Cilj ovog diplomskog rada bio je utvrditi klaoničke pokazatelje trupa i fizikalne karakteristike prsnog mišića (m. pectoralis major) muških i ženskih jedinki divlje patke gluhare iz nizinskog područja Republike Hrvatske. Ukupno je ispitano 25 odstreljenih pataka na dva različita lokaliteta. Utvrđivane su mase svake jedinke i obrađeni trupovi te je desni prsni mišić zamrznut na -20ºC za potrebe određivanja boje mesa, pH vrijednosti, kala odmrzavanja, kala kuhanja i otpora presijecanju. In this Letter, we report the first measurement of the inelastic cross section for antideuteron-nucleus interactions at low particle momenta, covering a range of $0.3 \leq p < 4$ GeV/$c$. The measurement is carried out using p-Pb collisions at a center-of-mass energy per nucleon-nucleon pair of $\sqrt{s_{\rm{NN}}}$ = 5.02 TeV, recorded with the ALICE detector at the CERN LHC and utilizing the detector material as an absorber for antideuterons and antiprotons. The extracted raw primary antiparticle-to-particle ratios are compared to the results from detailed ALICE simulations based on the GEANT4 toolkit for the propagation of antiparticles through the detector material. The analysis of the raw primary (anti)proton spectra serves as a benchmark for this study, since their hadronic interaction cross sections are well constrained experimentally. The first measurement of the inelastic cross section for antideuteron-nucleus interactions averaged over the ALICE detector material with atomic mass numbers $\langle A \rangle$ = 17.4 and 31.8 is obtained. The measured inelastic cross section points to a possible excess with respect to the Glauber model parameterization used in GEANT4 in the lowest momentum interval of $0.3 \leq p < 0.47$ GeV/$c$ up to a factor 2.1. This result is relevant for the understanding of antimatter propagation and the contributions to antinuclei production from cosmic ray interactions within the interstellar medium. Osobe u beskućništvu jedna su od socijalno najugroženijih i nevidljivih kategorija građana u Hrvatskoj, što se dodatno manifestira u vremenima krize. Kao što navode Wisner, Gaillard, i Kelman (2012), postoji tendencija da određene društvene skupine i individue prirodne katastrofe doživljavaju teže nego druge. Marginalizacija i siromaštvo osobito dovode do velike ranjivosti, te takve osobe najčešće pate najviše. Također, u literaturi je pokazano kako je populacija beskućnika osobito ugrožena u vremenima pandemija, te predstavlja rizik i za javno zdravlje (Leung & sur, 2008 ; Tsai & sur, 2020). Iako u Hrvatskoj javnosti za sada nisu zabilježeni slučajevi zaraze beskućnika COVID-19 virusom, njegov indirektan utjecaj nije zaobišao osobe u beskućništvu u Zagrebu, osobito u kombinaciji s potresom koji se dogodio u Zagrebu na početku karantene. Cilj ovog istraživanja, provedenog u sklopu CRSP projekta (No. IZHRZO_180631/1), istražiti je konkretan utjecaj COVID–19 pandemije i potresa na populaciju beskućnika u Zagrebu te uključuje sljedeće teme: promjene u svakodnevici i strategijama preživljavanja, gubitak mjesta za spavanje, dostupnost institucionalnih i neinstitucionalnih oblika podrške (neprofitni sektor) i utjecaj krize na mentalno/emocionalno zdravlje osoba u beskućništvu. U tu svrhu provedeno je kvalitativno istraživanje u Zagrebu koje je uključivalo promatranje sa sudjelovanjem, dubinske intervjue i „walk along“ metodu s osobama u beskućništvu te intervjue sa stručnjacima i volonterima koji neposredno rade s osobama u beskućništvu. more...

