6. Physico- Chemical Evaluation of By-Products of Some Fruits Resulting From Food Processing.

The aim of this study was to investigate the possibility of benefiting from both pomegranate seed pomace PSP (the remaining part after pomegranate seed juice) and the date press DP (the residual part after extracting the fleshy part of the date), which are unused by-products of the pomegranate and date fruits at cheap prices. It is easy to obtain as it is generated in large quantities from food factories, and by evaluating the aforementioned raw materials physio-chemical. The obtained resulted showed that PSP had the higher content of crude protein (11.31%), ether extract (3.50%), ash (1.82%) and crude fiber (11.66%) compared with the DP, which recorded 9.87, 2.58, 1.69 and 8.58%, respectively. Meanwhile, DP had the higher content of available carbohydrate (77.29%) compared with PSP (71.70%). PSP had the higher content of K, Ca, Mg, Mn, Zn and Cu (858.66, 248.48, 685.07, 1.54, 2.85 and 2.66 mg/100g, respectively). While, DP had the higher content of Na and Fe (43.23 and 4.61 mg/100g, respectively). Total dietary fiber and insoluble dietary fiber were higher in DP powder (41.50 and 38.7%, respectively), while soluble dietary fibers were higher for PSP (3.8 %). PSP had the higher content in both of total phenols and antioxidant activity than DP. While, DP had the higher content in total flavonoids than PSP. So, results indicated that PSP and DP by-products can serve as a good source of dietary fibers, minerals and bioactive components. It could be recommended that incorporation of the mentioned raw materials with food product to obtain healthy food products (especially bakery products) have a high biological value. The saw-toothed grain beetle, Oryzaephilus surinamensis (L.) is an important pest of many stored product foods. The effect of insect infestation on four various of whole food kinds as semi-dry date, dry date fruits, white sesame and reddish yellow sesame seeds as well as four food kinds of crushed seeds (chickpea, corn, rice and groundnut) as compared with standard diet (wheat flour, crushed wheat and dry yeast powder at 5:5:1, respectively) was investigated in the laboratory of Plant Protection Department, Faculty of Agriculture, Zagazig University, Egypt. Insect parameters on the tested food kinds as regards to resistance were duration of developmental stages, number of F1 progeny, growth index and weight loss (%) after one month of storage. All tested parameters were significantly affected by food kinds except the duration of pupal stage in whole foods. The shortest mean insect complete developmental period was 19.85 days on standard diet, while the longest one was 29.18 days on whole reddish yellow sesame seeds and 35.05 days on crushed groundnut. Values of the growth index (GI) increased from 3.22 to 3.76 on whole reddish yellow sesame seeds and crushed chickpea, respectively compared to 4.64 on standard diet. The wet weight loss (%) ranged from 0.50 and 0.67% in whole sesame seeds (white and reddish yellow) and crushed groundnut, suscessively compared to11.17% in standard diet. The relative wet weight loss (%) in whole seeds reached its minimum (1.94%) in each of whole white and reddish yellow sesame seeds and reached its maximum (43.23%) in standard diet, while in crushed foods, the lowest value was 3.16% in crushed groundnut as compared with the standard diet which recorded the highest percent 52.76%. All tested foods either whole or crushed were infested with O. surinamensis and no completely immune food was found free from the insect infestation but the insect preferred crushed foods and some foods than another. 9. Effect of Sowing and Harvesting Dates on Yield and Yield Components of Some Barley Cultivars.

