The social and cultural representations of food are essential when it comes to understanding the perception of risk and the trust/distrust that people place on it. In this paper, we analyse the attributes and categories that non-dependent older people aged 65 and over living in Spain use when talking about trust/distrust in relation to food. In order to explore how they manifest different social meanings, we have conducted a study based on an analysis of cultural domains. The results of examining free-listing and pile-sort techniques were triangulated with the narratives obtained from interviews, life histories, food diaries and participatory workshops. The ethnographic research was conducted between June 2021 and June 2022 in the autonomous communities of Andalusia and Catalonia as well as the Valencian Community. Understanding the criteria for trust and distrust through the analysis of cultural domains allows us to better comprehend what food risks are perceived by older people and what value they place on food safety in their food choices. Abstract: The application of genetic engineering to agriculture has led to an important and controversial innovation in the food sector, so-called Genetically Modified (GM) food. A great deal of literature has studied cognitive and attitudinal factors conditioning consumers’ acceptance of GM food, knowledge being one of the most inconsistent variables. Notwithstanding, some authors suggest closer attention should be paid to “science literacy”, even more so than knowledge. This paper studies the potential role of consumer literacy fields – i.e. consumer scientific–technical or social–humanistic literacy – in determining consumer choice behaviour towards GM foods. We analyse the strength of the moderating effects produced by consumer university training in some of the most important factors which influence consumers’ innovative product acceptance, such as perceived benefits and risks, attitudes to GM technology, trust in institutions or knowledge. The research is performed in southern Spain, using a variance-based technique called Structural Equation Modelling by Partial Least Squares (PLSs). The results show that perceived benefits and risks play a significant role in shaping behavioural intentions towards GM food, the attitude to GM technology being the main driver of consumers’ beliefs about risks and benefits. Additionally, behavioural intentions display some differences between the scientific–technical and social–humanistic literacy fields, the variables of trust in institutions and knowledge registering the most striking differences. Large cities are home to several groups of immigrants who undergo important changes in their environmental conditions and lifestyles that significantly modify their risk of chronic diseases. Quantitative evidence indicates that both their health and diet worsen over time; much less is known about the qualitative mechanisms that cause these changes. The aim of this article is to understand how immigrants in the city of Madrid perceive the relation between the urban food environment and dietary behaviour. Based on a Social Ecological Framework, we conducted a secondary qualitative analysis derived from data from 41 immigrant residents, collected in eight focus groups (FGs), conducted in two neighbourhoods in the city of Madrid. We identified the following main categories: 1) Transnational identity and dietary behaviour in the neighbourhood; 2) Transitions in dietary behaviour; and 3) Societal/structural factors determining dietary behaviour in the neighbourhood. The participants in the FGs mentioned that they try to maintain traditional dietary customs and perceive that the taste of their typical dishes is better than those of Spanish dishes. Contradictorily, some participants considered their traditional dietary patterns to be less healthy than Mediterranean ones (consuming olive oil, vegetables, fish). Some participants acknowledged having adapted to the latter voluntarily or through dietary negotiations with their children. Immigrant families with two working parents have difficulties cooking homemade food and resort to less healthy options, such as eating fast food or ready-made meals. Due to their low purchasing power, they buy both ethnic products and other products, as well as considering the prices and offers in supermarkets. Immigrant women of Pakistani origin are among the most at-risk groups for type 2 diabetes, obesity, and heart failure in Catalonia. As the incidence of these diseases is associated with lifestyle factors, we approached this community with participatory research and conducted six focus groups (N = 36) among Pakistani women participating in the PakCat Program. The research process of this paper adhered to the COREQ checklist. Through the thematic analysis, we identified six main themes: social beliefs and attitudes, family environment, personal factors, dietary acculturation, traditional dietary patterns, and economic factors. We discovered both facilitators and barriers associated with each theme, but the findings indicated that Pakistani women encounter more inhibitors than enablers to following a healthy diet. The determination of these factors can facilitate the reinforcement of the aspects that help Pakistani women to follow a healthy diet and provide adequate tools to overcome the barriers., Competing Interests: Declaration of competing interest None, (Copyright © 2023. In this paper, we explore the socio-cultural representations of trust and distrust in relation to food risks among pregnant and breastfeeding women. We have conducted a study based on an analysis of cultural domains in order to understand how mothers