Crude palm oil (CPO) is extracted from the mesocarp of oil palm (Elaeis guineensis) fruits. CPO is widely consumed in many African countries. Due to its high provitamin A carotenoid content, it is also widely used in programmes designed to prevent vitamin A deficiency. Elaeis guineensis occurs naturally across a wide geographical range in Africa. We investigated the carotene, tocochromanol (vitamin E) and fatty acid composition of a large set of genotypes representative of this genetic and geographic diversity. We found considerable intraspecific diversity in most lipid traits. Populations from Côte d'Ivoire were distinguished from other origins by their very low palmitate content and high tocochromanol content. Genotypes from Benin, Côte d'Ivoire and Nigeria were characterized by high carotene contents. Finally, hybrids of crosses between genotypes from Côte d'Ivoire and Nigeria produce CPO with exceptionally high provitamin A and vitamin E contents together with low palmitate content.

β-carotene content is one of the main factors that determines the nutritional quality and orange color of ripe mango fruit. It is known as the pro vitamin A, and it is generally the predominant carotenoid in ripe mango. Currently, fresh fruit sector demands a reliable nondestructive indicator to better predict the nutritional quality of ripe mango, and especially in terms of β-carotene content. Fruit density has been applied in horticulture sector to predict dry matter or maturation stage of mango. It would interesting to know if it can be a relevant non-destructive indicator of the carotenoid content in fruits Therefore, the aim of this study was to identify the relationship between mango density and β-carotene content at the ripe stage. Mangoes (cv. 'Kent'), from Ivory Coast, Peru, and Brazil were selected from a mango importer in France at a green mature stage (day 0). Then, all mangoes were ripened at 18 °C and 80% of relative humidity. Color of ripe mango pulp and β-carotene contents were assessed 11 and 15 days after (day 0) corresponding to a ripe stage of consumption. Fruit density was significantly correlated to the pulp color and β-carotene contents of ripe mangoes, whatever the origin (p-value < 0.05). Mango fruits with a high density were characterized by high value of Chroma, lower value of Hue angle, and high contents in β-carotene. β-carotene content was found in range of [92-307 μg.100g.FM-1] for low density mango, and in range of [365-924 μg.100g.FM-1] for high density mango. So, fruit density, measured at the green-mature stage, could be a reliable indicator to predict the nutritional quality of mango fruit at the ripening stage, which is extremely useful for fresh fruit sector for grading or sorting mango fruit early in the supply chain.

Trabajo presentado en el XXV Congreso de la Sociedad Española de Microbiología (SEM), celebrado en Logroño del 7 al 10 de julio de 2015., En Burkina Faso el consumo de cereales es de 170 kg/persona/ año (FAO / CIRAD, 1996) y una gran proporción se consume en forma fermentada. La totalidad de la población es consumidora del alimento fermentado por bacterias lácXcas (BAL) cuya base es la harina de mijo, denominado ben-saalga y que se uXliza como complemento alimenXcio en niños. Pero este alimento conXene también factores anX- nutricionales tales como los taninos que secuestran el hierro, reduciendo así su biodisponibilidad y provocando deficiencias en hierro y anemias. El ácido tánico puede ser hidrolizado a glucosa y ácido gálico por acción de la enzima tanasa y el ácido gálico puede ser metabolizado a pirogalol por acción de la galato descarboxilasa. Ambas acXvidades se encuentran presentes en determinadas BAL, y la hipótesis de parXda de este trabajo es que estas BAL podrían aumentar la biodisponibilidad del hierro., Rocío Fernández recibió una beca FPI de la Comunidad Autónoma de La Rioja.

The fatty acid (FA) composition of Oenocarpus bataua oil from 38 samples collected over a large geographical range (i.e. French Guiana and Peru) was analyzed. Fifteen fatty acids were obtained from the mesocarp of this palm species. Oleic (72.7%) and palmitic (18.1%) acids were the predominant FAs. Minor FAs were cis-vaccenic acid (2.3%), linoleic acid (1.9%), stearic acid (1.7%), palmitoleic (0.9%) and alpha-linolenic acid (0.8%). The mean lipid content of the dry mesocarp was 51.6%. The O. bataua oil samples analyzed were remarkably rich in alpha-tocopherol. By contrast, the other fractions of the unsaponifiable matter (sterols, carotenoids) did not show any noteworthy specificity in comparison with common vegetable oils. However, the particularly high percentage in Delta 5-avenasterol of O. bataua oil could serve as a marker for its authentication. Results are discussed in terms of the potential nutritional value of O. bataua oil.

