Modern trend in the food industry is the development of technology for healthy food products with increased nutritional value and enriched with new types of vegetable raw materials. Oatmeal cookies are popular among different groups of people. The purpose of the study is to develop a technology for producing oatmeal cookies by replacing premium wheat flour with spelled flour, and raisins with dried cranberries and Japanese persimmons. The choice of enrichment agents is justified. The recipe for the "Oatmeal New" cookie was taken as a control sample. We replaced premium wheat flour with spelled flour in a ratio of 70 : 30; 50 : 50; 30 : 70; 0 : 100. Persimmon has replaced 30 % of white sugar. The sample with full replacement of wheat flour with spelled flour is recognized as the best. A recipe for "Sweet Morning" oatmeal cookies has been developed. Organoleptic and physicochemical quality indicators of oatmeal cookies have been determined. The antioxidant activity of cookies of the new composition is 0.28 mg of quercetin/100 g of product, which is higher than in the control sample by 0.05 mg of quercetin/100 g of product. The nutritional and energy value of the products has been calculated. Oatmeal cookies "Sweet Morning" exceed the control sample in protein content by 1.2 times, dietary fiber by 2 times, vitamin В1 – 1,2, В5 – 2,3, В9 – 1.24, vitamin C – 5.8, PP – 1.3, K – 6.3, β-carotene – 1.5; minerals K – 1.9, Ca – 1.6, Mg – 1.8, P – 1.8; and microelements: Fe – 1.4, Zn – 2.5, Cu – 2.7, Se – 1.5, Mn – by 2.5 times. The energy value of the new product is 40 kcal (167 kJ) lower compared to the control one. "Sweet Morning" oatmeal cookies is recommended for people focused on maintaining a healthy lifestyle and a balanced diet.

Background. Urinary tract infections are a pressing problem of modern medicine due to their widespread prevalence and socio-economic significance. Every year, recurrent urinary tract infections occur in more than 150 million people worldwide, which is second only to acute respiratory infections in incidence. In addition, the problem is not only medical, but also socio-economic in nature, since in most cases recurrent urinary tract infections occur among the working population. This can lead to temporary disability and a large number of outpatient consultations. Recurrent urinary tract infections are one of the main causes of hospital-acquired infections, which leads to serious financial expenses. In addition, the quality of life of such patients is significantly impaired: frequent relapses lead to disruption of the psycho-emotional state, the development of neuroses and psychosomatic pathology.Results. Currently, antibiotic therapy takes the leading position in the treatment of recurrent urinary tract infections, as clearly indicated by both national and European clinical guidelines. At the same time, it should be noted that the tactics of preventive measures remain not fully developed and require further study and the formation of an evidence base. Due to the development of antibiotic resistance, including due to the irrational use of antibacterial drugs, and frequent adverse reactions, the role of non-antibacterial drugs in maintaining the health of the urinary tract is increasingly discussed in the literature. According to clinical guidelines developed by the European Association of Urology, antimicrobial drugs for prevention of relapses is addressed only in cases where the use of non-antibacterial agents has proven ineffective. Currently, European recommendations for the prevention of recurrent urinary tract infections include non-antibacterial agents such as D-mannose; preparations containing cranberries and/or products of its processing. Russian recommendations indicate the significant role of herbal medicine in the prevention of relapses of cystitis in women. Despite the fact that many non-antibacterial agents are already included in recommendations for the prevention of recurrent urinary tract infections, both European and national, their mechanism of action, dosage regimen, and duration of administration continue to be actively studied.Conclusion. The currently accumulated clinical experience and research data indicate the great potential of such non-antibacterial agents as D-mannose, cranberry, vitamin D, birch leaf extract, which are part of the dietary supplement and can be used to maintain the health of the urinary tract.

