Agroclimatic variables may affect insect and plant phenology, with unpredictable effects on pest populations and crop losses. Bactrocera oleae Rossi (Diptera: Tephritidae) is a specific pest of Olea europaea plants that can cause annual economic losses of more than one billion US dollars in the Mediterranean region. In this study, we aimed at understanding the effect of olive tree phenology and other agroclimatic variables on B. oleae infestation dynamics in the Umbria region (Central Italy). Analyses were carried out on B. oleae infestation data collected in 79 olive groves during a 7-year period (from 2015 to 2021). In July–August, B. oleae infestation (1% attack) was negatively affected by altitude and spring mean daily temperatures and positively by higher winter mean daily temperatures and olive tree cumulative degree days. In September–October, infestation was negatively affected by a positive soil water balance and high spring temperatures. High altitude and cumulative plant degree days were related to delayed attacks. In contrast, high winter and spring temperatures accelerated them. Our results could be helpful for the development of predictive models and for increasing the reliability of decision support systems currently used in olive orchards.

In this work, the airborne Synthetic Aperture Radar (SAR) infrastructure developed at the Institute for Electromagnetic Sensing of the Environment (IREA) of the National Research Council of Italy (CNR) is described. This infrastructure allows IREA-CNR to plan and execute airborne SAR campaigns and to process the acquired data with a twofold aim. On one hand, the aim is to develop research activities; on the other hand, the aim is to support the emergency prevention and management activities of the Department of Civil Protection of the Italian Presidency of the Council of Ministers, for which IREA-CNR serves as National Centre of Competence. Such infrastructure consists of a flight segment and a ground segment that include a multi-frequency airborne SAR sensor based on the Frequency-Modulated Continuous Wave (FMCW) technology and operating in the X- and L-bands, an Information Technology (IT) platform for data storage and processing and an airborne SAR data processing chain. In this work, the technical aspects related to the flight and ground segments of the infrastructure are presented. Moreover, a discussion on the response times and characteristics of the final products that can be achieved with the infrastructure is provided with the aim of showing its capabilities to support the monitoring activities required in a possible emergency scenario. In recent years, an increasing interest has been devoted to bistatic SAR configurations, which can be effectively used to improve system performance and/or to increase the amount of physical information retrievable from the observed scene. Within this context, the availability of simulation tools is of paramount importance, for both mission planning and processing algorithm verification and testing. In this paper, a time domain simulator useful to obtain the point-spread function and the raw signal for the generic bistatic SAR configuration is presented. Moreover, we focus on the case of two bistatic configurations, which are of considerable interest in actual SAR applications, i.e., the translational invariant SAR and the one-stationary SAR acquisition geometries, for which we obtain meaningful expressions of the Transfer Functions. In particular, these expressions are formally equal to those obtained for the monostatic SAR configuration, so that the already available monostatic simulator can be easily adapted to these bistatic cases. The point-target raw signals obtained using the (exact) time domain simulator and the (approximated) frequency domain one are compared, with special attention to acquisition geometries that may be of practical interest in Formation-Flying SAR applications. Results show that the phase difference between raw signals simulated with the two approaches is, in all cases, smaller (and often much smaller) than about 10 degrees, except that at the very edge of the raw signals, where however, it does not exceed about 50 degrees.

Use of Frequency Modulated Continuous Wave (FMCW) Synthetic Aperture Radar (SAR) systems requires to accurately know the electronic parameters of the system. In particular, the use of an incorrect value of the Frequency Sweep Rate (FSR) introduces geometric distortions in the focused images. Recently, a method, that we name FSR Estimate Through Corner reflectors (FSRETC), has been proposed to estimate the FSR value actually employed by the radar. The method is based on the use of the SAR image focused with the available erroneous FSR. Moreover, it exploits a number of Corner Reflectors (CRs) deployed over the illuminated area. In this work, we provide an assessment of the capabilities of the FSRETC algorithm. The overall analysis is performed through the use of a real dataset consisting of 10 acquisitions carried out in 2018 (5 acquisitions) and 2019 (5 acquisitions) with an airborne FMCW SAR system. The presented experimental analysis shows that even with a single acquisition, use of two CRs sufficiently far from each other in the range direction, allows achieving an accurate estimate of the searched FSR. Moreover, it is shown that the obtained estimate is very stable over the time. Therefore, the overall procedure can be applied only once, since the estimated values can be safely used for the subsequent missions, at least for the time interval considered in the work, that is, 14 months. In addition, the presented results pose the basis for an enhanced measurement strategy that allows effective application of the FSRETC algorithm through the use of only one CR.