Multi-ingredient sauces (n = 36), which are traditionally consumed with dishes containing starch (millet-based-to, rice), were collected in rural Burkina Faso and analysed for their dry matter (DM), macronutrient (lipids, proteins) and micronutrient (iron, zinc, carotenoids and retinol) contents. DM content varied from 7.8% to 21.8% depending on the sauce. Groundnut sauces had the highest DM content. Protein contents were similar (22.2-32.3 g/100g DM). The highest lipid contents were found in groundnut sauces (similar to 45g/100g DM). Sauces made from green-leafy vegetables formed a homogeneous group with a high content of retinol activity equivalents (RAE) (p < 0.0001) and, to a lesser extent, of iron (p < 0.05) compared to the dried okra or groundnut sauces. An isomer of beta-carotene was detected in sauces made from green-leafy vegetables. The content of this isomer was strongly correlated with beta-carotene content and not with cooking time.

Plantains and bananas are one of the major staple foods of sub-Saharan Africa and Latin-America. These fruit are source of dietary minerals and vitamins. Deep-fat frying unit operation is widely used for the transformation of plantain in Latin-America and in Africa. The aim of this research was to evaluate the influence of deep-fat frying on the micronutrients of plantain (Musa AAB "barraganete"). Influence of the raw material (two batches) was analyzed. Cylinders (diameter 30 mm, thickness 10 mm) of plantain were fried at four thermal treatments (120-180° C and from 24 to 4 min). Molecules of nutritional interest with water soluble properties (potassium, L-ascorbic acid) or lipid soluble properties (alpha-carotene, beta-carotene) were quantified during the course of frying. One plantain batch was initially rich in L-ascorbic acid (24.4 ± 0.9 mg/100mg) and poor in total carotenoid (0.6 ± 0.3 mg/100mg), while the other was poor in L-ascorbic acid (7.5 ± 0.3 mg/100mg) and rich in total carotenoid (2.1 ± 0,7 mg/100mg). On line measurements of the water content and internal temperature profile allow to characterize the behaviour of bath products during deep-fat frying. The thermal study used the cook value as indicators of the effect of thermal history on quality. Potassium was determinate by ICP; L-ascorbic acid and carotenoid determinations were performed by HPLC. Deep-fat frying had no significant effect on potassium contents at any frying- conditions. Exclusively with the plantain initially rich in L-ascorbic acid, a-carotene and ,alpha-carotene, significant losses were observed. The average loss on L-ascorbic acid. alpha-carotene and beta-carotene were close to 75%, 44% and 35%, respectively. Cook values were very different at any frying conditions, while the lasses of micronutrient were not significantly different at the four frying treatments. Cook value parameters does not seem relevant. These couldn't be explained just with a first order kinetic thermal degradation behaviour. Perhaps, the heterogeneous distribution of micronutrient across the plantain (in radial direction) and/or cellular scale could explain of such behaviours. However it's difficult to develop more extensive assumptions without histological information of the micronutrient localization in plantain. (Texte intégral)

Au cours du traitement de postrécolte du café Arabica, l'eau utilisée a une influence directe sur les paramètres physico-chimiques, microbiologiques et biochimiques de la fermentation. Elle intervient lors du dépulpage et du transport des drupes dépulpées jusqu'à la cuve de fermentation, solubilise alors les sucres simples du mucilage, ralentit la croissance microbienne et en conséquence l'acidification du milieu fermentaire. Le dépulpage et le transport du café avec ou sans eau ne modifient pas la composition biochimique du café vert. Par ailleurs, les propriétés organoleptiques à la tasse ont été jugées identiques. Les technologies moins polluantes, dépulpage et transport sans eau des drupes dépulpées, permettent aux producteurs de contrôler la durée et l'acidité produite. En revanche, il est nécessaire de réduire le temps de fermentation car le pH devient plus rapidement acide. Des durées prolongées pourraient provoquer des surfermentations et développer des mauvais goûts.
