The objective of the current study was to evaluate the effects of tannin and monensin supplementation in feedlot diets and breed (Holstein vs. Angus × Holstein) on growth performance, energetic efficiency, and carcass characteristics. Eighty purebred Holstein calves (HOL; initial body weight (BW) = 130 ± 5 kg) and 80 Angus × Holstein calves (AXH; initial BW = 129 ± 6 kg) were blocked by initial BW and randomly assigned to 40 pens. Dietary treatments consisted of a steam-flaked corn-based diet supplemented with (1) no feed additive (CON); (2) 30 mg of monensin/kg of dry matter (DM; MON; Rumensin 90, Elanco, Greenfield, IN); (3) 1.5 g tannin)/kg of DM (TAN; ByPro, 70% condensed tannin, SilvaFeed, Indunor, S.A., Buenos Aires, Argentina); (4) M + T, the combination of MON plus TAN dietary treatments. Data were analyzed as a randomized complete block in a 2 × 4 factorial arrangement of treatments, using pens as experimental units. There were no interactions (P > 0.05) between feed additives and breed. Supplemental MON increased (P ≤ 0.04) initial 112-d BW and gain efficiency. However, there were no dietary treatment effects (P > 0.10) on overall growth performance. Monensin supplementation decreased (P = 0.04) minimum daily ruminal temperature compared with other dietary treatments during July, but TAN did not affect ruminal temperature. Holstein steers had greater (P = 0.04) overall DM intake compared with AXH, with no difference (P = 0.19) in overall ADG, leading to increased (P < 0.01) gain efficiency for AXH compared with HOL. Dietary net energy for maintenance and gain, based on growth performance, were greater (P ≤ 0.01) for AXH vs HOL. Compared with HOL, AXH steers had greater (P ≤ 0.01) carcass weight, dressing percentage, kidney, pelvic, and heart fat, 12th rib fat thickness, longissimus area, and preliminary yield grade. Holstein steers had lower (P ≤ 0.04) minimum average ruminal temperature during June compared with AXH, with no differences (P ≥ 0.14) between breeds during July or August. Results indicate that feed additives did not appreciably affect steer growth performance and carcass characteristics, but crossbred AXH steers had greater growth performance, efficiency of dietary energy utilization, and carcass quality measures compared with HOL. This study observed a reduction (4.7%) in maintenance energy expenditure in AXH compared with HOL, implying in maintenance energy coefficient of 0.086 vs 0.082 for HOL and AXH, respectively., (© The Author(s) 2024. Two experiments were conducted to examine the influence of protein and virginiamycin (VM) supplementation on feedlot growth performance, digestion, and metabolizable AA (MAA) supply of calf-fed Holstein steers. Growth performance and dietary energetics were evaluated in 120 Holstein steers (127 ± 9 kg). During the initial 112-d feeding period, a steam-flaked corn-based diet was balanced to meet either 100% (MAB) or 87% (UREA) of MAA requirements. Diets were supplemented with or without 22.5 mg/kg VM in a 2 × 2 factorial arrangement. Subsequently (d 112 to 308), all steers received the UREA diet with or without VM. During the initial 112-d, MAB increased ADG, G:F, and dietary NE ( < 0.01). Thereafter, when all steers received the UREA diet, ADG, G:F, and dietary NE were not different ( > 0.10) across initial supplementation treatments. Overall (d 1 to 308), MAB did not affect ADG ( > 0.10) but enhanced G:F efficiency ( = 0.03) and dietary NE ( = 0.05). During the initial 112-d period and through the remainder of the experiment, VM increased G:F ( < 0.01) and dietary NE ( < 0.01). Four Holstein steers (146 ± 4 kg) with cannulas in the rumen and proximal duodenum were used in a 4 × 4 Latin square design to evaluate initial 112-d treatment effects on digestive function. There were no treatment effects ( > 0.10) on ruminal digestion of OM, NDF, starch, microbial efficiency, or total tract digestion of OM and NDF. The MAB increased indispensable AA flow to the small intestine ( < 0.01) and total tract digestion of N ( < 0.01) and starch ( = 0.04). Observed AA supply to small intestine was in agreement with expected supply ( = 0.96). Virginiamycin decreased ( = 0.04) nonammonia N flow to the small intestine and did not affect ( > 0.10) total tract N digestion. Extrapolating from AA supplies in the metabolism study, MAB satisfied indispensable AA requirements during the initial 112-d period, whereas the UREA diet met 73.5% and 79.2% of methionine and lysine requirements, respectively. During the subsequent periods (d 112 to 308) indispensable AA supplies exceeded theoretical requirements. We conclude that enhancements in energy utilization when diets are balanced to meet MAA requirements of calf-fed Holstein steers during the initial 112-d feedlot period remain appreciable throughout time on feed. Virginiamycin enhanced efficiency of energy utilization throughout the feedlot growing-finishing period.

The objective of this experiment was to determine the feeding value of a mechanically extracted nontoxic variety of oil (JCO) as source of energy for feedlot lambs. Twenty Pelibuey × Katahdin lambs were individually fed a dry-rolled-corn-based finishing diet supplemented with 0%, 2%, 4%, or 6% JCO (diet dry matter basis). Supplemental JCO replaced dry rolled corn in the basal diet. Fatty acid composition of JCO was C16:0, 14.0%; C18:0, 8.2%; C18:1, 26.0%; C18:2, 50.3%, and C18:3, 0.4%. Daily intakes of JCO averaged 24.7, 51.1, and 77.3 g/day or 0.57, 1.08, and 1.62 g/kg LW for the 2%, 4%, and 6% levels of supplementation, respectively. Supplemental JCO did not affect ( = 0.33) dry matter intake (DMI), but tended to increase (linear effect, = 0.06) average daily gain, efficiency of gain (linear effect, < 0.01), and dietary net energy (linear effect, < 0.01) and decreased (linear effect, < 0.01) the ratio of observed/expected DMI. At low levels (20 g/kg diet dry matter) of supplementation, the net energy (NE) value of JCO corresponds closely (0.99) to the NE value assigned by current standards (), and this NE value decreased linearly as the inclusion level of JCO increased. There were not treatment effects on plasma metabolites. Across treatments, the concentrations of hemoglobin (11.64 ± 1.08 g/dL), hematocrit (39.15 ± 3.67%), glucose (85.2 ± 17.64 mg/dL), creatinine (1.43 ± 0.28 mg/dL), and urea (20.70 ± 4.35 mg/dL) were within normal (9-15 g/dL, 27%-40%, 50-90 mg/dL, 1.0-1.8 mg/dL, and 15-50 mg/dL, for hemoglobin, hematocrit, glucose, creatinine, and urea, respectively) ranges for healthy lambs. Based on DMI, performance and plasma metabolites observed in this study, nontoxic JCO is a suitable source of energy in finishing diets for lambs.

Four Holstein steers with ruminal and duodenal cannulas were used in a 4 × 4 Latin square design to examine the effect of daily intake of 0, 2, 4 or 6 g/steer of standardized plant extract containing a mixture of quaternary benzophenanthridine alkaloids and protopine alkaloids (QBA+PA) on the characteristics of ruminal fermentation and characteristics of digestion. The basal diet consisted of a steam-flaked corn-based finishing diet that contained 62% corn and 12% sudangrass hay and the rest of diet was composed of mainly dried distillers grains, molasses, fat, and minerals. The source of QBA+PA used was Sangrovit-RS (Phytobiotics Futterzusatzstoffe GmbH, Eltville, Germany) and supplementation levels of 2, 4, and 6 g Sangrovit-RS∙steer∙d, which represented a net daily ingestion of approximately 6, 12, and 18 mg of QBA+PA compounds, respectively. Inclusion of QBA+PA linearly increased ( = 0.04) flow to the duodenum of nonammonia N and linearly decreased ( < 0.01) duodenal flows of ammonia N. Ruminal microbial efficiency (duodenal microbial N; g/kg OM fermented in the rumen) and protein efficiency (duodenal nonammonia N; g/g N intake) were increased ( < 0.05) as the level of QBA+PA increased. There were no effects of QBA+PA supplementation on ruminal, postruminal, and total tract digestion of OM, starch, and NDF, but postruminal and total tract digestion of N increased ( < 0.01) as the level of QBA+PA increased. Digestible energy of the diet tended to increase (linear affect, = 0.09) with QBA+PA supplementation. Ruminal pH and total VFA molar concentrations were not different between treatments. Ruminal NH-N concentration linearly decreased ( = 0.02) with QBA+PA supplementation. Ruminal molar proportion of acetate increased ( = 0.04) as the supplementation level of QBA+PA increased. It is concluded that QBA+PA supplementation enhances efficiency of N utilization in feedlot steers fed a steam-flaked corn-based finishing diet. This effect was due, in part, to enhanced ruminal microbial efficiency, decreased ruminal degradation of dietary nonammonia N, and enhanced postruminal N digestion.

Two experiments were conducted to examine the effect of level of dried distillers grains plus solubles (DDGS) supplementation (0, 10, 20, and 30%; DM basis), replacing steam-flaked (SF) corn in finishing diets, on characteristics of digestion (Exp. 1) and growth performance (Exp. 2) in calf-fed Holstein steers. In Exp.1, 4 cannulated Holstein steers (349 ± 12 kg) were used to evaluate treatment effects on characteristics of digestion. Ruminal NDF digestion tended to increase (quadratic effect, P = 0.09) and ruminal OM digestion decreased (linear effect, P = 0.01) with DDGS substitution. There were no treatment effects on duodenal flow of microbial N (MN). Substitution with DDGS increased (linear effect, P < 0.01) N flow to the small intestine. The undegradable intake protein (UIP) value of DDGS was 35%. Postruminal digestion of OM (linear effect, P = 0.04) and fatty acids (linear effect, P = 0.03) and total tract digestion of OM and GE decreased (linear effect, P < 0.03) with increasing level of DDGS substitution. Substitution with DDGS did not affect (P = 0.80) ruminal pH but increased (linear effect, P = 0.01) acetate:propionate molar ratio. In Exp.2, 144 Holsteins steer (112 ± 6 kg) were used in a 305-d trial to evaluate treatment effects on growth performance and carcass characteristics. During the initial 126 d, DDGS substitution increased ADG (linear effect, P = 0.03), G:F (quadratic effect, P = 0.03), and dietary NE (quadratic effect, P = 0.02), maximal for both at 20% DDGS inclusion rate. Based on estimated indispensable AA supply to the small intestine as a percentage of requirements during the initial 126-d period, histidine was first limiting followed by methionine. During the final 179-d period and overall (305-d feeding period), treatment effects on ADG and G:F were small (P ≥ 0.22). Compared with the other treatments, HCW was greater (3.4; P = 0.03) at the 20% level of DDGS substitution. The NE value for DDGS in SF corn-based diets for the calf-fed Holstein are consistent with current tabular standards. Extra-caloric value of DDGS as a metabolizable AA source is apparent during the initial growing phase. The UIP value of DDGS used in this study (35%) was considerably less than current tabular estimates (52%; NRC, 2000).