The retrieval of soil surface parameters, in particular soil moisture and roughness, based on Synthetic Aperture Radar (SAR) data, has been the subject of a large number of studies, of which results are available in the scientific literature. However, although refined methods based on theoretical/analytical scattering models have been proposed and successfully applied in experimental studies, at the operative level very simple, empirical models with a number of adjustable parameters are usually employed. One of the reasons for this situation is that retrieval methods based on analytical scattering models are not easy to implement and to be employed by non-expert users. Related to this, commercially and freely available software tools for the processing of SAR data, although including routines for basic manipulation of polarimetric SAR data (e.g., coherency and covariance matrix calculation, Pauli decomposition, etc.), do not implement easy-to-use methods for surface parameter retrieval. In order to try to fill this gap, in this paper we present a user-friendly computer program for the retrieval of soil surface parameters from Polarimetric Synthetic Aperture Radar (PolSAR) imageries. The program evaluates soil permittivity, soil moisture and soil roughness based on the theoretical predictions of the electromagnetic scattering provided by the Polarimetric Two-Scale Model (PTSM) and the Polarimetric Two-Scale Two-Component Model (PTSTCM). In particular, nine different retrieval methodologies, whose applicability depends on both the used polarimetric data (dual- or full-pol) and the characteristics of the observed scene (e.g., on its topography and on its vegetation cover), as well as their implementation in the Interactive Data Language (IDL) platform, are discussed. One specific example from Germany’s Demmin test-site is presented in detail, in order to provide a first guide to the use of the tool. Obtained retrieval results are in agreement with what was expected according to the available literature.

Airborne Synthetic Aperture Radar (SAR) systems are gaining increasing interest within the remote sensing community due to their operational flexibility and observation capabilities. Among these systems, those exploiting the Frequency-Modulated Continuous-Wave (FMCW) technology are compact, lightweight, and comparatively low cost. For these reasons, they are becoming very attractive, since they can be easily mounted onboard ever-smaller and highly flexible aerial platforms, like helicopters or unmanned aerial vehicles (UAVs). In this work, we present the imaging and topographic capabilities of a novel Italian airborne SAR system developed in the frame of cooperation between a public research institute (IREA-CNR) and a private company (Elettra Microwave S.r.l.). The system, which is named AXIS (standing for Airborne X-band Interferometric SAR), is based on FMCW technology and is equipped with a single-pass interferometric layout. In the work we first provide a description of the AXIS system. Then, we describe the acquisition campaign carried out in April 2018, just after the system completion. Finally, we perform an analysis of the radar data acquired during the campaign, by presenting a quantitative assessment of the quality of the SLC (Single Look Complex) SAR images and the interferometric products achievable through the system. The overall analysis aims at providing first reference values for future research and operational activities that will be conducted with this sensor.

Spatial variability inside a vineyard has been always difficult to be measured in order to valorize the enological potential of the grapes. Remote Sensing is a technique that can be used for improving wine quality through the identification of Management Zones in the fields and the consequent differential grape harvest. The technique is based on the use of Vigor Vegetation Indices, that allow to identify the variations of the grape growth and the composition of the grape in the vineyard, and the changes that happen over time. Agricolus software provides these features and it has been used successfully in some vineyards in the center of Italy.

