Folic acid content was evaluated in food preparations containing wheat and corn flour submitted to baking, deep-frying, and steaming. Commercially fortified flours showed the absence of folic acid. Flours with laboratory folic acid fortification showed 487 and 474 μg of folic acid in 100 g of wheat and corn flours, respectively. In the corn flour preparations, the cake had the highest retention (99%) when compared to couscous (97%). Besides, the cake showed higher retention when compared to the wheat flour preparations due to the interactions of the folic acid with the hydrophobic amino acids of the Zein, a protein found in corn. In wheat flour preparations, vitamin retention was 87%, 80% and 57% in bread, cake, and White sauce respectively. These findings relate to the change of the physicochemical properties of food components that occurs during mixing and cooking of the ingredients.

Introdução: Na Doença Renal Crônica Avançada, o paciente necessita de uma terapia renal substitutiva, dentre elas, a hemodiálise (HD). Apesar dos benefícios da HD, este procedimento afeta o estado nutricional e a qualidade de vida (QV) do doente. Objetivo: Correlacionar o estado nutricional ao nível de QV de pacientes em HD. Metodologia: Estudo transversal, com pacientes em HD há pelo menos 3 meses. O estado nutricional foi avaliado pelo índice de massa corporal (IMC), circunferência do braço (CB), circunferência muscular do braço (CMB), prega cutânea tricipital (PCT), albumina (Alb) e creatinina (Cr) séricas e a QV pelo Medical Outcomes Study-36 – Item Short Form Health Survey (SF-36). As pontuações geradas pelo SF-36 foram correlacionadas com os indicadores do estado nutricional através do Coeficiente de Correlação de Pearson e/ou Spearman´s. Resultados e Discussão: Participaram do estudo 37 pacientes, com idade média de 50,6 ± 13,0 anos, sendo 54,1% do sexo feminino. Segundo a avaliação do estado nutricional, houve prevalência de eutrofia (48,7%) pelo IMC e desnutrição de 37,8% evidenciada pela CB e CMB. Na avaliação bioquímica, 25,0% estavam com hipoalbuminemia e 18,9% com redução da Cr. A dimensão de QV mais comprometida foi a limitação por aspectos físicos. Na análise das correlações, parâmetros nutricionais (IMC, CB e Alb) estavam ligados à QV dos pacientes. Conclusão: IMC, CB e Alb correlacionaram-se com dimensões do SF-36, indicando que alterações no estado nutricional podem influenciar o funcionamento físico e emocional desses pacientes.

Introduction: Background: the dietary pattern that characterizes western diet is strongly associated with metabolic diseases and excess weight, as well as chronic illnesses. Misaligned feeding schedules can lead to or aggravate the development of such conditions. Aim: this study evaluated the influence of dietary composition and/or time-restricted feeding on the anthropometric and biochemical profile of adult rats. Methods: forty male rats, at 60 days of life, were divided into the following groups: Control (C), Restricted Control (RC), Westernized (W), and Restricted Westernized (RW). Results: westernized groups, in spite of a low energy intake (C = 5399 ± 401.2 kcal; RC = 4279.0 ± 476.2 kcal; W = 4302 ± 619.8 kcal; RW = 4081.0 ± 404.4 kcal, p < 0.001), had a higher body weight (C = 404.6 ± 39.1 g; RC = 335.1 ± 36.5 g; W = 488.9 ± 51.2 g; RW = 438.8 ± 36.5 g, p < 0.001) as compared to their paired controls (RC and C) - around 30 % and 20 % more for RW and W, respectively. The westernized diet caused glucose intolerance and mixed hyperlipidemia, characterized by higher concentrations of cholesterol (C = 40.8 ± 7.4 mg/dL; RC = 76.7 ± 10.8 mg/dL; W = 61.3 ± 20.2 mg/dL; RW = 42.2 ± 8.2 mg/dL), LDLc (C = 17.4 ± 7.5 mg/dL; RC = 38.8 ± 7.2 mg/dL ; W = 45.3 ± 15.8 mg/dL; RW = 11.0 ± 5.8 mg/dL), and triacylglycerol (C = 45.2 ± 15.0 mg/dL; RC = 73.2 ± 21.5 mg/dL ; W = 83.6 ± 23.4 mg/dL; RW = 57.5 ± 13.6 mg/dL) in the serum (p < 0.05). Conclusion: the effect of time-restricted feeding on body weight was strongly dependent on diet composition. The glucose tolerance test showed an influence of the circadian cycle phase.
