19. Drinkable beverage based on whey and Opuntia stricta(var. dillenii) juice derived from underexploited biowaste: from process development to characterization

Abstract

The formulation of a new functional beverage from Opuntia strictajuice enriched with whey cheese was investigated. Five beverages were developed with different percentages of juice. The storage stability was evaluated at 4 °C during 60 days in terms of physicochemical analysis (pH, acidity, total, and reducing sugar). The prepared beverages have a red color and a highly acceptable taste, the overall acceptability varies from 6.12 to 6.80 and from 7.16 to 8 respectively for the two categories of consumers 10–25 and over 25 years old. The relation between acceptability of beverages (for two categories of consumers) and sensory parameters (color, juice percentage, taste, and texture) was modelized using linear regression model with a correlation coefficient (R2) of 72.9% and 70.5% respectively for consumers 10–25 and over 25 years old. In this vein, the beverages were appreciated differently according to the age range of consumers (10–25 years or over 25 years old). A mathematical relationship between the responses (pH, acidity, reducing, and total sugars) and covariates (storage period and juice concentration) was obtained, described by first-order polynomial equations with an R2of 87%, 83%, 89.5%, and 88.7% respectively for pH, acidity, reducing, and total sugar. The study showed that the drinkable beverage based on whey and Opuntia strictajuice with a proportion of juice varying from 35 to 25% is the best regarding sensory properties and physicochemical stability.

Abstract

Growing worldwide, the genus Ephedra (family Ephedraceae) had a medicinal, ecological, and economic value. The extraordinary morphological diversity suggests that Ephedra was survivor of an ancient group, and its antiquity is also supported by fossil data. It has recently been suggested that Ephedra appeared 8–32 million years ago, and a few megafossils document its presence in the Early Cretaceous. Recently, the high analytical power provided by the new mass spectrometry (MS) instruments is making the characterization of Ephedra metabolites more feasible, such as ephedrine series. In this regard, the chemical compounds isolated from crude extracts, fractions, and few isolated compounds of Ephedra species were characterized by MS-based techniques (LC-MS, LC-ESI-MS, HPLC-PDA-ESI/MS, LC-DAD-ESI/MSn, LC/Orbitrap MS, etc.). Moreover, we carry out an exhaustive review of the scientific literature on biomedicine and pharmacotherapy (anticancer, antiproliferative, anti-inflammatory, antidiabetic, antihyperlipidemic, antiarthritic, and anti-influenza activities; proapoptotic and cytotoxic potential; and so on). Equally, antimicrobial and antioxidant activities were discussed. This review is focused on all these topics, along with current studies published in the last 5 years (2015–2019) providing in-depth information for readers.

In this study, the corresponding correlations, interdependencies, and relationships of nine traits of pistachio (Pistacia veraL.) kernels were established. Here, the percentage of dehiscent shells, shell homogeneity, shell apex, position of suture opening, suture opening, number of pistachio kernels/100 g, (length/width) pistachio kernel ratio, pistachio kernel flavour and fat content of pistachio kernel were studied.

Abstract

Actually, cultivators are increasingly arranging innovative high technical and scientific estimations in the aim to enhance agricultural sustainability, effectiveness, and/or plant health. Innovative farming technologies incorporate biology with smart agriculture: computers and devices exchange with one another autonomously in a structured farm management system. Throughout this structure, smart agriculture can be accomplished; cultivators decrease plantation inputs (pesticides and fertilizers) and increase yields via integrated pest management and/or biological control. The emerging concept of remote sensing may provide a framework to systematically consider these issues of smart farming technology and to embed high-tech agriculture better. The impact(s) may be beneficial depending on how tools, such as data mining, and imagery technologies, such as picture treatment and analysis, are applied. Remote sensing technology is discussed in this review and demonstrates its possibility to create novel opportunities for scientists (and agronomists) to explore aspects of biological phenomena that cannot be accessed through usual mechanisms or processes.

Abstract

The heartening applications of betalains in food, pharmaceutical, and cosmetic sectors impose their strengthening by a suitable extraction protocol. Likewise, the antibacterial activity of beetroot betalains represents an option to develop the next-generation of antibacterial agents treating the wide bacterial infection spectrum. This study aimed to model and optimize the ethanloic extract of beetroot peels in betacyanin (Bc) and betaxanthin (Bx) and their activity against two foodborne pathogen bacteria (Staphylococcus aureusand Salmonella enterica) by using RSM (response surface methodology) and ANN (artificial neural network). The input variables considered were sample-to-solvent ratio, temperature, and extraction time. The higher Bc (5.87 g/L) and Bx (10.18 g/L) contents, and anti-Staphylococcus aureus(17.52 mm) and anti-Salmonella enterica(15.14 mm) activities were recorded at: sample-to-solvent ratio of 1:36, temperature of 44.54 °C, and extraction time equal to 93.03 min. Statistical analyses indicated that the models derived using RSM and ANN can be used to predict each response. Based on the coefficient of determination and mean square error, ANN model was found to be superior compared to RSM in the prediction of all responses. Molecular docking simulation stipulated that Bc and Bx could target multiple bacterial pathways including membrane permeability disruption by inhibiting MepR and AcrB efflux pump of S. aureusand S. entericarespectively. Both bioactive molecules showed a conceivable impairment of pathogenic bacteria replication and transcription vital processes by impeding DNA and RNA polymerase activities. These findings indicated that beet peel extracts can provide an excellent source of betalains for the color industry.
