Oregano oil and cranberry pulp supplements were added to the diets of finishing pigs to determine their effects on the meat quality of fresh loins during storage. Two and three levels of oregano oil (250 and 500 mg·kg−1) and cranberry pulp (5, 10, and 20 g·kg−1) were tested, according to a factorial experimental design. The loin meat was vacuum packed and analyzed at 0 (after the 24 h chilling period post slaughter), 23, 45, and 60 d of storage. Samples were repackaged under aerobic conditions after 0 or 23 d and analyzed after 4, 8, and 12 d. Oregano and cranberry supplements did not affect lipid oxidation (microgram of malondialdehyde equivalent per kilogram of meat) during anaerobic or aerobic storage. On day 0, the fatty acid profile of the loin samples demonstrated that the addition of cranberries at a dose of 10 g·kg−1 was associated with a lower percentage of saturated fatty acids (P = 0.04; 42.97% vs. 40.99%) and a trend for a higher percentage of monounsaturated fatty acids (P = 0.06; 47.26% vs. 46.09%). Considering the result obtained, feeding pigs with oregano and cranberry supplements had a limited effect on meat quality parameters measured during storage.

This study evaluated the effect of freezing rate on the quality characteristics of pork loin to establish an objective standard for rapid freezing. To generate various freezing rates, three air flow rates (0, 1.5, and 3.0 m/s) were applied under three freezing temperatures (–20°C, –30°C, and –40°C). Based on the results, freezing rates ranged from 0.26–1.42 cm/h and were graded by three categories, i.e, slow (category I, >0.4 cm/h), intermediate (category II, 0.6–0.7 cm/h) and rapid freezing (category III, >0.96 cm/h). Both temperature and the air flow rate influenced the freezing rate, and the freezing rate affected the ice crystal size and shear force in pork loin. However, the air flow rate did not affect thawing loss, drip loss or the color of pork loins. In the comparison of freezing rates, pork belonging to category II did not show a clear difference in quality parameters from pork in category I. Furthermore, pork in category III showed fresh meat-like qualities, and the quality characteristics were clearly distinct from those of category I. Although the current standard for rapid freezing rate is 0.5 cm/h, this study suggested that 0.96 cm/h is the lowest freezing rate for achieving meat quality distinguishable from that achieved with conventional freezing, and further increasing the freezing rate did not provide advantages from an energy consumption perspective.

Context Goat farming is an important socio-economic activity. The feedlot system allows the finishing of the animals in short periods through use of concentrated diets; however, these diets increase the system’s production costs. Palm kernel cake (PKC) has proved to be a good alternative feed source in diets for cattle and sheep because of its nutritional characteristics and potential to reduce production costs. Aim This experiment aimed to evaluate the effect of high-concentrate diets with the inclusion of PKC on carcass traits and meat quality of feedlot goat kids. Methods Thirty-two crossbred, castrated Boer goat kids, 4 months old and of average initial body weight 19.65 ± 3.00 kg, were used in the study. This study was conducted to investigate the effect of different fattening periods on the growth performance, carcass characteristics, and economic traits of Holstein steers. Sixty Holstein steers (8.0 ± 0.28 months old) with an average body weight (BW) of 231.88 ± 2.61 kg, were randomly allocated to five different fattening period treatments: 20, 21, 22, 23, and 24 months (n = 12 in each treatment group). Final BW and average daily gain (ADG) did not differ among the treatment groups during the early fattening period. At the late stage of the fattening period, the final BW of steers in the 24-month treatment group (812.84 kg) was greater (p < 0.05) than that of steers in the 20-month treatment group (750.39 kg). During the same period, steers in the 20- and 21-month treatment groups had a significantly higher (p < 0.05) ADG than those in the 22-month treatment group. The highest ADG (1.36 kg/day) was found in the 20-month treatment group (1.36), followed by the 21- (1.33 kg/day), 22- (1.22 kg/day), 23- (1.21 kg/day), and 24- (1.14 kg/day) month treatment groups. The feed conversion ratio (FCR) increased as the fattening period increased, and the FCR was 12.88% lower in the 20-month treatment group than in the 24-month treatment group. However, no significant differences were detected in back-fat thickness, loin area, marbling score, and chemical characteristics (water, crude protein, and crude fat content) among the treatment groups. The composition of fatty acids including C18:0, C18:1, saturated fatty acids, unsaturated fatty acids, and poly-unsaturated fatty acids did not differ among the experimental groups. As the fattening period increased, production costs increased, resulting in a decrease in gross income. The gross income for steers in the 24-month treatment group was 35.8% and 23.5% lower than that for steers in the 20- and 21-month treatment groups, respectively. Taken together, the best performance, including the ADG, FCR, and gross income, was obtained when the fattening program of the Holstein steers lasted 20 months.

