Cardoon meal is a by-product of oil extraction from the seeds of Cynara cardunculus and can serve as a novel alternative feedstuff for ruminants. This study examined the rumen fermentation, biohydrogenation of fatty acids (FA) and microbial community in lambs fed a concentrate diet containing 15% dehydrated lucerne (CON, n = 8) or cardoon meal (CMD, n = 7) for 75 days pre-slaughter. Diets did not influence rumen fermentation characteristics and the abundance of bacteria, methanogens, fungi, or protozoa. Rumen digesta in CMD-fed lambs displayed a higher concentration of total saturated FA and lower total odd- and branched-chain FA and monounsaturated FA. Feeding CMD decreased total trans-18:1 isomer and the ratio of trans-10 to trans-11 C18:1, known as the "trans-10 shift". Amplicon sequencing indicated that the rumen bacterial community in CMD-fed lambs had lower diversity and a higher relative phyla abundance of Proteobacteria at the expense of Bacteroidetes and Fibrobacteres. At the genus level, CMD mediated specific shifts from Prevotella, Alloprevotella, Solobacterium and Fibrobacter to Ruminobacter, suggesting that these genera may play important roles in biohydrogenation. Overall, these results demonstrate that cardoon meal can be used as a feedstuff for ruminants without negatively affecting rumen fermentation and microbiota but its impact on biohydrogenation may influence the FA composition in meat or milk., (© 2021. Thirty-six steers were randomly assigned to one of three dietary treatments fed ad libitum grass silage and concentrate supplements containing either barley/soybean meal (CON), 80% DM corn (CDGS)- or 80% DM wheat (WDGS)-dried distillers' grains with solubles for 124 days pre-slaughter. Chemical and fatty acid composition, shelf-life, and eating quality of longissimus thoracis muscle were determined. Dietary CDGS and WDGS increased the proportion of conjugated linoleic acids (P < 0.05) and tended to increase C18:3n-3 (P = 0.075) and total polyunsaturated fatty acids (P = 0.060) relative to the CON. Feeding diets containing distillers' grains reduced the lipid and colour stability of fresh beef patties stored in modified atmosphere packs (MAP), with CDGS exhibiting an intermediate effect between CON and WDGS. Diet did not negatively influence the texture profile parameters and eating quality attributes of beef stored in MAP. Sixteen Nero Siciliano pigs were used to investigate the effect of dietary tomato processing waste on meat quality. During 86 days one group (CON, n = 8) received a pelleted conventional diet, while another group (TOM, n = 8) received the same diet in which tomato waste replaced 15% of corn. The dietary treatment did not affect growth performances. The TOM diet reduced intramuscular fat, SFA and MUFA content, while increasing the n-6:n-3 ratio in meat (P < .05). The TOM diet increased the concentration of PUFA, PUFA n-3, PUFA n-6 and the n-6:n-3 ratio (P < .01). The instrumental colour descriptors of backfat were unaffected by diet. The TOM diet increased deposition of retinol in meat (P < .001) but did not affect oxidative stability parameters measured in fresh meat and meat homogenates with pro-oxidant catalysts. The effect of dried tomato pomace (DTP) was tested on lamb performances, meat fatty acids and oxidative stability. For 36 days, one group of lambs (n = 7; CON) was fed a commercial concentrate, while the other group (n = 7; DTP) received DTP in addition to CON diet. The administration of DTP reduced (P < .05) concentrate intake, with no effect on animal performances. The DTP treatment tended to increase total polyunsaturated fatty acids (PUFA; P = .075), PUFA n-6 (P = .071), α-linolenic acid (P = .096) and increased linoleic acid (P < .05), γ-tocopherol (P < .001) and retinol (P < .001) in meat. In raw meat, DTP treatment increased L* (P = .059), b* (P < .05), C* (P = .052) and H* (P < .05) values compared to CON, while lipid oxidation was not affected. In meat homogenates incubated with pro-oxidants, DTP tended to reduce 2-thiobarbituric acid reactive substances (TBARS; P = .088). This study was designed to assess whether different grazing managements affect the appearance of organic volatile compounds (VOC) in lamb fat. Forty-two lambs were divided into four groups: 9 lambs were restricted in stall and fed concentrate (S