Two field experiments were conducted at Moshtohor region, Kalubia Governorate, Egypt, during 2019/20 and 2020/21 seasons, to study the effect of three sowing dates (1st November, 15th November, 1st December) and three harvesting dates (Harvesting at 150 DAS after sowing, Harvesting at 165 DAS after sowing, Harvesting at 180 DAS after sowing) on yield and yield components of two barley cultivars (Giza 2000 and Bhoth 244). The experimental design was randomized complete block design using split split-plots arrangement with three replications. Sowing dates was arranged in the main plots and barley cultivars was arranged at random in the sub plots, while harvesting dates were arranged randomly by in the sub sub-plots. The main results were as follows: Sowing at 1st or 15th of November gave the highest values of all studied traits except spike length and harvest index in first season and plant height in second season. Meanwhile, Bhoth 244 cultivar gave the highest values of spike length, No. spikelets spike-1, spike weight, No. grains spike-1, grain yield fed-1 and straw yield fed-1, whereas Giza 2000 cultivar gave the highest values of plant height, 1000-kernel weight and harvest index in the first and second seasons. Harvesting at 150 DAS increased significantly spike weight, No. grains spike-1, 1000-kernel weight and straw yield fed-1 compared with the other harvesting dates, while spike length, No. spikelets spike-1, grain yield fed-1 and harvest index increased significantly by harvesting at 180 DAS in both seasons. Plant height, spike weight, No. grains spike-1, grain yield fed-1 and straw yield fed-1 were affected by the interaction between sowing dates and barley cultivars in both seasons except plant height in the second season and No. grains spike-1 in the first season. Moreover, plant height, spike length, spike weight, No. grains spike-1, 1000-kernel weight, grain yield fed-1, straw yield fed-1 and harvest index were affected by the interaction between sowing dates and harvesting dates in both seasons except plant height, spike length, straw yield fed-1 and harvest index in the first season. While, plant height, No. spikelets spike-1, spike weight, No. grains spike-1, 1000-kernel weight, grain yield fed-1, straw yield fed-1 and harvest index were affected by the interaction between barley cultivars and harvesting dates in both seasons except plant height, No. spikelets spike-1, grain yield fed-1, straw yield fed-1 and harvest index in the first season. Regarding the interaction effect, among sowing dates, barley cultivars and harvesting dates were significant differences of plant height, spike weight, No. grains spike-1, 1000-kernel weight, grain yield fed-1, straw yield fed-1 and harvest index in both seasons except straw yield fed-1 and harvest index in the first season. It can be concluded that sowing Bhoth 244 cultivar in 1st or 15th November and harvesting at 180 DAS produced the height yield productivity under the conditions of this experiment. Two separate field experiments were conducted during 2019 and 2020 seasons, at Mallawi region, Minia Governorate, Egypt, to study the effect of two planting date, four planting patterns and three NK fertilizer levels on yield and yield components of Egyptian cotton (Gossypium barbadense, L.) promising hybrid cotton (CB58 X Giza 90). The results could be summarized as follows: Planting date at 20th March was significantly increase of No. of fruiting branches plant-1, No. of open bolls plant-1, Boll weight, Seed index, Lint (%), Seed cotton yield plant-1, Seed cotton yield fed-1 in both seasons. Whereas, planting date at 20th April were significantly increase of Plant height, in two season. Regarding planting patterns was significantly effect on plant height, No. of fruiting branches plant-1, No. of open bolls plant-1, Boll weight, Seed index, Lint (%), Seed cotton yield plant-1, Seed cotton yield fed-1 in the both seasons. Concerning NK fertilizer levels had a significant effect on plant height, No. of fruiting branches plant-1, No. of open bolls plant-1, Boll weight, Seed index, Lint (%), Seed cotton yield plant-1, Seed cotton yield fed-1 in the both seasons. Boll weight, seed index and seed cotton yield fed-1 in the first season and seed cotton yield plant-1 in the second season were affected by the interaction between planting date and planting patterns. Moreover, plant height and No. open bolls plant-1 were affected by the interaction between planting date and NK fertilizer levels in the first and second seasons, respectively. While, plant height and No. open bolls plant-1 were affected by the interaction between planting patterns and NK fertilizer levels in the first and second seasons, respectively. Regarding the interaction effect, among planting date, planting patterns and NK fertilizer levels were significant differences of No. fruiting branches plant-1 in the first season only. It can be concluded that early planting, 130 cm bed width + 30 cm hill space planted in two sides and fertilized by 75 kg N + 48 kg K2O fed-1 under the conditions of the experiment. Seed cotton yield fed-1 was affected by the interaction between planting date and planting patterns in the first season. It can be concluded that early planting, 130 cm bed width and 30 cm hill space planted in two sides and fertilized by 75 kg N + 48 kg K2 O fed-1 under the conditions in middle Egypt. 12. Impact of Climate Change on Maize Productivity in Egypt.

