Due to the intensive use of natural resources in food production in Brazil and the consequent air and water pollution, sustainable production is high on the agenda of businesses and policy makers. This paper designs sustainable production and distribution scenarios for the beef and pork supply chains in Brazil, covering Planet, People and Profit aspects. A case study design is employed in a multi -phase qualitative approach, consisting of two rounds of interviews to pursue the final design of six feasible scenarios for the beef and pork chains. Three sustainable production and distribution scenarios for beef are designed: intensification, local production and sustainable operations and integrated land use, and three for pork: integration of animal and crop production, sophistication and balanced sustainability. The core improvements that can be extracted from the scenarios are: increased chain collaboration, information sharing in the chain, and governmental involvement in the Brazilian beef and pork supply chains. A major value of the paper lays in the three-phase methodology set-up. This paper will also contribute to the debate on sustainable improvements feasible in these Brazilian food chains. Increasing food production to meet rising global demand while minimising negative environmental impacts such as agricultural greenhouse gas (GHG) emissions is one of the greatest challenges facing the agri-food sector. Sustainable food production relates not only to primary production, but also has wider value chain implications. An input-output (IO) model is a modelling framework which contains information on the flow of goods and services across a value chain at a regional or national economy level. This paper provides a detailed description of the development of a Bioeconomy IO (BIO) model which is disaggregated across the subs-sectors of the agri-food value chain and environmentally extended (EE) to examine environmental outputs, including GHG emissions, We focus on Ireland, where emissions from agriculture comprise 33% of national GHG emissions and where there has been a major expansion and transformation in agriculture supported by national and EU policy. In a substantial Annex to this paper, we describe the modelling assumptions made in developing the BIO model. Breaking up the value chain into components, we find that most value is generated at the processing stage of the value chain, with greater processing value in more sophisticated value chains such as dairy processing. On the other hand, emissions are in general highest in primary production, albeit emissions from purchased animal feed are higher for poultry than for other value chains, given the lower animal based emissions from poultry than from cows or sheep. The level of disaggregation also shows that the sub-sectors are themselves discrete value chains. The analysis highlights that emissions per unit of output are much higher for beef and sheep meat value chains than for pig and poultry. The analysis facilitated by the BIO model also allows for the mapping of emissions along the agri-food value chain using the adapted IO EE approach. Purpose_The goal of this paper is to explore the possible synergetic effects between lean philosophy and green endeavors in improving resource efficiency in the food sector. To that end, it is investigated how a proper and tailor-made adaptation of the lean six sigma root cause analysis method could help in overcoming the complexities of increased resource efficiency in food production. Design/methodology/approach_The case study concerned reduction of waste at an industrial production line of a dough-based product, through the implementation of the lean six sigma tool. Findings_An achievement of a 50% reduction of waste on the studied process line was reached, thus exceed ing the initial improvement goal. Research limitations/implications (if applicable)_While the explicit findings on the specific root causes of waste on this actual production line are not immediately transferrable to other cases, they show that applying th is method to identifying and eliminating root causes of waste for other products and processes in the food sector could not only reduce costs but also contribute to more resource-efficient and sustainable industrial food production. Export horticulture in Kenya viewed as an agro-industrial food system is currently the fastest growing agricultural sub-sector in terms of foreign exchange earnings. Increased demand for horticulture products led to production spreading beyond the traditional mountainous high yielding areas into arid and semi-arid zones as in Northwest Mount Kenya. This food system competes with other food systems for common pool resources needed for the production of food. We argue that local actors, especially poorer households lack the power to influence the institutions ('rules of the game') of production and resource ownership by which the dominant agro -industrial system impacts their livelihoods. This paper represents the starting point of the notion of launching an innovative pet food segment labelled "made from welfare friendly production (WFP)" to achieve an added value for slaughter by-products that accrue in the production of animal welfare meat and to allocate the additional costs of higher animal welfare standards to a broader range of products. Since the pet food market is characterized by a large premium segment and pet owners are generally believed to be interested in the welfare of animals, the idea seems promising at first sight, but there is a lack of reliable evidence. Thus, the main objective of this investigation was to determine the particular interest of pet owners in the welfare of farm animals. It aims to provide decision support whether further cost-intensive economic analyses on the size and the potential of the market for pet food made from WFP should be developed and conducted. Therefore, a comparison of pet owners' and non-pet owners' attitudes to the issue of animal welfare in livestock farming was conducted and revealed highly significant differences. Pet owners not only have a more critical attitude towards intensive livestock farming but are also very interested in animal welfare meat and show a significantly higher willingness-to-pay for welfare friendly meat products. The research question considers how local foods as networked food production may be studied from an ecosystem's perspective, being explicitly sensitive to process complexity. This implies integrating complex-process thinking with ecosystems thinking in cases of managing in local foods networks. First, the paper discusses what differentiates this form of food production based on features of interdependencies, information technology, traceability, and