It has been more than a hundred years since we discovered that the Sun not only has a magnetic field, but that it displays intense activity evolving according to an eleven-year cycle. This field is most certainly originated by a fluid dynamo inside the star. Although the evolution of the dynamo field is purely internal to the star, this field crosses the star's surface to influence the corona and interact with the solar wind, which is a continuous flow of charged particles that reaches the Earth. This interaction is yet not well characterized and very difficult to model due to the disparity of space and time scales and the diversity of physical mechanisms at stake (plasma regime change, turbulence, heating...). However this coupling between the dynamo and the wind is a key topic for the upcoming space missions like Parker Solar Probe or Solar Orbiter, and constitutes a crucial knowledge to improve the space weather models to anticipate the impact of the solar wind on the Earth spatial environment. This is precisely this interaction between magnetic activity and solar wind that this manuscript will study in detail thanks to a theoretical study based on numerical simulations and interpretation of solar data. In a first part, this manuscript presents the fundamental concepts needed to understand the various layers of the Sun, including its internal ones with the generation of magnetic field, and its atmosphere where the solar wind is accelerated. In a second part, we focus on the coupling between dynamo and wind with two different approaches. First we study only the influence of the magnetic field on the wind, without feedback : using magnetic configurations extracted from a Babcock-Leighton dynamo with flux-transport, we perform 54 wind simulations to cover an activity cycle, and thus see the evolution of the corona according to the amplitude and topology of the magnetic field. This study shows the influence of the topology on the structure of the corona and on several integrated quantities such as the Alfvén radius or the angular momentum loss, with variations of respectively a factor 2 and 3.5. This study also includes the propagation of a north-south asymmetry from the dynamo field to the solar wind, and shows that the asymmetry is transmitted but reduced, which agrees with solar observations. Then we advanced to the next challenge by developing the first large scale coupling model between the internal dynamo and the dynamical atmosphere of the Sun within the same numerical simulation. We show the auto-consistent evolution of the corona structure and the integrated quantities for conditions of a young Sun. The major result of this study is the first quantification of the feedback of the wind on the internal magnetic field by modifying the boundary condition, which we demonstrate by comparing our results to a dynamo case with pontial boundary condition. Finally, in a third part, we extend our study from 2.5D to 3D, and to the solar system and other solar-type stars. We question the impact on Earth with a space weather approach : with simulations reaching one Astronomical Unit, we study the influence of the magnetic amplitude and topology on cosmic rays. This manuscript ends with an overture to other solar-type stars : we investigate the dynamo in G and K type stars, its feedback on rotation and thus on the long-term evolution of the star, and the consequences for the associated stellar wind., Depuis plus de cent ans, nous savons que le Soleil non seulement possède un champ magnétique, mais qu'en plus celui-ci est associé à une activité intense qui suit un cycle de presque onze ans. L'origine de ce champ est vraisemblablement une dynamo fluide au sein de notre étoile. Bien que l'évolution du champ magnétique dynamo soit purement interne, ce champ traverse la surface du Soleil, baignant la couronne et interagissant avec le vent solaire, un vent de particules chargées que la Terre reçoit en permanence. Cette interaction est encore mal connue et difficile à modéliser de par la disparité des échelles spatio-temporelles et la diversité des mécanismes physiques en jeu (changement de régime plasma, turbulence, chauffage...). Néanmoins, ce couplage dynamo-vent est un enjeu clé des missions spatiales telles que Parker Solar Probe ou Solar Orbiter, et il s'agit d'une connaissance cruciale pour améliorer les modèles de prévision de météorologie de l'espace afin d'anticiper l'impact du vent solaire sur l'environnement spatial de la Terre. C'est justement cette interaction entre activité magnétique et vent solaire que cette thèse se propose de détailler grâce à une étude théorique basée sur des simulations numériques et l'interprétation de données solaires. Dans une première partie, cette thèse présente les concepts fondamentaux nécessaires pour comprendre les différentes couches du Soleil, à savoir ses couches internes avec la production de champ magnétique, et son atmosphère avec la naissance du vent solaire. Dans une deuxième partie, nous nous focalisons sur le couplage entre dynamo et vent, avec deux axes différents. Tout d'abord nous nous intéressons uniquement à l'influence du champ magnétique sur le vent solaire, sans rétro-action : à l'aide de configurations magnétiques extraites d'une simulation dynamo avec effet Babcock-Leighton et transport de flux, nous avons réalisé 54 simulations de vent permettant de couvrir un cycle solaire, et ainsi de voir l'évolution de la couronne en fonction de l'amplitude et la topologie du champ magnétique. Cette étude permet déjà de mettre en avant l'influence de la topologie magnétique sur la structure de la couronne ainsi que plusieurs quantités intégrées comme le rayon d'Alfvén ou la perte de moment cinétique, avec des variations de respectivement un facteur 2 et 3.5. À noter que cette étude s'intéresse aussi à la propagation d'une asymétrie Nord-Sud depuis le champ magnétique dynamo jusqu'au vent solaire, et trouve que l'asymétrie est bien transmise mais lissée, ce qui est aussi ce qu'on observe pour le Soleil. Ensuite nous franchissons une étape supplémentaire en développant le premier modèle de couplage à grande échelle entre la dynamo interne et l'atmosphère dynamique du Soleil au sein d'une même simulation. Nous mettons en avant l’évolution auto-consistante de la structure de la couronne et des quantités intégrées pour des conditions correspondant à un Soleil jeune. Le résultat majeur de cette étude est la première quantification de la rétro-action du vent sur le champ magnétique interne par influence sur la condition aux limites, que nous démontrons en comparant nos résultats à un cas dynamo avec conditions aux limites potentielles. Enfin, dans une troisième partie, nous étendons notre étude de la 2.5D à la 3D, au système solaire et aux autres étoiles de type solaire. Nous nous intéressons aux conséquences pour la Terre avec une approche plus liée à la météorologie de l'espace : à l'aide de simulations allant jusqu'à une unité astronomique, nous étudions l'influence de la topologie magnétique sur les rayons cosmiques. Cette thèse se termine sur une ouverture vers les autres étoiles de type solaire : on s'intéresse ainsi à la dynamo mais dans des étoiles de type G et K, à sa rétroaction sur la rotation et donc sur l'évolution sur le long terme de l'étoile, ainsi qu'aux implications pour le vent stellaire associé.
