A new report from the Chinese Academy of Agricultural Sciences explores the potential of lactulose and maltulose in the food and pharmaceutical industries due to their prebiotic effects. The researchers used pulsed electric field (PEF) technology to convert reducing sugars, such as lactose and maltose, into lactulose and maltulose. Under optimal conditions, the PEF process achieved high yields of lactulose and maltulose. The study also found that the PEF process could induce glycoside bond hydrolysis and the conversion of aldose to pentose.