Two experiments were conducted to evaluate the comparative feeding value of dried shredded sugarbeets (DSSB; 0, 20, and 40% of diet DM) as a replacement for steam-flaked corn (SFC) in finishing diets for feedlot cattle. In Exp. 1, 60 calf-fed Holstein steers (476 ± 6.3 kg) were used in a 97-d finishing trial. Substitution of SFC with DSSB did not affect ADG or DMI (P > 0.20). Increasing DSSB decreased gain efficiency (ADG:DMI; linear effect, P = 0.04) and dietary NE (linear effect, P = 0.03). Given that SFC has a NE(m) value of 2.38 Mcal/kg, the replacement NE(m) and NE(g) values for DSSB were 1.94 and 1.29 Mcal/kg, respectively. There were no treatment effects (P > 0.20) on carcass characteristics. In Exp. 2, 6 cannulated Holstein steers (205 kg) were used in a replicated 3 × 3 Latin square design to evaluate treatment effects on digestion. Ruminal digestion of starch, NDF, and feed N were not affected (P > 0.10) by DSSB, although ruminal OM digestion tended to increase (linear effect, P < 0.08). Replacing SFC with DSSB decreased flow of starch to the small intestine, but it increased flow of microbial N (linear effect, P = 0.05). There were no treatment effects (P > 0.14) on postruminal digestion of OM, NDF, starch, or feed N or total tract digestion of OM, starch, and N. Substitution of DSSB increased (linear effect, P = 0.05) total tract NDF digestion and decreased (linear effect, P = 0.05) dietary DE (Mcal/kg). Given that SFC has a DE value of 4.19 Mcal/kg, the replacement DE value of DSSB was 3.68 Mcal/kg. There were no treatment effects (P > 0.12) on ruminal pH or total VFA; however, DSSB decreased propionate (linear effect, P = 0.05) and increased acetate (linear effect, P = 0.07), butyrate (linear effect, P = 0.05), valerate (linear effect, P = 0.04), and estimated methane production (linear effect, P = 0.05). We concluded that DSSB may replace SFC in finishing diets at levels of up to 40% without detrimental effects on ADG and carcass characteristics. The NE value of DSSB is 82% that of SFC (DM basis). Partial replacement of SFC with DSSB alters ruminal VFA patterns, increasing estimated methane energy loss and slightly decreasing the efficiency of DE utilization.

Jersey cattle are known for producing carcasses with a greater amount of marbling, but they require more days on feed to achieve acceptable market weights compared with other breeds. The objective of this study was to evaluate the effect of dietary forage (12 vs. 24% sudangrass:alfalfa hay, DM basis) in steam-flaked, corn-based finishing diets on carcass characteristics, beef palatability, and retail color stability of steaks from Jersey beef compared with conventionally fed commodity beef strip loins (COM) of identified quality (Choice(-) and Select(+)). Jersey steers (n = 77) were blocked by BW and randomly assigned to 1 of the following treatments for a 383-d trial period: Jersey low 12% (JL; n = 38) or Jersey high 24% (JH; n = 39) forage (DM basis). A comparison group was selected from conventionally fed cattle on the same day of slaughter as the Jersey treatments, and strip loins from USDA Select(+) (COM; n = 20) and Choice(-) (COM; n = 20) were removed for data analysis. Seventy-two hours postmortem, strip loins were removed, vacuum-packaged, and aged at 3°C for 18 d postmortem. After the aging period, steaks from the LM were sliced, vacuum-packaged, and frozen (-20°C) until analyzed. Jersey steaks had reduced (P < 0.05) Warner-Bratzler shear force values compared with COM steaks. Trained sensory panelists rated JL greater (P < 0.05) for initial and sustained tenderness and initial juiciness than COM, whereas JH was intermediate. As expected, marbling was greater (P < 0.05) for both JL and JH compared with COM, and trained sensory panel sustained juiciness, beef flavor intensity, and overall acceptability scores were greater (P < 0.05) for both JL and JH compared with COM; however, no differences (P = 0.14) were reported for consumer tenderness and flavor. Objective color (L*, a*, b*) measurements decreased (P < 0.05) over time across treatments. There were no differences among treatments for lightness (L*); however, overall during retail display JL were less (P < 0.05) red (a*) and yellow (b*) than JH and COM. Subjective color scores indicated both JL and JH were less red (P < 0.05) than COM. Steaks from Jersey were equal to and on some measurements more desirable than steaks from COM carcasses for both color stability and palatability. These results suggest that dietary forage level had minimal effects on carcass characteristics and beef palatability. However, feeding a low-forage diet decreases input cost and potentially results in a greater valued carcass. Finishing long-fed (383 d) Jersey steers can meet beef industry expectations with respect to quality grade.

Four Holstein steers (137 ± 2 kg) with cannulas in the rumen and proximal duodenum were used in a 4 × 4 Latin square design to evaluate the influence of processing method on comparative digestion of white corn. Treatments consisted of a basal finishing diet containing 80% corn grain (DM basis) as 1) dry-rolled white corn (DRWC), 2) steam-flaked white corn (SFWC) with 0.36 kg/L flake density (SFWC36), 3) SFWC, 0.31 kg/L flake density (SFWC31), and 4) steam-flaked yellow corn (SFYC) with 0.31 kg/L flake density (SFYC31). Characteristics of ruminal, postruminal, and apparent total tract digestion of OM, starch, and N were similar (P ≥ 0.08) for SFYC31 and SFWC31 treatments. Decreasing flake density of white corn (from 0.36 to 0.31 kg/L) did not affect (P = 0.22) ruminal OM digestion, but increased (1.9%, P = 0.07) apparent total tract OM digestion. Compared with dry rolling, steam flaking white corn increased ruminal (9.4%, P = 0.05), postruminal (14.4%, P < 0.01), and apparent total tract OM digestion (8.2%, P < 0.01), reflecting corresponding increases in ruminal (13.3%, P < 0.01), postruminal (43%, P < 0.01), and apparent total tract (12.3%, P < 0.01) starch digestion. Apparent postruminal and apparent total-tract N digestion also were greater (6.5 and 5.6%, respectively, P = 0.04) for SFWC than for DRWC. The DE value of SFWC and SFYC diets was similar, averaging 3.39 Mcal/kg. The DE value of SFWC was greater (8.1%, P < 0.01) than that of DRWC. Ruminal pH (4 h postprandial) averaged 5.74 and was not affected (P ≥ 0.48) by dietary treatments. Compared with dry rolling, steam flaking markedly enhances the feeding value of white corn, with optimal flake density being less than 0.36 kg/L. Although white corn has greater vitreous endosperm content, characteristics of ruminal starch digestion and undegradable intake protein are similar to conventional yellow dent corn when processed to a similar flake density (0.31 kg/L). However, postruminal and apparent total tract starch digestion tends to be slightly less for flaked white corn than for yellow corn.

Two trials were conducted to evaluate the influence of virginiamycin supplementation on growth performance and digestive function. In trial 1, 144 Holstein steer calves (119 kg of initial BW) were used in a 340-d trial. Treatments were (DM basis) 1) control (no antibiotic); 2) 16 mg/kg of virginiamycin; 3) 22.5 mg/kg of virginiamycin; and 4) 28 mg/kg of monensin. Calves received a steam-flaked corn-based growing diet for the first 112 d and thereafter were fed a finishing diet from d 112 until slaughter. Steers were divided into 2 BW groups (lighter-half and heavier-half), and assigned within groups to 24 pens (6 steers/pen). Virginiamycin did not affect (P > 0.20) ADG, but increased 340-d G:F (linear; P = 0.02) and dietary NE (linear; P = 0.04). Improvements in dietary NE were most pronounced during the final 116 d of the feeding period (linear; P = 0.04) that comprised the hot summer months (June through September). Monensin did not affect (P > 0.20) growth performance or dietary NE. Although average initial BW of the lighter-half and heavier-half BW groups differed by only 4 kg, the heavier BW group had greater HCW (13 kg, P = 0.02), LM area (5.4%, P = 0.01), ADG (4.3%, P = 0.02), G:F (2.3%, P = 0.08), and dietary NE (3.2%. P = 0.01) than the lighter BW group. In trial 2, 4 Holstein steers (269 +/- 3.5 kg) with cannulas in the rumen and proximal duodenum were used in a 4 x 4 Latin square design to evaluate treatment effects on digestion. Virginiamycin did not affect (P > 0.20) ruminal digestion of OM, NDF, starch, and N, and microbial efficiency, but tended to linearly increase (P = 0.09) ruminal N efficiency (nonammonia N flow to the small intestine/N intake). Likewise, virginiamycin did not affect (P > 0.20) postruminal or total tract digestion of OM, starch, NDF, and N. Compared with the control diet, monensin depressed total tract digestion of OM (4.2%, P = 0.03) and NDF (29.5%, P = 0.02). There were no treatment effects (P > 0.20) on ruminal pH, or ruminal lactate and total VFA molar concentration. Virginiamycin increased ruminal molar proportion of acetate (quadratic; P = 0.04) and estimated methane production (quadratic; P = 0.07), and decreased propionate molar proportion (quadratic; P = 0.09). Monensin did not affect (P > 0.20) ruminal VFA molar proportions or estimated methane production. We concluded that virginiamycin supplementation can enhance feedlot growth-performance and dietary energetic efficiency of calf-fed Holstein steers.

The objective of these studies was to evaluate the effects of zilpaterol hydrochloride (ZH), fed for 0, 20, or 30 d, on meat quality attributes of calf-fed Holstein steers. Steers were slaughtered at a commercial facility, and carcasses were selected by HCW to represent the pen mean. Further carcass selection was based on quality grade (Choice and Select) and yield grade. Proximate composition, measures of water holding capacity, and tenderness using Warner-Bratzler shear force after 7, 14, or 21 d postmortem were evaluated on the shoulder clod (triceps brachii), top butt (gluteus medius), and strip loin (longissimus lumborum). Percentage of purge for the 3 subprimals was not different (P > 0.05) among ZH treatments. Steers fed ZH for 20 d or 30 d had decreased (P < 0.05) percentages of fat in the triceps brachii, compared with 0-d ZH. Percentage of fat was less (P < 0.05) in the gluteus medius and longissimus lumborum when steers were fed ZH for 30 d compared with those steers fed ZH for 0 d. Percentage of fat was greater in Choice triceps brachii (P < 0.05) and longissimus lumborum (P < 0.10) compared with Select. Thaw loss was not different (P > 0.05) for any muscle due to ZH treatment. Only longissimus had a greater (P < 0.05) cooking loss with ZH treatment. Cooking loss was not different (P > 0.05) for the gluteus medius or longissimus lumborum due to quality grade or aging day. At each aging day, the 20- and 30-d ZH longissimus lumborum had greater (P < 0.05) shear force values than 0 d; however, 20- and 30-d ZH had a greater absolute change in shear force from 7 to 21 d than that of 0 d ZH. Triceps brachii steaks were less tender (P < 0.05) after ZH treatment, but gluteus medius steaks were not different (P > 0.05). There was no difference (P > 0.05) in shear force due to quality grade. Results illustrate the use of ZH in calf-fed Holstein steers will have minimal effects on purge, thaw, or cooking loss. Percentage of intramuscular fat will decrease, especially when fed for longer durations. Steaks from ZH treated steers were tougher than steaks from control animals at all aging times, but ZH steaks became more tender with postmortem aging.

