[ES] El cultivo de frutas y hortalizas destinadas a uso industrial genera una gran cantidad de residuos agroindustriales que deben ser gestionados adecuademente, lo que supone un coste para la industria. En general, se trata de residuos ricos en compuestos bioactivos que de ser recuperados y reintroducidos en la cadena productiva, contribuirían al desarrollo de procesos más sostenibles. Del mismo modo, un mejor aprovechamiento de las características nutricionales que ofrecen estos residuos y descartes contribuiría al concepto de dietas sostenibles y saludables definido por la OMS. Los glucosinolatos conforman una familia de compuestos secundarios que pueden encontrarse comúnmente en Crucíferas. Se trata de tioésteres aniónicos de azúcar que están involucrados en la respuesta al estrés biótico. Estos compuestos están sujetos a la actividad hidrolítica del enzima mirosinasa, producida de forma natural como respuesta al daño en tejidos y células, la cual promueve la formación de compuestos como los isotiocianatos sulfuranos a partir de la hidrólisis de los glucosinolatos. Los productos de la hidrólisis resultan en compuestos biológicamente activos y que presentan propiedades de interés por su carácter antimicrobiano, antioxidante y anticancerígeno. Además de sus beneficios para la salud, el carácter antimicrobiano y antifúngico de estos compuestos ha impulsado su aplicación frente al control de plagas (hongos, insectos, arvenses¿). El objetivo del presente trabajo fin de grado es estudiar la influencia del procesado (desestructuración y secado) sobre la conversión de glucosinolatos a isotiocianatos en productos en polvo obtenidos a partir de residuos de col y de brócoli. A tal fin, se obtendrán polvos de tallo de brócoli y hojas externas de col blanca, mediante un proceso que combina una etapa de troceado o triturado y otra de secado por aire caliente (50, 60 ó 70 °C) o liofilización. El contenido en isotiocianatos se determinará por cromatografía líquida de alta resolución (HPLC), tanto en el residuo fresco como en los polvos obtenidos. Adicionalmente, los polvos se caracterizarán fisicoquímicamente en términos de humedad, actividad del agua, contenido en sólidos solubles, tamaño de partícula y propiedades antioxidantes. Como resultado del presente trabajo, se pretende obtener información relevante para poder valorar el empleo de los polvos obtenidos para su uso como plaguicida natural o bien como ingrediente funcional que pueda ser utilizado en la formulación de alimentos., [EN] The processing of fruit and vegetables generates a large amount of agro-industrial waste rich in bioactive compounds that may be of interest, so their valorisation, aimed at taking advantage of the characteristics they offer, would both improve the management of this waste and add value to the production process. Glucosinolates are a family of secondary compounds involved in the response to biotic stress, commonly found in Cruciferae. These compounds are subject to the hydrolytic activity of the enzyme myrosinase, naturally produced in response to tissue and cell damage, which promotes the hydrolysis of glucosinolates to isothiocyanates. These hydrolysis products are of great interest to human health because of their antioxidant and anticarcinogenic character. Furthermore, the antimicrobial and antifungal nature of these compounds has led to the study of their use in the control of pests (fungi, insects, weeds, etc.). The aim of this final degree project was to develop the process of obtaining powdered products from cabbage (outer leaves) and broccoli (stems) cooperative confectionery waste, and to study the influence of processing (destructuring, dehydration and milling) and the levels of the variables used (intensity of destructuring, drying conditions) on the physicochemical and antioxidant properties of the powders obtained, with special attention to the effect of processing on the conversion of glucosinolates to isothiocyanates. Drying times and temperatures were defined after a first approximation by obtaining the drying and drying rate curves for both residues, for all the set process conditions. Once the drying times were defined, the powdered products were obtained by processes combining a chopping or grinding stage and a hot air drying (50, 60 or 70 °C) or freeze-drying stage, followed by a final grinding to obtain a fine powder. The powders obtained were physicochemically characterised in terms of moisture, water activity, soluble solids content and antioxidant properties (total phenols and flavonoids, antioxidant capacity by DPPH and ABTS methods). During the development of this TFG, the protocol for the determination of isothiocyanate content by high performance liquid chromatography (HPLC) was developed. The isothiocyanate content of products and fresh product was determined in hydrolysed and non-hydrolysed samples. The results showed that the processing of the powders resulted in a reduction in sulforaphane content, attributable to both a possible loss of myrosinase activity during processing and the degradation of sulforaphane during processing. The powders with the best characteristics with respect to this bioactive compound were those obtained by hot air drying at 70 °C or freezedrying. On the other hand, the antioxidant properties were favoured by drying at higher temperatures, with the residues dried at 70 ºC standing out. Regarding the effect of previous destructuring, the previously chopped products showed better antioxidant properties, due to less exposure to drying conditions and less damage caused to the tissue. In general, the products obtained from broccoli showed better characteristics, especially in terms of isothiocyanate content, than the cabbage products. The results of the present work have made it possible to establish the process conditions necessary to obtain stable powdered products from cabbage and broccoli confectionery waste. The powders obtained could be proposed for various uses, including their use as a functional ingredient to be incorporated into foodstuffs, or their use to control the development of weeds.

