The article discusses the Institute for the Study of Culinary Cultures at Dillard University, which will open in 2009. The institute, which is funded by money from the late singer Ray Charles, will oversee research, academic courses, public programs, and an annual lecture series, with a focus on African-food studies. Charles initially gave the school money to preserve the art of African- and African-American food-preparation techniques. It will be run by Jessica B. Harris, a tenured professor of English at Queens College of the City University of New York.
