Sixteen multiparous Holstein cows in four blocks of 4 x 4 Latin square over 4-week experimental periods were used to study the effects of seaweed (Saccharina latissima) supplement (with/without) and protein source (rapeseed meal (RSM)/wheat distiller's grain (WDG)) on milk mineral concentrations. Dietary treatments did not affect milk production and basic composition. Feeding seaweed slightly decreased milk Ca and Cu concentrations; whilst increased (by 3.3-fold) milk iodine (I) concentration, due to a higher dietary I supply. Substitution of WDG with RSM increased feed-to-milk transfer of Ca, Na, and Se and decreased that of Mg, P, Fe, and Mn; but only reduced milk Mn and I concentrations (the latter by 27 % as a potential result of increased glucosinolate intake). Seaweed supplement can improve milk I content when cows' I supply/availability is limited, but care should be taken to avoid excess milk I contents that may pose nutritional risks for young children.

This study investigated the effect of seaweed supplementation in dairy cow diets on milk yield, basic composition, and mineral concentrations. Thirty-seven Icelandic cows were split into three diet treatments: control (CON, no seaweed), low seaweed (LSW, 0.75% concentrate dry matter (DM), 13–40 g/cow/day), and high seaweed (HSW, 1.5% concentrate DM, 26–158 g/cow/day). Cows were fed the same basal diet of grass silage and concentrate for a week, and then were introduced to the assigned experimental diets for 6 weeks. The seaweed mix of 91% Ascophyllum nodosum: 9% Laminaria digitata (DM basis), feed, and milk samples were collected weekly. Data were analyzed using a linear mixed effects model, with diet, week, and their interaction as fixed factors, cow ID as random factor, and the pre-treatment week data as a covariate. When compared with CON milk, LSW and HSW milk had, respectively, less Se (−1.4 and −3.1 μg/kg milk) and more I (+744 and +1649 μg/kg milk), while HSW milk also had less Cu (−11.6 μg/kg milk) and more As (+0.17 μg/kg milk) than CON milk. The minimal changes or concentrations in milk for Se, Cu, and As cannot be associated with any effects on consumer nutrition, but care should be taken when I-rich seaweed is fed to cows to avoid excessive animal I supply and milk I concentrations.

This study aimed to evaluate the possible use of mercury as a medical treatment at the medieval monastic hospital Skriðuklaustur (ad 1494–1554) in eastern Iceland. The individuals excavated from Skriðuklaustur exhibited a wide range of pathological conditions, including the only skeletal evidence of venereal syphilis in Iceland. Skeletal remains from the Skeljastaðir cemetery (ca. ad 1000–1104) in southern Iceland were also analysed in light of the site's proximity to the mercury emitting volcano Hekla. The eruption produced a severe toxic fallout resulting in the mass mortality of livestock and is believed to have caused the abandonment of Skeljastaðir and the other farms in the region. The skeletal analyses and sampling were conducted according to standard anthropological methods. Mercury concentrations were determined in human (n = 50), faunal (n = 23), and soil (n = 22) samples using inductively coupled plasma mass spectrometry. Individuals from both sites exhibited elevated mercury concentrations. At Skriðuklaustur, some individuals showed normal concentrations, but those with pathological conditions (e.g., hydatidosis, syphilis, tuberculosis, and other non‐specific infections) had the highest concentrations overall. On the other hand, all the individuals analysed from Skeljastaðir exhibited elevated mercury concentrations, some of which were remarkably high. A few of the individuals buried at Skeljastaðir post‐date the eruption, possibly indicating that some of them experienced heavy exposure to volcanic emissions. The less extreme concentrations at Skriðuklaustur may be a result of attention to dosage and the temporary nature of mercurial treatments. None of the faunal and soil samples presented with concentrations exceeding the normal limit, implying that diagenesis was not a concern in this research. The conclusion is that a variety of factors from medical treatment to scholarly work lead to mercury exposure at Skriðuklaustur, whereas at Skeljastaðir, volcanogenic emissions are implicated.

To study the effects of dairy production system on milk macromineral and trace element concentrations, milk samples were collected monthly in 2019 from 43 conventional and 27 organic farms. Organic milk contained more Ca (1049.5 vs. 995.8 mg/kg), K (1383.6 vs. 1362.4 mg/kg), P (806.5 vs. 792.5 mg/kg) and Mo (73.3 vs. 60.6 μg/kg) but less Cu (52.4 vs. 60.6 μg/kg), Fe (0.66 vs 2.03 mg/kg), Mn (28.8 vs. 45.0 μg/kg), Zn (4.51 vs. 5.00 mg/kg) and Al (0.32 vs. 1.14 μg/kg) than conventional milk. Significant seasonal variation was observed in all determined minerals’ concentrations. Milk I concentration was not consistently affected by production system, whereas organic milk contained less I in June and July than conventional milk. Dietary factors contributing to different milk mineral concentrations between production systems included intakes of maize silage, dry-straights and oils (higher in conventional diets), and pasture, clover and wholecrop (higher in organic diets).