incorporate different social meanings and explore the most important categories they use when talking about trust/distrust in relation to food. We use the technique of free listings to analyse the main shared items or elements regarding trust and distrust in food among these mothers. Through an analysis of cultural domains that refers to concepts and themes related to trust and distrust of foods that are important to these women, and through the study of shared knowledge about these domains, we examine their socio-cultural representations related to health and diet of the 65 free listings on trust and the 64 on distrust collected from mothers. The pregnant and breastfeeding women who participated in the free listings cite foods they trust or distrust based on the specific properties they perceive them to have or other characteristics related to their origin, their handling, processing and distribution. Additionally, trust/distrust often depends on the qualities they attribute to the product. This paper shows aspects of the socio-cultural representations of food risks in periods in the life cycle of women -pregnancy and breastfeeding-characterized by a risk discourse where the precautionary principle is frequently used to manage uncertainty. This paper sets out to analyse whether the complexity and the type of benefits and values pursued in the consumer choice process for a novel food product (couscous) varies with the consumer's ethnic origin (Spanish and Arab). A qualitative study was used to explore these issues in an application of the "means-end chain" theory. The hierarchical value maps obtained point to the presence of an important emotional dimension in the consumption of the selected product, particularly Arab consumers, suggesting that greater familiarity with the product results in a more complex choice process. Some cross-cultural variation can also be observed. Arab consumers attach more importance to issues such as the geographic origin of the product, cultural identification, and fulfilment of family duty. Spanish couscous consumers, meanwhile, claim that it is a way to follow the latest trends, and be more cosmopolitan and more successful within their environment., (Copyright © 2014 Elsevier Ltd. In this paper we apply the principle of Regulatory Focus Theory to investigate the interaction between self-efficacy and outcome expectations on individuals' intentions to adopt health behaviors. The participants, 959 individuals (Survey 1) and 2400 individuals (Survey 2), reported self-efficacy beliefs and outcome expectations with regard to the consumption of omega-3 supplements and omega-3-enriched food products. We found that the relationship prevention outcome expectations-intention was significantly attenuated at low levels of self-efficacy and strengthened at high levels of self-efficacy, respectively; whereas, the relationship promotion outcome expectations-intention was unaffected by the perceived levels of self-efficacy. The implications suggest that consumers' motivation to adopt healthy food products, such as omega-3 supplements and omega-3 enriched products, should be encouraged by stimulating promotion outcome expectations. Our paper seeks to assess the impact of information and advertisement on consumers' preference for wines in special occasions (Christmas) in Catalonia (Spain). We apply the Choice Experiments method to study the relative importance of attributes that describe consumers' decision to purchase wine by using the Heteroskedastic Extreme Value (HEV) model. Data were obtained from two questionnaires applied to a pre and post spot samples formed by 299 and 400 individuals, respectively. Results suggest that the proposed spot does not affect the ranking of the preferred attributes, nevertheless this preference is heterogeneous. After advertising preferences scores have revealed significant differences. The relative importance of the "Catalan" wine has increased compared to the "Spanish" wine. The most preferred product is a Catalan wine made from the "Cabernet Sauvignon" variety. Wines that have been previously tasted by the consumer seem to be preferred over recommended or prestigious wines. This paper analyses cultural differences in consumers' interest in healthy eating, subjective health and perceived risk of (chronic) diseases, and identifies the association between nutritional status (obesity and overweight) and the above mentioned variables as well as people's socio-demographic characteristics and health conditions that may influence food choice. Cross-sectional data were collected through a consumer survey (n=2400) in 2008 with samples representative for age and region in France, Poland and Spain. Body-mass-index (BMI) was inversely associated with education and positively associated with age. Women were less likely to be overweight than men. Subjective health was negatively associated with the likelihood of being obese. The likelihood of being obese decreased with higher perceived risk of suffering from stress and from cancer, whilst the likelihood of being overweight decreased with higher perceived risk of suffering from stress. Despite a tendency of lower interest in healthy eating among obese consumers, interest in healthy eating was not significantly associated with the likelihood of being obese or overweight after Holm-Bonferroni correction. The findings of this study suggest that health consequences and disease risks of excessive weight should be better communicated to European populations. Furthermore, factors associated with obesity such as subjective health and perceived risk of chronic diseases should be considered both at individual counselling and at public health policy levels.
