The present investigation was devoted on the processing of program for express analysis of fat products detecting in the Access. The program can to establish nature of milk fat and to give detailed characteristic of combined fat products, including information about technology, used under production of combined fat products and their preferable field of application.

The investigation was made of combined fat products quality: spreads, fats used for frying and baking, obtaining in shop. The value of peroxide number and content of cholesterol were determinated. The receiving results detect higher rate of peroxide oxidation products in spreads in compare with fats, used for frying and baking. The needing of taking out information about cholesterol content to label of combined fat product is showed and also severe control of peroxide oxidation values after spreads production.

The renewal (turnover) of rat liver mitochondrial an microsomal phospholipids was studied by the pulse-labeled method. As the fat content in the diet was raised (to 9, 26 and 62%), the renewal of mitochondrial phospholipids increased. In the microsomes, the renewal of phospholipids exceeded the control fed both low-fatty and high-fatty diets. The feeding of rats with the low-fatty diet had a substantial effect on the half-life of mitochondrial and microsomal phospholipids, while the half-life of phospholipids labeled in the polar part with 14C-glycerin reduced and that of phospholipids labeled in the fatty acid part by 3H-palmitate considerably rose. It is assumed that under the conditions of inadequate supply of fatty acids with food, the reutilization of fatty acids formed during degradation of membranous phospholipids is activated. As the times of the feeding with experimental diets were raised (up to 60 days), the turnover of membranous phospholipids did not differ significantly from the data obtained in experiments carried out for 30 days. The exception to the rule was the half-life of acyl chains of mitochondrial phospholipids that continued increasing dramatically under 60 days of the low-fatty diet.

A study was made of the effect of high-fatty and high-carbohydrate diets on the rate of the renewal of individual rat myocardial proteins, particularly on the half-life and the constant of degradation of proteins of sarcoplasm, myosin and actin. Unlike the control diet, the high-carbohydrate diet increased the rate of myosin renewal by 25%, while the fatty diet retarded 20% the rate of the renewal of the main contractile myocardial protein. Similar changes were also found for proteins of sarcoplasma: with the high-carbohydrate diet the rate of the renewal increased 10%, whereas with the high-fatty one it diminished 47%. The rate of actin renewal dropped 11% with the high-carbohydrate diet and 30% with the high-fatty diet. Unbalance in carbohydrate and fatty supply of the body produces appreciable changes in the rate of the renewal of individual proteins of the rat myocardium.

Using the method of pulse introduction of labeled precursors the authors studied metabolism of rat liver mitochondrial phospholipids. The animals received high-protein diets (36% protein) containing 20% (diet II) and 36% (diet III) of fat as compared with the control (I) diet (18% protein and 20% fat). It appeared that the increase of protein in the diet (diet II) led to a reduction in the efficacy of 14C-palmitic acid incorporation into mitochondrial phospholipids, to a fall in the rate of metabolism of mitochondrial phospholipids and to a rise of their half-life within mitochondrial membranes, with the half-life of phospholipids labeled with 14C-palmitic acid in the fatty acid part being increased to a far greater degree as compared with that of phospholipids labeled with 3H-glycerin in the polar part of the molecules. However, in the presence of a high protein quota in the diet the fat/protein ratio agreed with the control level (diet III), whereas the metabolism of mitochondrial phospholipids remained close to the control values.

The feeding of rats during two weeks with a high-carbohydrate diet, in which sucrose presented 40% of energy, induced an increased inclusion of the radioactive label from 3H-glucose and 14C-acetate into store lipids, and 3H-glucose inclusion into the liver and muscle glycogen. The ratio 3H/14C in glycogen and store lipids after administration of the mixture of 3H-glucose and 14C-acetate to the animals reflected a specific effect of sucrose in high-carbohydrate diets.
