As a key indicator to measure meat quality, meat color has always been the focus of attention in the meat industry. A large number of reactive oxygen species (ROS) are produced in the freshly slaughtered cattle carcass due to hypoxia and ischemia. The accumulation of ROS resultes in oxidative stress of the carcass, which further promotes the oxidation of myoglobin and adversely affectes the flesh color. However, currently there are few systematic reviews examining the effect of oxidative stress on meat color and its stability. In this article, the effects of oxidative stress on meat color and meat color stability are reviewed by regulating lipid oxidation, protein oxidation and degradation, and affecting the function of mitochondria to provide a theoretical rationale for maintaining good meat color by controlling post-mortem oxidative stress in the future.

Ammonia is a product of amino acid metabolism that accumulates in the blood of patients with cirrhosis and plays a pivotal role in the pathogenesis of hepatic encephalopathy (HE). Despite being one of the main drivers of brain dysfunction, for many years international societies stated that increased blood ammonia does not add any diagnostic, staging, or prognostic value for HE in patients with cirrhosis. Nonetheless, in the last decades, evidence is emerging that supports the utility of ammonia for risk stratification, but its role in guiding HE diagnosis, staging, and treatment is unclear and there is equipoise in its use in clinical practice. This review provides the latest evidence on the value of ammonia as a biomarker in patients with cirrhosis. Although correct measurement of ammonia requires disciplined sample collection, it provides extremely useful clinical guidance for the diagnosis of HE, offers prognostic information, and it defines a therapeutic target. Aims βII spectrin is a cytoskeletal protein known to be tightly linked to heart development and cardiovascular electrophysiology. However, the roles of βII spectrin in cardiac contractile function and pathological post-myocardial infarction remodelling remain unclear. Here, we investigated whether and how βII spectrin, the most common isoform of non-erythrocytic spectrin in cardiomyocytes, is involved in cardiac contractile function and ischaemia/reperfusion (I/R) injury. Methods and results We observed that the levels of serum βII spectrin breakdown products (βII SBDPs) were significantly increased in patients with acute myocardial infarction (AMI). Concordantly, βII spectrin was degraded into βII SBDPs by calpain in mouse hearts after I/R injury. Using tamoxifen-inducible cardiac-specific βII spectrin knockout mice, we found that deletion of βII spectrin in the adult heart resulted in spontaneous development of cardiac contractile dysfunction, cardiac hypertrophy, and fibrosis at 5 weeks after tamoxifen treatment. Moreover, at 1 week after tamoxifen treatment, although spontaneous cardiac dysfunction in cardiac-specific βII spectrin knockout mice had not developed, deletion of βII spectrin in the heart exacerbated I/R-induced cardiomyocyte death and heart failure. Furthermore, restoration of βII spectrin expression via adenoviral small activating RNA (saRNA) delivery into the heart reduced I/R injury. Immunoprecipitation coupled with mass spectrometry (IP–LC–MS/MS) analyses and functional studies revealed that βII spectrin is indispensable for mitochondrial complex I activity and respiratory function. Mechanistically, βII spectrin promotes translocation of NADH:ubiquinone oxidoreductase 75-kDa Fe-S protein 1 (NDUFS1) from the cytosol to mitochondria by crosslinking with actin filaments (F-actin) to maintain F-actin stability. Conclusion βII spectrin is an essential cytoskeletal element for preserving mitochondrial homeostasis and cardiac function. Defects in βII spectrin exacerbate cardiac I/R injury. Megabar (1 Mbar = 100 GPa) laser shocks on precompressed samples allow reaching unprecedented high densities and moderately high ∼103-104K temperatures. We describe here a complete analysis framework for the velocimetry (VISAR) and pyrometry (SOP) data produced in these experiments. Since the precompression increases the initial density of both the sample of interest and the quartz reference for pressure-density, reflectivity, and temperature measurements, we describe analytical corrections based on available experimental data on warm dense silica and density-functional-theory based molecular dynamics computer simulations. Using our improved analysis framework, we report a re-analysis of previously published data on warm dense hydrogen and helium, compare the newly inferred pressure, density, and temperature data with most advanced equation of state models and provide updated reflectivity values.

This paper simulates the locomotion of a micro-swimmer towing cargo through a shear-dependent non-Newtonian fluid. We investigate the effect of the shear-dependent rheology (refers to the power-law index n), swimming Reynolds numbers (Re), and the relative position (refers to the distance ds and the concerning angle θ) between the swimmer and the cargoes on the assemblies' locomotion. For a swimmer towing a cargo, we find that a cargo-puller, cargo-pusher, or pusher-cargo (three typical towing models) swims faster in the shear-thickening fluids than in the shear-thinning fluids at Re ≤ 1. Moreover, the pusher-cargo swims significantly faster than the counterpart puller-cargo at Re ≤ 1. For a swimmer towing two cargoes, we find that the maximum negative swimming speeds can be achieved at θ = 30° and 150°, corresponding to two typical regular-triangle structures assembled by the squirmer and the cargoes. Interestingly, some regular-triangle assemblies (puller with θ = 30° and pusher with θ = 150°) can maintain a swimming opposite to their initial orientation. In addition, we obtain a relation of energy expenditure P ∼ Ren−1; it is also found that the assembly swimming in the shear-thinning fluids is more efficient than in the shear-thickening ones.