complex ecosystems. Supply chain management is expanded to conceptually model local food supply as complex ecosystems. The single case study provides a detailed description of the local foods network of a small Norwegian fresh seafood retailer and wholesaler. Findings include demonstrating the importance of complexity in achieving the sustainable production of local foods, and that this implies management following a paradoxical frame, as opposed to a business model frame. The conceptual model describes how food supply may be considered as an ecosystem mainly driven by economic concerns that are not in conflict with environmental and societal concerns. Since management in food chains is engulfed in a deterministic discourse on how to supply, the model also includes the role of paradoxical framing in managing networked food production operations. Agricultural activities within city boundaries have a long history in both developed and developing countries. In this paper, a broad approach to Urban AgriCulture (UAC) is used, one that includes the production of crops in urban and peri-urban areas and ranges in developed countries from allotment gardens over community gardens to semi - entrepreneurial self-harvest farms and fully commercialized agriculture. With an empirical case study on UAC Initiatives in the Bonn/Rhein-Sieg region this work fills a gap since the lack of comprehensive and comparative studies on urban agriculture (UA) currently makes it difficult for researchers to identify the benefits of UA activities. In Nicaragua, the production of dairy and beef is the most important source of household income for many smallholder producers. However, erratic volumes and quality of milk limit the participation of small- and mediumscale cattle farmers into higher-value dairy value chains. This research uses a system dynamics (SD) approach to analyze the Matiguás dairy value chain in Nicaragua. The paper presents the conceptual framework of the model and highlights the dynamic processes in the value chain, with a focus on improving feeding systems to achieve higher milk productivity and increased income for producers. During the last years, current systems in agriculture and food production have been topic in public discussions. Especially modern animal husbandry seems not to match consumers' or societal needs any longer. This paper concentrates on the society's perspective regarding dairy farming in general and diverting perceptions and expectations with respect to dairy cattle either reared organically or reared conventionally. It aims to give orientation to farmers as well as policymakers about the societal point of view of dairy farming. Six focus groups were carried out in three German cities to capture the scope of opinions and expectations among the population. Three of those groups consisted of participants buying mainly organic food while the other three comprised citizens buying mainly conventional food. With respect to society's perception of today's dairy farming results showed that participants put emphasis on the following topics: the space for each cow was considered as insufficient and not species-appropriate, assumed application of medications as too high, and in particular the prophylactic use of antibiotics as problematic. Asked about perceived differences between organic versus conventional farming it became obvious that organic in contrast to the conventional farming was perceived as more species-appropriate. More or less, all previously criticized aspects seem to be regarded as irrelevant in organic farming. Some participants showed a very romantic view of organic dairy farming. This paper addresses the complex production planning and control (PPC) challenges in food supply chains. The study illustrates how food producers' traditional make-to-stock (MTS) approach is not well suited to meet the trends of increasing product variety, higher demand uncertainty, increasing sales of fresh food products and more demanding customers. The paper proposes a framework for differentiated PPC that combines MTS with make-to-order (MTO). The framework matches products with the most appropriate PPC approaches and buffering techniques depending on market and product characteristics. The core idea is to achieve more volume flexibility in the production system by exploiting favourable product and market characteristics (high demand predictability, long customer order lead time allowances and low product perishability). The objective of this paper is to offer qualitative and quantitative insights on the perceptions of the actors in the EU food supply chain on a broad spectrum of topics that characterise its operation and conduct, highlighting also potential differences in North and South European countries. Issues explored pertained to actors' relations with up - and downstream partners, the future dynamic and challenges of the food sector, the influence of policy intervention and attitudes towards genetically modified products (GMPs) and organic production. For this purpose, a total of 34 food supply chain actors in Denmark and Greece were interviewed using a semi -structured interview process. A comparative analysis of the interviews pinpointed many similarities in the behaviour and the perceptions of the Greek and Danish farmers, cooperatives, processors and retailers alike. Still, while it is evident that companies and farmers of both countries struggle with a lot of the same problems, several differences in perceptions are also identified. The paper contribute to the assessment of PDO/PGI schemes by building an approach to measuring the actual performance of the PDO/PGI products in relation to the objectives of the European Regulation 510/2006. This is done through a multi-criteria ex-post analysis that compares the performance of different PDO/PGI products with respect to multiple criteria. The research presented, based on a small sample of Pdo cheese products in Italy, can be considered a pilot study that develops a comparative evaluation of the performance of PDO cheeses: i) relative to the different objectives of the schemes, ii) by using a set of suitable and informative indicators that can help to evaluate the effectiveness of a wide number of PDOs/PGIs with respect to the regulation's o bjectives, and iii) by considering that different actors involved in PDO/PGI schemes may have different priorities with regard to the importance of different objectives in evaluating the performance of schemes. Consumers have, through their food choices, a major role in bringing about more sustainable food production. However, this presupposes that differences in sustainability are communicated to consumers. Even if food products are eco-labelled and consumers are motivated to support sustainability, a number of potential barriers may prevent consumers from using the information to make sustainable choices. The paper explores the (mis)perceptions related to local food to identify potential halo effects. It also investigates whether product beliefs relate to the food category itself or to its perceived attributes. 