The problem of type 2 diabetes due to its prevalence, severity, and complications is one of the most pressing in the world. Plants of the genus Vaccinium are promising sources for the creation of hypoglycemic and hypolipidemic medicines. Studies have shown that the extract from cranberry leaves, obtained with 50 % ethanol solution has prospects to be used for correcting insulin resistance. Therefore, for creating new medicines based on cranberry leaves, it is necessary to determine the optimal parameters of biologically active substances (BAS) extraction from this raw material. The aim of the research is to determine the parameters of BAS extraction from cranberry leaves (Oxycoccus macrocarpus (Ait.) Pursh) for creating a new dry extract with hypoglycemic activity. Materials and methods. The object of the study was cranberry leaves. Extracts from the leaves were obtained with 50 % ethanol solution in a ratio of 1:10; 1:15; 1:20; 1:25; 1:30 and 1:35 by maceration at room temperature for 8 hours. The extraction was repeated four times with new portions of the extractant, collecting each extract separately. Identification of phenolic compounds was performed by thin-layer chromatography. An assay of phenolic compounds was carried out by spectrophotometric methods. The mass transfer coefficient of each stage (miBAS/Viextragent) was calculated for each indicator and the dependence of these factors on the extraction multiplicity to determine the rational extraction was derived using the software Statistics. Results. Gallic and chlorogenic acids, rutin, quercetin, and hyperoside were detected on TLC of cranberry leaves extracts in comparison with standard samples of substances. The content of the sum of hydroxycinnamic acid derivatives in terms of chlorogenic acid, the number of flavonoids in terms of rutin, and the content of the sum of phenolic compounds in terms of gallic acid were determined. It was established that the exhaustive extraction of BAS with 50 % ethanol solution from the cranberry leaves provides a ratio of 1 to 100–110. It was rational to carry out BAS extraction from cranberry leaves in a ratio of 1:10 twice, this would ensure the maximum yield of BAS at the minimum cost of the extractant. Conclusions. It was found that was rational to extract BAS with 50 % ethanol solution from cranberry leaves in a ratio of 1:10 twice using mathematical and statistical methods. It would be used in the future in the development of extract technology.

Creation of new products with scientifically substantiated and proven properties that reduce the risk of developing diseases that are directly dependent on nutrition, and improve health due to the presence of various nutrients in their composition is one of the promising areas for improving the health of the population. The soft drinks market today is replete with both domestic and foreign manufacturers. In addition, public catering enterprises have the opportunity to sell their own products, which necessitates the improvement of the quality of drinks and their functional properties. A person consumes soft drinks throughout his life, while they represent the optimal basis for enrichment with biologically active food substances, since they most affect the endoecological rehabilitation of the human body. Natural non-alcoholic drinks based on healthy plant materials are becoming increasingly popular. We have developed soft drink compositions using cranberry, sea buckthorn, Japanese quince (chaenomeles), ginkgo biloba and basil leaves, containing vitamins A, C, E, known for their antioxidant properties. In order to preserve raw materials, shock freezing and dehydration by means of convective drying were used with a sparing temperature heating regime not exceeding 45 ℃, which made it possible to preserve the most vulnerable vitamin C to heat treatment. As a result of experimental studies, recipes and technologies for the production of drinks have been developed, as well as technical and technological maps indicating organoleptic indicators and energy value. Dry matter and acidity, which corresponds to the accepted allowable values have been determined. The values of the chemical composition of drinks have been obtained, allowing to state that, according to the content of the microelement potassium, drinks belong to general health-improving functional drinks, and, according to the content of vitamin C, to antioxidant and immune-supporting functional drinks.

Introduction. Products containing natural extracts are in great demand. However, poor production technologies make them too expensive to satisfy consumer demand. As a result, a variety of intensification methods have been developed to increase the economic efficiency of extraction, e.g. low-frequency mechanical vibrations. However, frozen raw materials have to be processed at low temperatures, which makes the method less efficient. The research objective was to intensify the extraction process from frozen berries in a vibration tray device by increasing the temperature of the system of interacting phases. Study objects and methods. The research involved frozen cranberries and blueberries. They grow everywhere in Western Siberia and are rich vitamins and minerals. The berries were subjected to slow freezing at –18°C, which destroyed the cell structure and increased the processing efficiency. The study was carried out in a lab device with a vibrating tray. All parameters were measured by standard methods. Results and discussion. The extraction device was equipped with a jacket into which a coolant was fed, i.e. water with a temperature of 55°C. A preliminary series of experiments revealed two negative aspects associated with the supply of coolant into the jacket. First, the surface layer started to thaw, which reduced the efficiency of grinding. Second, the processing time increased. A new method was developed to solve these problems: the coolant was supplied at the end of the grinding. The time of the coolant supply depended on the type of raw materials. The processes that occurred within the device depended on two factors: the frequency of vibrations of the tray and the diameter of the holes in the tray. These factors could be adjusted to intensify the process, but they increased the power costs and energy consumption. A series of experiments determined the optimal values of these parameters. A mathematical analysis revealed regression equations, i.e. how the destruction time and power costs affected the main parameters. The established optimal process parameters made it possible to determine the minimal time of the destruction process: for cranberries – 2.5 min, for blueberries – 1.5 min. The minimal power consumption was 17.8 watts for cranberries and 11.7 watts for blueberries. Conclusion. The research increased the economic efficiency of the technological process of natural extraction, which can reduce the cost of the finished product and increase its availability. The values of the process parameters can be used to design new similar devices and serve as practical recommendations for berry extraction in vibration tray devices.