Two field experiments were conducted at the Experimental and Research Center, Fac. Agric., Moshtohor, Benha Univ., during 2019 and 2020 summer seasons. The aim of this work was to study the response of three yellow maize hybrids (SC 2088, SC P3444 and SC 168) to six planting dates (15th March, 1st April, 15th April, 1st May, 15th May and 1st June). The experimental design was randomized complete block design using splitplots arrangement with three replications. Planting dates were arranged in the main plots and yellow maize hybrids was arranged at random in the sub-plots. The main results were as follows: No. days to 50% tasseling and silking were significantly decreased as planting date delayed beyond the 1st of June. Planting maize seeds on 1st or 15th of May gave the highest values of studied traits and productivity compared to the other planting dates during both seasons. Meanwhile SC P3444 hybrid was significantly earlier than the other hybrids regarding 50% tasseling and silking. Also, SC P3444 hybrid was superior to the other two hybrids in all the studied traits in both seasons. Regarding the interaction effect, between planting dates and yellow maize hybrids were significant differences of 100-grain weight in both seasons and No. days to 50% tasseling, plant height, ear grains weight and grain yield fed-1 in the second season. It could be concluded that under the conditions of the experiment, planting SC P3444 hybrid and planting maize seeds on 1st or 15th of May is recommended. [ABSTRACT FROM AUTHOR]

13. Nutritional Evaluation of Extrusion Snacks Supplemented by Date Fruits Powder.

This study was made on fruits of two dry dates, the first one called Seedling (unclassified - Manthor date) and the second Bartamouda which is one of the most famous dates in Egypt. The powder of these fruits was used (at 1, 3 and 5%) for preparation the date- snacks, as a new snack product from dates. snack food now a very wide range of products, including several types. Extruded snack- products which are easy to consume, tasty, crispy, with thousands of shapes, flavors, textures, and are consumed worldwide. They can be expanded directly or indirectly. Therefore, this study was divided into two parts, the first one related to studying the physical properties, proximate chemical composition and determination of minerals content of Seedling and Bartamuda date fruits at tamr stage, then evaluation the effect of date powder addition on the sensory properties of snacks made from corn grits and date powders at 1, 3 and 5 %. So, the second part of this research was including study the effect of date powder type and the addition level on sugars (reducing and non- reducing and total sugars), crude fat, crude protein, fiber, ash, phenols content and the titratable acidity. Moreover Phosphorus, potassium, calcium, magnesium, iron, zinc and manganese contents (mg/100 g) were also determined. The results showed that there were significant differences (P ≤0.05) between the both date varieties under study as regard to chemical properties. The first one Seedling date., was higher in reducing sugar, crude fiber and crude fat, while the second (Bartamuda cv.) was higher in non-reducing sugars and total sugars and the both were equal in protein contents. As regard to mineral analysis there were significant differences (P ≤0.05) between the both varieties and control and the second variety was the highest. As regard to the effect of adding date powders (D.P.1 and D.P.2) of Seedling and Bartamuda varieties on crude fat and protein content of snacks fortified with 1, 3 and 5% there were no significant differences between the snacks and control, while for crude protein there were significant differences (P ≤0.05) and control was the lowest. As regard to the effect of adding on crude fiber and ash, there were marked increases between the level of substitution and the second variety was the best. As regard to the effect of adding on Phosphorus, potassium, calcium and magnesium, there were marked increases between the four elements for snacks fortified with all levels of both varieties and D.P.2 was the highest and potassium mineral was the dominant element. As regard to the effect of adding on iron, zinc, manganese and cupper, the results showed that there were significant differences between the substitution levels and 3 and 5% were the highest, while the control was the least. Sakkoti, Bartamuda, Gondaila, Malkabii and Shamia are excellent dry date cultivars, grown at Aswan Governorate. Physical properties {Gross fruit weight, Date flesh (pulp) weight, Date seed weight, Date flesh (pulp) percent, Average length, Average diameter, Date number per 1 kg, Date fruit volume and Date fruit density} also chemical composition (moisture, protein, Crude fiber, lipids, ash, Carbohydrates, sugars (reducing, non-reducing, Total sugar, Sucrose, Glucose and Fructose), minerals contents (Macro- and micro-elements), vitamins content (A, E and C), pH, Acidity and Total soluble solids } were determined in fresh date fruit (Tamar), after sun-drying for 25 days, solar drying for 14 days at ambient temperature 50 °C and mechanical drying at 60°C for 9 hrs. Moisture, lipids, protein, ash and pH decreased after sun-drying and mechanical drying, while total soluble solids (T.S.S), Carbohydrates, crude fiber and acidity increased in all cultivars. Total sugars, non reducing sugar, Sucrose and Fructose were higher in content in Malkabii date fruit (Tamar) than the other date varieties while, reducing sugar and Glucose were higher in Gondaila than the other date varieties. After, drying process, all sugar fractions decreased. Potassium and Calcium contents were higher in all