Ninety-two wild yeasts were isolated from different fruits, for possible use in brewing, using the technological traits of carbohydrate fermentation and hydrogen sulfide production. Twelve yeasts were selected for identification by sequencing (D1/D2 domain or ITS1-5.8S-ITS2 region) and their volatile compounds production analyzed using gas chromatography. From these analyses, three yeasts were chosen for further characterization and beer production. Strains were characterized by their tolerance to osmotic and ethanol stress, their flocculation profile, growth at different temperatures, apparent attenuation (percentage of sugars converted into alcohol), estimated ABV (alcohol by volume) and reducing sugar profile. Beers were analyzed for alcohol content and sensorial analysis. The isolates CL011 and PB111 (Saccharomyces cerevisiae) and CB341 (Wickerhamomyces anomalus) showed promising properties for brewing, which included high production of interesting volatile compounds (esters, terpenes, lactones, and C13-norisoprenoids) by CL011, a neutral profile by PB111, and the production of non-classic beer volatile compounds by CB341 in a mixed culture. Faculdade de Ciências Médicas Resumo: Este estudo teve como objetivo identificar os sintomas referentes ao estado geral de saúde associado ao trabalho em turnos de enfermagem e relacioná-los com a qualidade do sono. Trata-se de um estudo de natureza descritiva, quantitativa e transversal. Participaram dessa pesquisa, profissionais de diversas categorias de uma instituição hospitalar da cidade de Poços de Caldas, Minas Gerais. A população foi constituída por (n=136) profissionais de enfermagem com média de idade de 33,1 anos, 82,4% eram do sexo feminino, divididos nas seguintes categorias profissionais: enfermeiro 8,1%, técnico de enfermagem 80,9%, auxiliar de enfermagem 11,0%. Os turnos de trabalho eram os seguintes: turno diurno (7h às 19h) e noturno (19h às 07h). Os sujeitos atuavam em diversas unidades tais como Unidade de Terapia Intensiva Adulto, Unidade de Terapia Intensiva Pediátrica e Neonatal, Centro Cirúrgico, Central de Material e Esterilização, Hemodiálise, Clínica Cirúrgica, Clínica Médica, Maternidade, Pediatria, Berçário, Urgência/Emergência. Foram utilizados três instrumentos para a coleta de dados: Ficha de Características Individuais e Sócio-Demográficas, Inventário de Estado Geral de Saúde, Questionário para Avaliação do Ciclo Vigília-Sono (diário do sono). Os dados foram estatisticamente significativos pelo Teste Qui-Quadrado (p= 0,021) para a presença do sintoma de flatulência ou distensão abdominal no turno noturno. Através da análise de regressão linear múltipla os sujeitos do turno diurno que apresentaram os sintomas de má digestão e irritabilidade, tiveram pior qualidade de sono noturno. Referindo-se a qualidade do sono diurno, os sintomas que se mostraram estatisticamente significativos pelo Teste Kruskal-Wallis foram a insônia (p=0,044) e a dificuldade de concentração (p=0,048). Analisando a qualidade do sono noturno, os sintomas que mostraram dados estatisticamente significativos pelo Teste de Kruskal-Wallis foram, sensação de má digestão (p=0,023), irritabilidade (p=0,002), insônia (p=0,001), dores de cabeça (p=0,005), dificuldade de concentração (p=0,002). Os trabalhadores do turno noturno mostraram uma melhor qualidade de sono noturno em relação ao turno diurno, com diferença estatisticamente significativa pelo Teste Mann-Whitney (p=0,046). Os profissionais de enfermagem demonstraram hábitos saudáveis de vida tais como não tabagismo (91,2%), não consumo de bebida alcoólica (89,7%), não utilizam medicamentos para dormir (91,2%) e realizam atividades físicas regulares (65,4%). Este estudo sugere novas abordagens às reais necessidades de saúde dos trabalhadores de enfermagem nos turnos hospitalares, conduzindo a medidas preventivas que possam melhorar o estilo de vida tais como os hábitos de sono. Abstract: The objective of this study was to identify the symptoms of general health state associated with shift work in nurses and to relate them to their sleep quality. This is descriptive, qualitative and cross-sectional study. Nursing staff from several categories from a hospital institution from Poços de Caldas, Minas Gerais, participated on this study. The population was compounded by nursing staff (n=136) with an average age of 33.1 years old, 82.4% were females and they were divided into the following categories: registered nurses (RN) 8.1%, technical nurses 80.9%, and assistant nurses 11.0%. Their shift works were the following: day shift (from 07:00 am to 07:00 pm) and night shift (from 07:00 pm to 07:00 am). The subjects worked on several departments such as Adult Intensive Care Units, Pediatric and Neonatal Intensive Care Units, Surgery Rooms, Sterilization Center, Hemodyalisis, Surgical and Medical Clinic, Maternity, Pediatric Department and Emergency Rooms. Three instruments were used for data collection: Socio Demographic Questionnaire, Inventory of General Health State, and Questionnaire for Assessment of Sleep-Awake Cycle (sleep diary). Chi-Square Test showed statistically significative results (p=0.021) for abdominal flatulence or distention symptoms during night shift. Through multiple linear regression analysis the subjects of the day shift who showed symptoms of bad digestion and irritability, had worse quality of nighttime sleep Regarding to diurnal sleep quality, Kruskal-Wallis Test showed statistically significative results for insomnia (p=0.044) and difficulty on concentration (p=0.048). Analyzing the nocturnal sleep quality, Kruskal-Wallis Test showed statistically significative results for feelings of bad digestion (p=0.023), irritability (p=0.002), insomnia (p=0.001) headaches (p=0.005) and difficulty on concentration (p=0.002). Night shift workers showed a better nocturnal sleep quality compared to day shift workers, showing a statistically significative difference using Mann-Whitney Test (p=0.046). Nursing staff showed healthy life habits such as: non smoking (91.2%), non alcoholic consumption (89.7%), non sleep pills (91.2%) and regular physical