Bivalve mollusc meat—that from mussels, clams, and oysters—offers a highly sustainable and nutritious alternative to meat from other shellfish, fish, or livestock. However, bivalves are an unpopular mass market food relative to these other meat items, limiting our ability to reap potential environmental and health benefits. Hence, this study aimed to assess current barriers to and drivers for bivalve consumption and investigated whether offering bivalves in a highly transformed (i.e., more processed) product format might help to drive consumption. The United Kingdom was used as a case study, and the study was performed via an online survey. Nutrition and quality of ingredients were key drivers, and price and convenience key barriers to bivalve consumption, with views on taste/smell/texture mixed. The more regularly individuals consumed meat, the more willing they were to try bivalves, and those who thought bivalves were healthier or more environmentally friendly than livestock were more likely to substitute bivalves for meat. Importantly, individuals were more willing to substitute highly transformed than minimally transformed (i.e., unprocessed) meats for bivalves. They were also willing to pay more for highly transformed bivalves than any other highly transformed meat product. We suggest that greater publicity regarding the health and environmental benefits of bivalve meat, and industry engagement to develop and pilot a greater range of appealing, affordable, and convenient bivalve products, are key actions that can help drive growth in the bivalve sector for planetary benefit.

There is a global need to sustainably increase aquaculture production to meet the needs of a growing popula- tion. Bivalve shellfish aquaculture is highly attractive from a human nutrition, economic, environmental and ecosystem standpoint. However, bivalve industry growth is falling behind fish aquaculture due to critical prob- lems in the production process. Feed defects, disease, and quality issues are limiting production. New advances in microencapsulation technology have great potential to tackle these problems. Microencapsulated diets could efficiently deliver high-quality nutrients, disease control agents, and quality enhancers to bivalves. Objetivo: Determinar los tiempos de demora del proceso editorial de la Revista Medica Panacea. Materiales y metodos: Estudio observacional, descriptivo y retrospectivo de 52 articulos publicados en la Revista Medica Panacea de la Universidad Nacional San Luis Gonzaga de Ica durante los anos 2012 y 2013. Se excluyeron nueve articulos. Los articulos fueron clasificados en dos grupos: articulos generales y articulos de investigacion. Los articulos de investigacion se clasificaron en estudios observacionales y estudios experimentales. Se uso el estadistico U de Mann Whitney para determinar la significancia de la diferencia entre los rangos promedio de los tiempos de demora. Resultados: El tiempo promedio desde la recepcion hasta la aceptacion es de 77,84 ±56,23 dias. Los articulos generales tienen un rango promedio de 13,89 dias y los articulos de investigacion 24,15 (p=0,029). El tiempo promedio desde la aceptacion hasta la publicacion es de 44,30 ±26,32 dias. El tiempo promedio desde la recepcion hasta la publicacion es de 122,14 ±67,17 dias. Los articulos generales tienen un rango promedio de 14,50 dias y los articulos de investigacion 23,99 (p=0,042). Conclusiones: E l tiempo de demora del proceso editorial se ajusta a su periodicidad de publicacion pero con alta variabilidad y tiempos de demora atipicos.