dates. Vitamins A and E were higher in Shamia and Bartamuda than the other date variety. Sakkoti, Bartamuda, Gondaila, Malkabii and Shamia are excellent dry date cultivars, grown at Aswan Governorate. This study was conducted to assay effect of drying methods on quality of dates products so, total soluble solids (T.S.S.), pH, acidity, color characteristics and Organoleptic characteristics were determined in prepared date products (Tamr-Elddin Date Sheets (TDS) [with / without] fiber, Date pudding and Date Jelly) from fresh date fruit (Tamar), after sun-drying for 25 days, solar drying for 14 days at ambient temperature 50°C and mechanical drying at 60°C for hrs. The obtained results showed that pH decreased after sun-drying and mechanical drying, while total soluble solids (T.S.S) and acidity increased for all date products also, in generally found that the lightness (L), a (redness) and yellowness (b) values for date products from fresh dates were higher than solar dried dates, followed by sun dried dates and mechanical dried dates. So, in this study found that drying process by solar energy improved qualities attribute of all date products that had processed from Aswan dry dates. [ABSTRACT FROM AUTHOR]

The fruit of date palm (Phoenix dactylifera L.) ‘Barhi’ is mainly harvested at Khalal stage, whereas fruits are physiologically mature, hard and crisp. Fruits are suitable for consumption at Khalal stage but due to their high moisture content, they are very perishable with low storage life. The physicochemical properties of Barhi fruits grown at Americana framers, Giza, Egypt, which packed inpolyamide/ polyethylene (PA/PE), polyethylene (PE) and polypropylene (PP), under cold storage temperatures (5±1 ºC) in response to vacuum and modified atmosphere packaging (MAP) with N2 were studied. Fruits were analyzed at four time intervals after packing (0, 3, 6 and 9 weeks) and evaluated for their quality characteristics: texture, weight loss, total soluble solids (TSS), pH, moisture content, acidity and sugar content. The obtained results showed that the joint fruits stored in PP packages under MAP conditions with nitrogen had recorded the highest quality. These fruits had lowest TSS, weight loss, pH, acidity and moisture content and lowest change occurred in sugar content with a good texture. [ABSTRACT FROM AUTHOR]

Date palm (Phoenix dactylifera L.) fruits is considered among the most storage products playing an important role in economic, nutrition and special life in the Arab countries. Fungi are the main source of fruit rots and spoilage, thus reduces their economic value. Seven fungal species were isolated and identified from date fruits cv. Sewee collected at harvesting of Siwa oasis, Egypt, using dilution plate method. The most frequency identified fungi were Botrytis cinerea, Penicillium sp., Aspegillus niger, Alternaria alternata and Fusarium oxysporium, while, Trichoderma sp. and Rhizopus sp. were the lowest detected ones. Washing of date fruits with sterile water decreased the numbers of associated fungi compared with unwashed the control treatment after harvesting (zero time). While pasteurization treatments at 80ºC of Sewee date fruits completely reduced the number of fruits associated fungi followed by pasteurization at 70ºC compared with zero time. Botrytis cinerea Fr. Res was the most frequently isolated fungus causing the highest spoilage incidence on date palm cv. Sewee. Botrytis cinereal, inoculated date fruits stored under cooled temperature for six months, increased infection and severity percentage. The lowest date fruits infection was recorded after one month, while the highest infection was calculated after the 6th month of cold storage. In vitro experiment revealed that ginger, cinnamon, clove, olive and thyme oils at 5% were the most effective essential plant oils completely inhibiting mycelial growth of B. cinerea, while, anise, sesame and fennel oils were the lowest effective ones. In vivo evaluation of antifungal activities of essential plant oils were recorded on healthy and B. cinerea infected date fruits as a coated treatment. Treatment date fruits with oil highly reduced spoilage caused by B. cinerea for 6 months cold storage period. Ginger, lemon, castor, clove, cinnamon, and olive oils were the most effective ones at 6 months of cold storage period. Generally, date fruits of infection were markedly increased with increasing storage period in oil treated and untreated fruits, as well as in inoculated or un-inoculated fruits. Botrytis cinerea fungal count on inoculated date palm fruits increased significantly with the prolonged storage period for all treatments. Oils coated fruits significantly recorded the lowest fungal count compared to un-treated inoculated ones. Coated date fruits with essential plant oils recorded the highest fruit firmness (FF), reduced the incensement in juice TSS, increased total sugars, markedly decreased tannin contents, and total phenols percentage as increasing cold storage period. The aggregation pheromone traps of the red palm weevil, Rhynchophorus ferrugineus (Olivier, RPW) is an essential method for integrated pest management in field trials. Experiments were carried out on date palm plantations at (Abo-Nagi) El-Kassasein district, Ismailia Governorate, Egypt during one year (2012). Three baited pheromone traps with different food materials were tested. Adding date fruits to pheromone was the best bait to attract RPW where the number of weevils captured was 1005 adults representing 41.75% of the total catch compared to sugarcane and pheromone, which caught 807 adults, represented 33.53% of the total catch. Traps with ethyle acetate caught the least number 595 