Honey is the main product of Apis mellifera bees and has nutritional benefits for humans. The objective of the present research was to analyze the physical-chemical quality of honey from different flowering plants (wild, eucalyptus, orange and wild organic system) during the years 2016 and 2017. The following physical and chemical tests were performed: free acidity, moisture, hydroxymethylfurfural, Lund's test, diastase search and Fiehe reaction. The main results showed that 25% of organic honeys and 27.3% of eucalyptus honeys were altered for the Fiehe reaction and humidity, respectively. 6.67% for the Lund test and 6.67% for diastase ferments were altered for orange honeys. The main conclusion is that transport and storage hindered the physico-chemical quality of the honeydew, eucalyptus and orange trees., O mel é o principal produto das abelhas Apis mellifera e possui benefícios nutricionais para o ser humano. O objetivo da presente pesquisa foi analisar a qualidade físico-química de mel de diferentes floradas (silvestre, eucalipto, laranjeira e silvestre de sistema orgânico) durante os anos de 2016 e 2017. Foram realizados os seguintes ensaios físico-químicos: acidez livre, umidade, hidroximetilfurfural, prova de Lund, pesquisa de diastase e reação de Fiehe. Os principais resultados mostraram que 25% de méis silvestres orgânicos e 27,3% de méis de eucaliptos estavam alterados para a reação de Fiehe e umidade, respectivamente. 6,67% para a prova de Lund e 6,67% para pesquisa de fermentos diastásicos estavam alterados para os méis de laranjeiras. A principal conclusão consiste que o transporte e o armazenamento prejudicaram a qualidade físico-química dos méis de floradas silvestre orgânico, eucalipto e laranjeira.
