27. Yeast extracts weakened warmed‐over flavor in surimi gels made from silver carp due to the masking effect by high concentrations of pyrazines and esters.

Abstract

Warmed‐over flavor (WOF) is an off‐flavor in surimi gels. Yeast extract (YE) could improve the aroma properties of food. However, the effect of YE on the WOF in surimi gels and its mechanism was still unclear. In this study, aroma profiles, the composition of aroma compounds and aroma precursors, concentrations of WOF compounds, and thiobarbituric acid reactive substances (TBARS) of surimi gels with different amounts of YE were investigated by molecular sensory science and chromatographic techniques. Moreover, the effect of pyrazines and esters introduced by YE on WOF was also tested by sensory analysis. The addition of no less than 1% YE to surimi gels significantly weakened WOF. However, YE did not decrease the concentrations of WOF compounds and did not change the fatty acid composition and TBARS in surimi gels. Conversely, the addition of YE significantly increased the contents of free amino acids, N‐containing compounds, and esters in surimi gels. The contents of total free amino acids, 2,6‐dimethylpyrazine, and ethyl acetate in surimi gels with 2.5% YE were 1.5, 21, and 2.1 times higher than those in the control, respectively. Additionally, the sensory results of the spiked aroma models containing WOF compounds, 2,6‐dimethylpyrazine, and esters showed that more than 9.4 µg/kg of 2,6‐dimethylpyrazine with a baked‐potato note and more than 6.1 µg/kg of ethyl acetate and 11.2 µg/kg of butyl acetate with a fruity note could significantly mask WOF. In conclusion, WOF in surimi gels could be masked by YE due to the high concentrations of pyrazines and esters. Practical Application: Yeast extracts could decrease the warmed‐over flavor (WOF) due to the high concentrations of pyrazines (baked‐potato note) and esters (fruity note). This finding extends the application of yeast extracts in the food industry. On the other hand, this study presents a reasonable solution for the reduction of WOF in surimi products. 34. Stability Analysis of Block Logical Dynamical Systems and Its Application in Logical Networks With Time Delay

Abstract

A new class of nonlinear systems, block logical dynamical systems (BLDSs), is introduced in this note. The existence and uniqueness of solution to BLDSs are first investigated. Then, the topological structure and global stability of BLDSs are analyzed, and a novel criterion is presented to verify the global stability of BLDSs. Finally, the stability of BLDSs is used to study the stability of logical networks subject to time delay. It is shown that the introduction of BLDSs can considerably reduce the computational complexity of verifying the stability of logical networks with time delay.

35. Robust Stability of Boolean Networks Subject to Edge Perturbations

Abstract

Edge perturbations (EPs) are often induced by disease-causing mutations, which include edge removal and edge sign switch. This article explores the robust stability of Boolean networks (BNs) with these two kinds of EPs. At first, both edge removal perturbation and edge sign switch perturbation are converted to multibit function perturbations (FPs). After that, the parameterized reachability matrix is constructed to verify the robust stability of BNs with multibit FP. As applications, several new criteria are established for the robust stability of BNs subject to edge removal perturbation and edge sign switch perturbation. Finally, the results are demonstrated by the Boolean models of p53 pathways network and Toll pathway of Drosophila signaling pathway network.

Abstract

Li metal is recognized as one of the most promising anode candidates for next‐generation high specific energy batteries. However, the fragile solid electrolyte interface (SEI) and heterogeneous Li plating/stripping in carbonate electrolyte severely encumber its practical application. Here, the heptafluorobutyramide (HFT) and lithium nitrate (LiNO3) are proposed to synergistically construct a robust SEI layer with excellent Li+ transport kinetics. The HFT can promote the dissolution of LiNO3 in carbonate electrolyte due to the strong cooperation. The results of theoretical calculations, in situ Raman and X‐ray photoelectron spectroscopy with deep Ar‐ion etching demonstrate that HFT and NO3− will be preferentially reduced to a Li3N/LiF‐rich composite structure on the surface of Li metal. Particularly, after the addition of additives, the first solvent shell is converted from solvent‐dominated to anion‐dominated structure, and thus a significantly lower Li‐ion desolvation barrier is presented. Consequently, the Coulombic efficiency (CE) of Li||Cu half cells using the designed carbonate electrolyte can reach 97.1%. The full cells matched with LiFePO4 and LiNi0.8Co0.1Mn0.1O2 (NCM 811) can deliver high‐capacity retention over 100% at −20°C.