Sixty-four crossbred heifers (451 +/- 23 kg) were used in a 42-d feeding trial (4 pens per treatment in a randomized complete block design) to evaluate the influence of preslaughter zilpaterol hydrochloride withdrawal period on growth performance and carcass characteristics. Heifers were fed a diet based on steam-flaked corn (2.13 Mcal of NE(m)/kg). Treatments were 1) control, no zilpaterol supplementation; 2) zilpaterol supplementation for 30 d, drug withdrawn from the diet 3 d preslaughter (ZIL-3); 3) zilpaterol supplementation for 30 d, drug withdrawn 6 d preslaughter (ZIL-6), and 4) zilpaterol supplementation for 30 d, drug withdrawn 12 d preslaughter (ZIL-12). Zilpaterol was supplemented at the rate of 0.15 mg/kg of BW daily. Intake of DM averaged 9.2 +/- 0.26 kg/d and was not affected (P > or = 0.36) by treatment. Compared with control heifers, ZIL-3 increased (P < 0.01) carcass-adjusted ADG (59%), G:F (57%), apparent dietary NE(m) (31%), and decreased observed/expected DMI (25%). Treatment with ZIL-3 did not affect marbling score (P = 0.49) or backfat thickness (P = 0.17), but compared with the control group, increased HCW (3.6%, P = 0.03), carcass dressing percentage (3.2%, P = 0.02), LM area (6.3%, P = 0.05), and reduced trimmed fat (31%, P = 0.03). Prolonging the period of zilpaterol withdrawal preslaughter tended to decrease carcass-adjusted ADG (linear, P = 0.11), G:F (linear, P = 0.08), apparent dietary NE(m) (linear, P = 0.11), and carcass dressing percentage (linear, P = 0.11). We conclude that growth performance and carcass yield responses to zilpaterol supplementation are negatively affected by prolonging the period of zilpaterol withdrawal beyond 3 d (the required minimum withdrawal period according to label). Drug withdrawal period may be a relevant factor in explaining variation in performance response to zilpaterol supplementation in commercial feedlots.

Performance, DMI, diet composition, and slaughter data from 9,683 pens of steers and 5,009 pens of heifers that were fed high-concentrate diets for 90 d or more were obtained from 15 feedlots from the western United States and Canada. The data set included pen means for more than 3.1 million cattle fed between 1998 and 2004. Performance measurements assessed included ADG, DMI, dietary NE, shrunk initial weight (SIW), and shrunk final weight. Mature final weight (MFW) for cattle in each pen was estimated based on regression of slaughter weight against SIW and ADG across all pens. Equations were developed to standardize performance projections (ADG, MFW, and break-even values) and analyze feedlot cattle close-outs. Generally, as diet NE concentration increased, DMI was decreased but G:F, dressing percentage, and yield grade all increased. Pens of cattle with greater SIW had greater ADG, DMI, and shrunk final weight but a lower G:F and dressing percentage. Dressing percentage and yield grade were correlated positively. Equations of the NRC relating gain to NE intake explained 85 and 80% of the variation in DMI of steers and heifers, respectively, with mean ratios of predicted to observed DMI (DMIratio) at 1.000 +/- 0.0506 and 0.974 +/- 0.0490. However, a significant (P < 0.001) bias in the NRC estimate of DMI was detected (r(2) = 0.10 and 0.05, for steers and heifers) between the DMIratio and ADG in which DMIratio increased as ADG increased. This was due to inherent confounding of ADG and MFW in the original NE equation of Lofgreen and Garrett. Based on iterative optimization to minimize the difference between expected and observed DMI, revised equations for retained energy (RE, Mcal/kg) were developed for steers and for heifers: RE(steer) = 0.0606 x (LW x 478/MFW(steer))(0.75)ADG(0.905); RE(heifer) = 0.0618 x (LW x 478/MFW(heifer))(0.75)ADG(0.905), where LW = mean shrunk live weight. The revised equations decreased the SD of the DMIratio by 5.4% (from 0.0496 to 0.0469) and eliminated the bias in DMIratio that was related to ADG (r(2) = 0.0006). The similarity between the 2 equations derived for steers and for heifers for estimation of RE from ADG supports the concept that scaling by MFW accounts for energy utilization differences between sexes.

Two experiments were conducted to evaluate the influence of dry-rolling (DRS) and tempering agent (TA) addition during the steam-flaking of grain sorghum (SFS) for feedlot cattle. Five dietary treatments were compared: 1) DRS; 2) SFS, no TA; 3) SFS, 0.275 mg/kg of TA; 4) SFS, 1.375 mg/kg of TA; and 5) SFS, 2.750 mg/kg of TA. Bulk densities of DRS and SFS were 0.48 and 0.36 kg/L, respectively. Diets contained 70.6% grain sorghum (DM basis). One hundred fifty crossbred steers (336 kg of BW) were used in a 115-d finishing experiment to evaluate treatment effects on feedlot performance. Body weight gain averaged 1.49 kg/d and was not affected (P = 0.47) by treatments. The SFS reduced (P < 0.01) DMI (9%) and enhanced (P < 0.01) G:F (13%) and the NE(m) and NE(g) value of the diet (9 and 11%, respectively). Use of a TA before flaking sorghum did not influence (P > 0.20) cattle growth performance or NE(m) or NE(g) value of the diet. Given that the NE(m) and NE(g) values of DRS are 2.00 and 1.35 Mcal/kg, respectively (NRC, 1996), the corresponding values for SFS were 2.28 and 1.59 Mcal/kg. Five steers (397 kg of BW) with ruminal and duodenal cannulas were used in a 5 x 5 Latin square design to evaluate treatment effects on digestive function. Ruminal digestion of OM and starch was greater (14 and 16%, respectively; P < 0.01) for SFS vs. DRS. Steam-flaking sorghum increased (P < 0.01) postruminal digestion of OM (11%), N (10%), and starch (25%) and total tract digestion (P < 0.01) of OM (8.3%), N (8.2%), and starch (8.9%). Grain processing did not affect (P > 0.20) ruminal pH or VFA molar proportions. There was a cubic component (P < 0.10) to level of TA on ruminal pH and VFA molar proportions, with values being optimal at 1.375 mg/kg of tempering agent. It is concluded that steam-flaking grain sorghum will increase its NE value for maintenance and gain (14 and 18%, respectively) and enhance the MP value of the diet due to greater intestinal N digestion. The use of a TA to enhance the mechanical efficiency of the flaking process may not otherwise benefit the feeding value of sorghum.

Two trials were conducted to evaluate the interaction of the maceration process and surfactant (Tween 80) supplementation on feeding value of rice straw. Treatments were steam-flaked, corn-based diets containing 14% forage (DM basis), which was 1) Sudangrass hay; 2) ground rice straw; 3) ground rice straw plus 0.22% Tween 80; 4) macerated rice straw; and 5) macerated rice straw plus 0.22% Tween 80. In the maceration process, rice straw was passed through 2 sequentially placed pairs of corrugated rolls set at zero tolerance under a ram pressure of 62,050 millibars, similar to a conventional grain roller mill, except that the opposing rolls operated at different speeds (12 and 14 rpm, respectively). Sudangrass hay and rice straw (native and macerated) were ground through a 2.6-cm screen before incorporation into complete mixed diets. In trial 1, 125 Holstein steers (292 +/- 1.7 kg of BW) were used in a 188-d evaluation of the treatment effects on growth performance and carcass characteristics. In trial 2, 5 Holstein steers (224 +/- 3.5 kg of BW) with cannulas in the rumen and proximal duodenum were used in a 5 x 5 Latin square design to evaluate the treatment effects on digestion. There were no interactions between maceration and surfactant on growth or carcass characteristics. Tween 80 did not influence the feeding value of rice straw. Compared with grinding alone, maceration of rice straw increased the carcass-adjusted ADG (6%, P < 0.10), G:F (6%, P < 0.05), and dietary NE (5%, P < 0.05); DMI was similar across treatments. Assuming NE(m) and NE(g) of Sudangrass hay are 1.18 and 0.62 Mcal/kg, the NE(m) and NE(g) were 0.61 and 0.13 Mcal/kg for ground rice straw and 1.21 and 0.65 Mcal/kg for macerated rice straw. There were no treatment interactions on characteristics of digestion. Tween 80 did not influence ruminal or total tract digestion of OM, starch, NDF, or N. Compared with grinding alone, maceration of rice straw increased ruminal digestion of OM (7.7%, P < 0.10) and NDF (30.8%, P < 0.05), and total tract digestion of OM (2.3%, P < 0.10), NDF (21.1%, P < 0.01), and N (3.7%, P < 0.05). Total tract digestion of OM, NDF, starch, and N for the Sudangrass diet corresponded closely with that of the macerated rice straw diets. Maceration increases the feeding value of rice straw to a level similar to that of good-quality (flag stage of maturity) Sudangrass hay, which is attributable to increased OM and NDF digestion. Effects of surfactant supplementation on growth performance and digestion are not appreciable.

To evaluate the utility of N as a digestion marker to predict total tract starch digestion, data from 32 metabolism trials involving 147 steers and 637 individual starch digestibility measurements were compiled. All trials were conducted at the University of California Desert Research and Extension Center. Total tract starch digestibility was determined from concentrations of starch and chromic oxide in feed and feces. In all trials, the steers were adapted to diets for 10 d followed by 4 d for collection of samples of feces. During collection, fecal samples (approximately 200 g, wet basis) were obtained twice daily. Samples from each steer within each collection period were composited for analysis. Diets contained 46.5 +/- 7.4% starch and 1.85 +/- 0.20% N. Apparently digestible N as a percentage of diet DM was closely associated (r(2) = 0.73; P < 0.001) with dietary N concentration. Fecal N concentration (FN, % of DM) explained 35% of the variation in fecal DM excretion (S(y.x) = 4.3; P < 0.001). Incorporating FN into the model, starch digestion was estimated as follows: starch digestion, % of intake = 100 {1 - [(0.938 -0.497FN + 0.0853FN(2)) FS/DS]}, where FS is fecal starch concentration (% of DM) and DS is dietary starch concentration (% of DM; r(2) = 0.94; S(y.x) = 0.68; P < 0.001). Fecal starch concentration alone explained 96% of the variation (S(y.x) = 0.45; P < 0.001) in total tract starch digestion: starch digestion, % = 99.9 - 0.413FS -0.0104FS(2). Omitting cases in our data set in which observed total tract starch digestion was less than 95%, the r(2) between FS and starch digestibility decreased to 0.82 (S(y.x) = 0.26; n = 529). However, estimated starch digestion using the equation incorporating FN remained closely associated with the observed starch digestion (r(2) = 0.90; S(y.x) = 0.22; P < 0.001; n = 529). Equations also were developed to predict NE(m) and NE(g) concentrations of common feed grains based on starch digestibility and FS. Starch digestion can be accurately predicted based on FS. However, incorporation of FN into the model markedly enhanced the estimates of grain quality and the efficacy of processing when total tract starch digestion exceeded 95%.