Hadronic resonances are unique tools to investigate the interplay of re-scattering and regeneration effects during the hadronization phase in heavy-ion collisions. Measurements in small collision systems provide a necessary baseline for heavy-ion data, help to tune pQCD inspired event generators and give insight into the search for the onset of collective effects. As the $\phi$ meson has a longer lifetime compared to other resonances, it is expected that its production would be much less affected by regeneration and re-scattering processes. We report on measurements of $\phi$ meson production in minimum bias pp collisions at different beam energies and as a function of charged particle multiplicity with the ALICE detector at the LHC. The results include the transverse momentum $(p_{\mathrm{T}})$ distributions of $\phi$ as well as the particle yield ratios. Fitaza je specificna fitat-fosfataza koja se upotrebljava kao dodatak stocnoj hrani, i to radi boljeg iskorištenja fosfata iz fitata u sjemenu biljaka. Posljednjih je godina ta vrsta enzima postala vrlo zanimljiva u proizvodnji i preradi hrane za ljude, osobito jer se smanjenjem kolicine fitata u njoj povecava biološka resorpcija minerala. Razgradnja fitata tijekom prerade hrane i njezina probavljanja u probavnom traktu ljudi može se optimirati podešavanjem uvjeta prerade, dodatkom izoliranih fitata pri proizvodnji hrane, uporabom svježe hrane s velikim ucinkom razgradnje fitata, bilo prirodno prisutnih ili uvedenih genetickim inženjerstvom, te primjenom rekombinantnih mikroorganizama iz hrane kao nositelja aktivnosti razgradnje fitata u probavnom traktu. Fitaze bi se takoder mogle primijeniti u proizvodnji funkcionalne hrane ili dodataka hrani s pozitivnim utjecajem na ljudsko zdravlje. Naposljetku, razgradnjom fitata dolazi do tehnoloških poboljšanja proizvodnje hrane, npr. pri proizvodnji kruha, proizvodnji izolata biljnih proteina, mokroj meljavi kukuruza i frakcioniranju mekinja., Phytase [myo-inositol(1,2,3,4,5,6)hexakisphosphate phosphohydrolase], a phytate-specific phosphatase, is already used as a supplement in diets for monogastric animals to improvephosphate utilisation from phytate[myoinositol(1,2,3,4,5,6)hexakisphosphate], the major storage form of phosphate in plant seeds. In recent years, this class of enzymes has also been found increasingly interesting for use in processing and manufacturing of food for human consumption, particularly because the decline in food phytate results in an enhancement of mineral bioavailability. Different strategies could be applied to optimise phytate degradation during food processing and digestion in the human alimentary tract such as adjustment of more favourable conditions during food processing for the phytases naturally occurring in the raw material, addition of isolated phytases to the production process, use of raw material with a high intrinsic phytate-degrading activity either naturally present or introduced by genetic engineering and the use of recombinant food-grade microorganisms as carriers for phytate-degrading activity in the human gastrointestinal tract. Furthermore, phytases may find application in the production of functional foods or food supplements with health benefits. Last but not least, technological improvements are expected to occur due to phytate degradation during processing as shown for breadmaking, production of plant protein isolates, corn wet milling and the fractionation of cereal bran. more...

Limbarda crithmoides (L.) Dumort. - Golden Samphire is a glabrous, rarely somewhat glandular subshrub which grows on coastal habitats, sandy and rocky, salt marshes and the margins of salt lakes, mainly along the coasts of Europe and W. Asia. Thin-layer chromatographic analysis of flavonoids and phenolic acids of L. crithmoides collected from three separated geographic locations along the Adriatic coast of Croatia showed the presence of 6 (leaves) or 7(flowers) flavonoids and three phenolic acids (leaves and flowers). Two flavonoids were identified as quercetin and rutin, while the one phenolic acid was proved as caffeic acid. The content of total flavonoids in leaves ranged from 0.20 to 0.43%, while the content in flowers varied from 0.15 to 0.39%. more...

