieval societies somehow restricted its post-mortem usage, or perhaps there was no difference between the skeletal remains of horses and other species in this regard. For this purpose, statistical calculations on the use of the bones of various mammals were made. Only the remains of the species determined during the archaeozoological analysis were taken into account. The specific use of individual parts of a horse skeleton was also noted. In addition, the analysis also encompasses all other types of horse remains that could be used by humans (hide, hair, etc.). The consumption of horse meat was discussed separately: on the basis of the preserved traces, an attempt was made to determine whether it had happened, and if so, how popular it had been. Overall, such comprehensive analysis aims to show the various roles of the horse. It was not only a mount, but also a beast of burden, a source of food and raw material as well. The main purpose of this study is to describe the role of horses in human medieval societies of Ostrów Tumski on the basis of accessible equid remains. The highlighting of the human–horse relationship in the past allows us to understand the importance and value of the horse both as a life companion and the source of food or leather and bone tools. Simple Summary: Reproductive biotechnics of Cevidae species may increase valuable traits for the agricultural sector, and improve genetic diversity in relatively small farmed populations. The first step of biotechnics in terms of suitability for embryo transfer or insemination is preparation of females for proper phase of the estrous cycle. Based on available synchronization protocols applicated in red deer and domestic ruminant females we estimated the protocol for hinds in view of future routine use. Progestin analogues in the form of an insert (CIDR) or a sponge (Chronogest) and injection of equine chorionic gonadotropin (eCG; Folligon) were used on the appropriate day for inducing the estrus. The effect of synchronization was checked by measurement of progesterone (P4) and 17-beta estradiol (E2) concentration by RIA, pregnancy-associated glycoproteins (PAG)s concentration by EIA and insemination effectiveness—pregnancy rate. The better method of the estrous cycle synchronization found down to be progestin sponge and eCG based protocol in hinds considering hormone responsiveness and pregnancy rate. The aim was to estimate the effective pharmacological method of the estrous cycle synchronization by checking the effects of synchronization by measurement of progesterone (P4) and 17-beta estradiol (E2) concentration by RIA and artificial insemination. The experiment was performed at the red deer farm in Rudzie (North-East Poland; 3 year's old). The herd (N = 14) was kept away from bulls and was divided in two groups of seven animals. In the Group I, CIDR insert (0.3 g of P4) was applicated intravaginally for 12 days; a second insert replaced the first one for the next 12 days, and next 200 IU of equine chorionic gonadotropin (eCG) was injected intramuscularly (Folligon). Estrus was expected 48 h after eCG injection. In the Group II, Chronogest sponge (20 mg of flugestone acetate) was applicated intravaginally and after 7 days replaced with second chronogest sponge for 7 days. After removing the sponge, on the same day eCG was injected and estrus was expected after 48 h. Artificial insemination was provided with frozen-thawed semen twice: 12 and 24 h after expected estrus. The peripheral blood from the jugular vein was collected each time when the inserts or sponge were applicated and 40 days after insemination. The concentration of P4 and E2 in plasma was measured by RIA. The effectiveness of insemination was monitored by pregnancy-associated glycoproteins determination and observed by the number of calves born. Two pregnancies were confirmed in Group I and five in Group II based on PAG concentration. One newborn was observed in Group I and five in Group II. Both methods of synchronization are effective in hinds based on the received profile of steroids. Although the sponge shape in case of chronogest is better comparing with CIDR, which was not completely deposited in the vagina of hind, potentially leads to bacteria inflammation, and it disturbs the rightful endocrine regulation. Simple Summary: Beef is an important natural source of nutrients as well as of bioactive ingredients that improve our health. It is an excellent source of alanine, creatine, carnosine, anserine, and polyunsaturated fatty acid (PUFA), which plays an important preventative role in carcinogenic processes. The strategy for rearing and feeding cattle for slaughter should be directed at reducing saturated fatty acid (SFA) in beef fat and/or increasing PUFA, especially n-3. Therefore, the aim of the study was to determine the influence of breed types on the nutritional and pro-health quality of beef. The experiment was conducted in Poland, on 62 bulls from three breeds: Limousin, Polish Holstein-Friesian, and Polish Holstein-Friesian × Limousin. Bulls were slaughtered at 21–23 