133 students answered a questionnaire regarding four cheeses labelled as local, conventional, organic, or PDO. Results show that local claims lead to perceiving the cheese as healthier, but less hygienic. Results suggest also other two potential halos: (i) the “tradition halo" that links perceived traditional character to healthiness and taste,and (ii) the “environmental and animal care halo" that links respect for environment and animal welfare to food safety. Food distribution in general and within urban areas in particular requires a state-of-the-art logistics system. One important aspect is the level of centralization, which has shifting optima owing to emerging digitalization and peer-to-peer concepts. This study offers insights regarding the digitalization effects for innovative food logistics solutions. Findings are based on two case studies from (1) new urban distribution systems (Foodora, Lieferando , and Deliveroo) and (2) Foodsharing in Germany. Results focus on the digitalized fast and short -term coordination between suppliers, transporters, and customers, and reveal interesting influences on work organization and management of workers in food distribution. Based on an online discrete choice experiment (DCE) this study investigates the relative importance of food label information (country of origin, production methods, chemical residue testing (CRT)) and price for Taiwanese consumers' in their purchase of sweet peppers. Results show that respondents focus mostly on the COO labeling during their sweet-pepper shopping, followed by price. Information concerning CRT results and production methods are of less importance. The supply chain management of foods is commonly associated with modernistic large-scale production. This involves long transport distances of foods to reach consumers. In the case of local foods, supply chains are shorter. Based on a case study of five local foods producer's supply of their products to a common retailer, the supply chain of local foods is modelled conceptually and modes of development are pointed out based on contingency theory and supply chain management literature. Findings reveal that since these chains are transparent, reciprocal interdependency is abundant mainly because human perception creates a sufficient understanding of the operations management issues pertinent within this simple inter -organisational structure. Local foods supply chains are similar to service supply chains. This includes that both are short in nature and associated with bi -directional interaction between the customer and supplier. Developing short supply chains in local foods supply is associated with improving the exchange economy found in short supply chains. This also implies that development of local foods supply is associated with two paths which may be complementary. First, the use of improved intensive technology associated with reciprocal interdependency to develop efficiencies in the bi-directional and somewhat complex interaction. Alternatively local foods suppliers may seek to reduce this form of reciprocal interdependency thereby increasing the impact of pooled interdependencies and enabling using mediating technology involvi ng standardising interaction such as through increased standardised products and packaging as well as automation of information connectivity. A cobweb model is developed where the heterogeneous expectation hypothesis is examined. An agent's heterogeneous expectation involves the development of a "higher ordered learning" process in which agents over time develop expectations that are consistent with rational expectations. In addition, as cob web models are production based systems, an agents' heterogeneous expectations are influenced by a specialization of activities. The case of the industrialization of the U.S. hog-pork industry is used to illustrate the influence of these features on the equilibrium and non-equilibrium properties of a modified cob-web model. In the short and medium terms, biofuels are the most viable alternative to reduce the environmental impact of fossil fuels. The recent controversy over the competition between biofuels and food production increases the complexity of investment decisions in the biodiesel production chain. In this context, decision support tools are highly relevant. The purpose of this article is to describe the BiodieselFAO using the Unified Modeling Language (UML). An integrated analysis considering both agricultural and industrial sectors was identified as a key requirement to the system. Therefore, farmers and industry are the main actors in the use case diagram. As the raw material represents around 70% of the industrial cost of biodiesel production, the price negotiation of raw material (oilseeds) is the central use case. Configuration, agriculture, industry, results and scenarios are the modules, which encompass the functionalities derived from the UML diagrams. The Food and Agricultur e Organization of the United Nations (FAO) has made the BiodieselFAO available, free of charge, to around 180 professionals from 17 Latin American countries. Additionally, the developing team has supported the usage of the BiodieselFAO in several biodiesel investment analyses throughout Latin America. In the context of sustainable consumption buying local produce could support environmentally friendly production from the local economy. Our study estimates the preference weights that local consumers assign to some milk attributes including local origin and the influence on choice of a local brand of milk, which is traded by a local cooperative of producers in Umbria (Italy). Several preference segments are found amongst fresh and UHT milk buyers by employing a Latent Class model to analyze stated choice data. This specification allows us to verify whether consumers who have a better attitude towards local milk also prefer this brand to others, placing different values on the regional origin of milk. Additional ethical claims were tested with mock organic egg labels in five EU countries. The attitudes towards the advertising labels were assessed by multiple copy testing measures. A total of 156 individual responses were analysed. The study confirms the difficulty of conducting advertising research in a multicultural framework, and shows that additional local/ regional claims can reinforce the appeal of organic products.
