Supplementation of omega-3 fatty acids is considered a valuable strategy to supply the low intake of these fatty acids. Thus, the safety of the supplements is an important milestone. Because of that, we analyzed 20 unflavored supplements sold in the French market for fatty acid and triglyceride composition, for EPA and DHA, and for tocol content, as well as for oxidative status. This study found that only 2.5% of the supplements did not meet their label claims for omega-3 content. TAG analysis showed high variability among the triglyceride distribution, and the same trend was also noticed for the tocol content; in fact, a high variability of the distribution of the six tocols (four tocopherols and two tocotrienols) was found among the samples. Of the tested products, all of them complied with peroxide value, p-anisidine value, and Totox values established by the Global Organization for EPA and DHA Omega-3s (GOED) and were not oxidized. Six cold-pressed oil samples obtained from the seeds of different grape varieties grown in a Fruška Gora vineyard in the Republic of Serbia were examined for chemical and nutritive quality, as well as antiradical capacity. All the tested samples were of good quality, but the results showed noticeable differences in seed oil properties for red and white grape varieties. The highest content in total tocols, 575.23 ± 4.46 mg/kg, was found in the red grape seed oil of the Merlot variety, but the vitamin E activity of white grape seed oils was significantly higher. Regarding single phenols, the most prevalent fraction in all the oil samples was ursolic acid, up to 336.3 ± 4.8 μg/g in the grape seed oil of the Hamburg variety. The highest content in the total phenolic compounds, 54.92 ± 0.93 μg GAE/g, was detected in the oil of red grape seeds. Although significant differences existed between samples, EC50 values were the lowest for the red grape seed oils, varying from 29.84 ± 1.07 to 65.34 ± 0.32 mg oil/mg DPPH, indicating that these oils had the highest antiradical capacity.

[Display omitted] • HPPI-TOFMS was introduced for rapid evaluation of oxidative deterioration in edible oils via effective detection of their VOCs fingerprints change under thermal-oxidation or photo-oxidation. • For the first time, non-targeted discrimination of oxidized oils into various oxidation degrees was realized by coupling HPPI-TOFMS with OPLS-DA. • Nonanal in extra virgin olive oils, 2-pentylfuran in peanut oils, trans -2-heptenal in sunflower oils and trans– trans -2, 4-heptadienal in corn oils were selected as potential oxidation indicators. Since lipid oxidation often causes serious food safety issues worldwide, determination of oil's oxidative deterioration becomes quite significant, which still calls for efficient analytical methods. In this work, high-pressure photoionization time-of-flight mass spectrometry (HPPI-TOFMS) was firstly introduced for rapid detection of oxidative deterioration in edible oils. Through non-targeted qualitative analysis, oxidized oils with various oxidation levels were successfully discriminated for the first time by coupling HPPI-TOFMS with the orthogonal partial least squares discriminant analysis (OPLS-DA). Furthermore, by targeted interpretation of the HPPI-TOFMS mass spectra and the subsequent regression analysis (signal intensities vs TOTOX values), good linear correlations were observed for several predominant VOCs. Those specific VOCs were promising oxidation indicators, which would play important roles as TOTOX to judge the oxidation states of tested samples. The oxidative properties of sunflower oil supplemented with rambutan extract, (crude extract and its fractionated fraction, SF II) in comparison with synthetic antioxidant were investigated. The supplemented sunflower oils were stored under accelerated conditions for 24 days at 60 °C. For every 6-day interval, the oxidative properties of the supplemented sunflower oil were evaluated based on the following tests, namely peroxide value, p-anisidine value, Thiobarbituric Acid Reactive Substances (TBARS) assay, iodine value and free fatty acids. The total oxidation (TOTOX) values were also calculated based on the peroxide values and p-anisidine values. Rambutan extract is a potential source of antioxidant. The oxidative activities of the extracts at all concentrations were significantly (p < 0.05) higher than the control. Generally, the partially fractionated fraction was more effective than the crude extract. With a 2-year storage period at ambient temperature, the fractionated fraction of the extract, SF II at 300 ppm, was observed to work more effectively than the synthetic antioxidant, t-Tocopherol, and it possessed a protective effect comparable with butylatedhydrioxynanisole (BHA). Therefore, rambutan extract could be used as a potential alternative source of antioxidant in the oil industry or other fat-based products to delay lipid oxidation.

In this study, palm olein was enriched by CLA-rich oil (Clarinol® G-80) so that final blends contained approximately 10, 20 and 30 % CLA. The blends were then used for frying of potato slices to prepare its chips. The process was conducted at 180 °C for 1 h/day in 5 consecutive days. Each batch of potato slices was fried for 3 min and total frying cycles was ten per hour in a day. The oil quality was assessed by iodine, free fatty acid, peroxide, thiobarbituric acid (TBA) and conjugated dienes (CD) values, color, total polar compounds (TPC) and fatty acids profile. At the end of frying, Totox value showed that the oils containing CLA were more stable than control sample which might be due to antioxidant effect of CLA. However, by increment in CLA content, the oil stability was decreased. The lowest change in values of TPC (18 %), CD (44.5 %) and Totox (6.3 times) belonged to the frying oil enriched by 10 % of CLA-rich oil. Regarding to oil qualitative parameters, it was concluded that CLA oil could be utilized successfully to enrich frying oil and increase probably nutritional value of fried food products. However, more studies are needed to substantiate the hypothesis of CLA antioxidant effect in frying oil. [ABSTRACT FROM AUTHOR]