Marine X-band radar based systems are well tested to provide information about sea state and bathymetry. It is also well known that complex geometries and non-uniform bathymetries provide a much bigger challenge than offshore scenarios. In order to tackle this issue a retrieval method is proposed, based on spatial partitioning of the data and the application of the Normalized Scalar Product (NSP), which is an innovative procedure for the joint estimation of bathymetry and surface currents. The strategy is then applied to radar data acquired around a harbour entrance, and results show that the reconstructed bathymetry compares well with ground truth data obtained by an echo-sounder campaign, thus proving the reliability of the whole procedure. The spectrum thus retrieved is then analysed to show the evidence of reflected waves from the harbour jetties, as confirmed by chain of hydrodynamic models of the sea wave field. The possibility of using a land based radar to reveal sea wave reflection is entirely new and may open up new operational applications of the system.

As part of the implementation of the Water Framework Directive 2000/60/CE, ARPA Umbria performed in 2015 an anthropogenic pressures analysis on water bodies, in order to update the Umbria Region Water Bodies Protection Plan and the District Water Plans. Point source pressures, both civil and industrial, were analyzed. A complex methodology was developed, based on a matrix approach with a discretization of 100x100m grid and an algorithm to calculate the pollutant loads from the information available in the wastewaters database of Umbria region. Several geoprocessing models were created, with a Model Builder tool, allowed to estimate pollutant loads in surface waters and groundwaters.

This work is aimed at showing the present capabilities and future potentialities of an imaging radar system that can be mounted onboard flexible aerial platforms, such as helicopters or small airplanes, and may operate in the UHF and VHF frequency bands as Sounder and as Synthetic Aperture Radar (SAR). More specifically, the Sounder operates at 165 MHz, whereas the SAR may operate either at 450 MHz or at 860 MHz. In the work, we present the first results relevant to a set of Sounder and SAR data collected by the radar during a helicopter-borne campaign conducted in 2018 over a desert area in Erfoud, Morocco, just after the conclusion of a system upgrading procedure. In particular, a first analysis of the focusing capabilities of the Sounder mode and of the polarimetric and interferometric capabilities of the SAR mode is conducted. The overall system, originally developed by CO.RI.S.T.A. according to a ASI funding set up in 2010, has been upgraded in the frame of a contract signed in 2015 between ASI and different private and public Italian Research Institutes and Universities, namely CO.RI.S.T.A., IREA-CNR, Politecnico di Milano and University of Trento.

In this work, we investigate the sea surface monitoring capabilities of a Synthetic Aperture Radar (SAR) system equipped with a three-antenna hybrid Across Track (XT)/Along Track (AT) inteferometric configuration. To do this, we focus on the X-Band airborne InSAeS4 SAR system. Moreover, we propose a simple but effective methodology that allows simultaneous retrieval of the sea surface height and velocity by means of a straightforward, easy-to-implement, linear inversion procedure, which is very general and can be implemented with any system equipped with a three-antenna hybrid XT/AT Interferometric SAR (InSAR) configuration. In our case, we present an experiment carried out in January 2013 in South Italy over the coastline stretch of the Campania region including the Volturno River outlet. In this regard, we highlight that in situ measurements of the retrieved sea surface height and velocity at the time of the airborne mission are unfortunately not available. Notwithstanding, the obtained results show some interesting evidence that the estimated quantities are physically sound. This, on the one side, provides a preliminary validation of the effectiveness of the overall presented methodology and, on the other side, highlights the potentialities of the three-antenna hybrid XT/AT InSAR configuration of the InSAeS4 system for sea state monitoring.

This paper deals with the recent advances performed by State Research Center “Iceberg” (SRC) in the field of the passive imaging at millimeter wavelengths. In particular, first the paper describes the design and the realization of two systems working in 3 mm and 8 mm wave bands, respectively. Second, the measurements collected by the two systems are enhanced by means of simple data processing strategies developed by the Institute for Electromagnetic Sensing of the Environment (IREA-CNR).

