Abstract

A study was conducted to analyze the effects of pH and ionic strength on [Lb.sup.pro] activity and the size of the substrate binding site and substrate specificity using a panel of specifically designed FRET. Findings revealed that specificity of [Lb.sup.pro] as disclosed by the substituted peptides could be explained for all positions except [P.sub.5].