months of age, and samples of semimembranosus muscle (300 g) were cut parallel to the muscle axis at 24 h postmortem. It can be concluded that commodity crossbreeding significantly improved the quality of beef, resulting in similar or even better results than purebred cattle. Meat from commercial breed cattle are very often used to crossbreed with dairy breeds. The effect of heterosis is most evident when crossbreeds are genetically different from each other. Therefore, the aim of the study was to determine the influence of breed types on the nutritional and pro-health quality of beef. The experiment was conducted on 62 bulls from three breeds: Limousin, Polish Holstein-Friesian, and Polish Holstein-Friesian (PHF) × Limousin. During the fattening period, the animals were fed ad libitum using the same diet. Bulls were slaughtered at 21–23 months of age. The meat of PHF × Limousin hybrids was characterized by the lowest level of SFA and the highest content of n-3 PUFA fatty acids, carnosine, and α-tocopherol compared to the values obtained for the Polish Holstein-Friesian and Limousin breeds. In the case of PHF × Limousin hybrids, there was a 6% increase in n-3 PUFA, 21% in carnosine, and 66% in α-tocopherol compared to the Polish Holstein-Friesian breed. Commodity crossbreeding significantly improved the quality of beef analyzed in this study, resulting in similar or even better results than purebred cattle. Simple Summary: Pork is the most popular meat among consumers in Poland, but it can also be a source of pathogens. Therefore, there is a need to find effective prophylaxis in order to ensure that consumers have access to safe food with the desired nutritional qualities and, above all, food that is free of pathogens. In order to meet these expectations, producers use probiotics containing effective microorganisms (EMs) offered in the market. In this study the same probiotic, EM Bokashi, was used for the first time in combination with three nutritional variants with proteins of different origin. The aim of the study was to determine how effective microorganisms influence meat quality, the microstructure of the longissimus lumborum muscle, and electrophoretic protein separation. The study group consisted of 150 piglets divided into three feeding groups: C, E1, and E2. The feeding groups included C—a standard fodder blend with a full share of post-extracted soya meal; E1—a 50%/50% mix of pea and lupine/soya bean in phase I of fattening and a 75%/25% mix of pea and lupine/soya bean in phase II of fattening; and E2—a 50%/50% mix of pea and lupine/soya bean in phase I of fattening and in 100% pea and lupine in phase II of fattening. The experimental factor was the addition of the EM Carbon Bokashi probiotic to the diet (C + EM, E1 + EM, E2 + EM). Influence of the feeding system on the following parameters was also estimated. After slaughter, the meat quality, LL muscle microstructure, and electrophoretic protein separation were assessed. In the C + EM group, a lower water-holding capacity was demonstrated. Meat from pigs fed the effective microorganism additive was much harder in the E1+EM group compared to meat from pigs from the E1 group. A beneficial effect of effective microorganism was found in the E2 + EM group, where less thermal leakage from the meat was demonstrated. A beneficial effect of the feeding system on thermal leakage and loin eye area in the E2 + EM group was demonstrated. In the C + EM group, a lower total number of muscle fibers was demonstrated. The addition of effective microorganism caused an increase in the diameter of fast twitch fibers in the E1 + EM group. In the same group of pigs, effective microorganisms caused a lower proportion of fiber fission. This nutritional variant appears to be the most appropriate for proteins as well, because it led to the most favorable percentage of individual proteins after effective microorganisms supplementation in the longissimus lumborum muscle. Simple Summary: This review describes the most popular methods used for treating animals in Poland from the 16th to the 20th century described in Polish veterinary literature. Bloodletting, setons, 'fonticulus', cauterizations, injections and other former veterinary methods are described. This review presents the development of veterinary medicine from ancient cures to a modern branch of science. Several methods of surgical treatments have been used in the history of Polish veterinary medicine, many of which have now been forgotten. In the present study, a review was conducted of Polish-language veterinary medicine books published from the 16th century (when the first books in Polish were printed) to the 20th century. The article contains a description of the most popular surgical methods used in animal treatment in Poland over the centuries including, among others, bloodletting, setons, fonticulus and cauterization. This article reviews historical veterinary methods and traces the development of Polish veterinary medicine from ancient cures often based on humoral theory to a modern branch of biologic science.