adults representing 24.72% of the total catch. The obtained results obviously indicated that numbers of captured adults were high significantly increased in traps supplied with dates than other food materials. Accordingly it is recommended to add date fruits to the pheromone traps. Generally, to achieve more capturing effectiveness of aggregation pheromone traps helping in controlling red palm weevil, it is necessary to use traps with holes and funnel without cover and placed at ground and supplied with fermented date fruits. In Egypt, dates are considered a strategic crop. Egypt occupies the first place in the world in date production, with annual production about 1.5,million tons. Dates are known for their high concentrations of sugars. An attempt was made to produce a product, from nationally available materials, with enhanced nutritional value and acceptability for consumers. This study, aimed td produce novel date bar by using date, date syrup, sesame seeds, extruded whole wheat, extruded hull-less barley, extruded wheatbarley, wheat-rice mixtures, pop-corn and a mixture of all. In this study, products were prepared with no sugar additives, since dates and date syrup are rich in natural sugars. Various analysis (proximate composition and sensory evaluation) were performed. Results showed that date fruit bars were rich in protein, fat and carbohydrates with good energy values. Texture wise, products were easy to bite and chew. Results of sensory quality evaluation indicated that dates, date syrup and puffed cereals have excellent potential to be converted into snack bars. Results generated in this study show that date-based fruit bars may be expected to fulfill some the requirements of health-conscious consumers. 33. Effect of Gamma Irradiation on Quality and Composition of Sakkoty Date Fruits (Phoenix dactylifera L.) During Storage.

This study was carried out to improve the quality and the shelf-life of Sakkoty date variety during storage period at room temperature using gamma irradiation doses of 0, 1, 2 and 4Kilo Gray (KGy). The effect of radiation treatments on the quality and composition of samples were evaluated at 0, 4, 8 and 12 months of storage. Results showed that the irradiated fruits with 4KGy are more effective for controlling the insect infestation (3.22%) followed by the irradiated date sample with 2KGy (6.00%) and 1KGy (6.45%). While, the control sample recorded 24.25% at the end of storage period. The moisture content of the control date sample decreased from 11.64 to 8.33% at the end of storage while it was decreased from 11.94 to 8.04%, from 11.89 to 8.35% and from 11.61 to 8.28% for the irradiated fruits by 1, 2 and 4KGy, respectively. However, the content of all sugars immediately decreased after irradiation, while it were increased gradually with increasing the storage time. Data revealed that the total bacterial counts immediately decreased after irradiation to a great extent, compared with the reduction in molds and yeasts. Beside, the microbial flora in all used doses were remained at a low count until the end of storage period. The irradiated sample with 4KGy had the lowest microbial counts, followed by the irradiated samples by 2 and 1KGy, respectively. The organoleptic evaluation showed that the panelists can not discriminate between the non-irradiated and irradiated date fruits. Furthermore, all the studied doses have no detectable adverse effect on the preference rating of the fruits. The irradiated sample with 1KGy was occupied the first rank in overall acceptability of sensory evaluation followed by the irradiated samples with 2KGy and with 4KGy. These results suggest that the packing irradiated fruits by 1, 2 and 4KGy of Sakkoty date fruit can be used as alternative method for improving the fruit quality, as well as prolonging its marketable period at room temperature for 12 months. This study was conducted out to improve the quality and the shelf-life of Saidy date variety during storage period for 12 months at room temperature using packing under vacuum, drying and irradiation (1KGy) treatments. Results showed that packing under vacuum is more effective for controlling the insect infestation (3.85%) followed by the irradiated (11.12%), dried (12.11%). While, the control sample recorded 17.24%, at the end of storage time (12 months). The moisture content of the control date sample decreased from 15.23 to 9.29% at the end of storage while it was decreased from 15.23 to 9.67%, from 15.15 to 8.92% and from 15.80 to 9.67% for the packed under vacuum, dried and irradiated samples, respectively. Data showed that, during the storage periods (12-months), the protein contents reduced from 2.52 to 1.97%, from 2.52 to 2.02%, from 2.57 to 2.15% and from 2.45 to 2.09% for the control, packed under vacuum, dried and irradiated samples, respectively. Data revealed that total bacterial counts immediately decreased after irradiation and drying to a greater extent, compared to the reduction in molds and yeasts. Beside, the microbial flora in all treatments remained at low count until the end of storage period. The irradiated sample had the lowest microbial counts, followed by the packed under vacuum and dried samples. The organoleptic evaluations show that the panelist could not discriminate between the non-irradiated and irradiated date fruits. Furthermore, all treatments have no detectable adverse effect on the preference rating of the fruits. The irradiated samples were occupied the first rank in overall acceptability of sensory evaluation followed by the dried and packed under vacuum samples. 36. Assessment of Genetic Diversity in Bread Wheat Genotypes Based on Heat Tolerance and SSR Markers.

