This article presents a question and its answer about times of year when roots of horseradish are hott. In reply it was given that horseradish is hottest when the temperature is lowest. The volatile oils that give the root its pungency disintegrate in heat. Thus commercial growers, many of whom are in cold climates, take great pains to harvest horseradish either just before the ground freezes or just after it thaws.