One of the most advanced tools for e-learning is the Virtual Scientific Experiment (VSE). Its value for theoretical research and practical employment relies (a) on the chance it provides to integrate traditional conceptual contents with no explicit and no declarative forms of teaching, (b) on its massively exploitation of modern ICT instruments, and, fi nally, (c) on its capacity to instantiate extremely interactive and constructive learning models. In this paper we provide a characterization of VSE that takes into account the relation between the properties of the formative domain (the system of knowledge the student should learn) and those of the formative object (the specifi c VSE).The result is a model of knowledge based on the concept of action as a connection between formative states. Studying topological properties of the representations and dynamics of VSEs, we identify three basic structures: convergent, multi-convergent, and by propagation. Each of these structures has specifi c properties which should be considered during the design and assessment of learning processes by VSE. Firstly, we provide the theoretical analysis by the means of which we build the single model: we show how to formalize system actions and confi guration and we describe how to apply this analysis to the learning dynamics which takes place as the VSE is being used. Secondly, we introduce a case study for each model in order to clarify empirically how they work.

Abstract This study investigated the effect of the inclusion of extruded linseed and hazelnut skin on fatty acid (FA) metabolism in finishing lambs. Forty lambs were divided into 4 groups and fed for 60 d with: a conventional cereal-based diet, or the same diet with 8% of extruded linseed, or 15% of hazelnut skin, or 4% of linseed plus 7.5% of hazelnut skin as partial replacement of maize. Dietary treatments did not affect growth performances, carcass traits, and ruminal fermentation. The combined effect of linseed and hazelnut skin enriched the intramuscular fat with health promoting FA. Particularly, increases in α-linolenic acid (3.75-fold), and very long-chain n-3 poly-unsaturated FA (+ 40%) were attributed to the supplementation with linseed, rich in α-linolenic acid. In addition, increases in rumenic (+ 33%), and vaccenic (+ 59%) acids were attributed to hazelnut skin tannins modulating ruminal biohydrogenation and accumulating intermediate metabolites. The simultaneous inclusion of linseed and hazelnut skin can be a profitable strategy for enriching the intramuscular fat of lambs with health promoting FA, without adverse effects on ruminal fermentation and animal performance.

Background: The high dairy production of Polish Holstein Friesian (PHF) cows determines high energy requirements in the early stages of lactation. Unfortunately, it is very often difficult to meet this demand through feedstuffs; therefore, homeostasis may be disturbed and metabolic diseases may occur, causing a majority of cows’ health problems. Breeders are, therefore, looking for alternatives to the PHF breed using crossbreeding. Methods: This experiment involved 30 PHF cows and 30 PHF × Swedish Red (SRB) crossbred hybrid cows, divided into two age groups, 2 years, at first calving. Milk and blood samples were collected at 35 ± 5 days postpartum for analysis. Data on reproductive performance were also analyzed. Results: This study revealed lower milk production for the crossbreds hybrid (27.44 kg compared to 32.08 kg), with a higher basic composition content than PHF cows (fat: 3.97% compared to 3.83%, protein: 3.53% compared to 3.27%). The heifers of the crossbreds hybrid reached sexual maturity earlier but did not affect the lower age at first calving. Dividing the cows into age categories provided a more detailed perspective of the impact of genotypic differences on reproductive and metabolic profiles in PHF and PHF × SRB cattle. The findings highlight the importance of considering age-specific effects when assessing the performance and health of dairy cattle with diverse genotypes. Conclusions: The choice between PHF and PHF × SRB should depend on the specific goals and priorities of the cattle farming operation. Factors such as overall milk yield requirements, market demands, reproductive management strategies, and health considerations should be carefully evaluated to determine the most suitable breed for a given farming context.

