Cowpea is grown mainly in regions with a hot semi-arid climate, where other pulses do not develop satisfactorily. It is the 4th most produced pulse in the world, thus supplying the domestic and export markets. Following the trends of the food products market, a study was carried out to identify the best condition of the extrusion process, to transform these nutritious grains into quality expanded products and ready for consumption. The grains were decorticated and transformed into cotyledon flour. This flour was conditioned and the Evolum HT25 twin screw extruder feeder was adjusted to a rate of 7 kg h-1. A Box-Behnken 23 design was used, considering the following variables and levels: extrusion temperature from 100 °C to 140 °C (in the 7th to 10th zone), screw speed (300 to 700 rpm) and conditioning moisture from 12% to 16%. The temperature affected linearly and negatively (p ≤ 0.05) the sectional expansion index (2.65 to 7.64). The screw speed interfered linearly and positively (p ≤ 0.05) in the longitudinal (1.12 to 9.32) and volumetric (4.91 to 24.15) expansion index, and negatively with the water absorption index (3.05 to 3.86 g g-1). The screw speed (positive linear and negative quadratic), the moisture content (negative quadratic) and the interaction (positive) between the two interfered (p ≤ 0.05) in the water solubility index (25.89% to 33.85%). The hardness value (1.24 to 2.83 N) was affected (p ≤ 0.05) by screw speed (negative linear and positive quadratic), temperature (negative quadratic), moisture (positive quadratic), and interactions of moisture with temperature and screw speed. To obtain a hardness value close to that of commercial extrudates and high-water solubility, the maximum global desirability obtained was 0.81 for extrusion at 135.6 °C, 700 rpm and 12% moisture.

Whole flour of cowpea grains of the cultivar BRS Tumucumaque biofortified in iron and zinc were processed in a co-rotating twin-screw extruder Clextral HT 25. A central rotational composite design 23, combining temperature (from 86.4 to 153.6 °C), screw rotation speed (from 163.6 to 836.4 rpm) and moisture content (from 16.6% to 23.4%), was used to assess the effects on flour constituents. The three variables significantly affected (p < 0.05) the levels of protein and copper in the extrudates. The reactions of the extrusion process caused a decrease in the levels of proteins and an increase in the levels of copper, zinc and potassium, and these amounts were accentuated as the values of the process variables approached those of the central point region. Extreme conditions at high rotational screw speeds combined with low moisture content reduced the magnesium content, at the opposite end of the values for these two variables, the intensity of the reduction was lower. In the analysis of global desirability, it was found that the extrusion condition at 112.6 °C, 587.4 rpm and 23.4% moisture provided the highest nutrient retention. The levels of iron and zinc remained above 60 and 40 mg kg-1, respectively, in extruded products. Resumo Farinha integral de grãos de feijão-caupi da cultivar BRS Tumucumaque biofortificados em ferro e zinco foi processada em extrusor de rosca dupla corrotativo Clextral HT 25. Um delineamento composto central rotacional 23, combinando as variáveis independentes: temperatura (86,4 a 153,6 °C), velocidade de rotação do parafuso (163,6 a 836,4 rpm) e teor de umidade (16,6% a 23,4%), foi utilizado para avaliar os efeitos sobre os constituintes da farinha. As três variáveis afetaram significativamente (p < 0,05) os teores de proteína e cobre dos extrusados. As reações do processo de extrusão provocaram diminuição nos teores de proteínas e aumento nos teores de cobre, zinco e potássio, e essas quantidades se acentuaram à medida que os valores das variáveis de processo se aproximaram aos da região do ponto central. Condições extremas de altas velocidades de rotação das roscas combinadas com baixos teores de umidade reduziram o teor de magnésio, enquanto que, no extremo inverso de valores para essas duas variáveis, a intensidade da redução foi menor. Na análise de desejabilidade global, verificou-se que a condição de extrusão a 112,6 °C, 587,4 rpm e 23,4% de umidade proporcionou a maior retenção de nutrientes. Os teores de ferro e zinco permaneceram acima de 60 e 40 mg kg-1, respectivamente, nos produtos extrusados.