Volcanic emissions are known to be a serious source of pollution to humans and animals. This study aimed to examine the possible health burden of fluoride (F) exposure from volcanic eruptions in the past. Osteological analyses were performed on 186 skeletons from seven sites across Iceland with the aim of identifying skeletal changes potentially associated with osteofluorosis. Additionally, ion selective electrode (ISE) was used to investigate possible correlations between skeletal lesions and bone fluoride concentrations in a subset of skeletons (n = 50) from two of these sites, Skriðuklaustur in Fljotsdalur and Skeljastaðir in Þjorsardalur. The results showed that pathological markers or skeletal changes increased according to age across all investigated time periods and geographical regions but likely not due to significant fluoride exposure. The fluoride concentration range was 223–4370 ppm (mean = 2324 ± 1067 ppm) at Skriðuklaustur (n = 36) while at Skeljastaðir (n = 14), the range was 223–3030 ppm (mean = 1366 ± 937 ppm). The pathological changes noted in this study are thus more likely to relate to the environment, population dynamics, culturally mediated behaviours and increasing urbanisation than serious fluoride contamination. Therefore, volcanic emissions appear to have only substantially affected those living within the closest vicinity of actual eruption events. It may be vital to not only consider the severity of the immediate effects of volcanic pollution but also to reinforce socioeconomic circumstances and disaster preparation in regions with environmental hazards.

Application. Pasture intake and non-Holstein genetics were negatively correlated with milk I, Mn, and Cu, and positively correlated with milk Ca and P; but other feeds and mineral supplementation also influenced milk mineral concentrations. Introduction. Milk is a good source of minerals (Ca, Mg, P and K) and trace elements (I, Se, Zn), which are essential for optimum health [2]. Pasture intake may increase milk Ca and P concentrations but decrease Cu and Se concentrations, although pasture composition, plant maturity, and animal/environmental factors will also have an effect [1]. This study aimed to (i) investigate the milk mineral concentrations in herds with different pasture intakes, and (ii) assess the relative impact of individual feeds. Material and methods. Bulk-tank milk samples (n = 359) were collected monthly (over 12 months) from 30 dairy farms, and animal diet and breed were gathered via questionnaire. Three groups of 10 farms represented contrasting grazing management between April-September: high pasture intake (HP; 28–65% DMI), standard pasture intake (SP; 5–18% DMI), outdoors with low/limited pasture intake (LP; 0–3% DMI). Milk mineral concentrations were determined using ICP-MS. Analysis of variance by linear mixed effects models used pasture intake (HP, SP, LP), months (12 months), and their interaction as fixed factors. Farm ID was used as a random factor. A multivariate redundancy analysis (RDA; CANOCO 5) assessed the relative impact of breed and feeds on milk mineral concentrations. Results. When compared with HP and LP farms, milk from SP farms contained significantly less Ca (−50 mg/kg and −45 mg/kg, respectively) and P (−25 mg/kg and −29 mg/kg, respectively) (Table 1). The RDA indicated that pasture intake and non-Holstein genetics were negatively correlated with milk I, Mn, and Cu, and positively correlated with milk Ca and P. Grass/grass-clover silage and dry-straights were positively correlated with I, Mn, Cu, Mo, Zn and negatively correlated with Na. Intakes of maize silage, blends, moist by-products, oils and minerals were negatively correlated with Mn, Cu, Mo, Zn, Ca and P. Milk from low/no grazing periods contained, on average, more I (+21.1%), Mn (19.5%), Cu (+16.9%), Zn (+6.1%) and Mo (+5.5%), than milk produced from the grazing season, although between-month differences were not always significant.

Seaweeds are increasingly used in European cuisines due to their nutritional value. Many algal constituents, such as polyphenols, are important antioxidants and thus considered beneficial to humans. However, many seaweed species can accumulate heavy metals and exhibit potential health risks upon ingestion. We investigated temporal and spatial variations in polyphenol and heavy metal (As, Cd, Hg, Pb) concentrations of three edible seaweed species. The brown algae Saccharina latissima and Alaria esculenta, and the red alga Palmaria palmata were sourced from natural populations and aquaculture in the NE Atlantic and processed as bulk biomass mimicking industrial scales. The mean polyphenol content was species-specific (Alaria > Saccharina > Palmaria), and highest in winter (for Alaria and Saccharina) and spring (for Palmaria); inter-annual and spatial variations were marginal. Heavy metal concentrations varied between species and depended on collection site, but seasonal variations were minimal. Our data suggest that all three species are good sources of antioxidants, and the heavy metal concentrations are below the upper limits set by the French recommendation and the EU Commission Regulation on contaminants in foodstuffs. A health risk assessment indicated that consumption of these seaweed species poses a low risk for humans with regard to heavy metals. However, an EU-wide regulation on maximal concentration of heavy metals in seaweeds should be established.

The underlying research materials for this article can be accessed at http://czvp.szu.cz/support/TDS_samples.htm A total diet study (TDS) is a public health tool for determination of population dietary exposure to chemicals across the entire diet. TDSs have been performed in several countries but the comparability of data produced is limited. Harmonisation of the TDS methodology is therefore desirable and the development of comparable TDS food lists is considered essential to achieve the consistency between countries. The aim of this study is to develop and test the feasibility of a method for establishing harmonised TDS food and sample lists in five European countries with different consumption patterns (Czech Republic, Finland, Germany, Iceland and Portugal). The food lists were intended to be applicable for exposure assessment of wide range of chemical substances in adults (18-64 years) and the elderly (65-74 years). Food consumption data from recent dietary surveys measured on individuals served as the basis for this work. Since the national data from these five countries were not comparable, all foods were linked to the EFSA FoodEx2 classification and description system. The selection of foods for TDS was based on the weight of food consumed and was carried out separately for each FoodEx2 level 1 food group. Individual food approach was respected as much as possible when the TDS samples were defined. TDS food lists developed with this approach represented 94.7-98.7% of the national total diet weights. The overall number of TDS samples varied from 128 in Finland to 246 in Germany. The suggested method was successfully implemented in all five countries. Mapping of data to the EFSA FoodEx2 coding system was recognised as a crucial step in harmonisation of the developed TDS food lists.