Muscle proteins of Dosidicus gigas mantle have great techno-functional advantages and during their processing at industrial level considerable discards of muscle proteins are generated and used to elaborate meals with low added value. The aim of the study was to evaluate the effect of hydrolysis time on the techno-functional properties and antioxidant capacity of jumbo squid. Mantle muscle protein discards were cooked, ground and subjected to enzymatic hydrolysis (Protamex ©) for 1, 2, 3, 4, 5 and 6 hours at 58 ° C; ratio of water: substrate 1: 1. The hydrolysis reaction was stopped at 90 ° C for 5 minutes and then were filtrate. Hydrolyzed solutions (2% of dissolved solids) in established times were taken and their techno-functional properties such as foaming, emulsifying, antioxidant capacity and degree of hydrolysis were determined. The hydrolysis reaction was stopped at 90 °C for 5 minutes and then samples were filtered. Foaming property was increased significantly from 27,4 ± 2,5% (0 hours) to 96,2 ± 5,0% (6 hours). The emulsifying property was decreased significantly from 84,1 ± 3,6% (0 hours) to 56,3 ± 3,2% (6 hours). Antioxidant property showed significant differences at 5 and 6 hours, which showed inhibition of the DPPH radical in the order of 15 to 20% of the initial concentration. The degree of hydrolysis was increased significantly until 18,4 ± 0,6% (6 hours). Discards from jumbo squid muscle mantle proteins presented techno-functional advantages that could serve as foaming food agents, protein inputs with emulsifying and antioxidant properties for formulation of restructured meats such as sausages, hamburgers that allow to improve palatability and shelf life., Las proteínas del músculo del manto de Dosidicus gigas, posee grandes ventajas tecno-funcionales y durante su procesamiento a nivel industrial se generan considerables descartes de proteína muscular de las cuales se elaboran harinas con bajo valor agregado. El objetivo del estudio fue evaluar el efecto del tiempo de hidrólisis sobre las propiedades tecno-funcionales y capacidad antioxidante de la pota. Descartes de proteína muscular del manto fueron cocidos, molidos y sometidos a hidrólisis enzimática (enzima Protamex©) durante 1, 2, 3, 4, 5 y 6 horas a 58 °C; proporción de agua: sustrato 1:1. Luego de la reacción de hidrólisis las muestras fueron inactivadas a 90 °C durante 5 minutos. Se tomaron soluciones hidrolizadas (2 % de sólidos disueltos) en los tiempos establecidos y se determinaron sus propiedades tecnofuncionales siendo estas: capacidad espumante, emulsificante, antioxidante y grado de hidrólisis. La propiedad espumante aumentó significativamente de 27,4±2,5 % (0 horas) hasta 96,2±5,0 % (6 horas). La propiedad emulsificante disminuyó significativamente de 84,1±3,6 % (0 horas) hasta 56,3±3,2 % (6 horas). La capacidad antioxidante presentó diferencias significativas a las 5 y 6 horas, las cuales presentaron inhibición del radical DPPH en el orden de 15 a 20 % del contenido inicial. El grado de hidrólisis aumentó significativamente hasta 18,4±0,6 % (6 horas). La pota molida presentó ventajas tecno-funcionales que podrían servir como agentes alimentarios espumantes, insumos proteicos con capacidad emulsionante y antioxidante para formulación de reestructurados como salchichas, hamburguesas que permitan mejorar la palatabilidad y tiempo de vida útil.

