This study was carried out to investigate changes in epigallocatechin gallate (EGCG) contents and antioxidant activity of duck egg after pressurized soaking in green tea extract. The duck eggs were soaked in different concentrations of green tea extract (10~30%) and subjected to pressures of 0.1~5.0 MPa for 30 min at ambient temperature in a lab model high-pressure rig. After pressured treatment at 5.0 MPa in 30% green tea extract, EGCG content of duck egg white (20 mg/100 g) markedly increased compared to that of untreated sample (0.17 mg/100 g). Moreover, the antioxidant, hepato-protective, and cellular antioxidant activities of duck egg white after pressured treatment at 5 MPa in 30% green tea extract were all higher than those of untreated sample. Our results could have a direct impact on duck egg consumption by increasing consumer awareness of the health benefits of duck eggs.

Dept. of Food Science and Technology, Chungbuk National University, Chungbuk 361-763, KoreaAbstractThe objective of this study was to evaluate the effect of defatted grape seed extract (DGSE) on adipocyte differentiation in 3T3-L1 preadipocytes. DGSE at 100 μg/mL significantly suppressed lipid accumulation and glycerol-3-phosphate dehydrogenase activity in hormonally stimulated adipocytes, an indicator of adipocyte differentiation. In order to understand the anti-adipogenic effects of DGSE, the changes in the expression of several adipogenic transcription factors including peroxisome proliferator-activated receptor (PPAR) γ, CCAAT/ enhancer-binding protein (C/EBP) α and β were investigated using immunoblotting. DGSE suppressed the expression of PPARγ, C/EBPα, and C/EBPβ proteins compared with control adipocytes in a dose-dependent manner. This results indicated that DGSE may alter fat mass by directly affecting adipogensis in maturing preadipocytes and thus may have applications for the treatment of obesity.Key words: defatted grape seed extract, 3T3-L1, adipogenesis, PPARγ, C/EBP

Dept. of Food Science and Technology, Chungbuk National University, Cheongju 361-763, KoreaAbstractThe objectives of this study were to determine antioxidant activity of the methanolic extracts from some specialty rices and to investigate relationships between antioxidant activities and antioxidant contents in the extracts. ABTS (2,2-azino-bis-(3-ethylbenzothiazoline-6-sulphonic acid)) radical cation scavenging activity, inhibitory effect on lipid peroxidation, chelating activity, reducing power and inhibitory effect on xanthine oxidase have been used to investigate the relative antioxidant activity of the extracts from specialty rices. The concentrations of total polyphenolics, phytic acid, and anthocyanin in the extracts were measured by spectrophotometric methods and vitamin E analysis was carried out by HPLC. The methanolic extracts prepared from black and red rices showed higher antioxidant activities and contained higher antioxidant compounds compared with other rices, apparently due to their intense red-purple color. The correlation coefficient between total polyphenolic content of methanolic extracts and ABTS radical cation scavenging activity, reducing power, and inhibitory effect of xanthine oxidase were 0.9921, 0.9856, and 0.8032, respectively.Key words: rice, antioxidant activity, antioxidant compound, correlation