The aim of the study was to evaluate the carcass characteristics, proximate composition, and sensorial attributes of meat from sheep fed diets in which buffelgrass silage replaced corn silage. Thirty-two intact male crossbred Santa Inês sheep with an average live weight of 20.09 ± 2.0 kg were housed in individual stalls and allotted at random to four treatments in which corn silage was replaced by buffelgrass silage at the levels of 0 (control), 33.3%, 66.6%, and 100%. After an adaption period of 10 days, the sheep were fed for an additional 61 days. Feed was offered ad libitum and corn silage comprised 60% of the diet for the control group. The objective of this study was to evaluate the influence of live yeast (Saccharomyces cerevisiae var. boulardii) on the quantitative and qualitative characteristics of the shoulder and loin of Boer x Saanen crossbred goat kids. Twenty-seven carcasses were used, 13 females and 14 uncastrated males with an average age of 192 days, weighing 30.76 kg, distributed in a completely randomised design using a 2 x 2 factorial arrangement (diet and sex). The yeast was added to the feed before pelletising in a proportion of 0.050 g/kg dry matter (DM). When the goats reached an average of 30 kg of live weight, they were slaughtered. No effects of live yeast on quantitative carcass and qualitative characteristics of shoulder and loin were observed. Regarding sex, males had higher slaughter weights (31.73 kg), empty carcass weight (27.98 kg), hot carcass weight (14.39 kg), cold carcass weight (14.22 kg), higher carcass compactness index (0.28 kg/cm), lower slaughter age (176 days) and lower cooling loss (1.20%). For the cut yields, females presented a higher loin yield (11.55%) and males presented a higher neck yield (6.84%). In the shoulder, males presented a higher proportion of bone (18.58%), while females presented a higher proportion of fat (17.09%) and muscle:bone (3.47). In the loin, females showed higher fat deposition (19.54%) in relation to males. The inclusion of yeast Saccharomyces cerevisiae var. boulardii in the crossbred goat kids’ diet did not generate differences in the quantitative and qualitative characteristics of the shoulder and loin. O objetivo deste estudo foi avaliar a influência da levedura viva (Saccharomyces cerevisiae var. boulardii) sobre as características quantitativas e qualitativas da paleta e do lombo de cabritos mestiços Boer x Saanen. Foram utilizadas 27 carcaças, 13 fêmeas e 14 machos não castrados com idade média de 192 dias e peso de 30,76 kg, distribuídas em delineamento inteiramente casualizado em esquema fatorial 2 x 2 (dieta e sexo). A levedura foi adicionada à ração antes da peletização na proporção de 0,050 g / kg de MS. Quando os cabritos atingiram a média de 30 kg de peso vivo, os animais foram abatidos. Não foram observados efeitos da levedura viva na carcaça quantitativa e nas características qualitativas da paleta e do lombo. Em relação ao sexo, os machos apresentaram maiores pesos de abate (31,73 kg), peso de carcaça vazia (27,98 kg), peso de carcaça quente (14,39 kg), peso de carcaça fria (14,22 kg), maior índice de compacidade de carcaça (0,28 kg/cm), menor abate idade (176 dias) e menor perda por resfriamento (1,20%). Para os rendimentos de cortes, as fêmeas apresentaram maior rendimento de lombo (11,55%) e os machos apresentaram maior rendimento de pescoço (6,84%). Na paleta, o sexo masculino apresentou maior proporção de osso (18,58%), enquanto o feminino apresentou maior proporção de gordura (17,09%) e músculo: osso (3,47). No lombo, as fêmeas apresentaram maior deposição de gordura (19,54%) em relação aos machos. Yellowfin tuna is one of Indonesia's main export commodities, its meat contains high protein and can be processed into a variety of commercial food products. In the processing of loin, fillet and tuna steak, ± 10% of flaked meat is produced which can be used for processing commercial products. Spaghetti is one of the commercial products that is easily processed with raw materials and additives that are cheap and easy to obtain as well as halal and thoyib. The raw materials used are tuna flakes, spaghetti noodles and seasonings. The research objective was to analyze the chemical composition of tuna flakes and tuna topping spaghetti as well as the added value and level of consumer preference. This research uses laboratory methods, the percentage of additional selling value and consumer preferences. Proximate chemical composition of tuna flakes, namely: water content (74.80 - 75.25%); protein (16.35 - 17.00%); fat (1.43 - 1.50%); minerals (5.38 - 5.45%); carbohydrates (0.65 - 0.80%). Chemical composition of tuna topping spaghetti, namely: water content (62.73 - 69.13%); protein (7.08 - 8.34%); fat (0.42 - 0.76%); minerals/ash (0.93 - 1.16%) and carbohydrates (24.41 - 25.54%). The added value of tuna flakes in the processing of tuna topping spaghetti for two packages of spaghetti noodles (18 portions) is Rp. 147,355 (80.79%). The level of consumer preference (25 panelists) towards the visual value of tuna topping spaghetti is “very like” (76.0%) and “like” (24%); smell values, namely "really like" (72.0%) and "like" (28%); the value of taste, namely "really like" (80.0%) and "like" (20%); Texture values are “really like” (80.0%) and “like” (20%) and taste values are “really like” (76.0%) and “like” (24%).

Phosphatidylethanolamine (PE) is a major phospholipid in pork and a determinant of its quality. PE is classified into diacyl, alkylacyl, and plasmalogen types. Plasmalogens have antioxidant activity and are believed to have beneficial health properties. However, their presence in pork tissues have not been fully elucidated. Here, we analyzed their distribution in longissimus thoracis et lumborum (loin) muscle, spinalis muscle, intermuscular fat, and transparent tissue of pork chops. Liquid chromatography-electrospray ionization-mass spectrometry (LC–ESI–MS) revealed 14 diacyl-PEs, 10 alkylacyl-PEs, and 24 plasmalogen-PEs, suggesting that plasmalogen-PEs are a dominant type, and a major reservoir of eicosapentaenoic and docosahexaenoic acids. Matrix-assisted laser desorption/ionization-mass spectrometry imaging (MALDI–MSI) revealed that the distributions of PEs among tissues depended on fatty acid compositions at sn-1 and sn-2 positions. Interestingly, diacyl-PEs were most abundant in intermuscular fat tissue; whereas alkylacyl-PEs and plasmalogen-PEs were highest in transparent tissue. To the best of our knowledge, this is the first report showing tissue-specific distributions of the three types of PEs in meat using MALDI-MSI. These results suggest that MALDI-MSI with LC-ESI-MS is a useful tool for distribution analysis of the three types of PEs in pork tissues.

This study aimed to determine the effect of regulating crude protein (CP) levels in total mixed ration (TMR) on the growth performance and carcass characteristics of Hanwoo steers. The regimens were divided into a control group (TMR with 15% CP) and treatment group (TMR with 12.5% CP). The viable cell count and fermentation potential of the prepared experimental feed and the nutrient digestibility were evaluated. Growth performance and carcass characteristics were confirmed by evaluating the weight and intake of Hanwoo steers, and an economic analysis was performed. Only CP digestibility was higher in the control group than in the treatment group (p 0.05). There were no significant differences in carcass weight, yield index, back fat thickness, and loin area (p>0.05), but the appearance rate of quality grade A was higher in the treatment group than in the control group. In addition, there was no difference in the meat quality characteristics, such as marbling, meat color, fat color, texture, and maturity (p>0.05), and the treatment group had a higher rate of 1++ grade than the control group. Economic analysis showed that when 10 cattle were shipped, the control group received a price of 100,041 thousand won, and the treatment group received a price of 102,033 thousand won. When the income for each group was calculated, the production cost of the treatment group was 8% lower than that of the control group; thus, a higher net profit could be expected considering the low feed cost. Therefore, the economic feasibility of steer raising could be improved while maintaining productivity by controlling CP levels in feed. In addition, this study provides useful basic data for precisely adjusting the CP levels in feed for Hanwoo steers.