Higher fungi or mushrooms have been harvested and consumed by humans for thousands of years due to their nutritional and medicinal qualities. Currently, mushrooms are consumed all over the world for their excellent flavour and texture, although there is little known about their great potential as a functional food. For this reason, the main objective of this work was to identify the functional properties of wild and cultivated mushrooms and their bioactive or pharmacological characteristics that justify their use as functional foods. The information was obtained from various databases such as PubMed, Google Scholar, Web of Science and Scielo, among others, as well as external books. It was found that there are plenty of edible mushrooms containing compounds such as β-glucans or polysaccharide-protein complexes which are responsible for functional activities such as antitumour, immunomodulatory, antioxidant, antimicrobial, etc. Eighty two scientific articles were reviewed and it was concluded that only 4 fungi have most of the functional properties described above. Two of them belong to the genus Agaricus, Agaricus bisporus and Agaricus blazei (mushrooms) and the other two are Ganoderma lucidum (Reishi) and Lentinula edodes (Shiitake)., Los hongos superiores o setas han sido recolectados y consumidos por el ser humano durante miles de años, tanto por sus cualidades nutritivas como medicinales. Actualmente, los hongos son consumidos en todo el mundo por su excelente sabor, aroma y textura, aunque es poco conocido su gran potencial como alimentos con propiedades funcionales. Por ello, el objetivo principal de este trabajo ha sido realizar una revisión bibliográfica para identificar los géneros y especies de hongos silvestres y cultivados con propiedades funcionales, así como los compuestos bioactivos o farmacológicos responsables de dichas propiedades. Para ello, se ha obtenido información de diversas bases de datos como PubMed, Google Académico, Web of Science o Scielo, entre otras. También se han realizado consultas de libros externos. Tras la revisión bibliográfica de este trabajo hemos identificado gran cantidad de géneros y especies de hongos que contienen compuestos bioactivos como los β-glucanos o complejos polisacárido-proteína, responsables de las actividades funcionales. Caben destacar entre otras las propiedades antitumorales, inmunomoduladoras, antioxidantes y antimicrobianas. De los 82 artículos científicos revisados, podemos concluir que únicamente 4 hongos presentan la mayoría de las propiedades funcionales descritas. Dos de estos hongos pertenecen al género Agaricus, el Agaricus bisporus y el Agaricus blazei (Champiñones) y los otros dos son el Ganoderma lucidum (Reishi) y la Lentinula edodes (Shiitake)".

[ES] El desarrollo de alimentos que promuevan la salud y el bienestar es una de las prioridades actuales de la industria alimentaria. El lulo o “naranjilla” (Solanum quitoense Lam.), es un fruto que se diferencia por su contenido en aminas bioactivas derivadas de la espermidina, con potencial efecto antihipertensivo. De acuerdo con esto, el lulo podría ser empleado como ingrediente en el desarrollo de alimentos funcionales para la prevención de la hipertensión arterial en la población obesa. Además del consumo de frutas, la ingesta de determinados microorganismos también consigue disminuir la grasa corporal al modificar la microbiota intestinal, estimular la síntesis de péptidos que inducen la saciedad, reducir la síntesis de citoquinas proinflamatorias y/o modificar el perfil lipídico. Es por ello que, con el objeto de desarrollar un nuevo zumo probiótico que prevenga la obesidad, en este trabajo se evalúa el efecto del pH (5,5 y 6) y las altas presiones de homogenización (100 y 150 MPa) sobre las propiedades fisicoquímicas (°Brix, pH, densidad, tamaño de partícula, color, actividad antioxidante por los métodos ABTS y DPPH y el contendido en fenoles totales y flavonoides) y microbiológicas (recuento de viables) del zumo de lulo inoculado con Lactobacillus reuteri e incubado durante 24 y 48 h. Los resultados revelaron que el zumo de lulo es un medio adecuado para el crecimiento del microorganismo probiótico, especialmente cuando su pH se ajusta a 5,5, y que la homogeneización previa a la inoculación solo mejora los recuentos cuando el pH del zumo se ajusta a 6. Al aumentar de 24 a 48 h el tiempo de incubación los recuentos apenas varían (en el caso de los zumos a pH 5,5) o aumentan significativamente (en el caso de los