Abstract

Abstract Food diversity is a challenging issue for sustainable agrifood systems. Diets are increasingly dependent on branded packaged foods. Therefore, the crop diversity offered in the food market through these products is of particular importance. We scrutinize this diversity for some crops under great societal challenge: pulses. Based on the product launches referenced in the Mintel database over the last decade, we compare the food products containing pulse crops with those containing another legume—soy. From the 350,000 products analyzed, our results show that soy is mainly used but reveal some progress in the use of pulse species, particularly in Europe. The position of the examined species in the list of ingredients and in the product description allows us to assess its importance. The text-mining methods used usefully enable the monitoring of crop usage in the food market. We discuss several perspectives, notably how to deepen these results regarding consumer choices.

2. The Comparison of the Effect of Flour Particle Size and Content of Damaged Starch on Rice and Buckwheat Slurry, Dough, and Bread Characteristics

Abstract

The effect of botanical origin, the flour particle size, and the content of damaged starch on flour pasting properties, dough behavior during a uniaxial deformation test, and bread characteristics were evaluated on rice and buckwheat flours. The rice flour with a median particle size D(0.5) of 60.2, 70.6, 106.8, and 189.4 μm, and buckwheat flour with a D(0.5) of 56.4, 68.4, and 95.8 μm were prepared using the same milling technology. The botanical origin of the flours was the strongest factor influencing the flour pasting properties, stress accumulated in dough during the uniaxial deformation test, loaf characteristics, texture, and sensory characteristics of breads. The flour particle size significantly influenced mainly the flour pasting properties. The effect of the content of damaged starch was the weakest among the studied factors. The flour particle size and the content of damaged starch were closely related. The flour botanical origin was the strongest factor; therefore, it seems not to be possible to predict the bread-baking potential of gluten-free flours based on the results obtained for flour of a different botanical origin. More research on flours from different plants prepared by the same milling process is required to support this hypothesis.

Abstract

Rice bran (RB) corresponds to the outer layers of whole grain rice and contains several phenolic compounds (PCs) that make it an interesting functional food ingredient. PC richness is enhanced in pigmented RB varieties and requires effective ways of extraction of these compounds. Therefore, we investigated conventional and deep eutectic solvents (DES) extraction methods to recover a wide array of PCs from red and black RB. The RB were extracted with ethanol/water (60:40, v/v) and two DES (choline chloride/1.2-propanediol/water, 1:1:1 and choline chloride/lactic acid, 1:10, mole ratios), based on Generally Recognized as Safe (GRAS) components. Besides the quantification of the most typical phenolic acids of cereals, nontargeted metabolomic approaches were applied to PCs profiling in the extracts. Globally, metabolomics revealed 89 PCs belonging to flavonoids (52%), phenolic acids (33%), other polyphenols (8%), lignans (6%) and stilbenes (1%) classes. All extracts, whatever the solvents, were highly concentrated in the main phenolic acids found in cereals (37–66 mg/100 g in black RB extracts vs. 6–20 mg/100 g in red RB extracts). However, the PC profile was highly dependent on the extraction solvent and specific PCs were extracted using the acidic DES. The PC-enriched DES extracts demonstrated interesting DPPH scavenging activity, which makes them candidates for novel antioxidant formulations.

Abstract

The purpose of the study is to characterize the chemical diversity in Rice bran (RB) lipidome and determine whether daily RB consumption for 4 weeks may modulate plasma lipid profiles in children.Untargeted and targeted lipidomics via ultra-performance liquid chromatography coupled with high-resolution tandem mass spectrometry (UPLC-MS/MS) were applied to identify bioactive RB lipids from a collection of 17 rice varieties. To determine the impact of RB (Calrose-USA variety) supplementation on plasma lipid profile, a secondary analysis of plasma lipidome was conducted on data recorded in a clinical study (NCT01911390, n = 18 moderately hypercholesterolemic children) before and after 4 weeks of dietary intervention (15 g/d) with a control or RB supplemented snack. Untargeted lipidomic revealed 118 lipids as the core of lipidome across all 17 varieties among which phospholipids were abundant and oxylipins present. Phytoprostanes and phytofurans were quantified and characterized. Lipidome analysis of the children plasma following RB consumption revealed the presence of novel polar lipids and oxylipins alongside putative modulations in endocannabinoids associated with RB consumption.The investigation of novel polar lipids, oxylipins, phytoprostanes, and phytofurans in RB extracts provides support for new health-promoting properties especially interesting for people at risk for cardiometabolic disease. Abstract

Oleoproteaginous and cereal seeds enclose a wide range of nutriments such as lipids, proteins, polysaccharides and various mineral and organic micronutrients. These nutrients are found under the form of natural assemblies such as oil or protein bodies or starch granules, that have interesting functionalities (micronic sizes, surface activity, high physicochemical stability, etc.). Thus, their natural structures are often strongly damaged, and some of their functionalities disappear. Storming through natural assemblies' biodiversity to address the societal demand for more natural and minimally processed food seems promising. Indeed, the soft extraction of such assemblies could be an alternative to traditional intensive fractionation methods of plant raw materials to isolate target ingredients (sucrose, starch, refined oils, etc.). This would allow energy savings and avoid solvent use but must be balanced with potential challenges of this new green refinery scheme. The purpose of the present work is to highlight the physicochemical properties of various oil bodies from diverse plant origins. A green refinery protocol is proposed for their extraction from various matrices. Then their size distribution, surface activity, resistance to oxidation and fatty acids and lipo- soluble vitamins bioaccessibility is also presented. Omega-3 rich sources (linseed, chia, hemp…) are of special interest to correct the low dietary intake of US and European population as well as the ω6/ω3 balance. Oil bodies from these plant species can thus constitute new dietary carriers of ω3 and other bioactive molecules. Moreover, the combination of oil bodies with specific features (fatty acid profiles, stabilities, vitamin contents) can help meeting the requirements of specific nutritional targets (infants, children, elderly, athletes, etc.). Altogether, we are convinced that the valorization of these diverse oil bodies can be a strategic route in the development of sustainable food systems. (Texte intégral)
