Consumer awareness of the importance of functional foods has greatly grown in the past years. Functional foods with elevated levels of antioxidants are of high demand because of its associated health benefits. As bread is a common component in our daily diet, it may be convenient food to deliver antioxidants at a high concentration. The main approach of this study is to incorporate Kappaphycus alvarezii seaweed powder (SWP) and white flour in the bun formulation in order to develop seaweed bun with higher level of phytochemicals. The fresh Kappaphycus alvarezii seaweeds were washed, soaked in distilled water overnight, dried in a cabinet dryer at 40°C for 24 hours and ground into fine powder using universal miller. There were five different percentages of SWP incorporated into bun that were formulation A - control (0% SWP), B (3% SWP), C (6% SWP), D (9% SWP) and E (12% SWP). All the samples were undergone texture, total phenolic content and DPPH analysis. Seaweed concentration had most significant effect on phytochemical constituents of the bun with TPC (35.07 GAE, mg/100g) and DPPH activity (49.02%) maximized when 12% SWP was incorporated into the flour (P<0.05). The incorporation of the SWP also gives significant effects towards the texture of the bun where the bun becomes harder and denser as compared to the control. [ABSTRACT FROM AUTHOR]

Edible bird nest (EBN) produced by certain swiftlet species mainly, Aerodromus fuciphagus. The objectives of this study were to determine and compare the proximate and amino acid composition of EBN obtained from two regions in Peninsular Malaysia (Pahang-A & Terengganu-B). The solubility of edible bird nest with varying pH, temperature and time was also investigated in this study. The results showed that, the EBN contained crude protein accounted to 58.55% (A) and 55.48% (B), carbohydrate at 22.28% (A) & 25.79% (B), moisture content 15.90% (A) & 15.87% (B), fat, 0.67% (A) & and 0.29% (B) and ash contents 2.60% (A) & 2.57% (B) respectively. The major amino acids found in edible bird nest EBN were Glutamic acid (9.61%), Aspartic acid (6.34%), Lysine (5.44 %) and also Leucine (5.30%). The total solubility of EBN was also found to be increased when the temperature was increased increase with distilled water yielding the highest total solubility of EBN compared to others buffer (different pH) solutions. Anaemia during pregnancy is a common problem which affects both the mother’s and her child’s health. The aim of this study was to determine knowledge level on anaemia among pregnant women in Putrajaya. This study was also been carried out to identify the relationship between knowledge according to socio-demographic and antenatal characteristics. A total of 370 subjects were participated in this study. Subjects comprised of pregnant women who attended four health clinics in Putrajaya to undergo first antenatal visit for the current pregnancy. Socio-demographic information, antenatal characteristics and knowledge related to anaemia were collected using questionnaires. Blood samples were taken to identify hemoglobin level of subjects using Sysmex Hematology Analyzer machine (Sysmex Europe GmbH). The mean age of subjects was 30.2 ± 4.2 years and the mean hemoglobin level was 12.1 ± 4.8 g/dL. The median score for subject’s knowledge towards anaemia was 84.2 corresponding to a high level of anaemia knowledge. Result of this study revealed that 55.7% of subjects had high knowledge on anaemia during pregnancy while 28.6% had moderate knowledge followed by 15.7% with low knowledge score. Most subjects correctly answered the general questions on the survey but under the assumption regarding the cause of anaemia. They were also lacking in knowledge regarding the risks of anaemia. Knowledge score was significantly associated with gestational week (p<0.05) and number of children (p<0.01) while there were no significant association with others characteristics. Improvement of anaemia knowledge is the most relevant step to ensure the practice and attitude of subjects towards anaemia are at its optimum level during pregnancy.