zumos a pH 6). Los cambios en las propiedades fisicoquímicas resultaron más o menos acusados en función del crecimiento microbiano. Los zumos con un mayor contenido en células vivas resultaron más turbios, presentaron un tamaño medio de partícula más elevado y un mayor contenido de sólidos sedimentables, además de experimentar mayores cambios en el color. El crecimiento microbiano en los zumos también mejoró el contenido en fenoles y flavonoides totales, junto a la capacidad antioxidante total medida por el método DPPH., [EN] The development of foods that promote health and well-being is one of the current priorities of the food industry. El lulo o "naranjilla" (Solanum quitoense Lam.), És un fruit que es diferencia pel seu contingut en amines bioactives derivades de la espermidina, amb potencial efecte antihipertensiu. D'acord amb això, el lulo podria ser emprat com a ingredient en el desenvolupament d'aliments funcionals per a la prevenció de la hipertensió arterial en la població obesa. A més del consum de fruites, la ingesta de determinats microorganismes també aconsegueix disminuir el greix corporal en modificar la microbiota intestinal, estimular la síntesi de pèptids que indueixen a la sacietat, reduir la síntesi de citoquines proinflamatòries i / o modificar el perfil lipídic. Els resultats van revelar que el suc de lulo és un mitjà adequat per al creixement del microorganisme probiòtic, especialment quan el seu pH s'ajusta a 5,5, i que l'homogeneïtzació prèvia a la inoculació només millora els recomptes quan el pH del suc s'ajusta a 6. en augmentar de 24 a 48 h el temps d'incubació dels recomptes tot just varien (en el cas dels sucs a pH 5,5) o augmenten significativament (en el cas dels sucs a pH 6). Els canvis en les propietats fisicoquímiques van resultar més o menys acusats en funció del creixement microbià. Els sucs amb un major contingut en cèl·lules vives van resultar més tèrbols, van presentar una mida mitjana de partícula més elevat i un major contingut de sòlids sedimentables, a més d'experimentar majors canvis en el color. El creixement microbià en els sucs també va millorar el contingut en fenols i flavonoides totals, al costat de la capacitat antioxidant total mesura pel mètode DPPH.

El objetivo general de esta tesis fue desarrollar tratamientos postcosecha de frutilla aplicando tecnologías de conservación alternativas (ozono y pulsos de luz de alta intensidad) como pretratamientos al almacenamiento refrigerado. Dichas tecnologías fueron aplicadas en forma individual o en un enfoque multifactorial entre sí y/o con otro factor de estrés (trata-miento térmico moderado).El tratamiento con ozono en fase acuosa (concentración máxima: 3,5 mg.L-1) durante 5 min permitió reducir el crecimiento fúngico (micoflora nativa y Botrytis cinerea) a lo largo del almacenamiento a 5 ºC, sin alterar de forma significativa los parámetros de calidad evaluados. El aumento en el grosor y densidad electrónica de la cutícula, explicaron en parte la disminu-ción del nivel de infección y de pérdida de peso de estas muestras. La combinación de exposi-ción a ozono (3,5 mg.L-1) por 5 min seguida de 10 s de luz pulsada (LP) (11,9 J.cm-2) ó 5 min de tratamiento térmico (TT) seguido de 10 s de LP mostraron ser más efectivos para reducir el crecimiento fúngico respecto al tratamiento individual de LP. Sin embargo, ninguno de los tratamientos combinados logró mejorar la inhibición alcanzada con el tratamiento térmico individual de 5 min. De los tratamientos evaluados, sólo el TT de 5 min y su combinación con LP mostraron una mejora en la firmeza de los frutos respecto al control, que fue correlacionada con los cambios microestructurales observados. Además, aquellos tratamientos (individuales o combinados) que resultaron más efectivos en la inhibición de la micoflora nativa no resultaron en cambios significativos en la capacidad antioxidante y los parámetros fisicoquímicos. Por otra parte, el TT de 5 min provocó cambios significativos en las propiedades ópticas de los frutos.Esta tesis mostró que los tratamientos individuales, aplicados en dosis adecuadas, per-mitieron reducir el desarrollo fúngico durante el almacenamiento refrigerado. Por otra parte, los tratamientos combinados, si bien redujeron el nivel de infección, no lograron superar los resultados obtenidos con los tratamientos individuales más efectivos. Por lo tanto, para alcan-zar una mayor vida útil es preciso profundizar el conocimiento de estas tecnologías, a fines de encontrar las dosis y