activities (65.4%). This study suggests new approaches to health needs of nursing staff that work on hospital shifts, leading to preventive measures in order to improve life style such as sleep habits. This research enterprise, develops an analysis about the culture and knowledge, two base categories in the field of cultural studies, with the objective of investigating how they are conceived in the texts published in the WG (work group) of curriculum WG-12 of the National Association of Post-Graduation (ANPEd), in the period from 2000 to 2006. In a derived way, I analyze the thematic emphasis, identified in the group of texts and the methodological thematic approaches realized by its authors, with the objective of obtaining a complete analytical board of the culture and knowledge categories as they are dealt with. As methodological procedures, there are the theorical studies of Raymond Williams, Stuart Hall and Tomaz Tadeu da Silva, authors who are national and international references in the field of cultural studies and the analysis of (16) texts, among posters and complete researches taken from ANPEd site - www.anped.org.br - In the WG of curriculum inserted in the theorical perspectives of cultural studies. Starting from the developed analysis, is possible state that the culture and the knowledge are conceived in these texts as meaning practices. The culture is not the simple transmission of tradition, values, habits and knowledges from generation to generation, but the culture is in the senses and meanings order, therefore, refers to the ways of interpretating and conceiving the world and is built up from the relationships that men and women establish between each other and the social groups. In the same way, the knowledge is built, produced by the culture and knowledge are analyzed in texts that discuss the cultural curriculums, specially the media in its several styles computer, electronic games, TV programs, magazines. The most usual theorical approaches involve authors as Tomaz Tadeu da Silva, the most quoted scholar, Michael Foucault, Homi Bhabha, Stuart Hall, Jean Claude Forquim, Gimeno Sacristan, Henry Giroux. The most used methodological approaches are the speech analysis and the documental analysis. Reflecting about the analysis that the texts develop about the curriculum, I realize two important ways of comprehension. One in which curriculum is conceived as cultural theory/practice, able to produce subjects and subjectivities and other in which there is a differentiation between theorical or official and real curriculum, in this way, the curriculum is conceived as an official document apart from the students daily experience. I observe, two theorical approaches being stressed in the same researching field, the critical and the post-structuralist, that are similar in some aspects and differentiate in others, but in what deals with culture and knowledge categories, it seems that exists an agreement in what refers to the natural relations with the meaning process, production of identities, subjectivities and the statement and production of differences. Este empreendimento de pesquisa desenvolve uma análise acerca de cultura e conhecimento, duas categorias basilares no campo dos Estudos Culturais, no intuito de investigar como estas são concebidas nos textos publicados no GT de Currículo (GT-12) da Associação Nacional de Pós-Graduação (ANPEd), no período de 2000 a 2006. De modo adjacente, analiso as ênfases temáticas identificadas no conjunto dos textos e as conjugações temáticas e metodológicas realizadas pelos seus autores, de modo a obter um quadro analítico integral das categorias cultura e conhecimento tal como são abordadas. Como procedimentos metodológicos, constam o estudo teórico de Raymond Williams, Stuart Hall e Tomaz Tadeu da Silva, autores de referência internacional e nacional do campo dos Estudos Culturais, e a análise de dezesseis (16) textos, entre pôsteres e trabalhos completos, retirados do site da ANPEd www.anped.org.br no GT de Currículo, inseridos na perspectiva teórica dos Estudos Culturais. A partir das análises desenvolvidas, é possível afirmar que cultura e conhecimento são concebidos nestes textos como práticas de significação. Cultura não é mera transmissão de tradições, valores, costumes e saberes de uma geração à outra, antes, a cultura é da ordem dos sentidos e significados, isto é, refere-se a maneiras de interpretar e conceber o mundo e constrói-se a partir das relações que homens e mulheres estabelecem entre si. Do mesmo modo, o conhecimento também é construído, produzido pela cultura, pelos sujeitos que fazem cultura. Não é neutro, nem estático, porque o processo no qual é criado está permeado por interesses particulares, disputas, questões de poder. Em geral, cultura e conhecimento são analisados em textos que discutem os currículos culturais, em especial a mídia, em suas mais diversas modalidades computador, jogos eletrônicos, programas de TV e revistas. As conjugações teóricas mais recorrentes envolvem autores tais como Tomaz Tadeu da Silva, teórico mais acionado, Michael Foucault, Homi Bhabha, Stuart Hall e Jean-Claude Forquim, Gimeno Sacristán e Henry Giroux. As conjugações metodológicas mais utilizadas são as análises do discurso e análises documentais. Refletindo sobre as análises que os textos desenvolvem sobre o currículo, percebo dois grandes eixos de compreensão. Um no qual o currículo é concebido como teoria/prática cultural, capaz de produzir sujeitos e subjetividades e outro no qual há diferenciação entre currículo teórico ou oficial e currículo real; neste eixo, o currículo é concebido como um documento oficial apartado das experiências cotidianas dos alunos. Observo, deste modo, duas vertentes teóricas acentuarem-se dentro de um mesmo campo de pesquisa, a crítica e a pós-estruturalista, que convergem em alguns aspectos e divergem em outros, mas no que concerne às categorias cultura e conhecimento, parece haver um consenso no que se refere às relações intrínsecas destas com os processos de significação, produção de identidades, subjetividades e de afirmação e produção de diferenças.