Context In the belief that feed costs and use of cereal grains are reduced, production systems based on grazed and conserved forage in which cattle are slaughtered at 30 to 36 months of age are increasingly advocated. Aims As there is a scarcity of information concerning meat quality traits of beef from such extended rearing systems, three finishing systems of different lengths (Short, 14–16 months; Medium, 20–24 months; Long, 31–34 months) were compared in which cattle were slaughtered at similar conformation and fat classification scores. Methods The experiment comprised a three (system) × two (gender) design with 24 Limousin cross-bred cattle (12 steers and 12 heifers) assigned to each system. Characteristics of the rib section (between and inclusive of the 5th and 10th ribs) and sensory properties of M. longissimus thoracis samples were then assessed. Key results Older (Long system) cattle had greater rib section and L. thoracis weights. L. thoracis was tougher in older (Long system) cattle when assessed by a trained sensory panel. Heifers had lower rib section weights than steers but neither rib section composition or meat toughness differed between genders. Gristle (visible connective tissue) in the rib section increased with system length and was associated with an increased perception of gristle on eating. Conclusions Overall meat quality was considered commercially acceptable regardless of system. Implications The likely increased greenhouse gas emissions but reduced utilisation of food resources from the Long system need to be considered in conjunction with the meat quality characteristics of the system.

This study investigated the effect of pig breeds on the quality characteristics of dry-cured loins according to the processing stage. Physicochemical properties of 20 dry-cured processed loins with the different pig breeds [Berkshire vs Landrace×Yorkshire× Duroc (LYD; n=10)] and different processing stages (raw, curing, dry-ripened 15 day and 30 day) were analyzed. The pig breed influenced moisture content and pH with values of 59% and 53%, and 6.17 and 5.94, for Berkshire and LYD, respectively, on day 30. Dry-cured loins made with Berkshire showed higher hardness and lower cohesiveness than that of the LYD (p0.05). BACKGROUND The Dietary Guidelines for Americans (DGAs) published an "ounce equivalents" recommendation to help consumers meet protein requirements with a variety of protein food sources. However, the metabolic equivalency of these varied protein food sources has not been established. OBJECTIVE We have investigated the hypothesis that the anabolic responses to consumption of ounce equivalents of protein food sources would be directly related to the essential amino acid (EAA) content of the protein food source. METHODS Following 3 d of dietary control, a total of 56 healthy young adults underwent an 8.5-h metabolic study using stable isotope tracer methodology. The changes from baseline following consumption of 1 of 7 different protein food sources were compared with the baseline value for that individual (n = 8 per group). RESULTS Consumption of ounce equivalents of animal-based protein food sources (beef sirloin, pork loin, eggs) resulted in a greater gain in whole-body net protein balance above baseline than the ounce equivalents of plant-based protein food sources (tofu, kidney beans, peanut butter, mixed nuts; P

Warna merah merupakan salah satu faktor penentu kualitas ikan tuna loin. Setelah dipotong dan disimpan ikan tuna akan mengalami perubahan warna, sehingga untuk mempertahankan warna merah pada daging ikan tuna digunakan filtered smoke. Filtered smoke juga dapat mengurangi oksidasi lemak dan mempertahankan kualitas asam lemak. Penelitian ini bertujuan untuk mempelajari komposisi asam lemak tuna loin (Thunnus albacares) yang diperlakukan dengan penyemprotan filtered smoke selama penyimpanan. Penelitian menggunakan metode eksperimen, ikan tuna loin disemprot dengan gas filtered smoke kemudian disimpan beku (-25 ºC) selama empat minggu. Pengamatan berlangsung pada minggu ke-0 dan minggu ke-4 . Variabel mutu yang diuji adalah profil asam lemak, indeks atherogenic (AI), indeks thrombogenic (TI), kualitas lemak (h/H) dan indeks poliena. Hasil analisis diperoleh asam lemak sebanyak 29 jenis terdiri dari asam lemak jenuh (SFA) 13, asam lemak tak jenuh tunggal (MUFA) 6 dan asam lemak tak jenuh jamak (PUFA) 13. SAFA tertinggi adalah asam palmitat (C16:0), sebesar 8,93% dan 15,14%, MUFA tertinggi adalah asam oleat (C18:1n9c) sebesar 3,73% dan 5,01% dan PUFA tertinggi adalah asam dokosaheksaenoat (C22:6n3) sebesar 6,77% dan 5,73%, masing-masing untuk minggu ke 0 dan minggu ke 4. Kualitas lemak ikan tuna masih tergolong baik setelah disimpan selama empat minggu, dengan nilai AI 0,83, nilai TI 0,69, nilai h/H 1,72 dan nilai indeks polien 1,31.

True splenic artery aneurysms (SAA) are rare, but potentially fatal, lesions. They account for 60% to 70% of patients diagnosed with visceral artery aneurysms. They should be differentiated from pseudo ones since the etiology is different. They risk of rupture is high if diameter is > 2 cm and in child-bearing years. In this case report; we describe an encounter of SAA in a patient presenting with severe left loin pain and shock due to acute pyelonephritis. The aneurysm was 1.2 cm and was partially thrombosed and calcified indicating its stability and chronicity. The etiology, types and management of SAAs is discussed. Organic meat products are gaining consumer interest worldwide. The aim of this study was to investigate the effect of organic and conventional meat origin on nutritional determinants of the following pork meat cuts: loin, ham, and shoulder. Nutritional value of meat was based on selected indicators such as proximate composition, the concentration of cholesterol, vitamin E content and minerals and trace elements such as calcium, magnesium, potassium, copper, iron, and zinc, and the composition of fatty acids. The results of this study demonstrated that higher contents of protein and selected mineral compounds, as well as lower vitamin E concentration and different fatty acids (i.e., C12:0, C17:0, C17:1 n-7, C18:3 n-6, C24:0 and total n-3 polyunsaturated fatty acids (PUFA)) distinguish organic pork meat cuts from the conventional counterparts. The organically meat parts, especially the shoulder, were identified as a better source of copper, calcium, iron and zinc, while organic ham and loin had more potassium. On the other hand, organic hams were shown to have lower content of vitamin E in comparison to their conventional equivalents present. Also, in organic shoulders showed a higher n-6/n-3 ratio compared to meat of conventional origin.