tiempos de exposición óptimos para ser aplicados de forma combinada entre sí y/o con otros factores de estrés. The aim of this thesis was to develop strawberry post-harvest treatments using alternative preservation technologies (ozone and pulsed light) as pre-treatments to refrigerated storage. These technologies were applied individually or in a multi-factorial approach to each other and/ or with other stress factor (mild thermal treatment). Aqueous ozone exposure (maximum concentration: 3.5 mg.L-1) for 5 min reduced the fungal development (native mycobiota and inoculated Botrytis cinerea) along storage at 5 ºC, without inducing significant changes in the quality parameters evaluated, when compared to control fruit. The thicker and more electron dense cuticle in these samples would partially explain the reductions in microbial infection and weight loss along storage. Combined treatments of 5 min of exposure to ozone (3.5 mg.L-1) followed by 10 s of pulsed light (PL) (11.9 J.cm-2) or 5 min of mild thermal treatment (TT) followed by 10 s of PL, were effective to reduce fungal incidence when compared to individual PL treatment. Nevertheless, none of the combined treatments assayed improved the inhibition levels achieved with the individual TT of 5 min. Among the treatments evaluated, only the TT of 5 min and its combination with PL improved the firmness of the fruit with respect to control. This improvement was correlated with the micro-structural changes observed in those samples. The treatments (individual or combined) that showed the greater effectiveness in inhibiting the naturally occurring incidence did not showed a significant effect on the antioxidant capacity and the physicochemical parameters. In addition, TT of 5 min had a detrimental effect on the optical properties of the fruit. This thesis showed that individual treatments, applied in adequate doses, allowed reducing the fungal development throughout refrigerated storage. Although the combined treatments reduced the level of infection, they did not overcome the results obtained with the most effective individual treatments. Therefore, to extend the fruit's shelf life it is necessary to deepen the knowledge of these technologies in order to find the optimum doses and exposure times to be applied in combination between them and with other stress factors. ilustraciones, fotografías, gráficas, tablas La papa es considerada una buena fuente de compuestos fenólicos con alta actividad antioxidante como los ácidos fenólicos, las antocianinas y los carotenoides, los cuales se pueden ver afectados en su contenido por prácticas agronómicas como la fertilización. El presente estudio evaluó el efecto de la fertilización foliar con magnesio y manganeso en tubérculos cocidos de cuatro cultivares de papa del Grupo Phureja. El contenido de fenoles totales fue determinado por el método Folin Ciocalteu y la actividad antioxidante por los métodos in vitro ABTS y FRAP, se determinó la concentración de antocianinas totales, y el contenido de ácidos fenólicos y carotenoides por HPLC. El cultivar Violeta presentó los mayores contenidos de fenoles totales y la mayor actividad antioxidante. Se observó un efecto significativo de la fertilización con magnesio, que aumentó el contenido de fenoles totales en el cultivar Criolla Colombia y lo redujo en los cultivares Violeta y Milagros. Estos resultados sugieren alta influencia del genotipo sobre la respuesta de las variables evaluadas. Se presentaron correlaciones positivas significativas entre el contenido de fenoles totales, ácidos fenólicos y antocianinas con la actividad antioxidante. El cultivar Violeta es recomendado para el estudio de actividad antioxidante in vivo, teniendo en cuenta que obtuvo los mayores valores, comparado con los demás cultivares. The potato is considered a good source of phenolic compounds with high antioxidant activity such as phenolic acids, anthocyanins, and carotenoids, which can be affected in their content by agronomic practices such as fertilization. The present study evaluated the effect of foliar fertilization with magnesium and manganese in cooked tubers of four potato cultivars of Phureja Group. Total phenols content was determined by the Folin Ciocalteu method and antioxidant activity by the ABTS and FRAP in vitro methods, the concentration of total anthocyanins, and the content of phenolic acids and carotenoids was determined by HPLC. The Violeta cultivar presented the highest content of total phenols and the highest