"A utilização de informação geográfica na tomada de decisão é já bastante usual. As decisões relacionadas com o posicionamento ou localização de estruturas e pessoas no espaço beneficiam com a observação da relação espacial entre os objectos. Os investimentos efectuados nos últimos anos com a aquisição de Sistemas de Informação Geográfica (SIG) e integração de bases de dados de acesso partilhado, visam a optimização e coerência das decisões e a avaliação de riscos. "A dimensão científica do Serviço Social: uma ciência em construção", centrou-se na exploração do projeto científico do Serviço Social a partir da análise sociohistórica da emergência do Serviço Social na academia; e, da análise a 1289 artigos científicos publicados por investigadores de Serviço Social, em três instituições de ensino superior de três diferentes países: Portugal, Espanha e Estados Unidos da América. Esta tese visa demonstrar a emergência e consolidação de uma prática científica em Serviço Social e iniciar uma discussão acerca das singularidades e da legitimidade deste campo científico nas Ciências Sociais. Tomamos como leitura teórica da realidade, teorias que defendem o Serviço Social como ciência e as teorias que defendem o Serviço Social apenas como uma profissão tecnocrata. A pesquisa orientou-se por uma metodologia qualitativa na elaboração de casos múltiplos, recorrendo à dimensão abdutiva, com procedimento de pesquisa documental e recurso à análise de conteúdo com o uso do ATLAS.TI. A partir da análise da prática investigativa, da reflexividade e da partilha do conhecimento científico, os resultados evidenciam a existência de um projeto científico iniciado nos inícios do século XX, e que, amplamente influenciado pela história e pelo contexto sociopolítico no qual surgiu a disciplina, viu carecer de legitimidade na arena científico-política nos três países em estudo. A partir da elaboração do retrato do projeto científico do Serviço Social como conclusão desta dissertação, é possível verificar as epistemologias, metodologias, teorias e os objetos de estudo que pautam os conhecimentos analisados, defendendo por outro lado, a sua utilidade na denúncia das fragilidades e disfuncionamento das estruturas que oprimem aqueles com quem trabalha o Serviço Social, evitando assim a perda da sua identidade humanista. "The scientific dimension of Social Work: a science under construction" addresses the scientific project of Social Work from a socio-historical analysis of the emergence of Social Work in the academia, and from the analysis of 1289 scientific papers published by Social Work researchers in three higher education institutions from three different countries: Portugal, Spain and the United States of America. This thesis aims to reveal the emergence and consolidation of a scientific practice in Social Work and to start a discussion about the singularities and the legitimacy of this scientific field amongst Social Sciences. The theoretical foundations of this work take into account both theories that consider Social Work as a science and theories that consider Social Work as a technocratic profession. The empirical research was guided by a qualitative methodology with the elaboration of multiple cases, using the abductive dimension, with documentary research procedure and the use of content analysis using ATLAS.TI. From the analysis of investigative practice, the reflexivity and the sharing of scientific knowledge, the results show the existence of a scientific project which was started in the early twentieth century, largely influenced by the history and the socio-political context in which the discipline emerged, but with lack of legitimacy in the scientific-political arena in the three countries under study. From the elaboration of the portrait of the scientific project of the Social Work as conclusion of this dissertation, it is possible to verify the epistemologies, methodologies, theories and the objects of study that guide the analysed knowledge, defending, on the other hand, its usefulness in denouncing the weaknesses and dysfunction of the structures that oppress those individuals and groups with whom Social Work deals, thus preventing the loss of its humanist identity.
