In order to improve the drying rate and rehydration of tilapia meat, the freeze-drying characteristics and quality changes of blanched or steamed fish meat were analyzed. The effect of heat pretreatment on the quality of freeze-dried fish meat was elucidated by considering the denaturation degree of myofibrillar protein, water distribution and microstructural changes in fish meat during the drying process. The results showed that heat pretreatment could effectively improve the drying rate of tilapia meat, shortening the drying time by nine hours compared with the control group; blanching was more effective than steaming. The rehydration temperature range for tilapia meat was expanded by heat pretreatment, and good rehydration was observed at 50–80 ℃. The rehydration temperature for the control samples was 80 ℃, and the rehydration rate of the 10 min heat treatment group was more than 60%, indicating that the dried product can be rapidly rehydrated. The hardness of the rehydrated fish meat was similar to that of cooked fresh fish meat, and it had good mouthfeel. Heat pretreatment caused significant denaturation of myofibrillar protein and consequently changes in water distribution and a conspicuous increase in the peak area of transverse relaxation time T23, indicating that the increase in free water content after heat treatment is an important reason for the increase in freeze-drying rate. The experimental results can provide technical support for the development of ready-to-eat dried fish products that are suitable for rehydration.

This work presents a novel structure for integrating capacitive touch and electromagnetic resonance (EMR) sensors on thin film encapsulation (TFE) of OLED display. Through co‐layer design of touch bridge electrode and EMR coil, the number of mask can be reduced, and the module thickness can also be decreased. In addition, the Cs loading of touch and the resistance of EMR coils are both reduced by the unique pattern design. Finally, an 8‐inch prototype sample was developed, and the hybrid sensor achieved sensitive touch and EMR stylus scribing functions after debugging. [ABSTRACT FROM AUTHOR]

Aim To investigate the inhibitory impact of chlorogenic acid (CGA) on the growth of Morganella psychrotolerans and its ability to form histamine. Methods and Results The antimicrobial effect of CGA on M. psychrotolerans was evaluated using the minimum inhibitory concentration (MIC) method, revealing an MIC value of 10 mg ml−1. The alkaline phosphatase (AKP) activity, cell membrane potential, and scanning electron microscopy images revealed that CGA treatment disrupted cell structure and cell membrane. Moreover, CGA treatment led to a dose-dependent decrease in crude histidine decarboxylase (HDC) activity and gene expression of histidine decarboxylase (hdc). Molecular docking analysis demonstrated that CGA interacted with HDC through hydrogen bonds. Furthermore, in situ investigation confirmed the efficacy of CGA in controlling the growth of M. psychrotolerans and significantly reducing histamine formation in raw tuna. In this paper, a three-dimensional aerodynamics optimization system is built and applied to optimize a rotor blade to balance the conflicts between stall margin, total pressure ratio, adiabatic efficiency, and mass flow rate for the high-loading and transonic-flow fan. A novel flow diagnostic method based on vorticity dynamics theory is utilized to analyze the reasons for the improvement in aerodynamic performance in the optimized transonic fan. In the established aerodynamic optimization method, use the blade profile camber line curvature and its leading edge metal angle as the optimization variables, which are optimized by modifying the coordinates of their control points and introducing a genetic algorithm. Finally, the vorticity dynamics parameters, such as the boundary vorticity flux (BVF), azimuthal vorticity and skin-friction lines are used to diagnose the key flow features in the optimized and baseline fan passage. The results indicate that, by controlling skillfully the blade camber line curvature in the optimization improves the aerodynamic performance of the fan stage, increasing the total pressure ratio by 1.90% while increasing the mass flow rate and adiabatic efficiency by 5.82% and 4.45%, respectively. The formulas from the vorticity dynamics diagnosis method indicate a close link between the aerodynamic performance and vorticity dynamic parameters for the axial fan/compressor passage flow, and that both azimuthal vorticity and boundary vorticity flux have significant influence on fan stage performance. Moreover, the boundary layer separation flow on the rotor blade surface is accompanied by a spike of entropy and static pressure, and their derivative/gradient also suffer drastic changes under the effect of shock waves. Detailed flow information can be obtained about the on-wall with high accuracy based on the vorticity dynamics diagnosis method, which provides researchers with a novel method for the turbomachinery aerodynamic design and analysis in the aero-engine engineering development field. BACKGROUND: Oxidation has been reported as the one of the deterioration reactions of proteins in aquatic products. Searching for new bioactive substances from marine algae has been one of the main areas in food science and additives. RESULTS: In this study, a novel protein from the red alga Porphyra haitanensis was determined after ammonium sulfate precipitation and gel filtration chromatography. It closely corresponded to the antioxidant activity and was identified as an uncharacterized protein with a molecular mass of 43 kDa, designated Ph43. Bioinformatic analysis revealed that Ph43 is a novel protein of non‐phycobiliprotein family with putative chordin domains and rich in α‐helical conformation. Recombinant protein (rPh43) was expressed in Escherichia coli as a Hig‐tagged protein using a pET‐22b vector system and purified by affinity high‐performance liquid chromatography. Spectroscopy analysis revealed that there were no structural differences between rPh43 and natural recovered Ph43. Moreover, rPh43 showed equal/higher antioxidant activity compared with Ph43. rPh43 has the potential for application as a natural antioxidant for food stabilization.