antioxidant activity. A significant effect of magnesium fertilization was observed, which increased the content of total phenols in the Criolla Colombia cultivar and reduced it in Violeta and Milagros cultivars. Positive significant correlations were found between total phenols, phenolic acids and anthocyanins content with antioxidant activity. These results suggest a high influence of the genotype on the response of the variables evaluated. The Violeta cultivar is recommended for the study of antioxidant activity in vivo, taking into account that it obtained the highest values, compared with the other cultivars. [ES] La planta del lulo (Solanum quitoense Lam) es una especie de fruta tropical de cultivo importante en países como Colombia. Su procesado para la obtención de zumo genera como subproducto el bagazo. Aunque este es utilizado normalmente en alimentación animal, como fertilizante, o como sustrato agrícola, su alto contenido en compuestos de interés nutricional y funcional como la fibra, los minerales y los compuestos con actividad antioxidante lo hacen atractivo para la obtención de ingredientes alimentarios de alto valor añadido. La obtención de un polvo funcional de bagazo de lulo puede llevarse a cabo por combinación de una operación de deshidratación y un triturado. En este trabajo se plantea la posibilidad de utilizar el secado por aire caliente a 60 y 70 ºC y la liofilización como operaciones de deshidratación. El objetivo principal del trabajo es evaluar el efecto de la temperatura de secado por aire caliente y de la liofilización, así como de la intensidad del triturado sobre las propiedades físico-químicas y funcionales (humedad, tamaño de partícula, propiedades antioxidantes y color), propiedades de interacción con el agua (solubilidad, higroscopicidad, capacidad de hinchamiento, isotermas, capacidad retener y atrapar agua) y propiedades emulsionantes del polvo final. Los resultados obtenidos muestran que la operación de liofilización proporciona un polvo con mejores propiedades antioxidantes y de interacción con el agua. Although this is normally used in animal feed, as a fertilizer, or as an agricultural substrate, its high content of compounds of nutritional and functional interest such as fiber, minerals and compounds with antioxidant activity make it attractive for obtaining high added value food ingredients. Obtaining a functional lulo bagasse powder can be carried out by combining a dehydration method with a crushing operation. In this work, hot air drying at 60 and 70 ºC and lyophilization are considered. as dehydration operations The main objective of this work is to evaluate the effect of hot air drying temperature and lyophilization, as well as the intensity of crushing on the physical-chemical and functional properties (humidity, particle size, antioxidant properties and colour), properties of interaction with water (solubility, hygroscopicity, swelling capacity, isotherms, ability to retain and trap water) and emulsifying properties of the final powder. El seu processat per a l'obtenció de suc genera com a subproducte el bagàs. Encara que aquest és utilitzat normalment en alimentació animal, com a fertilitzant, o com a substrat agrícola, el seu alt contingut en compostos d'interès nutricional i funcional com la fibra, els minerals i els compostos amb activitat antioxidant el fan atractiu per a l'obtenció d'ingredients alimentaris d'alt valor afegit. L'obtenció d'una pols funcional de bagàs de lulo es pot dur a terme per combinació d'una operació de deshidratació i un triturat. En aquest treball es planteja la possibilitat d'utilitzar l'assecat per aire calent a 60 i 70 ºC i la liofilització com a operacions de deshidratació. L'objectiu principal del treball és avaluar l’efecte de la temperatura d'assecat per aire calent i de la liofilització, així com de la intensitat del triturat sobre les propietats fisicoquímiques i funcionals (humitat, mida de partícula, propietats antioxidants i color), propietats d'interacció amb l'aigua (solubilitat, higroscopicitat, capacitat d'inflament, isotermes, capacitat de retenir i atrapar aigua) i propietats emulsionants de les pols finals. Els resultats obtinguts mostren que l'operació de liofilització proporciona una pols amb millors propietats antioxidants i d'interacció amb l'aigua. L'estudi de l'efecte de la temperatura d'assecat per aire calent va revelar una clara influència de la temperatura tant en la cinètica del procés com en les propietats del producte final.

