Oregano essential oil can be used to preserve salads, especially if the salad is kept at a low temperature and pH. Oil concentrations as low as 0.7% are effective and may be more palatable.

Abstract

Several simulations based on the dairy processing environment are carried out to explain the impact of attachment to and detachment of Listeria monocytogens from stainless steel surfaces in foods. The immersion of the surfaces in milk is shown to lead to shorter lag phases for the detachment process.

Abstract

A study was conducted on the impact of inoculum preparation and storage conditions on the response of Escherichia coli 0157:H7 exposed to consumer-induced stresses simulating undercooking and digestion. There was a remarkable reduction in the populations on decontaminated, and especially on the nondecontaminated, beef upon transfer from anaerobic storage in vacuum packages to aerobic storage in retail packages.