Eight cannulated Holstein steers (average BW: 251 kg) were used in 2 simultaneous 4 x 4 Latin squares in a split-plot arrangement to test the effects of processing method [dry-rolled (DR) vs. steam-flaked (SF); main plot] and vitreousness (V, %; subplot) of yellow dent corn (V55, V61, V63, and V65) on site of digestion of diets containing 73.2% corn grain. No vitreousness x processing method interactions were detected for ruminal digestion, but ruminal starch digestion was 14.4% lower (P < 0.01) for DR than for SF corn. Interactions were detected between vitreousness and processing method for postruminal (P < 0.10) and total tract digestion (P < 0.05). With DR, vitreousness tended to decrease (linear effect, P < 0.10) postruminal OM and starch digestion. With SF, vitreousness did not affect (P > or = 0.15) postruminal digestion of OM and starch. Postruminal N digestion tended to decrease (linear effect, P = 0.12) as vitreousness increased. Postruminal digestion was greater for SF than for DR corn OM (25.7%, P < 0.05), starch (94.3%, P < 0.10), and N (10.7%, P < 0.01). Steam flaking increased total tract digestion of OM (11%, P < 0.05), starch (16%, P < 0.01), and N (8.4%, P < 0.05) but decreased total tract ADF digestion (26.7%, P < 0.01). With DR, total tract starch digestion was lower for V65 (cubic effect, P < 0.10) than for the other hybrids. With SF, total tract starch digestion was not affected (P > or = 0.15) by vitreousness. Fecal starch and total tract starch digestion were inversely related (starch digestion, % = 101 - 0.65 x fecal starch, %; r2 = 0.94, P < 0.01). Ruminal pH was greater for steers fed DR than for steers fed SF corn (6.03 vs. 5.62, P < 0.05). Steam flaking decreased (P < 0.01) the ruminal molar proportion of acetate (24%), acetate:propionate molar ratio (55%), estimated methane production (37.5%), and butyrate (11.3%, P < 0.05). There was a vitreousness x processing interaction (P < 0.01) for acetate:propionate. For DR, acetate:propionate tended to increase (linear effect; P < 0.10) with increasing vitreousness. With SF, acetate:propionate was greater (cubic effect, P < 0.01) for V65. Starch from more vitreous corn grain was less digested when corn grain was DR, but this adverse effect of vitreousness on digestion was negated when the corn grain was SF. Of the 19% advantage in energetic efficiency associated with flaked over rolled corn grain, about 3/4 can be attributed to increased OM digestibility, with the remaining 1/4 ascribed to reduced methane loss.

Eight Holstein steers with cannulas in the rumen and proximal duodenum were used in a split-plot design experiment to evaluate the interaction of body weight (175 vs. 370 kg) and level of fat supplementation (0, 3, 6, and 9% yellow grease) on characteristics of digestion and feeding value of fat in finishing diets. Dry matter intake was restricted to 2% of BW. There were no interactions between BW and level of fat supplementation (P > 0.10) on ruminal or total-tract digestion. Level of supplemental fat decreased (linear, P < 0.01) ruminal digestion of OM and NDF, and increased (linear, P < 0.05) ruminal N efficiency. There were no treatment effects (P > 0.10) on postruminal digestion of OM, NDF, and N. There tended to be an interaction (P < 0.10) between BW and level of fat supplementation on postruminal starch digestion. Increasing level of fat supplementation increased postruminal digestion of starch in heavier steers but did not affect starch digestion in lighter steers. There were no interactions (P > 0.10) between BW and level of fat supplementation on postruminal fatty acid digestion. Increasing level of fat supplementation decreased (linear, P < 0.01) postruminal fatty acid digestion, which was due to a decreased (linear, P < 0.01) postruminal digestion of C16:0 and C18:0. Supplemental fat decreased (linear, P < 0.01) total-tract digestion of OM and NDF. The estimated NEm (Mcal/kg) of yellow grease averaged (linear, P < 0.01) 6.02, 5.70, and 5.06 for the 3, 6, and 9% of level supplementation, respectively. We conclude that intestinal fatty acid digestion (FAD, %) is a predictable function (r2 = 0.89; P < 0.01) of total fatty acid intake per unit body weight (FAI, g/kg BW): FAD = 87.560 - 8.591FAI. Depressions in fatty acid digestion with increasing level of intake were due primarily to decreased intestinal absorption of palmitic and stearic acid. Level of fatty acids intake did not appreciably affect intestinal absorption of unsaturated fatty acid. Changes in intestinal fatty acid digestion accounted for most of the variation in the NE value of supplemental fat.

Four Holstein steers (282 kg) with cannulas in the rumen and proximal duodenum were used in a 4 x 4 Latin square experiment to evaluate the influence of dietary urea level (0, 0.4, 0.8, and 1.2%, DM basis) in a steam-flaked barley-based finishing diet on digestive function. There were no treatment effects (P > 0.20) on ruminal digestion of OM and ADF. Increasing dietary urea level increased (linear, P < 0.01) ruminal starch digestion. Ruminal degradability of protein in the basal diet (no supplemental urea) was 60%. Increasing dietary urea level did not increase (P > 0.20) ruminal microbial protein synthesis or nonammonia N flow to the small intestine. There were no treatment effects (P > 0.20) on total-tract ADF digestion. Total tract digestion of OM (quadratic, P < 0.01) and starch (linear, P < 0.05) increased slightly with increasing urea level. Urea supplementation increased (linear, P < 0.01) ruminal pH 1 h after feeding; however, by 3 h after feeding, ruminal pH was lower (cubic, P < 0.05) with urea-supplemented diets. Urea supplementation did not affect (P > 0.20) ruminal molar proportions of acetate and propionate. One hundred twenty crossbred steers (252 kg; approximately 25% Brahman breeding) were used in an 84-d feeding trial (five pens per treatment) to evaluate treatment effects on growth performance. Daily weight gain increased (linear, P = 0.01) with increasing urea level, tending to be maximal (1.53 kg/d; quadratic, P = 0.13) at the 0.8% level of urea supplementation. Improvements in ADG were due to treatment effects (linear, P < 0.01) on DMI. Urea supplementation did not affect (P > 0.20) the NE value of the diet for maintenance and gain. Observed dietary NE values, based on growth performance, were in close agreement with expected based on tabular values for individual feed ingredients, averaging 100.4%. We conclude that with steam-flaked barely-based finishing diets, ruminal and total-tract digestion of OM and ruminal microbial protein synthesis may not be increased by urea supplementation. In contrast, ADG was optimized by dietary inclusion of 0.8% urea. Urea supplementation may not enhance the net energy value of steam-flaked barely-based finishing diets when degradable intake protein is greater than 85% of microbial protein synthesis.

Based on performance of feedlot cattle, steam flaking increases the value of corn by 18%, considerably more than is suggested by tabular values. Tabular values underestimate the energy availability of flaked corn by failing to account for digestibility of the nonstarch OM that is increased by flaking by the same magnitude (10%) as starch. Correcting for improvement in digestibility of nonstarch OM increases the NEg value of steam-flaked corn to 1.70 Mcal/kg, a value very close to values calculated from cattle performance trials. Digestibility of starch from corn grain is limited by the protein matrix that encapsulates starch granules, and by the compact nature of the starch itself. Disruption of the protein matrix (by shear forces on hot grain during flaking) is the first limiting step toward optimizing starch digestion. Five critical production factors influence the quality of steam-flaked corn: steam chest temperature, steaming time, roll corrugation, roll gap, and roll tension. For optimal shear, it is important that rolls be hot and that kernels be hot when flaked. Steam chests should be designed to allow a steaming time of at least 30 min at maximum roller mill capacity producing a flake of 0.31 kg/L (24 lb/bushel). As little as 5% moisture uptake during steaming appears adequate. The rate of flaking and distribution of kernels across the rolls also are critical. Quality standards for steam-flaked corn include measurements of flake thickness, flake density, starch solubility, and enzyme reactivity. Flake density, the most common quality standard, closely associated with starch solubility (r2 = 0.87) and enzyme reactivity (r2 = 0.79), still explains only 63% of the variability in percentage fecal starch and 52% of the variability in starch digestibility. Direct determination of fecal starch can explain 91% of the variability in starch digestion. The NEg value of corn can be predicted from fecal starch: NEg= 1.78 - 0.0184FS. Starch digestion is a Kappa Curve function of hot flake density, reaching a maximum at a flake density of approximately 0.31 kg/L. Flaking to a density of less than 0.31 kg/L, though increasing starch solubility, may reduce DMI, increase variability of weight gain among animals within a pen, and predispose cattle to acidosis and bloat without increasing starch digestion. We recommend that the steam-flaking process be optimized on the basis of fecal starch analysis.

A feeding trial involving 160 crossbred steers (357 kg) and a metabolism trial involving eight Holstein steers (189 kg) cannulated in the rumen and proximal duodenum were conducted to evaluate the interaction of dietary Mg level (.18 vs .32%, DM basis) and supplemental fat (0% supplemental fat vs 4% tallow [T], yellow grease [YG], or griddle grease [GG]) on growth performance and NE value of the diet. Dietary Mg level did not influence (P > .10) growth performance. Daily weight gain was lower (11%, P < .05) for steers fed GG than for those fed YG. Supplemental fat decreased (5%, P < .10) DMI and increased (P < .05) gain efficiency (7%). There was a fat x Mg level interaction (P < .01) for dietary NE. The increase in dietary NEg with T and YG supplementation was similar (8.6 vs 8.0%) for diets containing .18 and .32% Mg. In contrast, the increase in dietary NEg with GG supplementation was 8.9% with .18% dietary Mg, but the NEg value of the diet did not increase when GG was added to diets with .32% dietary Mg. Dressing percentage was lower (1.5%, P < .1) and retail yield was greater (2.2%, P < .05) for steers fed GG- than for steers fed YG-supplemented diets. Increasing dietary Mg level increased kidney, pelvic, and heart fat (5.5%, P < .05). There was a fat x Mg level interaction (P < .1) for marbling score. With diets containing no supplemental fat, increasing dietary Mg decreased (15.2%) the marbling score, and with diets containing supplemental fat, increasing dietary Mg increased (7.2%) the marbling score. Fat supplementation decreased (P < .01) ruminal and total tract digestion of OM (10 and 3.5%, respectively) and NDF (37 and 17%, respectively). Supplemental fat did not affect (P > .10) Ca digestion but decreased (41.7%, P < .01) apparent Mg digestion. Increasing dietary Mg level increased (77.7%, P < .05) apparent Mg digestion. There were no treatment effects (P > .10) on postruminal fatty acid digestion. Fat supplementation decreased (17.3%, P < .01) the acetate:propionate molar ratio. Total ruminal protozoal counts were increased (12.7%, P < .05) by increasing dietary Mg level and decreased (12.9%, P < .05) by fat supplementation. We conclude that supplemental fats may depress Mg absorption. Increasing dietary magnesium levels beyond current recommendations may increase marbling scores in cattle fed fat-supplemented diets but may not affect growth performance or dietary NE. The NE value of fat is a predictable function of level of fat intake.

Two isonitrogenous diets (12.5% CP) containing 20 (20% NPN) or 40% (40% NPN) of the N as nonprotein N were evaluated with 0 or 10 mg laidlomycin propionate (LP)/kg in a 2 x 2 factorial arrangement. Changes in dietary NPN:N ratio were developed by partial substitution of urea N for fish meal N. In Trial 1, four Holstein steers (349 kg) with cannulas in the rumen and proximal duodenum were used to evaluate treatment effects on digestive function. Total tract OM digestion was slightly greater (1.2%, P < .10) for diets containing 20% of N as NPN, due to greater (3.4%, P < .05) postruminal OM digestion. Supplemental LP decreased passage of microbial N to the small intestine (7.4%, P < .10) and ruminal degradation of dietary CP (DIP, 8.1%, P < .10). Decreasing the NPN:N ratio decreased microbial N flow to the small intestine (7.5%, P < .10) and DIP (15%, P < .01) and increased (6%; P < .05) the flow of indispensable amino acids to the small intestine. Supplemental LP increased (P < .10) ruminal pH. There were no treatment effects (P > .10) on ruminal molar proportions of acetate or propionate. In Trial 2, 120 Holstein steers (122 kg) were used to evaluate treatment effects on growth performance. Decreasing the NPN:N ratio increased ADG (P < .01) by 36, 40, and 16%, respectively, for the initial three 56-d periods of the trial. Overall, ADG was 17% greater (P < .01) for cattle consuming diets containing 20 vs 40% NPN. Decreasing the NPN:N ratio increased (P < .01) gain efficiency by 17 and 14%, respectively, for the initial two 56-d periods. Overall, gain efficiency was 6% greater (P < .01) for diets containing 20% NPN. Dietary NPN:N ratio did not influence (P > .10) the NE value of diets. Supplemental LP did not affect DMI (P > .10) but increased ADG (6%, P < .01) and gain efficiency (5%, P < .05) and decreased (11%, P < .05) the maintenance energy requirements. Protein nutrition limited growth performance of calves receiving the 20% NPN diets during the initial 112 d of the trial. With the 40% NPN diets, protein nutrition limited growth performance throughout most of the trial (d 1 to d 224). We conclude that LP will enhance daily weight gain and gain efficiency of calf-fed Holstein steers. Conventional urea-based diets will not diminish response to LP, although they may not meet the metabolizable amino acid requirements of calf-fed Holsteins during the first three-quarters of the feeding period.