[ES] Los probióticos son microorganismos que aportan grandes beneficios para la salud. Aunque presentes principalmente en alimentos de origen lácteo, existen otras matrices alimentarias que también pueden ser empleadas para su crecimiento y que ven incrementada la disponibilidad de compuestos de interés, tales como fenoles y flavonoides. Este estudio pretende evaluar el efecto de la fermentación durante 96 horas con Lactobacillus salivarius spp. salivarius (CECT 4063) sobre el perfil antioxidante del zumo de clementina en función de la adición o no de un 10% en peso de trehalosa al zumo y de la homogeneización o no a 100 MPa antes o tras 24 horas desde la inoculación del mismo. Para tal fin se han empleado técnicas de medida tanto espectrofotométricas como cromatográficas (HPLC). Los resultados obtenidos confirman que la fermentación del zumo de clementina con Lactobacillus salivarius spp. salivarius (CET 4063) durante 24 horas mejora notablemente sus propiedades nutritivas (antioxidantes y probióticas). Tras 24 horas de fermentación, la población microbiana disminuye y el contenido en antioxidantes apenas mejora. La homogeneización del zumo antes de la inoculación con el probiótico, aunque mejora el crecimiento del lactobacilo en el medio, también favorece la degradación de los compuestos antioxidantes. ilustraciones, gráficas, tablas Colombia posee un germoplasma de papa Solanum Tuberosum grupo Phureja con poca información del contenido nutricional y existiendo la necesidad de articular la agricultura y la nutrición como puede ser en el desarrollo de nuevos cultivares con mejor contenido nutricional para el consumo en fresco y/o procesamiento, se caracterizó desde el contenido nutricional por medio de un análisis proximal y el contenido de minerales genotipos de papa de la Colección Central Colombiana de papa diploide (CCC)(94 genotipos para el análisis proximal y 81 genotipos para el contenido mineral), 13 cultivares nativos (CN) colectados en el departamento de Nariño, 7 clones avanzados, 4 variedades comerciales de papa criolla (diploides) y dos variedades comerciales de papa de año (tetraploides) después de someterse a un proceso de selección, lavado, cocción y liofilización. También se evaluaron diez variedades comerciales de papa por el contenido de fenoles totales, flavonoides totales, ácidos hidroxicinámicos (clorogénico, cripto-clorogénico, neo-clorogénico y caféico) y la actividad antioxidante (AA) por diferentes métodos (ABTS, FRAP, DPPH y estrés oxidativo en levaduras). Entre los resultados obtenidos se encontró una gran variabilidad en el contenido de macronutrientes y micronutrientes en la CCC y CN, sobresaliendo algunos genotipos promisorios para los programas de mejoramiento o recomendación en la dieta de la población con problemas de déficit en nutrientes, especialmente en proteína, Fe, Zn y Ca. Por ejemplo, mientras que el contenido de proteína en las papas diploides comerciales fue máximo de 2,1 g/100 g base húmeda (BH), en la CCC y CN tuvieron valores de hasta 4,1 g/100 g BH (2,0 veces más que lo que tienen las papas comerciales actualmente). Al evaluar el contenido de Fe, Zn y Ca se presenta una situación similar: 0,6 mg/100 g BH de Fe en papas comerciales mientras que en la CCC se obtuvo valores hasta 1,7 mg/100 g BH (2,8 veces más que lo que tienen las papas comerciales), para el Zn 0,8 mg/100 g BH en papas comerciales mientras que en la CCC se obtuvo valores hasta 1,6 mg/100 g BH (2,0 veces más que lo que tienen las papas comerciales), para el Ca hasta 9,5 mg/100 g BH en papas comerciales mientras que en la CCC se obtuvo valores hasta 54,4 mg/100 g BH (5,7 veces más que lo que tienen las papas comerciales). Así mismo, la evaluación de la AA y compuestos fenólicos de los cultivares comerciales de papa colombianos, mostró mayores valores para los cultivares diploides en comparación a los cultivares tetraploides. Criolla Dorada mostró el mayor contenido de fenoles totales (556,9 mg de ácido gálico en base seca (BS)) y AA por ABTS (54,6 µmol trolox/g BS), mientras el cultivar Criolla Suapa presentó el mayor contenido de flavonoides totales (87,5 µg kaempferol/100 g de papa