Abstracts: To determine the effects of dietary inclusion of bergamot pulp and olive leaves on pork quality, thirty-six barrows (Apulo-Calabrese; 112.5 ± 7.40 kg initial bodyweight) were randomly assigned to four experimental treatments and fed for 100 days a control diet (control group) or a diet similar to the control diet in which part of the cereals were replaced with 20 % (DM on the diet fed) of ensiled bergamot pulp (dry matter on the diet fed, EBP group) or olive leaves (OLL group) or a 1:1 mixture of both by-products (BPOL group).In the present study, the dietary administration of by-products did not influence the accumulation of IMF (P > 0.05) in meat. As for individual fatty acids, no differences were observed among groups. However, the dietary supplementation of bergamot pulp tended to increase (P = 0.073) the level of α-linolenic acid in meat. In this study, the effect of hazelnut skin dietary supplementation on antioxidant status and cytokine profile was evaluated in growing lambs. A total of 22 male lambs at the age of 2 months, balanced for their initial live weight (15.33 ± SD 1.79 kg), were selected and allocated into two experimental groups: the control group (CON) receiving a maize-barley-based concentrated diet, and the hazelnut group (HS) receiving supplementation with hazelnut skin (150 g/kg on the dry matter) as a maize substitute for the concentrate diet. The experiment lasted for 56 days. Peripheral blood was collected at 7, 35, and 56 days of the experiment. The free radical scavenging activity using 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging assay, the total antioxidant capacity assay (TAC), the reactive oxygen species (ROS), and reactive nitrogen species (RNS) were determined in plasma. The secretion of IL-1β, IL-6, and IL-10 cytokines was also determined by ELISA. The DPPH was affected by the interaction between feeding strategy and time of sampling (p = 0.039) with a higher level of DPPH at 7 days in the HS group than the CON group. Abstract Background Magnolia bark extract (MBE) is a natural supplement with antioxidant, anti-inflammatory, and antimicrobial activities. Its properties suggest that the dietary supplementation in livestock could improve the quality of products. Therefore, the aim of this study was to investigate, for the first time, the effect of dietary MBE supplementation (0.33 mg/kg) in finishing pigs on the oxidative stability of meat. Oxidative stability is of paramount importance for pork, as it affects storage, retail, and consumer acceptance. For the purpose, the fatty acid profile, cholesterol, fat-soluble vitamins, antioxidant enzymes (catalase, glutathione peroxidase, and superoxide dismutase), non-enzymatic antioxidant capacity (TEAC, FRAP, and Folin-Ciocalteu assays), color stability, and lipid stability of pork were assessed. Results Concerning carcass characteristics, dietary MBE did not affect cold carcass yield, but reduced (P = 0.040) the chilling weight loss. The meat from pigs fed MBE had a lower (P = 0.031) lightness index than the control meat. No effect on intramuscular fat, cholesterol, and fatty acid profile was observed. Dietary MBE did not affect the content of vitamin E (α-tocopherol and γ-tocopherol) in pork, whereas it reduced (P = 0.021) the retinol content. The catalase activity was 18% higher (P = 0.008) in the meat from pigs fed MBE compared with the control group. The MBE supplementation reduced (P = 0.039) by 30% the thiobarbituric acid reactive substances (TBARS) in raw pork over 6 d of aerobic refrigerated storage. Instead, no effect on lipid oxidation was observed in cooked pork. Last, the meat from pigs fed MBE reduced Fe3+-ascorbate catalyzed lipid oxidation in muscle homogenates, with a lower (P = 0.034) TBARS value than the control group after 60 min of incubation. Conclusions Dietary MBE supplementation in finishing pigs delayed the lipid oxidation in raw meat. This effect was combined with an increased catalase concentration. These results suggest that dietary MBE could have implications for improving the shelf-life of pork.