Introduction. Forest berry plants are popular on the food market and in pharmacy for their high nutritional and medicinal value. Plantations of forest berry plants can proliferate on unused lands, including depleted peatlands. Clonal micropropagation is the most effective method for obtaining large quantities of high quality planting material. Light-emitting diodes are highly effective for clonal micropropagation. The research objective was to study the effect of different spectral ranges on the process of root formation of forest berry plants in vitro. Study objects and methods. The research featured regenerant plants of half-highbush blueberry, arctic bramble, American cranberry, European cranberry, lingonberry, and Kamchatka bilberry of different cultivars. A set of experiments made it possible to study the effect of lighting type on the growth and development of the root system of forest berry plants in vitro using white fluorescent lamps, white spectrum LED lamps, and LED lamps with a combination of white, red, and blue spectra at the in vitro rooting stage of clonal micropropagation. Results and its discussion. The largest number (3.4–14.6 pcs.) and the maximum total length (10.0–156.9 cm) of roots were observed under LED lamps with a combination of white, red, and blue spectra. The effect was by 1.1–2.8 and 2.0–4.5 times higher than in the case of white-spectrum LED lamps, and by 2.3–7.0 and 3.3–14.9 times than in the case of fluorescent lamps. Variety and shape proved to have no significant effect on biometric indicators. Conclusion. LED lamps had a positive effect on the process of rhizogenesis of forest berry plants during clonal micropropagation. They appeared to be more effective than fluorescent lamps. The combination of white, blue, and red spectra increased the biometric parameters of plants at the stage of in vitro rooting.

Cranberry oil is a sufficiently perspective compound for using in the semisolid rectal dosage forms because it possesses regenerating, antioxidative, anti-inflammatory actions together with practical toxicity absence. The aim of this work is the study of influence of the excipients, which are used in suppository manufacturing (delivery bases and surfactants) on the biopharmaceutical characteristics of the rectal dosage form with cranberry oil. Materials and methods. Concentration of surfactants in all rests was 2 % from the suppository mass, cranberry oil contain was 0.25 g in each suppository taking into account data of the advance investigations. Study was carried out according to plan of single-factor analysis of variance with repeated observations. Releasing of cranberry oil from the suppositories was chosen as a parameter of optimization for the first step of biopharmaceutical availability study. The study was carried out by equilibrium dialysis method by Kruvchinsky at the temperature 37.0 ± 0.5 ºС through the semipermeable film “Kuprofan”. After 30 minutes the antioxidative activity was set on the model of non-fermentative initiation of the free radical oxygenation in all dialysates. Results. According to the presented data factor A (sort of base) and factor B (sort of surfactant) make significant influence on cranberry oil releasing from the suppositories (Fexp.>Ftabl). At the same time influence of the surfactants sort is slightly more significant than for the base. Also, interaction between these factors was statistically significant. On the base of obtained data, the range of influence of studied factors on the intensity of releasing of cranberry oil bioactive substances from suppository formulation was arranged: В > А > AxB. Conclusions. Variance analysis of results revealed that formulation with confectionary solid butter and emulsifier №1 provide optimal releasing of cranberry oil from the suppositories.