BS, ó 48,8 µg mirecetin/100 g de papa BS) y AA FRAP (17,6 µmol trolox/g BS o 43,2 µmol FeSO4/g BS.), Criolla Ocarina mostro el mayor contenido de ácido neo-clorogénico (3,8 mg/100 g de papa BS), ácido cripto-clorogénico (23,5 mg/100 g de papa BS) y AA por DPPH (35,4 µmol trolox/g BS). Criolla Colombia presento el mayor contenido de ácido clorogénico (173,5 mg/100 g BS) y Criolla Paisa el mejor contenido de ácido cafeico (8,4 mg/100 g BS) La actividad antioxidante por método biológico de crecimiento de levaduras sometidas a estrés oxidativo mostro un mejor perfil de crecimiento de las levaduras que contenían el extracto de vitamina C (control positivo) seguido de Criolla Suapa. Se realizó una comparación de las propiedades fisicoquímicas de los propóleos recolectados en los municipios de Galapa, Sabanalarga, Santo Tomás y Juan de Acosta, del departamento del Atlántico (Colombia). Adicionalmente, se estableció la actividad antioxidante in vitro de los extractos etanólicos de propóleos (EEP), mediante las técnicas de DPPH, ABTS, FRAP y ORAC. El análisis fisicoquímico de los propóleos mostró valores de 8,48 - 24,21%, 1,77 - 6,07%, 55,57 - 77,93%, 5,74 - 11,69% y 0,35 - 3,86%, para el EEP, ceras, insolubles, humedad y cenizas, respectivamente. La determinación para los fenoles totales, se encuentra entre 63,72 y 94,55mg, de ácido gálico/g de muestra. Las absorbancias específicas de los EEP estuvieron dentro del rango de 26 a 96 y el contenido de flavonoides totales mostró valores entre 1,90 y 3,36mg, de quercetina/g de muestra. De los extractos, el que presentó mayor capacidad antioxidante fue el propóleos, recolectado en el municipio de Galapa, con los siguientes valores DPPH: 190,41 TEAC (µmol/g), ABTS: 1918,41 TEAC (µmol/g) y FRAP: 321,27 AEAC (µmol/g) y el segundo valor más alto en ORAC (1964,80 µmol Trolox/g de propóleos). Los resultados obtenidos indican que los propóleos estudiados presentaron variación en las propiedades fisicoquímicas. Los valores de algunos de los parámetros fisicoquímicos estimados no cumplieron con las normativas de calidad establecidas internacionalmente; no obstante, los extractos etanólicos de propóleos evaluados presentaron un alto contenido de fenoles, los cuales, están relacionados con las propiedades antioxidantes encontradas experimentalmente. High pressure processing is a food preservation technique which can be an alternative to heat treatment. Pressurization, in theory, produces changes in organoleptic properties and antioxidant compounds to a lesser extent. The objective of the present dissertation has been to study the effect of high pressure processing on oxidative processes and their relation to the organoleptic qualities of diced swede and packaged sliced ham. The results have pointed to pressurization at 600 MPa, and produce an effective decontamination is that which causes less loss of compounds or antioxidant properties. For swede, this pressure level also caused a minor modification of the organoleptic qualities. This dissertation has also shown that depending on feed composition, the effect of pressurization on the organoleptic qualities can be diametrically opposite., La aplicación de altas presiones hidrostáticas es una técnica de conservación de alimentos que puede ser una alternativa al tratamiento térmico. La presurización, en teoría, produce una menor modificación de las propiedades organolépticas y de los compuestos antioxidantes. En el presente trabajo se ha estudiado el efecto de las altas presiones hidrostáticas en los procesos oxidativos y su relación con las cualidades organolépticas del nabo troceado y del jamón curado empaquetado loncheado. Los resultados obtenidos han apuntado a que la presurización a 600 MPa, además de producir una descontaminación efectiva, es la que causa una menor pérdida de compuestos o propiedades antioxidantes. En el caso del nabo, esta presión también es la que ocasiona una menor modificación de las cualidades organolépticas. En el presente trabajo también se ha observado que en función de la composición del alimento, el efecto de la presurización en las cualidades organolépticas puede ser diametralmente opuesto.