Cowpea grains are nutritious and beneficial to health, contain about 25% of proteins, in addition to carbohydrates, vitamins, minerals, and bioactive compounds. Soaking the beans followed by cooking requires time availability that is incompatible with the current lifestyle. Consumers have opted for read-to-eat, attractive, healthy, nutritious and convenient foods, thus, transforming cowpeas into crispy expanded product is promising. This research aimed to evaluate the effect of the extrusion conditions, moisture, and temperature, on the physical characteristics of the extrudates developed from cowpea cotyledons flour (CCF): from cultivar BRS Guariba (Sorriso, MT, Brazil). The CCF was processed using twin-screw thermoplastic extruder ZSK 30 (Werner & Pfleiderer Co.) varying the moisture (16.2% to 21.8%) and temperature (124 to 166 °C) using Central Composite Rotatable design 22. The expansion index values ranged from 3.01 to 3.98, the regression model was not predictive, with the determination coefficient (r2) equal to 0.67. The independent variables studied presented significant effects, being water solubility index affected by the CCF moisture, compression force (15.63 to 47.72 N) affected by the extruder temperature, the water solubility index (28.34% to 43.67%) by moisture, while the specific volume (2.41 to 4.58 mL g-1) and the water absorption index (5.34 to 6.54 g g-1) were affected for both variables. By simulation, the maximum value of 1 was obtained through the global desirability test in the combination of an extrusion temperature of 124.21 °C and conditioning moisture of CCF of 16.28%. This condition favors obtaining extrudates with greater values for a specific volume and water absorption index, and lower values for compression force and water solubility index. Resumo Os grãos de feijão-caupi são nutritivos e benéficos à saúde, contêm cerca de 25% de proteínas, além de carboidratos, vitaminas, minerais e compostos bioativos. Colocar o feijão de molho seguido do cozimento exige uma disponibilidade de tempo incompatível com o estilo de vida atual. Os consumidores têm optado por alimentos prontos para o consumo, atrativos, saudáveis, nutritivos e convenientes, portanto, transformar o feijão-caupi em produto expandido crocante é promissor. O objetivo deste trabalho foi avaliar o efeito do teor de umidade e da temperatura de extrusão sobre as características físicas dos produtos expandidos desenvolvidos com farinha de cotilédones de feijão-caupi (FCFC) da cultivar BRS Guariba (Sorriso, MT, Brasil). A FCFC foi processada utilizando extrusor termoplástico de dupla rosca ZSK 30 (Werner & Pfleiderer Co.), variando os teores de umidade de condicionamento (16,2% a 21,8%) e temperaturas de extrusão (124 a 166 °C) utilizando um delineamento experimental composto central rotacional 22. Os valores do índice de expansão variaram de 3,01 a 3,98 e o modelo de regressão não foi preditivo, com o coeficiente de determinação (r2) igual a 0,67. As variáveis de processo estudadas afetaram significativamente as propriedades físicas dos extrusados. A força de compressão (15,63 a 47,72 N) foi afetada pela temperatura de extrusão, o índice de solubilidade em água (28,34% a 43,67%) pela umidade, enquanto o volume específico (2,41 a 4,58 mL g-1) e o índice de absorção de água (5,34 a 6,54 g g-1) foram afetados pelas duas variáveis. Por simulação, obteve-se, por meio do teste de desejabilidade global, valor máximo igual a 1, na combinação de temperatura de extrusão de 124,21 °C e umidade de condicionamento da FCFC de 16,28%, condição que favoreceu a obtenção de extrusados com maiores valores para volume específico e índice de absorção de água, e menores valores para força de compressão e índice de solubilidade de água.

The objective of this paper was to determine the influence of three culture media with different water activities, times of incubation and temperatures on the growth of A. ochraceus, A. carbonarius and A. niger. Spores of A. ochraceus, A. carbonarius and A. niger were inoculated onto three culture media: Czapeck Yeast extract Agar (CYA), Dichloran 18% Glycerol Agar (DG18) and Malt Yeast extract 40% Glucose Agar (MY40G). The plates were incubated at five different temperatures (8, 25, 30, 35 and 41ºC). The growth of fungi was evaluated every 24h, measuring the colony diameter (mm). None of the species grew at 8ºC in any culture media. For A. carbonarius, 30ºC was the best temperature for growth while for A. niger temperatures above 30ºC were better in all culture media. A. ochraceus presented good growth at 25 and 30ºC in all culture media, while at 35ºC, growth was slower, especially on CYA. At 41ºC, A. ochraceus did not grow in any culture media and A. carbonarius was significantly inhibited. A. niger grew at 41ºC and was shown to be the most xerophilic fungi when compared to A. carbonarius and A. ochraceus. Esporos de A. ochraceus, A. carbonarius e A. niger foram inoculados em três meios de cultura: Agar extrato de levedura Czapeck (CYA), Agar Glicerol 18% com dicloran (DG18), Agar Extrato de levedura e malte com 40% de glicose (MY40G). As placas foram incubadas em 5 temperaturas diferentes: 8, 25, 30, 35 e 41ºC. O crescimento dos fungos foi avaliado medindo o diâmetro da colônia a cada 24h. O objetivo deste trabalho foi determinar a influência de três meios de cultura com atividade de água diferente tempo de incubação e temperaturas, sobre o crescimento de A. ochraceus, A. carbonarius and A. niger. Nenhuma das espécies cresceu à 8ºC em nenhum dos meios de cultura. Para A. carbonarius, 30ºC foi a melhor temperatura para o seu crescimento enquanto para A. niger temperaturas acima de 30ºC foram melhores em todos os meios de cultura. A. ochraceus apresentou bom crescimento a 25 e 30ºC em todos os meios de cultura, enquanto seu crescimento à 35ºC foi mais lento, especialmente no meio CYA. A 41ºC, A. ochraceus não cresceu em nenhum dos meios de cultura estudados e A. carbonarius foi significantemente inibido. A. niger cresceu à temperatura de 41ºC e apresentou-se como o fungo mais xerofílico, comparado com A. carbonarius e A. ochraceus.