The paper examines some features of brown bears’ feeding on dwarf shrub berries (bilberry, cranberry, cowberry and black crowberry) in the southern taiga subzone, in spruce forests and on raised bogs of the Central Forest Nature Reserve and its protection zone. The most significant berries in the animals’ diet are bilberries and cranberries. According to the results from 279 sample plots, average consumption by bears per 1 m2 was74.2 g of bilberries out of 114.5 g abundance (64.8 %) and 109.5 g of cranberries out of 183.3 g abundance (59.8 %). In the most productive years, the removal of bilberry canreach 76 %. We analyzed the rate of bilberry removal from three main types of spruce forests: bilberry-Sphagnum, Sphagnum and bilberry-horsetail-Sphagnum. The removalrate was the highest in the bilberry-horsetail-Sphagnum spruce forest, and amountedto 135.7 g/m². The analysis of 474 scats revealed a high significance of bilberry in the secondhalf of the summer (EDEC = 58 %). The significance of cranberry was the highest in autumn (EDEC = 8.9 %) and early spring (EDEC = 4.0 %), while cowberry contributedto the diet significantly only in autumn (EDEC = 1.6 %). Black crowberries are very rare in the animals’ diet (EDEC = 0.5 %). Energy gains from feeding on bilberries are 42.3 (up to 72.7) kcal/m², while cranberries provide 50.4 kcal/m². The greatest factors for the rate of consumption of berries by bears are the dwarf shrubs’ general yield and nuisancefrom humans.

Berries are the most promising source of raw materials for the Siberian region to create products enriched with biologically active substances. Noted are drawbacks of the common method of processing of frozen fruit raw material in the field of low- frequency mechanical vibrations. The expediency of improving its technical and economic characteristics is shown. The experimental device is an apparatus with a diameter of 0.146 m and having a flat bottom. A 3 mm thick flat plate with a diameter of0.142 m and having perforated holes with a diameter of 2.5 ... 3.5 mm is installed in the device. The plate is rigidly fixed on the rod which performs reciprocating motion through a crank mechanism and is connected with the motor shaft. The distance from the plate to the bottom is 0.045 m; the frequency of the plate oscillation is 20 ... 13.3 Hz, and the amplitude of 6, 7 and 8 mm. The device is sealed with a lid which is placed at a distance of 0.02 m from the free surface of the liquid. On the plate periphery a flange is set uniformly upward and downward having the overall height of 0.02 m. The content of dry water-soluble substances is measured with refractometer. Carrying out the experiments we use cranberry collected in 2015 in the Mariinsk district of the Kemerovo region. A 300 gram batch of cranberry frozen at -18°C is placed in a space under and over the plate, 1200 ml of water at the temperature of 18 ± 2°C being poured into the vessel. Then the plate is set in motion. Processing is stopped when equilibrium in the system is reached. Basing on the obtained data the influence of the studied parameters on the extraction of dry water-soluble substances has been established: the diameter of the holes is the most influential parameter while the amplitude of oscillations is less influential but interacting with other parameters it does influence the process. Experimentally-statistical model valid for the studied system in the range of parameter changes has been obtained. The optimization of parameters using Newton's method has been fulfilled. It has been shown that in this case the content of dry substances in the extract increases by almost 2 times in comparison with the known method.

In recent years, Russia has shown the increased interest of consumers to food products enriched with natural bioactive ingredients. The fundamental resource-saving technological scheme of production of fortified sugar confectionery has been developed. The authors justified the choice of raw materials of plant origin: fresh cowberry ( Vaccinium vitisidea ) and cranberry ( Vaccinium oxycoccos L. ) fruits, air-dried oregano shoots ( Origanum vulgare L. ) growing in the Krasnoyarsk region as functional ingredients. The usefulness of the development of functional purpose sugar confectionery from cowberry and cranberry fruits soaked in "Oregano" syrup based on an aqueous extract of oregano shoots has been proven. The change in vitamin C concentration in plant raw materials under the influence of heat treatment has been studied, which helped to justify the optimum thermal conditions for ensuring the preservation of vitamin C. A distinctive feature of the developed resource-saving technological scheme is pre-saturation of fruit and berry raw material with the origanum complex of biologically active substances and integrated use of original plant ingredients. The research of microbiological, toxicological, physical and chemical indices of the enriched sugar confectionary - «Cranberry in chocolate», «Cowberry in chocolate», proved the sanitary and hygienic safety and functional qualities of the products.

Nomenclature of genus Vaccinium considered, as well as the application of names for indigenous and introduced species and denomination of fruit crops as derived from those species. System of binary species names for Vaccinium s.l. has been proposed as based on the Ukrainian generic name ‘lokhina’ that best complies with the principles for establishing generic names.