This study aimed to determine the physicochemical properties (proximate composition, color, pH, salinity, water holding capacity (WHC), curing yield, and shear force) and sensory properties (electric nose and sensory evaluation) of Bulgogi sauce with added crust derived from dry-aged beef loin. Increasing the amount of crust in the Bulgogi sauce tended to increase the protein content, fat content, and pH. Uncooked Bulgogi also tended to have elevated fat content, ash content, pH, and shear force. Increasing the crust content tended to decrease the water content, lightness, redness, and yellowness of Bulgogi sauce. Objective The objective of this study was to evaluate the effect of dietary high-oleic soybean oil (HOS) on the growth performance, carcass traits, and meat quality of lambs. Materials and Methods Spring-born, weaned, Dorset-Suffolk wethers (n = 20; average initial BW of 41.3 kg) were fed at the Illinois State University farm. Individually housed wethers were blocked by BW in a randomized complete block design and fed 1 of 2 treatments with 10 replications per treatment for 84 d. Treatments included a corn silage–based finishing diet (control) and control + 0.5% high-oleic soybean oil. Lambs were weighed on 2 consecutive days every 14 d. Average weights were used to calculate ADG, DMI, and G:F. Following finishing, wethers were transported 463 km for humane slaughter and fabrication under USDA–Food Safety and Inspection Service inspection. Standard USDA carcass data (QG and YG) were recorded. Statistical analysis was performed using the MIXED procedure of SAS to obtain least squares means. Results and Discussion No differences were found for the growth performance measures of ADG (P = 1.0), DMI (P = 0.84), or G:F (P = 0.93). No differences were found for hot carcass weight (P = 0.941), cold carcass weight (P = 0.889), and DP (P = 0.931). Wethers fed HOS exhibited a decrease in a* color value of the longissimus at the 12th rib junction (P = 0.027), with no differences in L* (P = 0.760) or b* values (P = 0.347). Metmyoglobin (P = 0.917), deoxymyoglobin (P = 0.120), or oxymyoglobin (P = 0.077) percentage in the longissimus face at the 12th rib junction was not altered by treatment. Applications In this study, HOS inclusion did not affect standard growth or carcass characteristics in wethers. However, further evaluation into the decreased redness value of the loin eye in HOS lambs is warranted.

La oxidación de lípidos deteriora los alimentos, por lo que se usan antioxidantes sintéticos para disminuirla, sin embargo, estos compuestos en exceso poseen efectos carcinogénicos. Algunas plantas como el orégano, así como la miel de abeja, contienen antioxidantes naturales que no dañan la salud. Hasta el momento no se han encontrado registros del uso de la miel de abeja para disminuir la oxidación lipídica en carne de conejos. El objetivo de este estudio fue evaluar el efecto de la miel de abeja como antioxidante en la carne cruda de lomo de conejo almacenada en refrigeración a 4 °C. Se evaluó la actividad antioxidante (AA) de tres tipos de miel: oscura, ámbar y clara, para mezclarla con la carne de conejo. Se seleccionó la miel oscura por su mayor efecto antioxidante. Se prepararon 64 muestras de 100 g de carne cruda, 32 se mez-claron con 2 g de miel oscura y las otras 32 se dejaron sin miel (control). Las muestras se almacenaron a 4°C y se evaluó la AA y la concentración de malondialdehído (MDA) a los 0 d, 3 d, 6 d y 9 d de almacenamiento. La AA disminuyó y la concentración de MDA aumentó (P < 0.05) con el tiempo de refrigeración (cambios que indican deterioro de la carne). A los 3 d y 6 d, las muestras de carne cruda con miel exhibieron mayor AA (P < 0.05), y a los 6 d, menores valores de MDA (P < 0.05) comparadas con las muestras control (indicando que no hubo deterioro de la carne). La miel oscura de abeja contiene altas concentraciones de antioxidantes naturales que protegen a la carne cruda molida de lomo de conejo contra el daño oxidativo que puede presentarse durante la refrigeración, por lo que se recomienda su uso para este fin.

Background and Aim: Ultrasound is a non-invasive technique that enables animal evaluation and body condition classification of animals. Although it is not difficult to obtain an image, the analysis of this image can influence results quality. This study aimed to evaluate the repeatability and reproducibility of the technician trained in image interpretation obtained using different ultrasound frequencies. Materials and Methods: Ninety-six lambs were used, ranging in weight from 15 to 40 kg. The images were captured using a linear probe of 13 cm, with a 3.5 megahertz (MHz) frequency and an acoustic couplant aid "standoff" or using a multifrequency transducer (6 and 8 MHz), on B mode, with a linear probe and 8.0 MHz frequency. All measurements were performed by the same technician, on the left side, between the 12th and 13th rib. Five different evaluators, at two different times, with aid of Image J software measured the loin eye area (LEA; only for images obtained with 3.5 MHz), Longissimus thoracis et lumborum depth (DLM), subcutaneous fat thickness (SFT), subcutaneous fat thickness plus skin (SFST), and skin thickness (ST). Results: For LEA, DLM, SFT, SFST, and ST, variation was observed (p0.05) between the 2 times of evaluation. Images measurements obtained with a frequency of 8.0 MHz had better repeatability indices and reproducibility indices. Accordingly, the identity test demonstrated that measurements performed on images obtained using 3.5 or 8.0 MHz were not equivalent. Conclusion: Ultrasound image measurements obtained using an 8.0 MHz frequency were more accurate and precise. It is important to use only one evaluator or providing the simultaneous training for all evaluators.

CARCASSES of thirty African Dwarf ewes had a yield of 42.5%, about 5 mm backfat thickness and a loin eye of about 8cm2 Primal cuts made up 85% of the carcass. The best carcasses came from ewes slaughtered between two and four years of age. Average composition of retail cuts was 66.5% muscle, 26.5% bone and 7.0% fat. Young ewes were superior to young rams both in dressing percent (yield) and primal cuts. The ewes dressed 44% as compared to 40%; their retail cuts contained 67% muscle and 26% bone against 65% and 28% respectively for rams. Compared with mutton sheep of the temperate zone the West African Dwarf stand only 4/5 as high and are 2/3 long, while weighing only 1/4 to 1/3 that of European sheep. Yet the leg, the preferred cut, was 36% of the dressed carcass is compared to European mutton.

