Coarsening of two-phase systems is crucial for the stability of dense particle packings such as alloys, foams, emulsions or supersaturated solutions. Mean field theories predict an asymptotic scaling state with a broad particle size distribution. Aqueous foams are good model systems for investigations of coarsening-induced structures, because the continuous liquid as well as the dispersed gas phases are uniform and isotropic. We present coarsening experiments on wet foams, with liquid fractions up to their unjamming point and beyond, that are performed under microgravity to avoid gravitational drainage. As time elapses, a self-similar regime is reached where the normalized bubble size distribution is invariant. Unexpectedly, the distribution features an excess of small \textit{roaming} bubbles, mobile within the network of \textit{jammed} larger bubbles. These roaming bubbles are reminiscent of rattlers in granular materials (grains not subjected to contact forces). We identify a critical liquid fraction $\phi^*$, above which the bubble assembly unjams and the two bubble populations merge into a single narrow distribution of bubbly liquids. Unexpectedly, $\phi^*$ is larger than the random close packing fraction of the foam $\phi_{rcp}$. This is because, between $\phi_{rcp}$ and $\phi^*$, the large bubbles remain connected due to a weak adhesion between bubbles. We present models that identify the physical mechanisms explaining our observations. We propose a new comprehensive view of the coarsening phenomenon in wet foams. Our results should be applicable to other phase-separating systems and they may also help to control the elaboration of solid foams with hierarchical structures.

We report foam coarsening studies which were performed in the International Space Station (ISS) to suppress drainage due to gravity. Foams and bubbly liquids with controlled liquid fractions $\phi$ between 15 and 50\% were investigated to study the transition between bubble growth laws previously reported near the dry limit $\phi \rightarrow 0$ and the dilute limit $\phi \rightarrow 1$ (Ostwald ripening). We determined the coarsening rates; for the driest foams and the bubbly liquids, they are in close agreement with theoretical predictions. We observe a sharp cross-over between the respective laws at a critical value $\phi^*$. At liquid fractions beyond this transition, neighboring bubbles are no longer all in contact, like at a jamming transition. Remarkably $\phi^*$ is significantly larger than the random close packing volume fraction of the bubbles $\phi_{\text{rcp}}$ which was determined independently. We attribute the differences between $\phi^*$ and $\phi_{\text{rcp}}$ to a weakly adhesive bubble interaction that we have studied in complementary ground-based experiments.

Viscoelastic materials containing bubbles or drops are encountered in numerous application fields, and are presently the object of much interest. The motion of bubbles and drops in these matrices can be significantly different than in Newtonian fluids. This review is restricted to the case of motion in quiescent fluids (or small Reynolds number) and of small bubbles and drops, that are not appreciably deformed during their motion. It includes a brief description of properties of viscoelastic systems and of the motion of solid particles in these systems. The case of very small drops undergoing Brownian motion is related to recent advances in microrheology. The motion of larger drops and bubbles due to gravity in yield stress fluids is discussed and linked to Ostwald ripening. Recent advances on the understanding of the rheological properties of the composite systems are also briefly discussed.

The paper describes a study of wet foams in microgravity whose bubble size distribution evolves due to diffusive gas exchange. We focus on the comparison between the size of bubbles determined from images of the foam surface and the size of bubbles in the bulk foam, determined from Diffuse Transmission Spectroscopy (DTS). Extracting the bubble size distribution from images of a foam surface is difficult so we have used three different procedures : manual analysis, automatic analysis with a customized Python script and machine learning analysis. Once various pitfalls were identified and taken into account, all the three procedures yield identical results within error bars. DTS only allows the determination of an average bubble radius which is proportional to the photon transport mean free path $\ell^*$. The relation between the measured diffuse transmitted light intensity and {$\ell^*$} previously derived for slab-shaped samples of infinite lateral extent does not apply to the cuboid geometry of the cells used in the microgravity experiment. A new more general expression of the diffuse intensity transmitted with specific optical boundary conditions has been derived and applied to determine the average bubble radius. The temporal evolution of the average bubble radii deduced from DTS and of the same average radii of the bubbles measured at the sample surface are in very good agreement throughout the coarsening. Finally, ground experiments were performed to compare bubble size distributions in a bulk wet foam and at its surface at times so short that diffusive gas exchange is insignificant. They were found to be similar, confirming that bubbles seen at the surface are representative of the bulk foam bubbles.

