This study was executed to investigate the effects of drinking deep sea water treated by reverse osmosis process (RO-DSW) on growth performance, nutrient utilizability, relative weight of lymphoid organs and the concentration of serum immunoglobulin G(IgG) in broiler chickens. A total of 200 one day old broiler chickens (Ross 308) were equally and randomly distributed into 10 ground floor pens (20 chicks per pen, 5 pens per treatment) bedded with rice-husks. The broilers were offered either fresh tap water (Control) or RO-DSW for 28 days (from d 6 to d 33) as the drinking water. The same basal phase 1 diet for first 2 weeks and phase 2 diet for last 2 weeks were offered ad libitum to the birds. The RO-DSW was prepared by diluting 1:20 ratio with deionized water before offering to chickens. The diet for control birds was supplemented with 0.21 % of food-grade salt to satisfy salt need of the birds. Broiler feeding study resulted that there were no differences in amount of water consumption, mortality and FCR between RO-DSW and control chickens. However, feed intake and body weight gain were increased (p 0.05) difference in nutrients utilizability between RO-DSW and fresh water drinking. There were no (p>0.05) differences in the immune response between the control and treatment group. The serum IgG levels were 3.01 vs 2.87 mg/ml and the relative weights of spleen, thymus and bursa of Fabricius were 0.23, 0.18 and 0.20 vs. 0.20, 0.17 and 0.14 for RO-DSW vs. control birds, respectively. The immune responses were tended to be improved by RO-DSW drinking. This study showed an improvement in weight gain and feed intake that could be induced by RO-DSW drinking, although it is difficult to explain the reasons of the improvement at this moment. This study implied that RO-DSW could be successfully used as drinking water to broiler chickens.(

For the establishment of prediction strategies of carcass meat quality grade and for the enhancement of prediction accuracy, sixty six Hanwoo steers were ultrasonically tested at 24 months of age. Ultrasonic meat quality grade were predicted by standard ultrasonic image and decision tree method using ultrasonic meat quality index. From the results of decision tree method using ultrasonic meat quality index, it was found that the marbling score was mainly influenced by the distinctness of rib on ultrasound image. Prediction accuracy of meat quality grade by ultrasonic meat quality index was 86.4%, resulting in 7.6% higher accuracy than that by standard ultrasonic image (78.8%).

This study analyzed the effects of pH, sex, backfat thickness, ribeye area, cold carcass weight, shipping month, muscle internal temperature, average daily temperature, and average relative humidity for slaughtered Hanwoo to meat color by season. The analyses focused on interaction and each effect to meat color of the factors. For the result for analysis of multiple linear regressions, meat color values were decreased as pH increased in all meat color, and the meat color values increased as the backfat thickness was increased. As the results of the decision tree analysis by each factor, cow and steer slaughtered in spring and autumn were the highest in the lightness(L*). The redness(a*) was the cases that pH was less than 5.63 and average relative humidity was over than 71.5% for Hanwoo slaughtered in autumn. The chroma(C*) value was the highest for Hanwoo that was slaughtered in summer and autumn, the pH was less than 5.60, and the back fat thickness was over than 8 mm. The hue angle() was shown that the muscle internal temperature was less than 4.7 among Hanwoo which was slaughtered in spring, summer, and autumn, the pH was less than 5.66, and the back fat thickness was over than 8 mm.

The Korean fresh pork loins in vacuum packaged were obtained from three different Korean export companies and investigated for microbiological and sensory properties. The fresh pork loins were stored at 2 for 50 days and analyzed with an interval of 510 days. The results were as follows: The overall numbers of total plate counts and coliform bacteria were higher in swab method than in meat sampling method. The total plate counts in the loins from the company I were maintained low levels (10 cfu/ or 10 cfu/g) for entire storage periods(50 days at 2), whereas the loins from the company III had high levels when they were compared to the domestic standard for the allowance limit. The samples from the company III showed that total plate counts were over 106 after about 30 days when determined by meat sampling method and total plate counts were over 106 after 15 days when determined by swab method. The overall numbers of coliform bacteria were also significantly lowest in the samples from the company I, whereas they were highest in the company III. Therefore, all meat companies will have to make an effort to prevent bacterial contamination in each stage such as slaughtering, marketing and consumer in order to ensure the production of safe meat and the extension of shelf-life. For fresh products, scores of intramuscular fat were higher in samples form the companies II and III than those from the company I when visibly evaluated with the standard. There were no significant differences in scores of meat color, drip and fresh meat flavor. However, the samples from the company I had the lowest score of off-flavor and highest score of overall acceptability. For cooked products, there were no significant differences in meat flavor, off-flavor, juiciness and overall acceptability.