THE Physical carcass characteristics of 100 indigenous Nigerian pigs (IND.) (50 gilts and 50 barrows), and 100 Large White x Landrace pigs with a similar sex ratio were compared. These were slaughtered at either one of five weights, 22.7, 34.0, 45.5, 56.8 or 68 kg live weight, in such a way that 10 gilts and 10 barrows of each breed were slaughtered at each of the predetermined slaughter weights. The potential of sugarcane peels as a substitute for maize offal in rabbit diets and its effect on growth, nutrient digestibility, and carcass characteristics were studied. Twenty five growing rabbits of mixed breeds and average body weight of 894±26.14g were used in a 7-week feeding trial. Five experimental diets were formulated in which sugarcane rind (SCR) was included at 0, 10, 20, 30 and 40% level to replace maize offal (weight for weight). The rabbits were balanced for weight and allotted to the treatments (n=5 rabbits/treatment) in a completely randomized design. Results obtained indicated that dry matter, crude protein, ether extract, nitrogen free extract, hemicellulose, acid and neutral detergent fibre intake and digestibility decreased with increasing level of sugarcane rind inclusion. TWELVE West African Dwarf castrated goats, 6-8 months old, ranging in live-weight from 7 to 15 kg, were maintained on cassava flour-based rations with two sources of nitrogen from urea and roundnut cake. Each nitrogen source was fed to the goats at three levels of crude protein viz., 10, 17 and 24 These rations constituted the concentrate fraction as supplements to Cynodon nlemfensis. Six of the goats were slaughtered at the end of about three months on the dietary treatments, and the other six animals three months later; the overall experiment lasted for six months. It was found that the dressing-out percentage (51.2) on the groundnut cake - based supplement was not significantly higher than that of animals on the urea ration (50.0). 'The two sources of nitrogen had no effect on the major cuts, such as the thigh, loin, shoulders and also the protein contents of the organs and muscles.

Body weight and eight linear body traits, namely heart girth, body and diagonal lengths, height at withers and at hip, width of loin and at pelvic bone, and depth at rear flank, were measured forthniylıtly on 32 Muturu bulls, 16 of which were born in the dry season (Muturu -D) and the remaining 16 in the rainy season (Muturu-R), and on 11 N'dama bulls. Correlations between all pairs of traits in all groups were high, positive and significant (r > 0.093). The first two principal components derived from the correlation matrix of the linear measurements, PCI and PC2 accounted for at least 98% of total variance in all cases and were regarded as, size' and 'shape' vectors, respectively. Whereas PC1 gave largest weight to heart girth, PC2 gave largest weight to two or more different other linear measurements in the three groups. N'dama had the best conformation, followed by Muturu -D and then Muturu - R. PC-based prediction models were more parsimonius than linear measure-based models and are considered preferable for selecting animals for "optimal" balance. Also, in addition to discriminating between the two different breeds, PC- based discriminant functions were able to discriminate among individuals within the same breed on the basis of putritional differences. These functions are therefore recommended for classifying animals according to different macro and micro criteria.

In this study,the quality characteristics which include(physicochemical,structural characteristics and sensory evaluation)of beef loin submitted to fast freezing and thawed by five different methods (Refrigerator,Oven,Microwave,tap water and Room temperature)were examined The beef samples were defrosted to the point of reaching a core temperature of 0oC,followed several parameters were examined which include physical characteristics[(drip loss,thawing loos,cooking loss,and water holding capacity(WHC)].In addition to the chemical characteristics[(moisture content,protein solubility,thiobarbituric acid(TBA),myoglobin concentratio (Mb)and met myoglobin formation(Met-Mb)].As well as polyacrylamide gel electrophoresis profile (SDS-PAGE) and sensory evaluation were performed. The findings suggested that, beef sample thawed by tap water revealed lower drip, thawing and cooking loss, also leads to higher moisture content and WHC than the other thawing methods.Moreover, this thawing method(tap water)prevent lipid oxidation by decreased TBA vale and percent of Met-Mb formation as well as increasing Mb.It was also evident from the findings that the thawing techniques influenced the electrophoretic patterns of the beef samples.It was found that the samples with microwave thawing method have a higher band counts and greater intensity,showing higher damage to the proteins of the meat,making fragmentation,structure loss and liberation of small peptides,which affecting the nutritional value and functionality of the meat.However,the data of this experiment have shown that beef sample thawed by tap water protect meat quality and consistency efficiently and will help the meat manufacture and those who consuming the products. It was concluded that the characteristics of meat quality are connected not only to the freezing process, but also to the system and conditions of thawing used.

Matrix-assisted laser desorption/ionization-mass spectrometry imaging (MALDI-MSI) is a powerful technique for visualizing lipids in biological tissues. Phosphatidylinositol (PI), a phospholipid in pork, is a major source of inositol in animal-derived foods believed to be protective against diseases related to pregnancy and cancer. However, the distribution of PI molecular species in pork is not well understood. Here, we performed MALDI-MSI analysis to investigate the distribution and composition of PI molecular species in pork chop comprising Longissimus thoracis et lumborum muscle (loin), intermuscular fat tissue, transparent tissue, and spinalis muscle. Twelve diacyl-PI molecular species were identified using liquid chromatography-electrospray ionization-tandem mass spectrometry (MS/MS) and MALDI-MS/MS analysis and visualized using MALDI-MSI. Spinalis muscle had the highest amount of identified PI molecular species, followed by loin, transparent tissue, and intermuscular fat tissue. The diacyl-PI molecular species containing hexadecadienoic, oleic, linoleic and eicosadienoic acids at the sn-2 position were mainly abundant in the loin and spinalis muscle, whereas those containing mead, arachidonic, docosatetraenoic, and docosapentaenoic acids at the sn-2 position were mainly abundant in both muscles as well as transparent tissues. Notably, the balance of PI molecular species differed among the tissues depending on fatty acid compositions at the sn-2 position. These results suggested that MALDI-MSI is a promising tool for assessing the association between individual pork tissues and the protective effects of PI molecular species against diseases related to pregnancy and cancer. To the best of our knowledge, this is the first report showing tissue-specific distributions of PI molecular species in pork chop using MALDI-MSI.

