The in vitro antimicrobial activity against pathogenic potentially bacteria from a competitive exclusion mixture (CEM) and its stability in time were determined. To obtain CEM, five adult and healthy broilers from H 2 hybrid of 45 days of age, were sacrificed. The in vitro antimicrobial activity of CEM against indicator strains and its stability during storage at different temperatures were determined. Finally, a microbial quality analysis of CEM was carried out. Growth inhibition of all indicator strains was observed by acid production (variant 1), except from Lactobacillus salivarias. CEM showed a high level of acetic, propionic and butiric acids. A high grow capacity and satiability was demonstrated during 30 days of CEM storage under refrigeration and environmental conditions,as well as a good microbial quality. [ABSTRACT FROM AUTHOR]