Ten bread wheat genotypes (Triticum aestivum L.) were evaluated for heat tolerance under normal and late sowing dates during 2014/2015 and 2015/2016 seasons. Four agronomic traits, i.e. grain yield per plant (GYP), 1000-kernel weight (TKW), Spike length (SL) and plant height (PH) were evaluated. The genetic diversity was assessed among genotypes based on phenotypic data and thirteen simple sequence repeats (SSR) markers, representatives of nine wheat chromosomes. Heat stress under the late sowing date was quite strong resulting in 30.4, 14.6, 14.7 and 28.8% average reduction for GYP, TKW, SL and PH, respectively. GYP showed a negative and significant correlation (r= -0.66, P<0.05) with heat susceptibility index (HSI) under heat stress. By using 13 SSR markers, a total of 125 DNA fragments were generated, with an average of 9.6 bands per marker. The level of polymorphism (%P) ranged from 25% for the marker Xgwm497-1A to 85.7% for Xwmc273-7A, with an average of 60.8%. The highest polymorphism information content (PIC) value (0.36) was also recorded for Xwmc273-7A, while the lowest PIC (0.11) was found with Xwmc398-6A, with an average of 0.23. A highly significant correlation (r= 0.872, P<0.01) was found between %P and PIC values. Cluster analysis based on phenotypic data classified the ten genotypes into two groups, of which the group1 genotypes (Line-1, Line-2 and Line-3) showed high tolerance to heat stress by exhibiting lowest HSI values. However, cluster analysis based on SSR markers generated two clusters, where cluster-I contained five genotypes (Line-1, Line-2, Line-3, Debeira and EL-Nilein) tolerant to heat stress, indicating the efficiency of SSR markers in discriminating wheat genotypes. Moreover, four SSRs generated some unique bands or specific for some tolerant genotypes, that could be used as markers associated with heat tolerance in wheat. Date syrup contains about 80% of invert sugars. This syrup is considered as an excellent source of sugar, dietary fibers, minerals and trace elements. Date syrup addition in bread processing was found to cause an increment in weight and volume of both resulted pan bread and pies. It, also, improves texture of bakery products. When date syrup was utilized as a substitute of sucrose in the bakery products formula, crumb characteristics (such as aroma and taste) are markedly improved with increasing the concentration of date syrup. The object of this study was conducted to reduce the loss of wastages of the dates (30%) by processing and preserving it in the form of date syrup, which led to maximizing the value addition of date's crop in Egypt, and added to total National income. In Egypt, only 70% of the harvested dates are utilized. Partial replacement of sucrose by 10 - 50% date syrup (dibs) was studied for both pan bread and pies prepared by straight dough procedure. Good quality pan bread and pies was obtained in the present work by a partial replacement of sucrose with 10, 20 and 30 % date syrup, respectively. These substitutions significantly retarded firming of the bread crumb after 3 days of storage. Date syrup treatments showed an improvement in all quality characteristics, except that of crumb color, which was adversely affected by the addition of high proportion of date syrup. Addition of date syrup, also, improved the total gas production, and delayed the starch gelatinization (reterogradation). Addition of date syrup to the dough, prolonged the shelf life of pan bread and pies. High concentrations (40 and 50 %) of added date syrup resulted in a poor effect on the gassing and handling properties of resulted dough. The obtained preliminary results in the present work indicated that dates syrup is a promising ingredient for use in some bakery products. Sucrose can be partially replaced by date syrup, where the sensory properties of both pan and pies are markedly improved. [ABSTRACT FROM AUTHOR]