The experiment was conducted to examine the effects of three cooking internal temperatures (65. 75 or 85'C) on the physical, chemical and sensory characteristics of pork. Pork muscle, Longissimus dorsi, used were collected immediately after slaughter dnd stored overnight at -18°C. Loins were removed, allowed to thaw at room temperature, and cut into fifteen chops with an average weight of 300g. The chops were randomly allocated to three internal temperatures, 65, 75 or 85°C and transferred into the oven where they were roast cooked until the desired internal temperature was reached. The cooked weight, cooking loss, Warner Bratzler shear value and proximate composition were determined on cooked pork. Sensory attributes were also assessed by a 10-member panel using a 9-point hedonic scale. The results of the study indicated that final internal cooking Temperature had no effect (P>0.05) on cooking loss und shear value. No significant effect was observed on tenderness, juiciness and flavour. Overall acceptability was significantly p0.05) of the pork loin.

The experiment was conducted to examine the effect of feeding varying dietary levels of Moringa oleifera meal (MOM), Aspilia africana meal (AAM) and Azadirachta indica meal (AIM) on performance, blood indices and carcass yield of grower rabbits. Eight one rabbits were grouped into 9 treatment, each treatment were replicated thrice, containing 3 rabbits per replicate. Diets containing MOM, AAM and AIM at 0, 15 and 30% respectively were formulated. Rabbits fed inclusion levels of 15%, 30% MOM and 15% AAM (4.92g, 4.90g and 4.95 g respectively) had the best feed conversion ratio. A study was conducted to evaluate the effects of three different spices of Monodora myristica (African Nutmeg), Zingiber officinale (Ginger), and Piper guineense (African Black Pepper) on nutrient composition and organoleptic characteristics of dried rabbit meats. The three spices collected as seeds were processed into meals and applied on the fresh meat cut (loin) obtained from 10 rabbit bucks. The treatments were arranged as: T (200g meat without 1 spice) which served as control, T (200g meat +5% Nutmeg) T (200g meat + 10% Nutmeg) 2 3 ,T (200g meat + 5% African Black Pepper) T (200g meat +10%) T (200g meat +5% 4 5 6 Ginger) T (200g meat +10% Ginger). This study examined the nutritional value of Mulberry leaf meal (MLM) as substitute for soybean meal (SBM) at graded levels. Forty cross-bred young rabbits of mixed sexes used for the study were purchased from a reputable farm in Osogbo, Osun State, Nigeria. The animals were balanced for the initial weight and randomly allocated to five experimental dietary treatments of 8 rabbits per treatment. There were 4 replicates of 2 rabbits per replicate. The rabbits were provided with pelletized experimental diets and clean water ad libitum for 2 weeks pre-experimental period and thereafter for 8 weeks during which data were collected. Five (5) diets containing 0 (0.00% MLM, control), 25 (1.25% MLM), 50 (2.50% MLM), 75 (3.75% MLM) and 100% (5.00% MLM) as replacement for SBM were formulated and contained ME ranging from 2617 – 2661 kcal/kg and crude protein ranging from 15.01 – 16.00%. The average daily weight gain (8.71 g/R/d) obtained in control was similar to 8.03 g/R/d (25.00% MLM), and both significantly (P < 0.05) reduced to 6.75 g/R/d (50.00% MLM), 6.73 g/R/d (75.00% MLM) and 5.98 g/R/d (100.00% MLM). The average daily feed intake (60.08 g/R/d) obtained in animals fed the control diet reduced (P < 0.05) to 53.44 g/R/d (25.00% MLM), 53.44 g/R/d (50.00% MLM), 55.36 g/R/d (75.00% MLM) and 51.52g/R/d (100.00% MLM) respectively. The highest dressed weight (55.12%) was obtained in rabbits fed 0.00% MLM-based diet compared with 45.51, 46.32, 50.28 and 44.88% respectively in animals fed 25.00, 50.00, 75.00 and 100.00% MLM. All the organs (heart, lung, kidney and stomach) except the liver were significantly (P < 0.05) affected by the dietary treatments. All haematological (haemoglobin, packed cell volume, white blood cell and red blood cell); and serum (glucose and total protein) metabolites except albumin investigated were significantly (P < 0.05) influenced by the dietary treatments. It was concluded that MLM can economically replace 75% SBM (5%) in growing rabbits' diets; but 25% (1.25%) level of substitution was the cheapest and most economical level with no deleterious effects on carcass and health status of the animals.

Thirty six individually housed West African dwarf (WAD) goats of about 8 – 10 months of age and averaging 7.19kg were used for this study. The effect of different levels of yellow root cassava peel - centrosema leaf meal supplementary diet on the carcass yield, organ response and cost/benefit evaluation of WAD goats fed wilted Panicum maximum basal diet. Among other traits, the tenderness and the effect of ageing are also genetically determined. Therefore, a trial was performed to assess the effect of ageing in the progeny of young bulls included in the routine breeding program for Simmental breed in Slovenia. In the trial, 127 young bulls were included, and the shear force of grilled Longissimus thoracis muscle was measured fresh and after three weeks of ageing. There was a significant difference between the fresh and aged muscle in shear force, but growth and other carcass traits did not affect it as it was expected. We assume that after enlarging the number of animals, the data will be usable to be included in the genetic evaluation of the breeding program for Simmental breed in Slovenia. This research was conducted to assess the combined effect of chitosan (Ch) film containing cumin essential oil nanoemulsion (CNE) and low-dose gamma irradiation (GI) at 2.5 kGy on microbiological safety and quality of beef loins during 21 days of chilled storage. The growth of mesophilic and psychrophilic bacteria, Enterobacteriaceae, and lactic acid bacteria were retarded in all treated groups (Ch, GI, Ch + CNE, Ch + GI, and Ch + CNE + GI groups) compared to control group during storage time. The treatments also slowed down the increasing level of total volatile basic nitrogen and pH during storage, while irradiation increased the levels of thiobarbituric acid reactive substances and protein carbonyls in beef loins. All treatments except Ch were effective to control the growth of inoculated pathogenic bacteria, including Listeria monocytogenes, Escherichia coli O157:H7, and Salmonella typhimurium, in loin samples. The combination of Ch + CNE + GI was the most effective treatment to control the population of microbial flora and inoculated pathogens, slow down some physicochemical changes, and enhance the storage life of beef loins. As a result, the combination of active chitosan film and low-dose gamma irradiation can ensure microbiological safety and is suggested for long time preservation of beef during chilled storage.

