The purpose of this study was to compare the academic performance of three student groups within the University of Missouri-Columbia's (MU) undergraduate teacher education program for two cohorts of students. The first cohort totaled 132 students who graduated in 2002. One hundred eight of these students were native/first-time freshmen, 5 were community college transfer students, and 19 were four-year college transfer students. The second set consisted of 112 students who graduated by May 2003. Eighty-seven of this cohort were native students, 7 were community college transfer students, and 18 were four-year college transfers. Sixty-four percent of the native students in the first cohort, and 76% of those in the second cohort had taken dual credit courses at a community college while in high school. The study demonstrated that in each of the two student sets, community college transfer students performed at approximately the same level academically as did the native students. This is useful evidence for those seeking to develop teacher education articulation agreements with individual community colleges in Missouri. Scrutiny of community college students' records gave no indication as to why they did so well. The authors recommend conducting similar studies over several years. (Contains 13 references.) (NB)

The National Food Service Management Institute (NFSMI) has conducted a project to develop guidelines on the type of preparation equipment needed in school kitchens to produce meals that meet the nutrition standards of the Dietary Guidelines for Americans (DGA). The guidelines provide detailed descriptions of food preparation equipment items, questions to consider when purchasing each equipment item, and forms that food service directors can use for equipment purchasing. Each equipment description provides the numbers of meals prepared per day and the number and type of equipment needed to meet each volume level. The guidelines also present two sets of cycle menus for breakfast and lunch that met USDA regulations, were consistent with the nutrition principles of the DGAs, and were representative of menus served in schools. Appendices provide samples of menus and equipment recommendations that were mailed to an expert panel, nutrient analysis of the cycle menus, equipment purchase decision forms, and suggested equipment for conventional kitchens. Analysis of characteristics of self-employed women and men suggested that family characteristics (such as children and marital status) are significant predictors of women's self-employment; human capital characteristics predict men's self-employment. Advanced age and education are among the determinants for both men and women. (SK)

This study examined influences of ancestral, generational, and acculturational differences on meanings and preferences regarding outdoor recreation and forest use. A survey of visitors to four recreation sites found significant inter- and intra-ethnic differences, with two sites used primarily by less acculturated Hispanics and two by more acculturated Anglos and Hispanics.