This study assessed the impact of different calf rearing systems on calf health, behavior, meat quality, and oxidative stability. The study involved two groups of bull calves: conventionally penned calves (control, fed with use of automatic feeders) and calves reared alongside foster cows (experimental). The presence of foster cows was found to have a significant positive influence on calf health. Calves raised with foster cows experienced lower rates of diarrhea, delayed instances of coughing, and a reduced occurrence of rhinitis compared to conventionally reared calves. Behavioral observations revealed differences in sucking and licking behaviors between the two groups. Calves with foster cows displayed more consistent patterns of these behaviors, while conventionally reared calves exhibited greater variability. Additionally, the experimental group consistently achieved higher daily weight gains, suggesting the potential for larger and more valuable carcasses at slaughter. Importantly, there were no significant differences in the quality of veal between the two rearing groups. This included fatty acid composition, color attributes, and myoglobin levels, indicating consistent meat quality. In summary, this research highlights the advantages of rearing systems that prioritize calf health and behavior, emphasizing maternal care and natural behaviors. Such systems hold promise for improving calf welfare and enhancing the sustainability of the meat production industry. The integration of foster cows into dairy farming practices emerges as a practical and effective approach, particularly for the rearing of bull calves.

The reuse of by-products from the agro-industry in animal feeding is desirable to increase the sustainability of the productions. Hazelnut skin is a by-product of the food industry and due to the high content in crude fat and phenolic compounds can be potentially used in ruminants’ diet. In this study, we characterised and compared the microbial communities of rumen digesta (RD) from lambs fed a diet supplied with hazelnut skin vs. a control diet. Microbial DNA was extracted and high-throughput sequencing of 16S rRNA gene amplicons was performed. Six genera ([Eubacterium] nodatum group, Acidaminococcus, Dialister, Erysipelotrichaceae UCG-002, Megasphaera, and Olsenella) showed a positive correlation with the concentration of C18:1 t10, and their relative abundance was higher in the RD from lambs fed the control diet, compared to the RD from lambs fed the diet supplied with hazelnut skin. The results suggest that the relative abundance of microorganisms correlated to C18:1 t10 production in the rumen of animals fed a concentrate-based diet can be reduced by the administration of hazelnut skin.Highlights A diet with hazelnut skin affected the microbial community in the rumen of lambs The relative abundance of the genus Dialister decreased with hazelnut skin Administration of hazelnut skin can be a strategy to reduce the C18:1 t10/t11 ratio

Among grain pulses, lupins have recently gained considerable interest for a number of attractive nutritional attributes relating to their high protein and dietary fiber and negligible starch contents. The seeds of Lupinus albus (cv. Multitalia and Luxor, and the Modica ecotype); L. luteus (cv. Dukat, Mister, and Taper); and L. angustifolius (cv. Sonet) analyzed in this study were deposited within the germplasm collection of the Research Centre for Cereal and Industrial Crops of Acireale and were sowed in East Sicily in 2013/14. The collected seeds were analyzed for their multielemental micro- and macronutrient profiles, resulting in a wide variability between genotypes. Lupin seed flour samples were subjected to a defatting process using supercritical CO2, with oil yields dependent on the species and genotype. We determined the fatty acid profile and tocopherol content of the lupin oil samples, finding that the total saturated fatty acid quantities of different samples were very close, and the total tocopherol content was about 1500.00 µg/g FW. The proteomic analysis of the defatted lupin seed flours showed substantial equivalence between the cultivars of the same species of Lupinus albus and L. luteus. Moreover, the L. angustifolius proteome map showed the presence of additional spots in comparison to L. albus, corresponding to α-conglutins. Lupin, in addition to being a good source of mineral elements, also contributes vitamin E and, thanks to the very high content of gamma-tocopherols, demonstrates powerful antioxidant activity.

Five groups of lambs (n = 9 each) were used to test the effect of plant extracts rich in hydrolysable (HT) or condensed tannin (CT) on animal performance, fatty acid composition of rumen content, liver and meat. The control group (CO) received a concentrate-based diet without tannins supplementation. The other groups received the same diet as the control lambs plus 4% chestnut (CH) and tara (TA) extracts as a source of HT and mimosa (MI) and gambier (GA) extracts as a source of CT. One-way ANOVA was used to assess the overall effect of dietary treatments, tannins supplementation (CO vs. CH+TA+MI+GA) and the effect of tannin type (HT vs. CT: CH+TA vs. MI+GA) on animal performance, rumen content, liver and intramuscular FA. Dietary CH negatively affected animal performance. The rumen content of the different groups showed similar levels of 18:3 c9c12c15, 18:2 c9c12, 18:2 c9t11, 18:1 t11 and 18:0, whereas 18:1 t10 was greater in CO. Also, 18:1 t10 tended to be lower in the rumen of HT than CT-fed lambs. These data were partially confirmed in liver and meat, where CO showed a greater percentage of individual trans 18:1 fatty acids in comparison with tannins-fed groups. Our findings challenge some accepted generalizations on the use of tannins in ruminant diets as they were ineffective to favour the accumulation of dietary PUFA or healthy fatty acids of biohydrogenation origin in the rumen content and lamb meat, but suggest a generalized influence on BH rather than on specific steps.