The influence of muscle architecture on muscle fiber characteristics and meat quality has not been fully elucidated. In the present study, muscle fiber characteristics on the chop surface of pork loin (M. longissimus thoracis et lumborum, LTL), pennation angle degree, and meat quality were evaluated to understand the pork LTL architecture and its relationship with the loin chop quality. Muscle fiber pennation degree ranged from 51.33° to 69.00°, resulting in an ellipse-shaped muscle fiber on the surface of pork loin chop. The cross-sectional area (CSA) on the sections cut vertical to the muscle length (M-Vertical) was considerably larger (p0.05). These observations might help us in better understanding pork loin architecture and the relationship between the pennation angle, muscle fiber characteristics, and meat quality of pork loin chop.

BackgroundSwine gut microbiome constitutes a portion of the whole genome and has potential to affect different phenotypes. More recently, research is more directed towards association of gut microbiome and different traits in swine. However, the contribution of microbial composition to the phenotypic variation of meat quality and carcass composition traits in pigs has not been explored yet. The objectives of this study are to estimate the microbiabilities for different meat quality and carcass composition traits; to investigate the impact of intestinal microbiome on heritability estimates; to estimate the correlation between microbial diversity and meat quality and carcass composition traits; and to estimate the microbial correlation between the meat quality and carcass composition traits in a commercial swine population.ResultsThe contribution of the microbiome to carcass composition and meat quality traits was prominent although it varied over time, increasing from weaning to off test for most traits. Microbiability estimates of carcass composition traits were greater than that of meat quality traits. Among all of the traits analyzed, belly weight had higher microbiability estimate (0.29 ± 0.04). Adding microbiome information did not affect the estimates of genomic heritability of meat quality traits but affected the estimates of carcass composition traits. Fat depth had greater decrease (10%) in genomic heritability. High microbial correlations were found among several traits. This suggested that genomic correlation was partially contributed by genetic similarity of microbiome composition.ConclusionsResults indicate that better understanding of microbial composition could aid the improvement of complex traits, particularly the carcass composition traits in swine by inclusion of microbiome information in the genetic evaluation process.

We investigated maternal effect on nine body measurement traits (body height, body length, front width (FW), chest width (CW), hind width (HW), chest depth, chest girth (CHG), front cannon circumference (FCC) and rear cannon circumference (RCC)) measured at the end of performance testing and five meat production traits (ages at the start and end of performance testing (D30 and D105), average daily gain (ADG), backfat thickness and loin muscle area) in purebred Duroc pigs. Genetic parameters for each trait were estimated by using six single-trait models with and without common litter environmental effect, maternal genetic effect and direct-maternal genetic correlation. The value of Akaike's information criterion was lowest with the model including direct additive genetic and common litter environmental effects for 10 traits. The estimated proportion of common litter environmental variance to phenotypic variance was approximately ≥0.1 for D30, D105, ADG, FW, CW, HW, CHG, FCC and RCC. Using a model without common litter environmental effect would overestimate the direct heritability of most traits. Standard errors of estimated genetic parameters tended to be larger in models including maternal genetic effect. The results indicate that a compromise could be made for accurate genetic parameter estimation for body measurement traits, as well as meat production traits, in pigs by considering common litter environmental effect.

This study evaluated the quality characteristics of crust derived from dry-aged Holstein and Hanwoo loins and their effects on food as additives. With respect to physicochemical properties, we examined the proximate composition, pH value, salinity, color, water and fat absorption, emulsifying capacity, and swelling yield. The protein and ash contents in the Holstein crust were significantly higher than those in the Hanwoo crust (p < 0.0001). The fat content in the Hanwoo crust was significantly higher than that in the Holstein crust (p < 0.01). The salinity, lightness, and yellowness of the Hanwoo crust were significantly lower than those of the Holstein crust (p < 0.001). Furthermore, the pH value and emulsifying capacity of the Hanwoo crust were significantly higher than those of the Holstein crust (p < 0.001). The fat absorption of the Holstein crust was significantly higher than that of the Hanwoo crust (p < 0.001). The swelling yield of the Holstein crust was significantly higher than that of the Hanwoo crust at pH 3 and 4 (p < 0.001), whereas the swelling yield of the Hanwoo crust was significantly higher than that of the Holstein crust at pH 7 (p < 0.001). Principal component analysis of dry-aged Hanwoo, Holstein, and non-aged Holstein showed different flavor patterns for each sample. Finally, the results showed that the crusts derived from dry-aged Hanwoo and Holstein loins were suitable flavor enhancers.

The objective of this study was to investigate the influence of increasing carcass weight (CW) on meat quality traits including meat color, water-holding capacity (WHC), tenderness, backfat thickness and intramuscular fat (IMF) content of pork loin. A total of 96 pork carcasses (48 LYD [Landrace × Yorkshire × Duroc] barrows and gilts) were selected at a commercial slaughterhouse. Each gender had commercial CW (≤ 90 kg), heavy CW (91–100 kg) and very heavy CW (> 100 kg) (16 carcasses from each CW group). Loin cuts (Longissimus lumborum) were excised to investigate meat color (CIE L*a*b*), drip loss, cooking loss, released water, Warner-Bratzler shear force (WBSF), and IMF content. Backfat thickness and IMF content of pork loin samples were significantly (p < 0.05) increased with increasing CW, although there was no significant difference in ultimate pH (pHu). CIE a* increased significantly (p < 0.05) with increasing CW, while there were no significant differences in CIE L* or CIE b* among CW groups. Although all WHC measures showed no significant differences among CW groups, WBSF increased significantly (p < 0.01) with increasing CW. Sensory flavor score was significantly increased while panel score for tenderness was decreased significantly (p < 0.001) with increasing CW. Consequently, CW had a positive correlation with flavor but negative correlation with tenderness. These results indicate that the increased IMF content improves flavor, juiciness and palatability, although tenderness deteriorates with increasing CW.