Four Holstein steers (212 kg) with cannulas in the rumen and proximal duodenum were used in a 4 x 4 Latin square experiment to study the influence of degree of ruminal biohydrogenation (BH) on the feeding value of supplemental fat. Treatments consisted of an 88% concentrate finishing diet supplemented with 1) 2% yellow grease (control); 2) 4% formaldehyde-protected fat (Rumentek), 2% yellow grease (LBH); 3) 2% Rumentek, 4% yellow grease (MBH); or 4) 6% yellow grease (HBH). Ruminal BH of HBH, MBH, and LBH diets was 74, 68, and 54%, respectively. High-fat supplementation decreased (7%, P < .05) intestinal digestibility of 18:0 but increased intestinal digestibility of 18:1 (3%, P < .10), 18:2 (14%, P < .01), and 18:3 (23%, P < .05). Increases in intestinal digestibility of 18:0 (quadratic effect, P < .05), 18:1 (linear effect, P < .01), 18:2 (linear effect, P < .01), 18:3 (linear effect, P < .05), and total fatty acids (linear effect, P < .05) were inversely related to BH. For every 1% increase in the proportion of 18:1 fat entering the small intestine, the digestibility of 18:0 increased 1%. High-fat supplementation depressed ruminal digestion of OM (11%, P < .05), NDF (16%, P < .05), starch (6%, P < .05), and feed N (12%, P < .01). Formaldehyde-protein protection of fat diminished its depressing effects on ruminal digestion of NDF (quadratic effect, P < .10) and enhanced ruminal escape of feed N (linear effect, P < .10). Postruminal digestion of OM was greater (4.6%, P < .10) for high-fat diets. High-fat diets decreased (P < .05) total tract digestion of OM (1.9%), NDF (7.4%), and starch (.5%). Postruminal and total tract digestibility of OM, NDF, N, and starch was not affected (P > .10) by BH. In a 125-d finishing trial, 100 yearling steers (362 kg) were used to evaluate treatment effects on growth performance. High-fat diets did not affect (P > .10) ADG but increased (P < .10) feed efficiency (9%, P < .10), dietary NEm (7.6%, P < .05), and dressing percentage (9%, P < .05). The magnitude of the increase in dressing percentage was inversely related (linear effect, P < .10) to BH. We conclude that decreasing ruminal BH will increase postruminal digestibility of fat, and hence the NE value of dietary fat. The synergistic effect of increasing the proportion of 18:1 on intestinal digestion of fat enables higher levels of fat supplementation. Protecting fat from BH minimizes the detrimental effects of supplemental fat on fiber digestion.

Crossbred steers (n = 7; 400 kg BW), fitted with T-type cannulas in the duodenum and ileum, were used to examine the effects of processing method, dry-rolled (DR) vs. steam-flaked (SF) sorghum grain, and degree of processing (flake density; FD) of SF corn (SFC) and SF sorghum (SFS) grain on site and extent of DM, starch, and N digestibilities and to measure extent of microbial N flow to the duodenum. In Exp. 1, diets contained 77% DRS or 77% SFS with FD of 437, 360, and 283 g/L (SF34, SF28, and SF22). In Exp. 2, diets contained 77% SFC with FD of SF34 or SF22. For sorghum and corn diets, respective average daily intakes were as follows: DM, 6.7 and 8.1 kg; starch, 3.8 and 4.7 kg; N, 136 and 149 g. Steers fed SFS vs. DRS increased (P = .01) starch digestibilities (percentage of intake) in the rumen (82 vs. 67%) and total tract (98.9 vs. 96.5%) and decreased digestibilities in the small intestine (16 vs. 28%; P = .01) and large intestine (.5 vs 1.2%; P = .05). As a percentage of starch entering the segment, digestibility was increased (P = .01) within the small intestine (91 vs. 85%) but was not altered within the large intestine by steers fed SFS vs. DRS. Decreasing FD of SFS and of SFC, respectively, linearly increased starch digestibilities (percentage of intake) in the rumen (P = .03, .02) and total tract (P = .03, .09) and linearly diminished starch digestibilities in the small intestine (P = .04, .09). Starch digestibilities (percentage of entry) within the small or large intestine were not changed by FD. The percentage of dietary corn or sorghum starch digested in the large intestine was very small, less than 2% of intake. Microbial N flow to the duodenum was not altered by SFS compared to DRS, or by decreasing FD of SFS and SFC. Reducing FD of SFS, but not of SFC, tended to decrease (P = .07) microbial efficiency linearly and tended to increase (P = .06) total tract N digestibilities linearly. Steam flaking compared to dry rolling of sorghum grain and decreasing FD of SFC and SFS grain consistently increased starch digestibility in the rumen and total tract of growing steers. The greatest total digestibility of dietary starch occurred when the proportion digested in the rumen was maximized and the fraction digested in the small intestine was minimized. These changes in sites of digestion account, in part, for the improved N conservation and greater hepatic output of glucose by steers fed lower FD of SFS reported in our companion papers.

Holstein steers (n = 96; 375 kg) were used in a 144-d growth-performance trial to evaluate influence of level (42, 28.5, and 15%) of FFA content on feeding value of yellow grease. Two sources of yellow grease were compared: conventional yellow grease (CYG), containing 15% FFA, and griddle grease (GG), containing 42% FFA. Dietary treatments consisted of an 88% concentrate finishing diet supplemented with either 1) 0% fat, 2) 5% GG, 3) 2.5% GG and 2.5% CYG, or 4) 5% CYG. Fat supplementation increased ADG (11%; P<.05), feed efficiency (9%; P<.05), diet NE (6.4%; P<.05), carcass weight (4%; P<.10), dressing percentage (1%; P<.10), and kidney, pelvic, and heart fat (20%, P<.05). Increasing the FFA in supplemental fat increased (linear effect, P<.10) DM intake, ADG, and feed efficiency and decreased (linear effect, P<.10) retail yield. These improvements in performance were primarily due to increased DM intake. The NEm and NEg values of supplemental fats were not affected by FFA content, averaging 4.98 and 3.85 Mcal/kg, respectively. Treatment effects on characteristics of ruminal and total tract digestion were evaluated using four Holstein steers (180 kg) with cannulas in the rumen and proximal duodenum. Supplemental fat did not influence (P>.10) ruminal or total tract digestion of OM, ADF, starch or N. Postruminal fatty acid digestion was less (P<.10) for fat-supplemented diets than for unsupplemented diets (73.0 vs. 78.6%). The decrease in postruminal fatty acid digestibility with fat supplementation was mainly due to a decreased (16.7%; P<.05) digestibility of C18:0. Postruminal digestibility of the supplemental fat was 68%. There were no treatment effects (P>.10) on ruminal pH. Ruminal biohydrogenation of fatty acids was directly proportional to estimates of methane production. We conclude that the feeding value of conventional yellow grease and griddle grease is similar and that differences in the FFA content of yellow grease will not negatively affect diet acceptability and growth performance of feedlot cattle.

Two trials were conducted to evaluate the influence of malic acid supplementation on ruminal fermentation. In Trial 1, six Holstein steers (300 kg) with ruminal cannulas were used in a crossover design experiment to study the influence of malic acid (MA) on ruminal metabolism during glucose-induced lactic acidosis. Treatments consisted of a 77% steam-flaked barley-based finishing diet supplemented to provide 0 or 80 g/d of MA. After a 13-d dietary adjustment period, 1 kg of glucose was infused into the rumen 1 h after the morning feeding. Ruminal pH was closely associated (R2 = .70) with ruminal DL-lactate concentration. Malic acid supplementation increased (P < .01) ruminal pH 3 h after the glucose infusion. However, there were no treatment effects (P > .10) on ruminal VFA molar proportions or ruminal and plasma DL-lactate concentrations. In Trial 2, four Holstein steers (150 kg) with cannulas in the rumen and proximal duodenum were used in a crossover design experiment to evaluate the influence of MA supplementation on characteristics of digestion. Treatments consisted of an 81% steam-flaked barley-based finishing diet supplemented to provide 0 or 80 g/d of MA. There were no treatment effects (P > .10) on ruminal and total tract digestion of OM, ADF, starch, and feed N or on ruminal microbial efficiency. Malic acid supplementation increased (P < .05) ruminal pH 2 h after feeding. As with Trial 1, there were no treatment effects (P > .10) on ruminal VFA and DL-lactate concentrations. We conclude that supplementation of high-grain finishing diets with MA may be beneficial in promoting a higher ruminal pH during periods of peak acid production without detrimental effects on ruminal microbial efficiency or starch, fiber, and protein digestion. There were no detectable beneficial effects of MA supplementation on ruminal and plasma lactic acid concentrations in cattle fed high-grain diets.

Crossbred yearling steers (n = 125; 372 kg) were used in a 109-d finishing trial. Steers were fed an 88% concentrate diet containing 65% corn (DM basis) as 1) dry rolled corn (DRC); 2) tempered rolled corn (TRC), 43 mg surfactant (SarTemp)/kg corn; 3) TRC, 172 mg surfactant/kg corn; 4) TRC, 430 mg surfactant/kg corn; and 5) steam-flaked corn (SFC). Corn moisture was greater (3.5%, P < .01) for TRC than for DRC but less (10%, P < .05) than for SFC. Starch enzymatic reactivity was less for TRC than for either DRC (18%, P < .05) or SFC (42%, P < .01). Tempering increased the integrity of rolled corn and reduced the amount of particles less than 2 mm in diameter by 54% (P < .01). Steam flaking corn increased (P < .01) proportion (78%) of the grain having a particle size distribution of greater than 8 mm, as compared with TRC (25%) and DRC (3%). Compared with DRC, tempering enhanced (P < .10) ADG (9%), feed efficiency (5%), and dietary NE (3%). Daily weight gain was similar (P > .10) for TRC and SFC. Feed efficiency (P < .10) and dietary NE (P < .01) were greater (6%) for SFC than for TRC. There were no differences (P > .10) between DRC and TRC in ruminal and total tract digestion of OM, N, and starch, and in ruminal microbial efficiency. Ruminal digestion of OM decreased (linear effect, P < .05) and ruminal microbial efficiency increased (linear effect, P < .05) with increasing surfactant concentration. Ruminal digestion of OM and starch, and flow of nonammonia N to the small intestine were greater (31, 56, and 14%, respectively, P < .01) for SFC than for TRC. Postruminal and total tract digestion of OM, N, and starch, and dietary DE were greater (P < .01) for SFC than for TRC. We concluded that tempering corn will enhance animal performance. Increasing the concentration of surfactant used in tempering may enhance ruminal microbial efficiency and lean tissue growth.