An investigation was carried out on the effect in pig diet of supplementation with exhausted bergamot by-product, stemming from pharmaceutical industry after extraction of phenolic compounds, on growth performance and on the quality of meat and meat products. Twenty pigs were assigned to two dietary treatments and fed a conventional concentrate (control) or a concentrate including exhausted bergamot by-product at the level of 15% on a DM basis (EB). No significant differences between dietary treatments were found for final weight (p = 0.243), carcass weight (p = 0.679), dry matter intake (p = 0.321). In EB pork, the proportion of docosapentaenoic acid was significantly increased (p < 0.05); it tended to have a greater proportion of n-3 PUFA (p = 0.09), and the n-6/n-3 PUFA ratio was lower in EB treatment (p = 0.01). In salami from EB pigs fed, the proportion of α-linolenic acid and the total n-3 PUFA were higher than in the control group (p < 0.001). In salami, the TBARS value was lower after 5 days of storage (p < 0.001) in the EB group. Therefore, the present results suggest that the inclusion of exhausted bergamot by-product in pig diet resulted in a qualitative improvement of meat and meat products.

Hazelnut peel (HNP), a by-product from the chocolate industry, is considered to be a suitable ingredient to be included in the diet of ruminants. This study aimed to evaluate the effect of feeding dairy ewes with a diet containing HNP on ripened cheese quality, including fatty acid (FA) profile, cholesterol, and tocopherol content, as well as stability during storage under commercial conditions. In total, 10 experimental cheeses were produced with bulk milk obtained from ewes fed a commercial concentrate (C group; n = 5) or a concentrate containing 36% HNP in dry matter (HNP group; n = 5). After 40 days of aging, each cheese was sub-sampled into three slices: one was analyzed immediately (C0 and HNP0), and the other two were refrigerated and analyzed after seven days (C7 and HNP7) and 14 days (C14 and HNP14), respectively. Compared to C, HNP cheese had more than twice as many tocopherols and mono-unsaturated FA and respectively 38% and 24% less of cholesterol and saturated FA. Tocopherols and cholesterol levels remained rather stable up to 14 days of storage regardless of the experimental group, suggesting no cholesterol oxidation. Therefore, the inclusion of HNP in ewe diets could be a valid resource to produce cheese with a healthier lipid profile and higher tocopherols content.

The present study aims to investigate the effect of dietary supplementation based on a blend of microencapsulated organic acids (sorbic and citric) and essential oils (thymol and vanillin) on chicken meat quality. A total of 420 male Ross 308 chicks were randomly assigned to two dietary treatments: the control group was fed with conventional diet (CON), while the other group received the control diet supplemented with 0.5% of a microencapsulated blend of organic acids and essential oils (AVI). In breast meat samples, intramuscular fat content and saturated/polyunsaturated fatty acids ratio were reduced by AVI supplementation (p < 0.05). Moreover, atherogenic (p < 0.01) and thrombogenic (p < 0.05) indices were lower in AVI than CON treatment. AVI raw meat showed a lower density of psychrotrophic bacteria (p < 0.05) at an initial time, and higher loads of enterococci after 4 days of refrigerated storage (p < 0.05). No contamination of Listeria spp., Campylobacter spp., and Clostridium spp. was found. TBARS values of the cooked meat were lower in the AVI treatment compared to CON (p < 0.01). Among colour parameters, a*, b* and C* values increased between 4 and 7 days of storage in AVI cooked meat (p < 0.05). Overall, organic acids and essential oils could improve the quality and shelf-life of poultry meat.