Intramuscular fat (IMF) quality in muscle contributes to important aspects of meat quality and is critical to the nutritional, sensory values, and shelf stability of meat. The measurement of IMF quality currently relies on gas chromatography (GC), which is labor-intensive and time-consuming. This study investigated the use of hyperspectral imaging to predict the quality of IMF in pork loin cuts. Pork loin cuts were scanned using hyperspectral imaging (900–1700 nm), followed by GC analysis of the fatty acid profile. Mean spectral features (MSF), Gabor filter features (GFF), and wild line detector feature (WLDF) techniques were used to extract texture features and then related with the GC results by partial least-squares regression (PLSR) algorithm. Simplified models were developed using PLSR from selected wavelengths, and the results of the validation provided by the WLD features showed coefficient of determination (R2) for C14:0, C16:0, C16:1, C18:0, C18:1, C18:2, SFA (saturated fatty acid), MUFA (monounsaturated fatty acids), and PUFA (polyunsaturated fatty acid) that ranged from 0.805 to 0.942 and root mean square error of prediction ranged from 0.087 to 0.304 mg/g meat. The result indicates that texture features from hyperspectral images could be used to develop a rapid tool for assessment of the IMF quality in the pork.

Meat quality of Iberian pigs is defined by the combination of their genetic characteristics and the particular production system. To carry out a genetic analysis of the main meat quality traits, we estimated their heritabilities, genetic correlations and the association effects of 32 selected SNPs of 12 candidate genes. A total of ten traits were measured in longissimus dorsi samples from 1,199 Iberian pigs fattened in the traditional free-range system: water holding capacity (thawing, cooking and centrifuge force water losses), instrumental colour (lightness L*, redness a* and yellowness b*), myoglobin content, shear force on cooked meat, and shear force and maximum compression force on dry-cured loin. Estimated heritability values were low to moderate (0.01 to 0.43) being the lowest for L* and the highest for cooking loss. Strong genetic correlations between water holding capacity traits (0.93 to 0.96) and between myoglobin content and a* (0.94) were observed. The association analyses revealed 19 SNPs significantly associated with different traits. Consistent and strong effects were observed between PRKAG3 SNPs (rs319678464G > C and rs330427832C > T), MYH3_rs81437544T > C, CASP3_rs319658214G > T and CTSL_rs332171512A > G and water losses. Also for CAPN1_rs81358667G > A and CASP3_rs319658214G > T and shear force. The SNPs mapping on PRKAG3 showed the highest effects on Minolta colour traits. Genotyping of these SNPs could be useful for the selection of Iberian young boars with similar estimated breeding values for productive traits.

The study aimed to investigate the effects of feeding regimes on chemical composition, meat quality, and fatty acid composition of elk deer loin (EDL) while aging at 4°C. Sixteen 3-year-old elk hinds were randomly assigned to one of two dietary treatments: pasture grazing (PG) and barn feeding (BF). While eight elks grazed on pastures with supplementary feed of 1.0% of body weight (PG), the remaining eight elks were fed 1.0% of concentrate with hay ad libitum for 5 months in a barn (BF). After slaughtering, EDL was dissected and aged for 56 days at 4°C under vacuum packaging. Proximate composition, physicochemical characteristics, and fatty acid composition of EDL were determined thereafter. Proximate composition of EDL showed no significant difference between feeding regimes and across aging period. The pH values of EDL increased with increase of storage days. Drip loss increased by day 14, compared to that on the first day, and shear force decreased during aging. Water holding capacity and cooking loss were not significantly affected by feeding regime or aging period. Lightness (L*) and redness (a*) were decreased on day 56 compared to the initial day. Yellowness (b*) of EDL decreased with increase of aging time. The α-linolenic acid, eicosapentaenoic acid, and docosahexaenoic acid content was higher in PG treatment and increased with aging duration. Both feeding regimes and aging were found to affect meat quality and fatty acid profiles.

Objective: To evaluate the effects of the carmine cochineal-resistant spineless cactus genotypes cv. Orelha de Elefante Mexicana (Opuntia) and Miúda (Nopalea) on the intake and digestibility of nutrients, ingestive behavior, performance, and ultrasound measurements of growing lambs.Methods: Thirty-six male (non-castrated) Santa Inês lambs were used, with an average age of 6 months and an initial average weight of 22.0±2.9 kg. They were distributed in a completely randomized design with 3 treatments (Tifton hay, Nopalea and Opuntia) and 12 replications, using initial weight as a covariate. The experimental period was 86 days, with the first 30 days used for the adaptation of the animals to the facilities, diets and management, and the remaining 56 days used for evaluation and data collection.Results: The intake and apparent digestibility of dry matter (DM), organic matter (OM), crude protein (CP), neutral detergent fiber (NDF), total carbohydrates (TC), non-fibrous carbohydrates (NFC), and total digestible nutrients (TDN) showed a significant difference (pNopalea treatment (p0.05) on feeding time, however, rumination time and total chewing time were higher (p0.05). For the ultrasound measurements, Nopalea promoted an increase in the final loin eye area, compared to Tifton hay.Conclusion: The use of spineless cactus variety Miúda leads to the greater intake and digestibility of nutrients. The evaluated carmine cochineal-resistant spineless cactus genotypes are alternatives for semi-arid regions as they do not negatively affect the performance of growing lambs.

Background: Loin pain hematuria syndrome (LPHS) is a rare syndrome presenting with chronic unilateral or bilateral flank pain and gross or microscopic hematuria. Case Report: We present a case of LPHS in a male with past medical history of atrial fibrillation, Barrett’s esophagus, and loin pain hematuria syndrome who initially presented to our medical facility with gross hematuria, intractable left flank pain, and non-bloody emesis. Our case exemplifies the challenge in managing patients with LPHS. Conclusion: Without a definitive mechanism for LPHS, current treatment focuses on symptom management. Analgesics (non-opioid and opioid) may be used orally or intravenous depending on the presence of concomitant nausea and vomiting. For patients at risk of opioid dependence, targeting afferent pain fibers originating from the kidneys and ureters has proven a successful analgesic strategy. Surgical options for renal denervation include: endovascular radiofrequency ablation, laparoscopic renal denervation, and renal auto transplant. Treatment options for this disease process include intra-ureteric bupivacaine, renal denervation, and possible spinal cord stimulation.