We used 216 Holstein steers (151 kg) in a 262-d trial to evaluate the influence of dietary magnesium level (.19, .25, and .32%) and laidlomycin propionate (LP; 0 vs 11 ppm, air-dry basis) on growth performance and NE value of the diet. During the initial 112 d of the trial, LP increased (P < .01) ADG (6.3%) and feed efficiency (4.2%). From d 112 until slaughter, LP increased (P < .05) ADG (9.7%) and feed efficiency (4.5%). Across the 262-d feeding period, LP supplementation enhanced (P < .01) ADG (8.9%) and feed efficiency (6.3%). There was an interaction (P < .05) between dietary Mg and LP on NE value of the diet. The enhancement in NE value of the diets owing to LP with .19, .25, and .32% dietary Mg were .5, 3.0, and 5.9%, respectively. Six Holstein steers (302 kg) were used in a 6 x 6 Latin square experiment to evaluate treatment effects on characteristics of ruminal and total tract digestion. There were no treatment interactions (P > .10) on site and extent of digestion of OM, starch, and N. Supplemental Mg increased (quadratic effect, P < .10) ruminal OM digestion. Neither LP nor dietary Mg level affected (P > .10) ruminal digestion of starch and feed N. Supplemental LP decreased (15%, P < .05) ruminal microbial efficiency. Total tract digestion of OM and N increased (linear effect, P < .01) with increasing dietary Mg level. There were interactions between LP and dietary Mg level on ruminal soluble-Mg concentration (linear effect, P < .01) and Mg absorption (quadratic effect, P < .05). Apparent total tract Mg digestion increased owing to LP (P < .01) and dietary Mg level (linear effect, P < .01). There were no treatment effects (P > .10) on ruminal pH. Dietary Mg level did not influence (P > .10) ruminal VFA concentrations or molar proportions. Supplemental LP increased (14%; P < .10) total ruminal VFA concentration but did not affect (P > .10) VFA molar proportions. We conclude that LP will increase daily weight gain and feed efficiency of calf-fed Holstein steers and that this response may be enhanced by increasing dietary Mg level.

We used 80 medium-framed yearling crossbred heifers (357 kg) in a 110-d trial to evaluate the influence of dietary protein level (11 vs 14%) on the feeding value of dry-rolled (DRC) and steam-flaked corn (SFC). All diets contained 1% urea; cottonseed meal (CSM) was the source of supplemental undegradable intake protein (UIP). Steam flaking corn reduced DMI (9%, P < .10) and increased (P < .01) feed efficiency (14%), dietary NEm (13%), and NEg (15%). Steam flaking increased the NEm by 17% and NEg by 19%. Supplemental CSM decreased (P < .10) feed efficiency (7%) and dietary NEm (4%) and NEg (6%). There were no treatment effects (P > .10) on carcass characteristics. Steam flaking corn increased (P < .05) fecal pH and reduced (P < .01) fecal starch. Supplemental CSM increased (P < .01) fecal pH and reduced (P < .01) fecal starch. Four Holstein steers (413 kg) were used in a 4 x 4 Latin square experiment to evaluate treatment effects on digestive function. Steam flaking corn increased (P < .05) flow of nonammonia N (11%, P < .05) and microbial N (15%, P < .01) to the duodenum. Supplemental CSM increased the flow of microbial N (6%, P < .01), feed N (21%, P < .10), and nonammonia N (12%, P < .05) to the duodenum. The UIP value of CSM was 28% for the DRC diet and 52% for the SFC diet. Steam flaking corn increased (P < .01) ruminal starch digestion (26%) and total tract digestibility of OM (17%), N (15%), starch (19%), and GE (17%). Steam flaking increased the DE value of corn by 21%. Supplemental CSM did not influence (P > .10) postruminal or total tract starch digestion. Supplemental CSM decreased (7%, P < .10) the DE value of the diet. We conclude that increasing the postruminal protein supply of a corn-based finishing diet beyond that provided by urea supplementation, alone, will not enhance starch digestion or the energy value of the diet.

Ruminally degradable intake protein (DIP) and metabolizable indispensable amino acid (MIAA) requirements of feedlot steers were evaluated. Dietary treatments consisted of isocaloric 80% concentrate steam-flaked corn-based diets containing either .8% urea, 1.5% fish meal (FM), 3.0% FM, 4.5% FM, or 4.5% soybean meal (SBM). Treatment effects on characteristics of ruminal and total tract digestion were evaluated using four Holstein steers (249 kg) with cannulas in the rumen and proximal duodenum. Ruminal digestibility of OM (RDOM; P < .05) and feed N (P < .01) and microbial N flow (MNF; P < .01) to the small intestine were greater with urea as the supplemental N source. The level of DIP was closely associated (R2 = .89) with MNF. Postruminal digestibility of OM was greater (P < .05) for FM than for urea-supplemented diets, compensating for lower RDOM. There were no treatment effects (P > .10) on DOM. As the level of FM was increased, MIAA increased linearly (P < .01). Intestinal MIAA were similar (P > .10) for urea- and SBM-supplemented diets. Treatment effects on 56-d growth performance were evaluated using 100 medium-framed crossbred steers (231 kg). Daily weight gain (linear effect; P < .01), DM intake (linear effect; P < .10), feed efficiency (linear effect; P < .05), and diet NE (linear effect; P < .05) increased with level of FM supplementation. Daily weight gain (P < .10) and DM intake (P < .05) were greater for urea- than for SBM-supplemented diets. Using bovine tissue as the reference protein, the biological value (based on chemical score) of the intestinal chyme protein averaged 73%; methionine was first-limiting. There was a close association (R2 = .99) between methionine supply to the small intestine and observed/expected dietary NE. The metabolizable methionine requirement (MMETR, g/d) of medium-framed feedlot steers can be reliably predicted from measures of BW and ADG (MMETR = 1.565 + .0234ADG[268 - (29.4 x .0557BW(.75)ADG(1.097))/ADG] + .0896BW(.75)). There was a very close association (R2 = .89) between DIP and MNF (MNF = 13.7DIP - .66DIP(2) + 25.9). At maximal observed synthesis, DIP accounted for 76% of the MNF. A minimum of 100 g DIP/kg of total tract digestible OM was required to maximize RDOM and MNF.

One hundred twenty crossbred steers (294 kg, initially) were used in a 141-d finishing trial. Four concentrations (8, 16, 24, and 32% of diet DM) of cottonseed meal (CSM, prepressed solvent-extracted) replaced steam-flaked corn in a corn-based finishing diet. Increasing level of CSM decreased ADG (linear component, P < .10), feed efficiency (linear component, P < .01), and dietary NE (linear component, P < .01). Observed dietary NE was 99% of expected at 8 and 16% CSM but 95% of expected at higher levels of inclusion (linear component, P < .05). Level of CSM did not influence (P > .10) dressing percentage, longissimus area, fat thickness, or retail yield. Eight Holstein steers (285 kg) were used in a replicated 4 x 4 Latin square design to evaluate treatment effects on characteristics of digestion. Ruminal digestibility of OM decreased (linear component, P < .05) as CSM increased, although ruminal digestibility of starch and feed N were not affected (P > .10). Ruminal escape protein from CSM was 58%. Total tract starch digestion was not altered (P > .10), but total tract digestibility of OM and GE decreased (linear component, P < .05) and digestion of N increased (linear component, P < .01) as CSM replaced steam-flaked corn. The ratio of observed to expected DE value of the diets was similar across CSM levels, averaging .99. Thus, comparative DE value of CSM was not affected by level of inclusion, averaging 3.32 Mcal/kg. We conclude that the NEm and NEg values of CSM are 1.88 and 1.24 Mcal/kg, respectively, and in close agreement with tabular values. However, CSM should not exceed 16% of DMI, because higher levels may depress cattle performance and replacement value of CSM.

Using ammonium sulfate, three levels of dietary S (.15, .20, and .25%, DM basis) were evaluated in a finishing trial with 108 yearling crossbred heifers (384 kg). The basal diet contained (DM basis) 4% alfalfa hay, 6% sudangrass hay, 74% steam-flaked corn, 4% yellow grease, 6% cane molasses, and 6% protein-mineral supplement. Increasing dietary S decreased ADG (quadratic effect, P < .10), DMI (linear effect, P < .10), feed efficiency (quadratic effect, P < .10), diet NE (quadratic effect, P < .10), and longissimus muscle area (linear effect, P < .05). Six Holstein steers (218 kg) with cannulas in the rumen and proximal duodenum were used to evaluate treatment effects on characteristics of digestion. Treatment effects on ruminal and total tract digestion of OM and N were small (P > .10). However, ruminal digestion of ADF and starch was slightly lower (quadratic effect, P < .10), and postruminal digestion of ADF and starch was correspondingly greater (quadratic effect, P < .05) with supplemental S. Dietary S level did not influence (P > .10) ruminal synthesis of microbial N. Increasing dietary S did not influence (P > .10) ruminal pH or lactic acid. Increasing S decreased molar proportions of acetate (quadratic effect, P < .10) and increased molar proportions of propionate (linear effect, P < .10). We conclude that S in excess of .20% of dietary DM may have detrimental effects on growth performance and dietary NE. Excessive dietary S may also compromise carcass merit by decreasing longissimus muscle area.

Ten Holstein steers (465 +/- 6 kg) with cannulas in the rumen and proximal duodenum were used in a crossover design experiment to evaluate the influence of air-dry vs fresh steam-flaked corn on characteristics of ruminal and total tract digestion. The basal diet contained 77% steam-flaked corn (DM basis). Air-dry steam-flaked corn (SFC-AD) was obtained from a single batch that had been allowed to air-dry for 5 d before beginning the trial. Fresh steam-flaked corn (SFC-F) was produced daily Monday through Friday. Following production, the SFC-F was placed in air-tight polybags and stored at 4 degrees C until the time of feeding. There was little difference (P > .20) between SFC-AD and SFC-F with respect to site and extent of digestion of OM, starch, and fiber. Moreover, the two treatments did not differ (P > .20) in ruminal degradability of feed N. Apparent total tract N digestion was slightly greater (2.4%, P < .05) for SFC-F than for SFC-AD. Treatments did not affect ruminal pH (P > .20); however, VFA concentration of ruminal fluid tended to be greater (8.3%, P < .10) for SFC-F than for SFC-AD, indicating that the initial rate of fermentation may have been greater with SFC-F. Ruminal molar proportions of acetate were not affected by treatments (P > .20), but ruminal molar proportions of propionate tended to be greater (9.7%, P < .10) and molar proportions of butyrate tended to be less (10.0%, P < .10) for SFC-F than for SFC-AD. We conclude that the characteristics of digestion and the feeding value of steam-flaked corn is not altered by air drying before feeding.

