Background: Brassicas (Brassicaceae) are recognized as excellent sources of nutrients and bioactive compounds. Among these, wild turnip (Brassica rapa L.), holds significant promising nutritional properties owed to its abundant glucosinolates and phenolic compounds. To enhance its potential values, the application of elicitors is crucial and good strategy prompting an enrichment in the concentration of phytochemicals, as well established in other relevant Brassicas, such as broccoli. While the responses triggered by certain elicitors such as salicylic acid, methyl jasmonate, or chitosan are widely documented, little is known about the impact of electrolyzed water, an economically viable elicitor. Through elicitation strategies, the aim of this work was to unravel insights into enhancing the phytochemical content of wild turnip sprouts for potential use as healthy food, comparing with well-studied broccoli as control of the experiments. Results: Our findings revealed that wild turnip exhibited a notable higher glucosinolate (GSL) contents (487–712 mg 100 g−1 D.W.), than in broccoli sprouts. Furthermore, the use of electrolyzed water (2 vol.) boosted the accumulation of glucosinolates with significant increase up to twofolds the content. Specifically, treatments with salicylic acid (250 μM) and electrolyzed water (2 vol.) favored the significant increase of mainly aliphatic GSL (progoitrin, PRO; gluconapin, GNA; glucobrassicin, GBN). On the other hand, natural antioxidants such as of the characteristic acylated cyanidins present in wild turnip sprouts were not affected by the elicitor treatments, indicative of higher tolerance to oxidative stress in wild turnip. Conclusions: These observations underlined the potential of using electrolyzed water in wild turnips as elicitor for GSL-enriched food ingredients. Further studies will be necessary to align with the broader goal of evaluating abiotic and biotic factors affecting the phytochemical composition in mature organs not only in germinating seeds and sprouts, for agricultural performance for quality and healthy foods purposes. Interest in nutrient absorption and accumulation is derived from the need to increase crop productivity by better nutrition and also to improve the nutritional quality of plants as foods and feeds. This review focuses on contrasting data on the importance for human health of food mineral nutrients (Ca, Mg, K, Na and P) and also the trace elements considered essential or beneficial for human health (Cr, Co, Cu, Fe, Mn, Mo, Ni, Se and Zn). In addition, environmental stresses such as salinity, drought, extreme temperatures and light conditions that affect mineral content were revised in the light that the effect of these factors depends on the species or cultivar, and the specific plant organ, as well as the intensity and duration of the stress. Differences between inorganic and organic fertilisation practices on the mineral levels were also analysed to evaluate the influence of external factors on the quality of plant-based foods. Different experimental varietal port wines were analysed in order to determine differences in the concentrations of phenolic compounds between some commonly used grapes varieties (Touriga Francesa, Touriga Nacional, Tinta Roriz and Tinta Barroca). Although all samples had the same qualitative pattern of non-coloured phenolic compounds, Touriga varieties contained more than twice the concentration of these compounds compared to the Tinta varieties. A preliminary study of the effect of ageing on these compounds revealed an overall increase in those components associated with the bitter or astringent characteristics of food and beverages (tyrosol, gallic acid and catechin). The non-coloured phenolic fraction of fortified port wines was studied. Trials using several mash-extraction techniques which may be used during port wine making were evaluated for their effectiveness by measuring qualitative and quantitative differences in phenolics. Total phenolic compounds measured by spectrophotometry and HPLC analysis were compared, and the greater values obtained using spectrophotometry are attributable to the contribution of anthocyanins and non-phenolic UV-absorbing compounds. Quantitative and qualitative differences in composition were observed depending on the extraction mode. The greatest total phenolic content was found in port wine made by traditional foot treading, while early addition of extra alcohol to the mash had a neutral or negative effect on the yield of phenolic compounds.