While coalescence is ultimately the most drastic destabilization process in foams, its underlying processes are still unclear. To better understand them, we track individual coalescence events in two-dimensional foams at controlled capillary pressure. We obtain statistical information revealing the influence of the different parameters which have been previously proposed to explain coalescence. Our main conclusion is that coalescence probability is simply proportional to the area of the thin film separating two bubbles, suggesting that coalescence is mostly stochastic.

Foamed emulsions are ubiquitous in our daily life but the ageing of such systems is still poorly understood. In this study we investigate foam drainage and measure the evolution of the gas, liquid and oil volume fractions inside the foam. We evidence three regimes of ageing. During an initial period of fast drainage, both bubbles and drops are very mobile. As the foam stabilises drainage proceeds leading to a gradual decrease of the liquid fraction and slowing down of drainage. Clusters of oil drops are less sheared, their dynamic viscosity increases and drainage slows down even further, until the drops become blocked. At this point the oil fraction starts to increase in the continuous phase. The foam ageing leads to an increase of the capillary pressure until the oil acts as an antifoaming agent and the foam collapses., Comment: Soft Matter 2017

Quasi-two-dimensional (quasi-2D) foams consist of monolayers of bubbles squeezed between two narrowly spaced plates. These simplified foams have served successfully in the past to shed light on numerous issues in foam physics. Here we consider the electrical conductivity of such model foams. We compare experiments to a model which we propose, and which successfully relates the structural and the conductive properties of the foam over the full range of the investigated liquid content. We show in particular that in the case of quasi-2D foams the liquid in the nodes needs to be taken into account even at low liquid content. We think that these results may provide different approaches for the characterization of foam properties and for the in situ characterization of the liquid content of foams in confining geometries, such as microfluidics

The characterisation of the dynamic properties of viscoelastic monolayers of surfactants at the gasliquid interface is very important in the analysis and prediction of foam stability. With most of the relevant dynamic processes being rapid (thermal fluctuation, film coalescence etc.) it is important to probe interfacial dynamics at high deformation rates. Today, only few techniques allow this, one of them being the characterisation of the propagation of electrocapillary waves on the liquid surface. Traditionally, this technique has been applied in a continuous mode (i.e. at constant frequency) in order to ensure reliable accuracy. Here we explore the possibility to analyse the propagation of an excited pulse in order to access the interfacial properties in one single Fourier treatment over a wide range of frequencies. The main advantage of this approach is that the measurement times and the required liquid volumes can be reduced significantly. This occurs at the cost of precision in the measurement, due partly to the presence of a pronounced resonance of the liquid surface. The pulsed approach may therefore be used to prescan the surface response before a more in-depth scan at constant frequency; or to follow the changes of the interfacial properties during surfactant adsorption., Comment: 17 pages,9 figures

We present a large range of experimental data concerning the influence of surfactants on the well-known Landau-Levich-Derjaguin experiment where a liquid film is generated by pulling a solid plate out of a bath. The thickness h of the film was measured as a function of the pulling velocity V for different kind of surfactant and at various concentrations. Measuring the thickening factor $\alpha=h/h_{LLD}$, where hLLD is obtained for a pure liquid, in a wide range of capillary ($Ca=\eta V/\gamma$), two regimes of constant thickening can be identified: at small capillary number, $\alpha$ is large due to a confinement and surface elasticity (or Marangoni) effects and at large Ca, $\alpha$ is slightly higher than unity, due to surface viscous effects. At intermediate Ca, $\alpha$ decreases as Ca increases along a "dynamic transition". In the case of non-ionic surfactants, the dynamic transition occurs at a fixed Ca, independently of the surfactant concentration, while for ionic surfactants, the dynamic transition depends on the concentration due to the existence of an electrostatic barrier. The adsorption kinetics of the cationic surfactant dodecyltrimethylammonium bromide at the air-water interface has been studied by the maximum bubble pressure method at concentrations below the critical micellar concentration. At short times, the adsorption is diffusion-limited. At longer times, the surface tension shows an intermediate plateau and can no longer be accounted for by a diffusion limited process. Instead, adsorption appears kinetically controlled and slowed down by an adsorption barrier. A Poisson-Boltzmann theory for the electrostatic repulsion from the surface does not fully account for the observed potential barrier. The possibility of a surface phase transition is expected from the fitted isotherms but has not been observed by Brewster angle microscopy., Comment: 13 pages, 5 figures
