In Tlaxcala, waste is generated from the commercialization of chicken, 40% is wasted between legs, viscera and heads, which creates an overproduction of waste that ends up in open-air dumps. In this work, waste is used to make a snack for animal consumption. Waste (legs and heads) was used, cooked at 95°C ±2 for 30 minutes and crushed, passing through a filter to obtain the biomass, which was analyzed to determine its composition and establish the presentation of the gel-type snack. The snack made for pets complies with the Official Mexican standard for food for animal use or consumption NOM012-SAG/ZOO-2020 NOM-022-ZOO-1995. A yield of 64% was obtained. The main content (portion per 100 g) is moisture of 76±0.34%, protein 24.06 ±0.22%, total fat 9.10 ±0.32%, total fiber 20 ±0.87%, dietary fiber of 0.640 ±0.074% and carbohydrates 6.7 ± 088%. The gel-type snack made from chicken waste complies with the regulations compared to the different awards already existing in the pet food industry. [ABSTRACT FROM AUTHOR]