The hazelnut skin is waste biomass rich in bioactive compounds that may affect lipid rumen metabolism, ruminant performance, and products’ quality. Therefore, we investigated the effect of dietary hazelnut skin on milk production and composition and on rumen fatty acids in ewes. During 28 days, 20 Comisana lactating ewes received alfalfa hay ad libitum plus 800 g/head/day of pelleted concentrate containing 36% dried beet pulp (CTRL group; n = 10) or 36% hazelnut skin (HS group; n = 10). The protein percentage was lower in HS milk. Milk fatty acids (FA) partially reflected those of rumen content. Total saturated FA (SFA), odd and branched-chain FA, and n-3 polyunsaturated FA (PUFA) were greater in CTRL milk. Total monounsaturated FA (MUFA) and 18:1 trans were greater in HS milk; moreover, HS milk showed a double percentage of oleic acid than the CTRL group. Individual SFA were greater in CTRL milk except for 18:0. Differing from the rumen content, total PUFA, n-6 PUFA, and 18:2 n-6 were comparable between groups. Vaccenic and rumenic acid were greater in HS milk. To conclude, dietary HS slightly reduced milk protein percentage but improved atherogenic index and healthy FA in milk. The content of the somatic cells suggested a healthier udder in the HS group.

Two extracts derived from plant material rich in hydrolysable (Tara, T; Caesalpinia spinosa) or condensed (Mimosa, M; Acacia mearnsii) tannins were added to lamb’s diet and their effects on meat quality and on microbial population were evaluated; a diet without tannins represented the Control (C). Meat pH, vitamin E, intramuscular fat content and muscle fatty acid composition were determined. Oxidative stability and microbiological analyses were performed on meat samples after 0, 4 and 7 days of refrigerated storage. Psychrotrophic bacteria were identified through MALDI-TOF MS analysis. Regarding meat fatty acids, Tara treatment decreased the percentage of monounsaturated fatty acids. The counts of all microbial groups were similar among dietary treatments at day 0, while a significant reduction of microbial loads was observed in T-group at day 7. Pseudomonas fluorescens group count was significantly affected by T extract supplementation. The MALDI-TOF MS identification revealed the dominance of Pseudomonas fragi species in all samples while Pseudomonas lundensis, Brochothrix thermosphacta and Candida famata were revealed only in control ones. In conclusions, the tannin extract supplementation is a promising dietary strategy to preserve lamb meat quality.

Pomegranate pulp, a by-product of the pomegranate juice industry, contains a remarkable quantity of bioactive compounds that can favorably affect ruminant metabolism and milk quality. The present paper investigated the effect of dietary pomegranate pulp on milk yield and quality during late lactation in grazing ewes. Twenty Comisana ewes (150 ± 10 days in milk) were subdivided into control (CTRL) and pomegranate (PP) groups. The CTRL group received a corn-barley based concentrate, while the PP group received a concentrate containing 64.8% pomegranate pulp. Dietary treatment did not affect milk yield. CTRL milk had a greater percentage of β-casein and total casein, while αs1-casein percentage tended to be greater in the PP group. The PP milk showed a lower percentage of 14:0, 16:0, but a greater percentage of vaccenic, rumenic, and α-linolenic acid. Punicic acid was detected only in the PP milk. Total antioxidant capacity (ORAC) was greater in the CTRL milk as compared with the hydrophilic ORAC. Dietary pomegranate pulp increased milk health quality with no detrimental effects on milk yield. Therefore, pomegranate pulp could represent a strategy for improving milk quality and reducing feeding cost during a less profitable phases such as late lactation. Also, dietary pomegranate pulp, as an alternative to traditional feedstuffs, may lower feed-to-food competition in livestock production.