Ninety-six medium-frame crossbred steers (209 kg) were used in an 86-d feeding trial. Dietary treatments consisted of a 92% concentrate diet containing 76.15% (DM basis) grain as 1) steam-flaked barley (SFB), flake density (FD) = .26 kg/L; 2) blend of 2/3 barley and 1/3 corn steam-flaked (SFBLEND), FD = .36 kg/L; 3) SFBLEND, FD = .31 kg/L; 4) SFBLEND, FD = .26 kg/L. There were no treatment effects (P > .10) on growth performance of feedlot steers or NE value of the diet. Weight gain averaged 1.46 kg/d. Feed efficiency was in close agreement (101%) with expected values based on observed DMI and tabular dietary NE values. Treatment effects on characteristics of ruminal and total tract digestion were evaluated using four Holstein steers (280 kg) with cannulas in the rumen and proximal duodenum in a 4 x 4 Latin square design. Ruminal digestibility of OM (P < .01), starch (P < .01), and feed N (P < .10) increased, and ruminal N efficiency (duodenal nonammonia N/N intake, P < .01) decreased (linear component) with decreasing FD. Net microbial N flow to the small intestine was greater (P < .05) for SFB than for the SFBLEND. Total tract digestion of OM (P < .01), starch (P < .05), and DE (P < .05) was greater for the SFBLEND than for SFB. There were no treatment effects (P < .10) on postruminal and total tract digestibility of N. We conclude that blending barley and corn before flaking will have very little impact on the feeding value of the grains compared with flaking the grains separately.

Four Holstein steers (222 kg) with cannulas in the rumen and proximal duodenum were used in a crossover design experiment to evaluate the energy and protein value of dehydrated poultry excreta (DPE). Dietary treatments contained (DM basis) 4% alfalfa hay, 8% sudangrass hay, 49% flaked barley, 8% cane molasses, 3% yellow grease, .8% urea, 1.4% limestone, .3% mineral salt, and .4% chromic oxide, plus 25% of either tapioca pellets or DPE. The DPE contained 42% ash and 27% CP (6% true protein). Substituting DPE for tapioca decreased the DE value of the diet (P < .01). The estimated DE value of the DPE was 1.36 Mcal/kg (.34 Mcal NEm/ kg). There were no treatment effects (P > .10) on microbial N flow to the small intestine or ruminal microbial efficiency (grams of microbial N/kilogram of OM fermented). The addition of DPE increased (P < .05) the flow of non-ammonia and feed N to the small intestine. The estimated ruminal escape N value of DPE was 22%, although very little of this was true protein. Dehydrated poultry excreta did not increase (P > .10) flow of alpha-amino N to the small intestine. Ruminal degradability of uric acid was 96%. Total tract true digestibility of N in DPE was 84%. It is concluded that the NE value of DPE is markedly overestimated in current tables of feeding standards. Less than 10% of the N in DPE escapes the rumen as true protein N.

Four Holstein steers (261 +/- 2 kg) with cannulas in the rumen and proximal duodenum were used in a 4 x 4 Latin square experiment to evaluate the interaction of dietary Ca (.45 vs. 90%) and supplemental fat (0 vs 5% yellow grease) on characteristics of digestion. There were no treatment interactions (P > .10). Supplemental Ca did not influence (P > .10) digestibility of OM, NDF, starch, N, and fatty acids. Supplemental fat decreased ruminal (21%, P < .05) and total tract (3%, P < .01) digestibility of OM and ruminal (25%, P < .10) and total tract (20%, P < .01) digestibility of NDF. Supplemental fat increased (P < .10) ruminal microbial efficiency. Ruminal free Ca was not affected (P > .10) by Ca intake but was closely associated with ruminal pH and fatty acid intake (R2 = .84). Apparent ruminal Ca absorption was generally negative, being increased (P < .05) by Ca supplementation and decreased (P < .10) by fat supplementation. Postruminal (P < .05) and total tract (P < .01) apparent Ca absorption was increased by Ca supplementation. Supplemental fat did not influence (P > .10) postruminal or total tract Ca absorption. One hundred forty-four medium-frame crossbred steers were used to evaluate treatment effects on feedlot growth performance. There were no treatment interactions (P > .10). Increasing dietary Ca did not influence (P > .10) steer performance. Supplemental fat decreased (P < .01) DMI and increased NE value of the diet (P < .01). It is concluded that increasing dietary Ca from .45 to .9% in high-grain finishing diets will not affect the feeding value of supplemental fat and that high levels (5%) of supplemental fat will not have a detrimental effect on Ca absorption.

We conducted two trials to examine the influence of dietary forage level (FL; 16 and 8% sudangrass hay) and forage coarseness of grind (COG; ground to pass through a 2.5- vs 7.6-cm diameter screen) on growth performance and digestive function in feedlot steers fed a steam-flaked corn-based finishing diet. Thirty-two Mexican crossbred steers (297 kg) were used to determine treatment effects on growth performance during an 80-d finishing period. There were no treatment interactions (P > .10). Reducing FL increased (17%, P < .05) ADG. decreased (23%, P < .01) feed/gain, and increased (17% and 22%, P < .01) dietary NEm and NEg. Coarseness of grind did not affect (P > .10) steer performance. Treatment effects on digestive function were evaluated using four Holstein steers with cannulas in the rumen and proximal duodenum. There were no treatment interactions (P > .10) on nutrient digestibility. Forage level did not affect (P > .10) ruminal digestion of OM, N, or microbial efficiency. However, decreasing FL increased (P < .05) total tract digestion of OM (5.0%), N (5.7%), and ME (8.7%). Increasing COG increased total tract digestibility of OM (2.3%, P < .01), ADF (24.4%, P < .01); N (3.8%, P < .01), and ME (3.7%, P < .05). Increasing FL increased (P < .10) ruminal pH and decreased (P < .10) ruminal molar proportions of butyrate. Increasing COG did not influence (P > .10) ruminal pH or ruminal VFA molar proportions. We conclude that increasing coarseness of ground sudangrass may not improve the performance of feedlot steers when the forage is fed at either 8 or 16% of diet DM, although measures of ruminal and total tract nutrient digestibility may be slightly increased.

A metabolism trial and a growth-performance trial were conducted to evaluate the interaction of dietary magnesium level (.18 vs .32%) and laidlomycin propionate (LP) (0 vs 11 ppm, airdry basis) on utilization of a high-energy finishing diet by feedlot steers. There were no treatment effects (P > .10) on ruminal and total tract digestion of OM and ADF. However, there was an interaction (P < .05) between magnesium level and LP on ruminal starch digestion. With LP, magnesium level had no effect on ruminal starch digestion. Without LP, increasing dietary magnesium decreased ruminal starch digestion. Laidlomycin propionate decreased (P < .10) ruminal degradation of feed N (13.9%) and microbial efficiency (8.9%) and increased (P < .10) total tract N digestibility. There were no treatment interactions (P > .10) on site and extent of magnesium digestion. Magnesium absorption decreased with increased dietary magnesium (11.6%, P < .05) and LP (16.9%, P < .01). There was an interaction (P < .10) of treatments on postabomasal calcium absorption. With the low magnesium level LP increased calcium absorption, whereas with the higher magnesium level LP decreased calcium absorption. There was an interaction between magnesium level and LP on ruminal pH at .5 h (P < .05) and 8 h (P < .10) after feeding. In general, ruminal pH increased with LP supplementation at the lower magnesium level and decreased with LP supplementation at the higher magnesium level. There were interactions (P < .05) between magnesium level and LP on ruminal VFA molar proportions and estimated methane production. At the lower magnesium level, the effects of LP on VFA molar proportions were small. At the higher magnesium level, however, LP decreased (13.2%) molar proportions of acetate and increased (26.5%) molar proportions of propionate. There was an interaction (P < .05) between magnesium level and LP on feed intake. At the lower magnesium level, LP increased (3.9%) feed intake; at the higher magnesium level LP decreased (4.4%) intake. Increasing dietary magnesium enhanced ADG (6%, P < .10). Both magnesium and LP enhanced (2.8%, P < .10) diet NE, and this effect was strictly additive. There were no effects (P > .10) of magnesium level or LP on plasma magnesium concentrations. Plasma calcium concentrations were decreased by supplemental magnesium (15.2%, P < .05) and increased by LP (16.0%, P < .01). We conclude that dietary magnesium levels modulate the metabolic and performance responses of feedlot steers to supplemental LP.

One hundred twenty medium-frame crossbred steers (364 kg) were used in a 106-d feedlot trial to compare the feeding value of Condor, a hulless barley (HB), with Leduc, a conventional covered barley (CB). Dietary treatments consisted of a finishing diet containing 77% grain (DM basis) as 1) steam-flaked corn (SFC); 2) dry-rolled HB (DRB-H); 3) steam-flaked HB (SFB-H); 4) dry-rolled CB (DRB-C); and 5) steam-flaked CB (SFB-C). Feed intake was lower (8.6%, P < .01) for HB than for CB. Diet NE was greater for HB than for CB (P < .01) and for SFB than for DRB (P < .01). Incidence of liver abscess was greater for DRB than for SFB (239%, P < .05) and for HB than for CB (167%, P < .10). Diet NE were greater (P < .10) for SFC than for barley treatments. Treatment effects on characteristics of digestion were evaluated using five Holstein steers (202 kg) with cannulas in the rumen and proximal duodenum. There were barley variety x grain processing interactions on ruminal digestion of OM (P < .10), ADF (P < .05), and starch (P < .05). Ruminal OM digestion increased (9.0%) with steam flaking HB and decreased slightly (1.9%) with steam flaking CB. Ruminal digestion of starch was enhanced more dramatically (21.5 vs 8.4%, respectively) with steam flaking HB than with CB. Steam flaking decreased ruminal ADF digestion of HB only slightly (6.2%), whereas with CB the decrease was more dramatic (54.3%). Ruminal degradable N was greater (P < .10) for CB than for HB and for DRB than for SFB (19.8%, P < .05). Estimates of ruminal degradable N in DRB-H, SFB-H, DRB-C, and SFB-C were 69.7, 53.9, 78.5, and 65.0%, respectively. Postruminal digestion of OM (P < .01), starch (P < .05), and N (P < .10) were greater for HB than for CB. Steam flaking barley increased (P < .01) postruminal N digestibility. Total tract digestibility of OM (P < .01), ADF (P < .05), starch (P < .01), and energy (P < .01) were greater for HB than for CB. Digestibility of ADF in barley hulls was only 6.4%. Steam flaking increased (P < .01) total tract digestibility of starch. Ruminal digestibility of OM and feed N was lower (P < .01) for SFC than for barley diets. Ruminal pH was lower (P < .10) for HB than for CB and for SFB than for DRB (P < .01). Ruminal propionate was higher (24.1%, P < .01), and methane was lower (17.9%, P < .01) for HB than for CB.