Metodom tankoslojne kromatografije dokazano je da listovi i cvjetovi primorskog omana sadrže flavonoide i fenolne kiseline. U ekstraktima listova dokazano je 6 flavonoida i 3 fenolne kiseline, a u ekstraktima cvjetova 7 flavonoida i 3 fenolne kiseline. Svi uzorci sadržavali su flavonolski aglikon kvercetin, flavonolski heterozid rutin te kavenu kiselinu. Rezultati kvantitativne analize pokazali su da je u listovima prisutno 0, 20-0, 43% flavonoida, a u cvjetovima 0, 15-0, 39%. more...

U radu se detaljno analiziraju životi i iskustva žena koje doživljavaju beskućništvo s posebnim osvrtom na njihove “puteve” u beskućništvo i “prekretnice” koje su do njega dovele. Istraživanje se temelji na kvalitativnim materijalima prikupljenim u sklopu CSRP projekta Exploring Homelessness and Pathways to Social Inclusion: A Comparative Study of Contexts and Challenges in Swiss and Croatian Cities (br. IZHRZO_180631/1), a oslanja se na etnografski terenski rad, promatranje sa sudjelovanjem te polustrukturirane i walkalong intervjue provedene sa ženama u beskućništvu u dvama hrvatskim gradovima. Na holistički način, osim objašnjenja samih sudionica, ovo istraživanje analizira i njihove biografije kako bi se vidjelo na koji su način različiti izazovi proželi njihove živote i u nekom trenutku doveli do beskućništva. U radu se prikazuju tri studije slučaja, kojima se pruža detaljan uvid u složenu kombinaciju okolnosti, iskustava i događaja koji odvode žene u beskućništvo. Pokazuje se heterogenost njihovih “puteva” te kako interakcija individualnih izazova i strukturalnih čimbenika u hrvatskom kontekstu može dovesti do ekstremnih oblika beskućništva. Konačno, ovaj članak pokazuje da napori za rješavanje i sprečavanje beskućništva zahtijevaju mnogo detaljnije i nijansiranije razumijevanje temeljnih problema, potreba, ranjivosti i procesa koji u međusobnom djelovanju kulminiraju u iskustvu beskućništva. more...

NGOs and those working with people experiencing homelessness often suggest that homelessness is less common among women than men, which is confirmed by the available statistics. The literature shows that women are particularly vulnerable in terms of pathways to homelessness, especially in the context of numerous structural and social barriers that affect women in society. Women's experiences of homelessness differ from men's, reflecting broader gender inequalities. Life on the street presents many dangers and constant challenges to meet basic needs. Using public spaces is particularly challenging for homeless women, both because of their homeless status and because they are women. Therefore, this paper aims to analyse women's experiences of street homelessness in Zagreb, show its specific features, and identify their strategies in situations permeated with various forms of exclusion. For this purpose, ten interviews with six women with experience of street homelessness in Zagreb were analysed, as well as field notes, which are part of a wider qualitative research project. The paper presents the experiences and challenges of life on the street, which include feelings of insecurity and fear, unmet health needs, violence and sexual harassment, exclusion from public spaces, and strategies related to hiding, finding a partner/grouping, and distancing from unwanted identities. The paper points to the importance of recognising the severity and scope of the problem of homelessness, especially female homelessness, and the necessity of further research that includes gender dimensions and specific features of the problem. more...

The aim of this work was to substantiate the use of whey protein extract (WPE), a by-product of dairy industry, combined with different berry purees in the formulation of a whipped frozen dairy dessert (WFDD). After freezing, the swelling ability of WPE decreased significantly while at higher temperatures of the dispersion medium, the degree of swelling increased. A mixture containing 55±2 % WPE and 45±2 % milk presented a homogeneous consistency while the further processing did not improve the structure of the mixture. Final formulations of WFDD containing different berry purees (i.e. 10 % black¬currant puree, 25 % cherry puree, or 30 % strawberry puree) were proposed for which the nutritional facts were calculated. Recommended shelf life of the developed desserts at -18 °C is suggested to be 20 days. Regulatory requirements and recommendations for the production of WFDD in an industrial scale were also developed.
