Aquaculture products are important parts of human nutrition due to their healthy components; however, they may contain elements that are potentially toxic to consumers. The aim of the study was to detect the concentration of As, Cd, Hg, and Pb by inductively coupled plasma optical emission spectroscopy in rainbow trout (Oncorhynchus mykiss) originated from an aquaculture farm in Italy. The amount of As was 1.65 ± 0.49 mg/kg; however, the total As cannot be evaluated due to the absence of official regulation. The calculated EDI and THQ for the inorganic As content were below the reference values. The level of Cd was higher than the regulated limit in 30% of the samples; however, its EDI and THQ were below the recommended limit. The concentration of Hg was below the regulated maximum limit in all the samples. The detected amount of Pb was above the maximum limit in 10% of the samples; however, EDI and THQ were below the reference dose and recommended value. Despite higher concentrations of Cd and Pb than the official regulated limit, HI was below 1 for adults; thus, the consumption of the investigated rainbow trout is safe, but it was above the official regulated limit for children, resulting in a slight risk, particularly during long-term intake.

The popularity of seafoods is high due to their superb dietary properties and healthy composition. However, it is crucial to understand whether they adequately contribute to our essential nutritional needs. Small amounts of essential metals are indispensable in the human body to proper physiological functioning; their deficiency can manifest in various sets of symptoms that can only be eliminated with their intake during treatment or nutrition. However, the excessive consumption of metals can induce undesirable effects, or even toxicosis. Shellfish, oyster, and squid samples were collected directly from a fish market. After sample preparation, the concentration of essential metals (cobalt, chromium, copper, manganese, molybdenum, nickel, and zinc) was detected by Inductively Coupled Plasma Optical Emission Spectrometry. The results were analyzed statistically using ANOVA and two-sample t-tests. The average concentration of the investigated essential elements and the calculated burden based on the consumption were below the Recommended Dietary Allowances and Tolerable Upper Intake Levels. Based on these results, the trace element contents of the investigated seafoods do not cover the necessary recommended daily intake of them, but their consumption poses no health hazard due to their low levels.

The consumption of marine fishes has a positive effect on a consumer’s health; however, it poses a potential risk due to their level of heavy metals in their body. Heavy metals can be naturally found in the environment, but their concentration can be increased with anthropogenic activities. Samples of tuna (Thunnus albacares) were collected at a fishery market. The potentially toxic elements (arsenic, cadmium, lead, and mercury) were determined with a validated method in the flesh of fish using inductively plasma optical emission spectrometry after microwave digestion. Generally, the average concentration of them was below the official limit values regulated by the European Union, except for lead. Based on the concentrations of arsenic (inorganic derivates: 0.05 ± 0.02 mg/kg) and cadmium (0.03 ± 0.01 mg/kg) in the tuna fish samples, and their calculated EDI values (As: 0.03–0.09 µg/kg/day; Cd: 0.05–0.07 µg/kg/day), the investigated food could be declared safe for human consumption. Generally, mercury content was below the official regulated limit, and the calculated EDI value was below the dietary reference value (0.3 μg/kg/day) in most of the samples (90%), exceeding it only in two samples (0.69 and 0.82 μg/kg/day); thus, they may not be harmful to the consumer. The concentration of lead above the official maximum limit (0.30 mg/kg) in 40% of tuna samples (0.30–1.59 mg/kg), as well as the exceeding of the dietary reference value for lead (adult: 0.16 μg/kg/day; children: 0.26 μg/kg/day) based on the calculated EDI values (0.28–1.49 μg/kg/day), draw attention to the importance of environmental pollution and the protection of consumers’ health.