Ninety-six crossbred steers (316 kg) were used in a 135-d growth-performance trial to evaluate the comparative feeding value of yellow rease (0 vs 6%) in 10% forage vs 30% forage rowing-finishing diets. There were interactions between forage level and supplemental fat on ADG (P < 10), DM conversion (P < .05), diet NE (P < .10), longissimus muscle area (P < .01), fat thickness (P < 10), and percentage of retail yield (P < .01). Supplemental fat increased (8.5%; P < .10) marbling score, sufficient to move the average carcass grade from high Select to low Choice. With the low-forage diet supplemental fat did not affect (P > .10) ADG, but decreased (P < .01) retail yield (2.3%) and longissimus muscle area (5.6%). With the high-forage diet supplemental fat increased ADG (13.3%; P < .05) and longissimus muscle area (7.1%; P < .01) but did not affect (P > .10) retail yield. Differences in carcass fat were small and not affected by treatment (P > .10). The NEm and NEg values of yellow grease were 3.55 and 2.65 Mcal/kg, respectively, for the low-forage diet and 5.71 and 4.65 Mcal/kg, respectively, for the high-forage diet. Treatment effects on characteristics of ruminal and total tract digestion were evaluated using four Holstein steers (233 kg) with cannulas in the rumen and proximal duodenum. There were no interactions (P > .10) between forage level and supplemental fat on ruminal and total tract digestibility of OM, ADF, starch, lipid, and gross energy. Postruminal lipid digestibility averaged 65.5% and was not affected (P > .10) by forage level. The ME value of yellow grease was the same (6.94 Mcal/kg) for both the low- and high-forage diets. There was an interaction between supplemental fat and forage level on nonammonia N flow to the small intestine (P < .10), percentage of ruminal escape feed N (P < .05), postruminal N digestion (P < .05), and methane production (P < .10). With the low-forage diet, fat supplementation did not affect (P > .10) ruminal degradation for feed N and methane production. With the high-forage diet fat supplementation decreased ruminal degradation of feed N (19.0%; P < .05) and methane production (14.8%; P < .05). We concluded that supplementation of a 30% forage (alfalfa hay) finishing diet with 6% yellow grease will permit growth-performance similar to that of steers fed a 10% forage diet without supplemental fat. The improved performance may be attributed to increased diet energy density and positive associative effects on protein flow to the small intestine and decreased ruminal methane production.

Four primiparous Holstein cows (112 d in lactation) with cannulas in the rumen and proximal duodenum were used in a 4 x 4 Latin square design. Dry-rolled (DR) corn (density .52 kg/L) was compared with stream-flaked (SF) corn processed to three flake densities: .39, .32, and .26 kg/L. The basal diet contained (DM basis) 43.4% alfalfa hay, 39.5% corn (DR or SF), 2.2% yellow grease, 9.6% cane molasses, .7% sodium bicarbonate, and 4.6% protein-mineral supplement. Steam flaking increased DM intake (P < .01). There were no treatment effects on ruminal pH (P > .10). Ruminal molar ratios of acetate and propionate were lower (P < .01) for SF than for DR corn and declined (linear component, P < .01) as flake density decreased. Ruminal digestibility of OM was not affected (P > .10) by corn processing. Ruminal starch digestibility increased (linear component, P < .05) as flake density decreased. Ruminal ADF digestibility was decreased by SF (P < .01); this effect was exacerbated by degree of processing (linear component, P < .05). Ruminal N efficiency (duodenal nonammonia N/N intake) was greater (P < .10) for SF than for DR corn because of an improved (P < .10) microbial efficiency. Steam flaking at all densities increased postruminal digestibility of OM (42.4%, P < .01), starch (84.9%, P < .01) N (13.6%, P < .01), and lipid (11.8%, P < .05). Total-tract digestibilities of OM, N, starch, DE and ME were greater (15.2, 11.5, 25.2, 14.9, and 20.0%, respectively, P < .01) for SF (mean of the three densities) than for DR corn. Total-tract digestibility of starch increased (linear component, P < .10) with degree of processing. However, this effect was offset by decreased (linear and quadratic components, P < .05) ADF digestibility. Steam flaking improved the feeding value of corn for lactating cows by improving diet acceptability and digestibility of lipid, starch, and N. Steam flaking increased the estimated NEl of corn by 33%. Optimal flake density probably is between .32 and .39 kg/L.

Eight Holstein steers (439 kg) with "T" cannulas in the rumen and proximal duodenum were used to evaluate the characteristics of digestion of Pima cottonseed. Treatments consisted of a basal growing-finishing diet containing (DM basis) 1) 15% tapioca, 2) 15% whole linted cottonseed (Delta Pine 61, DP); 3) 15% whole lint-free cottonseed (Pima, PW), and 4) 15% ground Pima cottonseed (PG). Substitution of tapioca with cottonseed decreased (P < .05) ruminal and total tract digestion of OM (10.8 and 3.5%, respectively). Net ruminal microbial N synthesis was also lower (20.5%, P < .10) with cottonseed supplementation. The greater reductions occurred with DP and PG. Characteristics of ruminal and total tract digestion of OM and N were similar for DP and PG. Grinding Pima cottonseed increased ruminal digestion of OM (13%; P < .05) and feed N (18.1%; P < .10). Ruminal digestibility of N in DP, PW, and PG averaged 50.0, 49.4, and 59.3%, respectively. Postruminal digestion of lipid was similar (P > .10) across cottonseed treatments, averaging 76.9%. The comparative DE value of DP, PW, and PG were 4.13, 3.20, and 3.80 Mcal/kg, respectively. It is concluded that the energy value of lint-free Pima cottonseed is similar to that of linted varieties provided that it is ground before feeding. However, grinding will increase ruminal N degradability 20%. Furthermore, depending on the level of incorporation in the diet, grinding Pima cottonseed may decrease ruminal microbial growth and net ruminal protein efficiency.

Four Holstein steers (208 kg) with "T" cannulas in the rumen and proximal duodenum were used in a 4 x 4 Latin square design experiment to evaluate the interaction of feed intake level on comparative ruminal and total tract digestion of dry-rolled and steam-flaked corn. The basal diet contained (DM basis) 6% alfalfa hay, 6% sudangrass hay, 75% corn, 2% yellow grease, 5% cottonseed meal, 3% cane molasses, and 3% supplement. The corn portion of the diet was provided as either dry-rolled (density = .54 kg/L) or steam-flaked (density = .36 kg/L). Dry matter intake was restricted to allow for .64 vs 1.28 kg/d of weight gain (1.6 vs 2.4% of BW). Ruminal digestibility of OM, starch, and feed N were not affected (P > .10) by DMI. Postruminal digestion of OM and N and total tract digestibility of OM and DE decreased (P < .05) as DMI was increased. Total tract starch digestibility was not influenced (P > .10) by DMI. Steam flaking corn increased (P < .05) ruminal digestibility of OM and starch and postruminal and total tract digestibility of OM, starch, N, DE, and ME. Increasing DMI and steam flaking decreased (P < .05) ruminal pH and molar proportion of acetate. It is concluded that corn processing is the primary factor influencing site and extent of starch digestion. Decreasing DMI increases DE value of the diet; however, ME value is not affected because of increased energy loss as methane.

A feedlot growth-performance trial and a metabolism trial were conducted to evaluate the interaction of forage level (10 vs 20%) and monensin (0 vs 28 mg/kg, air-dry basis) on utilization of a steam-flaked corn-based finishing diet. There were no treatment interactions (P > .10) on feedlot cattle growth performance or site and extent of digestion of OM, ADF, N, and starch. Monensin supplementation did not influence (P > .10) ADG, DM intake, feed efficiency, estimated NE value of the diet, or ruminal and total tract digestibility of OM, ADF, and starch. Monensin decreased (14.5%, P < .10) passage of microbial N to the small intestine and ruminal digestion of feed N (10.4%, P < .05). Ruminal pH tended to be slightly lower (1.9%, P < .10) with monensin supplementation. Monensin did not affect (P > .10) ruminal molar proportions of acetate and butyrate. There was an interaction between forage level and monensin on ruminal molar proportions of propionate. With the low-forage diet, molar proportions of propionate were 9.4% higher with monensin supplementation. In contrast, with the high-forage diet ruminal molar proportions of propionate were 5.5% lower with supplemental monensin. Monensin did not affect (P > .10) estimates of methane production. Decreasing the forage in the diet from 20 to 10% increased ADG (10.8%, P < .10), feed efficiency (11.6%, P < .01), and diet NEg (11.3%, P < .05). Seventy-two medium-framed, crossbred steers (348 kg) were used in a randomized complete block design performance trial. Experimental diets contained (DM basis) 6% alfalfa hay, 6% sudangrass hay, 79% wheat, 2% yellow grease, 4% cane molasses, and 3% supplement. Treatments were 1) dry-rolled wheat (DRW, density = .52 kg/L); 2) steam-rolled wheat, coarse flake (SRW-C, density = .39 kg/L); and 3) steam-rolled wheat, thin flake (SRW-T density = .30 kg/L). Steam processing increased amyloglucosidase reactivity of wheat starch by 238 and 287% for SRW-C and SRW-T, respectively. Cattle performance was similar (P > .10) for SRW-C and SRW-T. Steam processing wheat increased ADG (13.5%, P < .10) and decreased DM intake/gain (8.8%, P < .05). Diet NE was precisely as expected for DRW, confirming the applicability of tabular NE values. Diet NEm was 3.7% lower (P < .05) for DRW than for SRW. The NEm and NEg of SRW were 2.28 and 1.59 Mcal/kg, respectively. Twelve Holstein steers (266 kg) were "T" cannulas in the rumen and proximal duodenum were used in a completely random design experiment to evaluate treatment effects on characteristics of ruminal and total tract digestion. Ruminal digestibilities of OM and starch were similar (P > .10) for DRW and SRW. Postruminal and total tract digestibility of OM (P < .10) and starch (P < .01) were increased with SRW. Two feedlot cattle growth performance trials and a metabolism trial were conducted to evaluate the feeding value of cane molasses (CM) compared with wood sugar concentrate (WSC). The CM contained (as-fed basis) 73% DM, 8.6% ash, 48% total sugars, and 79.5 degrees Brix. The WSC contained (as-fed basis) 61% DM, 12.2% ash, 38.9% total sugars, and 29% lignosulfonate. When supplemented at 4% of diet DM, treatment effects on ruminal and total tract OM digestion and feedlot performance were similar. When supplemented at 8% of diet DM, ADG was similar across treatments, whereas feed efficiency tended (P < .10) to favor the CM diet. The NEm value of the diet was 2% higher (P < .01) with CM supplementation. It is concluded that WSC may be a useful alternative to molasses in diets for cattle. The feeding value of WSC seems to exceed that based on its hydrolyzable sugars content. Given that the NEm and NEg values (DM basis) for CM are 1.70 and 1.08 Mcal/kg, respectively, the corresponding values for WSC are 1.25 and .68 Mcal/kg, respectively.

Ninety-six crossbred steers (312 kg) were used in a 118-d feedlot growth performance trial to determine the relative effects of degree of steam processing on the feeding value of oats in a 90% concentrate finishing diet. Treatments were 1) steam-flaked corn (SFC, density = .28 kg/L); 2) dry-rolled oats (DRO, density = .36 kg/L); 3) steam-rolled oats, coarse flake (SRO-C, density = .33 kg/L); and 4) steam-rolled oats, thin flake (SRO-T density = .17 kg/L). Feed intake was similar (P > .10) across oats treatments. However, ADG was lower (13.2%, P < .01) and feed/gain was higher (11.1%, P < .05) for SRO-T than for SRO-C diets. Diet NEm was 7.2% lower (P < .10) for SRO-T than for SRO-C diets. Daily weight gain was greater (9.3%, P < .01) and feed intake and feed/gain were lower (13.1 and 20.8%, respectively; P < .01) for SFC than for oats treatments. Diet NEm and NEg were higher (20.0 and 26.5%, respectively; P < .01) for SFC than for oats treatments. Dressing percentage was 2.5% lower (P < .01) in steers fed the oats diets than in those fed the SFC diet. Four Holstein steers (232 kg) with cannulas in the rumen and proximal duodenum were used in a 4 x 4 Latin square experiment to evaluate treatment effects on characteristics of digestion. Ruminal digestibility of OM, starch, and ADF were similar (P > .10) for oats treatments, averaging 58.2, 93.5, and 9.6%, respectively.(ABSTRACT TRUNCATED AT 250 WORDS)
