Non-thermal processing has been developed to increase the quality and storage life of fruit juices in response to consumer desire. Ozonation is a recently developed method that generates volatile oxygen atoms that can eliminate a broad spectrum of microbes and extend the shelf stability of food products. The present research was intended to investigate the ozone processing on the physicochemical characteristics, microbiological quality, sensory attributes, and antioxidant potential of Kinnow juice. In this study, Kinnow juice was processed to 150 mg/h of ozone gas at a constant concentration for 5, 10, and 15 min. The sample was then taken in a plastic container and stored at 35°C ± 2 for three months. The results revealed that ozone processing had a significant (p˂0.05) effect on the total phenolics (TP) contents, total flavonoids (TF) contents, total soluble solids (TSS), acidity, total antioxidant activity (TAA) and DDPH radical scavenging activity of Kinnow juice. In addition, the ozonation application also significantly (p˂0.05) decreased the population of the microbes when the ozone time was increased from 5–15 min. Among the treatments, it was observed that T3 had the highest TSS, acidity, TF contents, TAA, and DDPH radical scavenging activity values and the lowest mold and plate counts. Regarding sensory qualities, T0+ showed the highest sensory score during storage. Thus, it may be concluded from the findings of our study that ozone application improved the quality of Kinnow juice by increasing TSS, phytochemicals and decreasing the microbial population, thereby prolonging their shelf life. Consumer demand for higher-quality fruit juices has resulted in the development of non-thermal processing to extend the shelf life of fruit juices. Ozonation is a novel technique, involving the production of volatile oxygen atoms capable of destroying an extensive range of microorganisms and lengthening the shelf stability of fruit juices. The purpose of this research was to examine the influence of ozonation on the physicochemical, bioactive components, and microbial properties of kinnow juice. Kinnow juice was exposed to ozone gas with fixed concentration 150 mg/h for 5, 10, and 15 minutes. Then, kinnow juice was filled in a plastic bottle and kept at 4 ± 2°C for 3 months. The mentioned parameters were examined after 30 days, 60 days, and 90 days. It was found that ozonation had shown a significant influence on nutritional characteristics of kinnow juice as it increased (p ≤.05) the acidity, total soluble content, total phenolics content, flavonoids content, and antioxidant potential of kinnow juice and diminished the microbial activity, increasing ozone time from 5 to 15 minutes. OZ-15 (15 minutes of ozonation) showed the maximum value of total soluble content (14.70 ± 0.10 °Brix), titrable acidity (0.179 ± 0.10%), total flavonoid content (244.44 ± 3.70 mg equivalent of catechin/100 mL), and total antioxidant activity (305.95 ± 2.70 µg/g equivalent of ascorbic acid of juice), but it presented the least total mold counts (1.49 ± 0.02 colony forming unit/mL) and plate counts (1.53 ± 0.03 colony forming unit/mL). It was suggested that the ozonation could be used as an alternative to the traditional pasteurization and chemical preservatives on kinnow juice to retain quality characteristics. Rasmalai is a very popular, delicious, and nutritious indigenous sweet dish in Indo‐Pakistani civilization. It has a very short shelf life, i.e., up to 3 days. The study was designed to assess the effect of preservatives (potassium sorbate and calcium propionate) on the shelf stability of Rasmalai. Moreover, proximate composition and sensory evaluation of prepared Rasmalai were also carried out in the present study. In general, potassium sorbate and calcium propionate significantly increased the shelf life of Rasmalai. But treatment (R5) containing a combination of both potassium sorbate and calcium propionate (500 ppm each) improved its shelf life by up to 12 days by keeping good sensorial characteristics. The maximum total plate counts as well as yeast and molds were observed in control Rasmalai (without any preservatives) whereas minimum counts were found in R5 treatment containing a combination of both potassium sorbate and calcium propionate (500 ppm each). In conclusion, all the preservatives used in the present study were effective in enhancing the shelf life of Rasmalai but R5 treatment containing a combination of both potassium sorbate and calcium propionate (500 ppm each) was the most effective in enhancing shelf life without deleterious effect on sensorial characteristics. The present study was designed to optimize the preparation conditions for fenugreek and flaxseed polysaccharides-based edible composite coating blended with stearic acid and monoglycerides. Thirteen coating solutions were prepared according to the treatment plan generated by design expert software; applied the coating on apple fruit and stored at 20°C for 14 days. The effect of polysaccharides-based coating on physicochemical parameters, for example, weight loss, firmness, titratable acidity (TA), pH, and total soluble solids (TSS) of apple was evaluated using response surface methodology (RSM). The results of RSM demonstrated non-significant (p > .05) lack of fit for all response variables. Coefficients of determination (R²) ranging from .9498 to .9949 were obtained for these responses. From the response optimization analysis, a combination of 2.5 g fenugreek and 1.5 g flaxseed polysaccharide-based coating was predicted to give desirable effects for all response variables. The findings of this study will be helpful for other researchers to understand the effect of fenugreek and flaxseed polysaccharides-based coating formulations on response variables at linear, quadratic and interactive level. The core objective of current research work is to observe the effects of different edible coatings on eggs for enhancing shelf life. For the purpose, brown and white eggs were procured from different local farms. After application of edible coatings i.e. shellac and chitosan, the quality characteristics i.e. haugh unit, yolk index, yolk color, albumin pH and shell color were observed. The maximum yolk index occur in noncoated eggs that is 0.42 for desi and 0.43 for farmi to 0.26 for desi and 0.23 for farmi whereas among shellac treatments minimum yolk index observed in T2. Edible coatings effectively extended the shelf life of eggs when stored at room temperature by preserving its quality characteristics. Chitosan and shellac coatings minimized the weight loss than those observed for noncoated eggs. Conclusively, the coating materials have potential use in delaying charges in the interior quality of eggs and maintaining their shelf life. The study was planned to formulate edible wax coating by utilizing date pit oil. Date pit oil was extracted from three date varieties (Aseel, Hallawi, and Dhakki) through solvent extraction method. One variety was selected on the basis of physicochemical analysis of date pit oil. The different treatments (T1, T2, T3, and T4) of wax coating were formulated by replacing water in standard wax formulation with date pit oil as 0.5%, 1%, 1.5%, and 2%, respectively. The storage studies were carried out for 16 days; different fruit parameters like pH, weight loss, total soluble solids (TSS), titratable acidity, fruit firmness, and vitamin C content were studied. Results indicated significant improvement in the shelf life of coated guava fruits as compared to uncoated guava fruits.T4 showed highest keeping quality as compared to T3, T2, and T1. Practical applications: This research work is novel in the field of edible coating by using date pit oil as natural barrier against environmental factors affecting the shelf life of guava fruit. There is immense potential in this new commodity to explore more applications of promising importance.
