Abstract

L'etude des parametres cinetiques, biochimiques et une technique alliant chromatographie d'exclusion et utilisation d'un laser a petit angle, permettent de montrer que l'hydrolyse de trois polysaccharides (amylose, amylopectine et glycogene), pourtant de meme composition chimique, est fonction du nombre de ramification de chaines polysaccharidiques