Introduction: Treatment of pyelonephritis in children should be combined, long-term and individual-based. The success of the therapy in children largely depends on the prompt appointment and the correct choice of antimicrobial therapy., Aim: To evaluate the efficiency of the dietary supplement "Cystenium II" in a group of children aged 7 to 14 years with a diagnosis of acute and chronic recurrent pyelonephritis in the acute phase., Materials and Methods: A total of 60 children aged 7 to 14 years with a diagnosis of acute or chronic recurrent pyelonephritis in the acute stage were included in the study. The clinical group consisted of 30 patients (mean age 12.1+/-1.8 years), while the control group included 30 patients of mean age 11.2+/-1.7 years. In the control group patients received only standard antibiotic therapy, while in the clinical group it was combined with a dietary supplement "Cystenium II" 1 tablet 2 times a day with meals for 14 days. After the course of antibacterial treatment, the children in the clinical group continued to take the studied dietary supplement for another 14 days in order to prevent the recurrence of pyelonephritis. The results of treatment (patient's condition, presence of pain, dysuria, fever) were assessed on the 3rd, 7th, 14th day, 1 and 6 months after the start of treatment. A urinalysis was performed at the baseline, on the 7th and 14th days, as well as after 1 and 6 months. Urine culture was performed before and after antibiotic therapy at the baseline, on the 14th day, 1 and 6 months after the start of treatment., Results: The main indicators of urinalysis (leukocytes, red blood cells, protein) returned to normal values in 26 (86.7%) patients of the clinical group and in 23 (76.7%) patients of the control group on the 7th day after the start of treatment. At the completion of the basic therapy (after 14 days) normal clinical parameters (absence of leukocyturia, microhematuria, proteinuria) were observed in all patients of the clinical group and in 28 (93.3%) patients of the control group. After a month of follow-up, the disturbances in urinalysis (leukocytes, red blood cells, protein) in the control group were again seen in 3 (10%) patients, as well as after 6 months. However, in the clinical group all patients had normal urinalysis (absence of leukocyturia, microhematuria, proteinuria) after 1 month and only in 1 (3.3%) case leukocyturia, as well as an increase in the number of red blood cells and protein was detected by 6 months., Discussion: According to our results, the use of dietary supplements "Cystenium II" (manufactured by Akvion, Russia), due to the constituents of D-mannose (450 mg), cranberry fruit extract with a standardized activity of 500 mg (36 mg of proanthocyanidins) and vitamin C (60 mg), may cause anti-inflammatory and anti-adhesive effects (resolving of leukocyturia and bacteriuria). This allows to use the dietary supplement Cystenium II in children from 7 years of age in the combination therapy of acute pyelonephritis, as well as exacerbation of chronic pyelonephritis. The obtained results showed a high overall therapeutic efficacy of combination therapy using Cystenium II after 6 months from the start of treatment (relapse in 1 patient), in contrast to the control group (relapse in 6 patients)., Conclusions: the use of dietary supplement "Cystenium II" allowed to reduce the number of repeated courses of antibiotic therapy in children during 6 months of follow-up and, most likely, reduced the frequency of development of chronic pyelonephritis after an acute inflammation. Therefore, the wide clinical use of dietary supplements "Cystenium II" for the combined treatment of acute and exacerbation of chronic pyelonephritis in children older than 7 years seems to be very reasonable.

Introduction: During pregnancy, therapeutic options which can be used to treat and prevent acute lower urinary tract infections are significantly limited. In this regard, new opportunities to increase time to relapse of urinary tract infections are urgently required., Aim: To evaluate the results of the use of the dietary supplements "Cystenium II" in pregnant women for the complex treatment of acute cystitis and asymptomatic bacteriuria., Materials and Methods: The analysis of complex therapy of uncomplicated lower urinary tract infection with the use of dietary supplements "Cystenium II" in 42 pregnant women (mean age 24.5+/-4.3 years), divided into two groups depending on the presence of symptoms of the cystitis., Results: Data on the clinical and microbiological cure and the absence of side effects were obtained., Conclusions: The use of dietary supplements "Cystenium II" is advisable, both in the complex antimicrobial therapy of acute cystitis, exacerbation of recurrent cystitis or asymptomatic bacteriuria in pregnant women, as well as for the prevention of recurrence of cystitis after the clinical cure.
