High internal phase Pickering emulsions (HIPEs) constitute a significant research domain within colloid interface chemistry, addressing the demand for robust emulsion systems across various applications. An innovative nanoparticle, synthesized from a cyclodextrin metal-organic framework encapsulated with a composite of resveratrol and soy isolate protein (RCS), was employed to fortify a high internal phase emulsion. The emulsion's three-dimensional printing capabilities, alongside the encapsulated delivery efficacy for β-carotene, were thoroughly examined. Cyclodextrin metal-organic frameworks (CD-MOFs), facilitated by cellulose nanofibrils, were synthesized to yield particles at the nanoscale, maintaining a remarkable 97.67 % cellular viability at an elevated concentration of 1000 μg/ml. The RCS nanoparticles demonstrated thermal stability and antioxidant capacities surpassing those of CD-MOF. The integration of soybean isolate protein augmented both the hydrophobicity (from 21.95 ± 0.64° to 59.15 ± 0.78°) and the interfacial tension (from 14.36 ± 0.46 mN/m to 5.34 ± 0.81 mN/m) of the CD-MOF encapsulated with resveratrol, thereby enhancing the RCS nanoparticles' adsorption at the oil-water interface with greater stability. The durability of the RCS-stabilized high internal phase emulsions was contingent upon the RCS concentration. Emulsions stabilized with 5 wt%-RCS exhibited optimal physical and chemical robustness, demonstrating superior performance in emulsion 3D printing and β-carotene encapsulation delivery. Background: The incorporation of β-carotene, one of the most common pigments or bioactives, into food formulations has attracted increasing interest from the food industry, due to its good nutrition and potential health effects. However, it is poorly soluble and unstable in water, which greatly limits its applications in foods. This work presented an effective approach to improve the water dispersibility, stability and even bioaccessibility of β-carotene, using soy protein isolate (SPI) to perform as effective nanocarriers for this molecule., Results: The complexation with SPI remarkably improved the water dispersibility and stability against heating and freeze-drying of β-carotene. However, the encapsulation efficiency and stability of β-carotene in the nanocomplexes with SPI were closely dependent on the applied β-carotene-to-protein ratio, at which the complexation occurred. The best improvement of stability was observed at appropriate β-carotene-to-protein ratios, e.g. 10-20 g kg -1 . The complexation with β-carotene mainly occurred on the surface of SPI nanoparticles, through hydrophobic interactions. The complexation resulted in inter-particle aggregation, in a concentration-dependent manner. A series of linoleic acid conjugated hydroxyethyl cellulose polymers (HEC-g-LA) were synthesized and characterized. And their solubilities in a variety of solvents were compared. The prepared HEC-g-LA polymers showed typical properties of amphiphilic polymers and were able to self-assemble into spherical nanomicelles in aqueous solution. The micelle sizes and critical micelle concentrations (CMC) were found correlated with the molecular structure of polymers, and were varied in the range of 20-50nm and 1.92-21.76μg/ml, respectively. Furthermore, the hydrophobic active component β-carotene (β-C) was successfully encapsulated into the HEC-g-LA micelles by sonication-dialysis method. The β-C encapsulation efficiency and loading content were found to be as high as 84.67% (w/w) and 4.23%. The results of in vitro release showed that the encapsulated β-C was continuously released from the micelles in phosphate buffered saline (PBS) medium for about 7days. β-Carotene (β-C) is a well-established natural antioxidant agent, but its poor water-solubility, low chemical stability and low bioavailability limit its application in food, pharmaceuticals and cosmetics industries. Thus it is critical to develop an efficient method to improve the water solubility and stability of β-C. In this research, amphiphilic chitosan-graft-poly (lactide) (CS-g-PLA) copolymer was synthesized via a homogeneous ring-opening polymerization (ROP) in ionic liquid. The obtained CS-g-PLA copolymer was able to self-assemble into about 14 nm micelles in water at low concentration, and β-C loaded micelles (β-C/M) had low β-C degradation after 15 days. The antioxidant properties of the β-C/M were investigated by the 2, 2-diphenyl-1-picrylhydrazyl (DPPH) method and ferric reducing antioxidant power (FRAP) method, respectively. Significantly improved antioxidant activity was observed for β-C/M in compare with free β-C.