group); 12 lambs grazed from 9 am to 5 pm (8h group); 10 lambs grazed from 9 am to 1 pm (4 hAM group) and 11 lambs grazed from 1 pm to 5 pm (4 hPM group). After 72 days on feed the animals were slaughtered and the perirenal fat subjected to SPME-GC/MS analysis of VOC; the data were analyzed by stepwise discriminant analysis. The 6-methyl-2-heptanone and furanone, 2,5-dimethyl, 4-hydroxy-3(2H) allowed discrimination between the 4 hAM and the 4 hPM animals. The aim of this study was to determine the effect of different diets on beef meat volatile organic compounds (VOC). Seven heifers grazed pasture for twelve months (group P); 8 heifers received grass silage ad libitum indoors for six months and then were switched to pasture for six months (group SiP); 8 heifers received grass silage ad libitum indoors for six months and then switched to pasture and also offered 0.5 of the diet dry matter of concentrate for six months (group SiPC); 8 heifers received concentrate for twelve months (group C). The muscle longissimus dorsi was sampled at slaughter and subjected to VOC analysis by SPME-GC-MS. Some aldeyhdes, ketones and furans deriving from lipid oxidation were affected by the treatments. Skatole, 3-undecanone, cuminic alcohol and 1-butanol, 2-methyl allowed the discrimination between animals fed concentrate from animals fed non-concentrate diets. This study evaluated the effects of tannins on ruminal biohydrogenation (BH) due to shifts in the ruminal microbial environment in sheep. Thirteen lambs (45 days of age) were assigned to two dietary treatments: seven lambs were fed a barley-based concentrate (control group) while the other six lambs received the same concentrate with supplemental quebracho tannins (9.57% of dry matter). At 122 days of age, the lambs were slaughtered, and the ruminal contents were subjected to fatty acid analysis and sampled to quantify populations of Butyrivibrio fibrisolvens, which converts C(18:2) c9-c12 (linoleic acid [LA]) to C(18:2) c9-t11 (rumenic acid [RA]) and then RA to C(18:1) t11 (vaccenic acid [VA]); we also sampled for Butyrivibrio proteoclasticus, which converts VA to C(18:0) (stearic acid [SA]). Tannins increased (P < 0.005) VA in the rumen compared to the tannin-free diet. The concentration of SA was not affected by tannins. The SA/VA ratio was lower (P < 0.005) for the tannin-fed lambs than for the controls, suggesting that the last step of the BH process was inhibited by tannins. The B. proteoclasticus population was lower (-30.6%; P < 0.1), and B. fibrisolvens and protozoan populations were higher (+107% and +56.1%, respectively; P < 0.05) in the rumen of lambs fed the tannin-supplemented diet than in controls. These results suggest that quebracho tannins altered BH by changing ruminal microbial populations.

This study was aimed at determining whether isotopic ratio mass spectrometry (IRMS) enables us to discriminate between lambs fed herbage or concentrate, both obtained from C(3) plants, and those fed a concentrate obtained from C(4) plants. Thirty-four Comisana male lambs (age 45 days) were assigned to three feeding treatments. Fourteen lambs were fed vetch (Vicia sativa) ad libitum. Another fourteen lambs received a barley-based concentrate. The remaining six lambs were fed a maize-based concentrate. After 60 days of experimental treatment the animals were slaughtered and the wool, perirenal fat and muscle longissimus dorsi were sampled. The delta(13)C and delta(15)N values of the muscle, wool and feed were measured by continuous flow elemental analysis (CF-EA)-IRMS. The delta(13)C of the fat was determined likewise. The isotopic composition of the tissues reflected that of the three diets. For the lambs which were fed herbage the muscle delta(13)C values were higher (P < 0.0005) and delta(15)N values were lower (P < 0.0005) than those of the lambs receiving concentrates. The delta(15)N and delta(13)C values in the muscle and delta(13)C values in the adipose tissue allowed perfect discrimination between the lambs fed the three different diets. The regression between the delta(13)C values measured in muscle and in wool of lambs was linear (R(2) = 0.99; P < 0.0005). This result shows that delta(13)C measured in the wool can predict muscle delta(13)C distribution, suggesting that wool is a valuable matrix for meat authentication.
